The 2007 Chambertin Grand Cru is similar to the previous bottle tasted in 2015. It has quite a rich, earthy bouquet, although one difference is noticeable, a slightly heightened fruit, nudging it towards almost a New World style. Not disagreeable, but not quite as “Chambertin” as the 1989 Chambertin produced by Denis’s father Charles, tasted alongside. With aeration it develops a light mint/wild heather note - the bouquet ending up quite “punchy”. The palate is medium-bodied with thickset tannin, quite deep and muscular, certainly pleasurable although, I feel that the winemaking is expressed more than the terroir. Tasted at the Gevrey-Chambertin dinner at China Tang in Hong Kong.

Tasted at the Denis Mortet Chambertin vertical, the 2007 Chambertin Grand Cru has a mature color considering its age and juxtaposed against the 2006, more forward than I expected, earthy and ferrous with slightly disjointed ferrous notes laced with orange peel. The palate is medium-bodied, quite upfront on the entry with savory fruit, hints of dried fig and prune, tapering a little towards the finish. I cannot see this improving with further bottle age. Tasted January 2016.

Bright medium red. Sexy nose combines black raspberry, minerals and musky espresso. Fat, sweet, fine-grained and lush; in an elegant, even understated style, and not at all a powerhouse. But there's no shortage of tannic spine here. The silky texture carries through to the long finish. This is aging in 100% new oak, whereas most of the rest of the 2007s are getting about 70%, as Mortet is slowly but steadily cutting back on his use of new barriques
