The "Saca de Enero 2025" bottling of the NV Manzanilla I Think has an unusually dark color for a wine that is four to five years of age. This is from four casks destined for the UK (which is different from the Australian bottling). It has a complex nose and palate, with power and clout, with notes of esparto, dry flowers, chamomile, wet chalk and an earthy twist, perhaps a little more evolved this time. This is 50% serious and 50% funky—there's a touch of exuberance—while the Australian bottle is 100% serious. It has a round and polished palate with pungent flavors and a long, dry, chalky finish. 2,592 half bottles were filled in February 2025.

I tasted a more recent bottling of the Manzanilla I Think for the Australian market. It was filled in March 2024, so it's one year older than the one I also tasted next to it. The NV Manzanilla I Think (March 2024) was fortified to 15% alcohol and has a pH of 3.21 with 4.79 grams of acidity. It's expressive and with some volume and, dare I say it, creaminess, but it's serious, pungent and balanced. 2,592 half bottles were filled.

The summer bottling NV Manzanilla I Think Saca of July 2022 is a classical Manzanilla de Sanlúcar released regularly, and this particular wine was destined for the UK. This is super expressive and showy, pungent and persistent, with a textbook profile of a Manzanilla aged for some three and a half years under a veil of yeasts. Delicious!

The summer bottling, the NV Manzanilla I Think Saca of July 2015, is a classical Manzanilla de Sanlúcar that is released regularly (twice per year) and always in half bottles. It has the textbook profile of a Manzanilla aged for some five years under a veil of yeasts and shows the character of the calcium carbonate soils that provide a special salinity to the palate. This is aging magnificently.
