Note di degustazione
Deep garnet colored, the 2007 Cask 23 Cabernet Sauvignon reveals a nose of warm red and black plums, blackcurrant jelly, blueberry preserves and dried Provence herbs with suggestions of cedar chest, underbrush and new leather. Medium to full-bodied, the herb-laced black fruit fills the mouth, marked by a refreshing line and finely grained tannins, finishing with a compelling mineral edge.

(14.5% alcohol): Full medium ruby. Blackberry, violet, mocha, earth and tobacco leaf aromas are joined by sauvage notes of leather and game. Supple, silky and pliant, showing a restrained sweetness and lovely inner-mouth perfume. Not at all an overripe style of 2007. Finishes with a smooth dusting of tannins and excellent sneaky length and grip. There's a touch of leathery brett here but not enough to dry the fruit. I like this!
Elegantly styled, medium/full bodied, fresh, soft, polished, bright expression of California Cabernet Sauvignon, finishing with a sweet, cherry, and spicy, cassis end note. 92 Points
Muted nose, though it opens to perfectly ripe, juicy blackberry and plum flavours, with liquorice, oak spice and vanilla. Keen acidity. The richest of the three Stag's Leap 2007s, seamless and succulent. (LM)
