The Drouhins are purchasing grapes, as in the case of their 2006 Chablis. This is a generic cuvee that manages to both be perfectly ripe, and to exhibit some of the unique characteristics of the appellation that go under the name “mineral.” Savory suggestions of shrimp shell reduction and piquant iodine and fruit pit notes nicely complement juicy apple, pear, and peach, and the wine finishes generously but elegantly, with a soft caress. Aromas of apple, hay and wet stone, with a suggestion of exotic sweetness. Rich and honeyed, but with firm minerality and sound acidity giving this slightly warm wine shape and structure.
