The 2015 Châteauneuf-du-Pape Les Olivets is the entry level effort from young vines and is a blend of 80% Grenache and 10% each of Syrah and Cinsault, raised in oak tanks and foudre. Olive, leafy herbs, black cherries, and forest floor notes all emerge from this charming, elegant, forward effort that has plenty to love.

Sabon's largest cuvée is the 2015 Chateauneuf du Pape les Olivets, a blend of 80% Grenache, 10% Syrah and 10% Cinsault. It's rather stemmy and resinous on the nose, offering (more than) hints of rosemary and thyme, and those elements carry over onto the palate. The result is a dry, uninteresting wine.
Vivid ruby-red. Mineral- and spice-tinged red fruit aromas are complemented by suggestions of candied lavender and white pepper. Concentrated yet lively on the palate, offering intense raspberry and spicecake flavors and a subtle herbal quality that builds on the back half. Shows very good clarity and mineral lift on the finish, which is framed by silky, even tannins that fold smoothly into the juicy fruit.
