The 1991 Mazis-Chambertin is more tannic than the 1991 Charmes-Chambertin, but the race between the fruit and tannin favors the fruit. The wine is deep ruby/purple-colored, with excellent ripeness, a rich, layered feel, chewy texture, and sweet, ripe, cassis fruit in the finish. The tannins suggest 2-4 years of cellaring are warranted for this civilized, refined Mazis. It should age well for up to 15 years. Rousseau, one of the reference points for great burgundy, appears to have made 1991s that are even richer and more profound than his 1990s. His production was one-half of normal, so these wines will be difficult to find. Rousseau normally excels with his three top cuvees - Gevrey-Chambertin-Clos St.-Jacques, Chambertin-Clos de Beze, and Chambertin, but the lower level wines often lack concentration and intensity.
