Inky purple. Opaque purple. Intensely perfumed bouquet displays scents of blackberry, incense and fresh flowers. Deeper and chewier than the Wallace, with strong spicy character and supple texture. Becomes brighter with air and finishes on a sweet, seductive note of candied raspberry.

Regional Heroes. "The Bishop has true balance in 2007 making it a much more welcoming, but no less complex, wine and in addition to this it is a medium-weight Barossan Shiraz, drawing its energies from purity of fruit as opposed to overt muscle. This is the way forward for Ben and his wines. And as they both mature we will be in for even more excitement in years to come." The opaque purple-colored 2007 Bishop is 100% Shiraz sourced from 80- to 120-year-old vines and aged for 14 months in seasoned French and American oak. It offers up an alluring bouquet of lavender, spice box, and wild blueberry leading to a layered, opulent wine with tons of succulent blue fruit, soft tannins, and rich flavors. Give it 2-3 years to more fully blossom and drink it from 2010 to 2022. Star winemaker Ben Glaetzer sources all of his fruit for this label from the Ebenezer district in northern Barossa Valley.
