Compared to the 1985 and 1990, the 1991 Chambertin Clos de Bèze has the best definition of the three, with the most tangible minerality and tension coming through. The palate is well-defined with fine symmetry and a lovely marine influence infusing the black fruit that comes across quite austere toward the finish. Others warmed to the '91 more than myself, but I found it stubbornly and unapologetically aloof.
