The 2007 Cuvee Speciale Peby is a heavily extracted, extremely oaky effort with the wood so prominent that the fruit seems pushed to the background. There is a huge weight to the wine, which is very unusual in 2007, and there is good purity and density, but the oak is overwhelming at this point. The wine possesses outstanding concentration, and if the oak becomes better integrated, it will merit its score and then some. Patience is most definitely required as it needs at least 2-4 years of cellaring. This has always been a good estate, but the new proprietor, Silvio Denz, has pushed things to a higher standard by lowering yields and doing an even stricter selection.

Good full medium ruby. Cool, perfumed aromas of black cherry, cassis, violet, menthol and melted licorice. Lush, sweet and creamy, with an impression of soft acidity and fairly deep flavors of black cherry, dark berries and menthol. Offers very good mouth coverage on the back, finishing with an exotic note of chocolate liqueur. An intriguing 2007 that suggests a high-pH mouth feel as well as a cool menthol quality. This has the mid-palate stuffing to support its rather serious tannins.
Raw rather malic notes on the nose. This wine is trying awfully hard…. But it’s jolly hard work on the finish. The only 2007 tasted that seemed if anything a little bit too hot on the finish. However did they manage that?! (JR)
