Waxy red cherries can be discerned in the deep aromatics of the 1999 Gevrey-Chambertin Lavaux St.-Jacques. This dense, candied wine is exquisitely ripe, offering a compote of black cherries, blackberries, licorice, and hints of oak in its flavor profile. Saturated deep ruby. Very ripe but pure aromas of blackberry, blueberry, bitter chocolate, licorice and minerals. Penetrating dark berry fruit given shape and grip by harmonious acidity. Flavors are fresh and cool but not at all hard. Impressively young and built for extended aging.
