Note di degustazione
65% Cabernet Sauvignon, 30% Merlot, 5% Cabernet Franc. Harvested 22 September to 12 October. Dark core, lighter at the rim. Slightly earthy aromas with a touch of liquorice. Innate freshness with a line of acidity from beginning to end. Slightly edgy, though. Finishes dry and a little short. Less focused and refined. (JL)

80% Sauvignon Blanc, 20% Sémillon. Fermentation in barrel. Aged in barrel for 18 months on lees, bâtonnage (35% new oak). Pale gold. Very complex: honeyed and resinous at the same time. Honeyed on the palate too but with lovely citrus freshness, amazingly youthful and alive. Stunning. (JH)
Magnum. Mid ruby with lots of evolution. That biscuity smell of developed Dom de Chev already. Very sleek and rewarding and well balanced despite the low alcohol, though there are pretty sandy tannins in here. Delicate. I think I would enjoy this wine while the fruit is still fresh rather than wait for much more development, but then Domaine de Chevalier does have the knack of prolonged longevity. (JR)
