Lallier's golden-yellow colored 2008 Millésime Grand Cru Brut – an assemblage of 55% Pinot Noir from Aÿ, and 45% Chardonnay from Avize and Cramant, disgorged in September 2014 with eight grams per liter of dosage – offers a deep, pure, complex and elegant bouquet of pain aux raisins, brioche, apple strudel, walnuts and humid chalk. Round and complex on the palate, this lovely, matured, mouth-filling and perfectly balanced Millésime combines its fullness and richness with a remarkable freshness and finesse; the long finish (with honey and almond flavors) reveals a very good structure and lingering minerality.
