As with many 2007s right now, this is an excellent moment to open. There is a clear gourmet side on display, charred black cherries with strands of saffron, leather, rosemary and white flower notes, welcoming and open, with the saline lick of limestone. Finely strucutred overall, ready to drink but not a vintage that I see powering ahead for decades so enjoy now and over the next five to 10 years. 3.72ph, 35hl/h yield, 50% new oak , harvest September 24 to October 4.

Tasted at BI Wine & Spirits' 10-Years-On tasting, the 2007 Canon has a light and pleasant but, I have to say, slightly weedy bouquet that is simply missing the intensity of either Troplong-Mondot or Canon-la-Gaffelière. The palate is medium-bodied with soft tannin on the entry, game and leather infusing the dark berry fruit with a healthy pinch of white pepper on the finish. It's actually one of the better bottles that I have tasted, although Nicolas Audebert is producing far superior wines nowadays. Tasted February 2017.

Deep garnet. Delicate mature and cedary notes but also with some cassis showing its fragrance. Firm, still a little chewy, good depth of flavour and just slightly hard/bitter on the finish but juicy too. (JH)

Relatively pale ruby. Scented and floral – not fighting the vintage! But the overall effect is pretty muted. Correct rather than thrilling. Tannins a little too strong for the pretty muted fruit. (JR)
