The dark-colored, regal Chambertin reveals enveloping aromas of coffee, herbs and black cherries as well as a viscous, full-bodied, massively endowed, rich, blackberry and cassis-laden flavor profile. It exhibits a touch of volatile acidity which will likely disappear prior to bottling. Projected maturity: 2003-2014. The wine displayed a level of volatile acidity which can be controlled using proper cellaring techniques prior to bottling. This note is the result of tastings I did in Burgundy between January 7 and January 29. The wine was tasted from cask, not bottle. Pinot Noir, a fragile varietal, reacts poorly to fining, filtration, and careless bottling techniques, I recommend caution when considering buying a red burgundy based on cask samples.
