What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

Taking root: the rise of biodynamic winemaking in Bordeaux

Maylis Marcenat non rientra nello stereotipo del produttore bordolese. Vivace, con i piedi per terra e umile, è la più tranquilla che ci sia. È la quarta generazione della sua famiglia a gestire Clos de Sarpe, una piccola tenuta Grand Cru Classé Saint-Emilion che da tempo è passata sotto il radar. 
La storia del Clos de Sarpe 
Il nome Clos de Sarpe compare per la prima volta nel 1897, dato da un certo signor A. Ducarpe alla sua proprietà sull'altopiano della Sarpe. Il barone Henri du Foussat de Bogeron acquistò il vigneto nel 1905, unendolo ai vitigni della vicina Badette per creare Ch. Haut-Sarpe. Jean Beyney acquistò Clos de Sarpe nel 1923 e fece rivivere il nome originale. Suo figlio, Yvan Beyney, subentrò nel 1952, che a sua volta passò la proprietà a suo figlio Jean-Guy Beyney nel 1986. Jean-Guy possiede ancora oggi la tenuta ma si ritirò nel 2021, cedendola a Marcenat, che è sua nipote. (Jean-Guy ha un figlio, Charles, che dà il suo nome al secondo vino della proprietà e alla fine erediterà Clos de Sarpe ma non è interessato a gestirlo giorno per giorno.) 
Lo stile dei vini Clos de Sarpe attraverso i secoli 
Lo stile e la vinificazione si sono evoluti nel tempo, con ogni generazione che ha lasciato la propria impronta sui vini. Inizialmente il vino veniva fermentato tutto a grappolo intero, con lunghe macerazioni (dai 40 ai 50 giorni) e trascorreva diversi anni in vasche di cemento prima dell'imbottigliamento. In effetti, sotto Yvan, ciò continuò. Vendeva vino solo a coloro che sapevano conservarlo correttamente, e come tali alcuni vini trascorrevano lunghi periodi di tempo in cisterne: ad esempio il 1966 rimase nel cemento per 10 anni. Yvan cercava la purezza del frutto, raccogliendolo relativamente tardi (era sempre orgoglioso di dire di aver raccolto contemporaneamente a Figeac, dice Marcenat) e non usava mai il rovere. I vini erano duri in gioventù, avevano bisogno di tempo per ammorbidirsi, ma avevano una grande stabilità grazie al loro lungo affinamento. 
Sotto lo zio di Marcenat, arrivato nel 1986, le cose iniziarono a cambiare – con la fine degli anni ’90 un momento cruciale. Jean-Guy predilige vini potenti e ha ridotto la quantità di tempo che i vini trascorrono in vasca, introducendo la diraspatura (gradualmente, dal 1997, all'inizio tutta fatta a mano) e botti di rovere – con l'élevage che è passato da tutto cemento a rovere nuovo al 100% tra il 1997 e il 1999. Ha assunto Michel Rolland come consulente a partire dal 1998, e ha ridotto le rese – raccogliendo un massimo di 25hl/ha. 
Nel 2005, Jean-Guy ha introdotto un diraspatore meccanico e una cernita densimetrica, entrambi i quali hanno contribuito a un cambiamento significativo nella qualità, e tutto è stato diraspato dal 2010, per incoraggiare un profilo tannico più rotondo in gioventù. Nel 2012, alla proprietà è stato concesso lo status di Grand Cru Classé, riconoscendo i loro sforzi. Marcenat è entrata ufficialmente nel team nel 2014, portando la propria visione, spingendo per ulteriori cambiamenti a partire dal 2016 e assumendone infine il pieno controllo nel 2021. 
Clos de Sarpe oggi 
I vigneti di Clos de Sarpe si estendono per 3,68 ettari, tutti in un blocco sull'altopiano di Sarpe ed esposti a sud/sud-est, a solo un chilometro dal villaggio di Saint-Emilion stesso e vicino sia a TrotteVieille che a Troplong Mondot, così come a Sansonnet e Haut-Sarpe. 
Qui il terreno superficiale è sottile – solo 20 cm in alcuni punti – e si trova su un substrato roccioso calcareo, che contribuisce all'elevata acidità dei vini (normalmente con un pH basso di 3,2-3,4). Oltre la metà del vigneto ha tra i 60 e gli 80 anni, con il Cabernet Franc più vecchio che ha ormai più di 100 anni, piantato dal prozio di Marcenat nel 1923. 
L'età della vite si combina con il substrato roccioso calcareo per aiutare questo sito a resistere a condizioni calde e secche: un vantaggio particolare quando il clima cambia. Il calcare agisce come una spugna, trattiene l'acqua, e le radici penetrano in profondità nel substrato roccioso, accedendo a queste riserve. Le rese sono naturalmente basse data l'età delle viti, e le annate recenti hanno visto alcune rese minuscole, ma Marcenat punta a circa 35 hl/ha in una buona annata (più che sotto suo zio e l'influenza di Rolland). 
Per preservare l'età del vigneto, Marcenat sta gradualmente iniziando a reimpiantare il sito. Come parte di questo progetto, ha aggiunto un po' più di Cabernet Franc e una piccola porzione di Petit Verdot. Precedentemente 85% Merlot e 15% Cabernet Franc, oggi il vigneto comprende 78% Merlot, 20% Cabernet Franc e 2% Petit Verdot.
La famiglia ha sempre lavorato in modo biologico, senza mai utilizzare pesticidi o erbicidi, ma il vigneto è ufficialmente certificato dalla vendemmia 2020, cosa di particolare importanza per Marcenat. Per lei il lavoro si svolge tutto in vigna piuttosto che in cantina e la filosofia è molto borgognona, mantenendo tutto il più semplice possibile. 
La squadra è piccolissima e Marcenat fa quasi tutto da sola, coadiuvata da Frank Bartolomucci. Oggi la frutta viene raccolta tutta a mano, refrigerata durante la notte, diraspata e poi cernita per densità. Ogni parcella viene vinificata separatamente, la maggior parte fermenta nelle vasche di cemento utilizzate dagli anni '50, tuttavia il Cabernet Franc più vecchio viene fermentato in botti di rovere nuove da 600 litri. Usa solo lievito indigeno quindi le fermentazioni sono lente, almeno 10 giorni in genere. I tempi di macerazione sono lunghi, normalmente il vino trascorre sui 40 giorni, e fino a 50 giorni sulle bucce, a seconda delle annate, ma con un'estrazione molto delicata. La fermentazione malolattica può essere impegnativa con il basso pH, quindi deve regolarmente inoculare per forzarla (la malolattica è essenziale per la stabilità del vino, in particolare per il vino destinato a un lungo invecchiamento). 
La porzione di rovere nuovo è stata attenuata, con Marcenat che invecchia il vino per un anno in circa il 70% di rovere nuovo, con il resto in botti di secondo riempimento (e occasionalmente un po' di cemento se necessario). Viene poi assemblato e affinato in cemento per circa sei mesi prima dell'imbottigliamento senza filtrazione. Il rovere è costituito da botti borgognone da 228 litri (rispetto ai tradizionali 225 litri di Bordeaux), in gran parte Tronçaisoak del bottaio Taransaud. Marcenat ritiene che le botti borgognone si abbinino meglio al vino, apprezzando le doghe più spesse e la stagionatura più lunga (30 mesi contro i 24 della norma per Bordeaux). 
I vini Clos de Sarpe oggi 
Clos de Sarpe produce due vini: l'omonimo Grand Vin e un secondo vino, Charles de Sarpe, introdotto nel 1997, dal nome di Charles Beyney, figlio di Jean-Guy e cugino di Marcenat. Fino all'annata 2015 compresa, il secondo vino era un saignée del Grand Vin, utilizzato per aumentare la concentrazione del Grand Vin. Da allora, è stato prodotto solo in alcune annate quando c'erano abbastanza frutti per produrre un secondo vino, come il 2019 e il 2023. 
Mentre la maggior parte dei produttori parlerà della freschezza dei loro vini provenienti dal Cabernet Franc, per Marcenat è il Merlot a portare l'acidità, mentre il Cabernet Franc fornisce la struttura del vino. 
Degustando Clos de Sarpe negli anni '60, la freschezza del sito traspare costantemente, così come una distintiva mineralità terrosa. La purezza di un vino come il 1966 è straordinaria – e regge magnificamente anche oggi. Si possono ancora vedere le tracce dell'immensa struttura che i vini 1975 e 1988 devono aver avuto in gioventù, fornendo oggi una presa gentile insieme alla loro gustosa intensità. Mentre i vini avevano uno stile significativamente più potente alla fine degli anni '90 e negli anni 2000, quella potenza sembra equilibrata oggi, il rovere nuovo al 100% integrato e discreto - e il 2001 particolarmente straordinario. Le annate 2010 e 2015 di Charles de Sarpe sono vini meravigliosi, con una sensazione più morbida ed eleganza: un succo che sarebbe degno di molti Grands Vins. 
Questi vini un tempo erano conosciuti per la loro potenza e forza, ma Marcenat ha modificato lo stile, appoggiandosi alla naturale freschezza del sito. Cerca tannini setosi e una purezza che renda i vini più accessibili in gioventù. È, ti dirà, molto semplicemente il vino che le piace e che vuole fare. Degustare i vini en primeur da quando lei è subentrata suggerisce che qui ci aspettano solo cose buone. Ad ogni annata, l'impronta di Marcenat sui vini sembra più chiara e la qualità smentisce le condizioni della stagione di crescita, a testimonianza sia del suo talento che del terroir. 
Una nota sulle etichette del Clos de Sarpe 
Come puoi vedere nella line-up di questa degustazione (sotto), le etichette sono cambiate nel corso degli anni. I vini più antichi prodotti da Yvan Beyney portano un'etichetta molto tradizionale, che è cambiata nel 1986 per avere un bordo blu quando Jean-Guy (zio di Marcenat) è subentrato. Quando lo stile del vino cambiò negli anni '90, Jean-Guy cambiò nuovamente l'etichetta (dall'annata 1998) con una con bordo in lamina d'oro. L'etichetta attuale è stata introdotta nel 2012 quando la proprietà ha ottenuto lo status di Grand Cru Classé. 
La degustazione verticale: Clos de Sarpe 1966-2015 
2015 Charles de Sarpe: Maylis Marcenat ricorda vividamente la vendemmia 2015, poiché è avvenuta nello stesso periodo in cui ha dato alla luce le sue figlie gemelle. È stata l'ultima annata in cui il secondo vino è stato prodotto come saignée del Grand Vin, riecheggiando le sue proporzioni di 85% Merlot e 15% Cabernet Franc, ed effettivamente una versione meno potente, invecchiata in 50% rovere nuovo e 50% rovere di un anno. Il vino è ancora agile e vibrante, offrendo al naso frutti di bosco rossi brillanti. Al palato mostra toni più saporiti, con prugna rossa macerata e un sottile strato gessoso di tannini, tagliati da un'acidità brillante che conduce fino a un finale appetitoso. Clos de Sarpe 2015: La tipica miscela di 85% Merlot e 15% Cabernet Franc (come ogni annata mostrata in questa verticale), il Clos de Sarpe 2015 è stato invecchiato in rovere nuovo al 100%. Come si può intuire dall'élevage e dalla potenza dell'annata, questo non è un vino timido e riservato, tuttavia l'acidità tipica di Clos de Sarpe si fa strada attraverso il suo nucleo e bilancia l'intensità del vino. Si sente ancora giovane, ricco di frutti di ciliegia scura sul naso compatto, che gradualmente offre toni più dolci e profumati con il tempo nel bicchiere. C'è solidità al palato - con una massa di frutta ricca e concentrata, ma c'è anche una succosità qui lo rende appetitoso, con una dolce carnosità. È rotondo e pieno, con una salda presa di tannino sul finale. Travasalo per godertelo adesso, con molta aria, ma questo si svilupperà nel prossimo decennio e oltre. 
2010 Charles de Sarpe: L'annata 2010 è stata la prima in cui i frutti sono stati tutti diraspati a Clos de Sarpe. Degustando il secondo vino con l'enologo Maylis Marcenat, non può fare a meno di chiedersi perché suo zio non abbia messo un succo così meraviglioso nel Grand Vin. Ora è un bell'esempio flessibile e maturo di Saint-Emilion: il naso sottile, che si sposta tra frutta dolce, fiori accentuati e complessità di tartufo nero. Il palato è lungo ed equilibrato, meravigliosamente risolto, senza soluzione di continuità e morbido, ancora con una freschezza appetitosa e un tocco minerale terroso nel lungo finale. Bello. 
Clos de Sarpe 2001: questo è stato un vino eccezionale nel nostro verticale e un vino che occupa un posto speciale per Marcenat. Come ci ha detto, "Per me è meglio del 2000 - con più freschezza, più equilibrio, più tutto". Il nuovo rovere al 100% è integrato, con il naso che mostra ora molta complessità terziaria: ferro, sousbois e una sottile fogliame si mescolano con il frutto della fragola ancora fresco e morbido. C'è trasparenza qui, ma ancora molta concentrazione: il palato è ancora agile con frutti rossi morbidi e succosi e un'acidità elevata e succosa che sostiene il frutto e riempie il lungo finale, completato da una nota terrosa. Superbo. 
1998 Clos de Sarpe: questa è stata una delle prime annate ad essere invecchiata in rovere, vedendo l'80% di legno nuovo per il suo élevage. È stata una grande annata per la Rive Droite, come dimostra questo vino. Il Clos de Sarpe del 1998 è meravigliosamente maturo, con aromi saporiti e coriacei e frutti di rovo più scuri rispetto al 2001 più fruttato rosso mostrato a fianco. Al palato ha una saporita cucitura di ferro, i tannini offrono ancora una soddisfacente presa gommosa per incorniciare il succoso frutto della siepe. Questo è sbocciato nel bicchiere, rivelando ulteriore complessità e vivacità. Lungo, equilibrato e molto impressionante. 
Clos de Sarpe 1988: L'annata 1988 ha offerto poche sfide ed è un'annata abbastanza classica. Viene dall'epoca in cui il Clos de Sarpe veniva fermentato tutto a grappolo intero e non vedeva rovere (invecchiato solo in cemento) - come con le due annate seguenti. All'inizio questo vino aveva un leggero sentore di muffa, ma gradualmente il vino ha rivelato il suo vero carattere, con frutta dolce e secca e note intense e salate - una ricchezza di umami che ricorda la marmite. C'è ancora una struttura e una potenza sorprendenti qui, anche se il vino non è così concentrato come, ad esempio, nel 1998. L'acidità mantiene il sapore fresco, con sentori di tartufo e sottobosco persistenti nel finale. 
Clos de Sarpe 1975: è stato tappato nuovamente nel 2020. L'annata 1975 ha prodotto alcuni vini particolarmente tannici - e qui si può ancora sentire la struttura dell'anno, con una presa fenolica che incornicia il palato. Il naso è intensamente sapido, attraente per gli amanti del Bordeaux vecchia scuola con cortile e pelle di cavallo, rivelando gradualmente un tocco erbaceo - qualcosa di quasi simile al mentolo. Sebbene questo sia decisamente terziario nel profilo, c'è ancora vivacità al palato, con morbide ondate di frutta e un finale dal bordo ferroso. 
Clos de Sarpe del 1966: alcune annate più vecchie di Clos de Sarpe hanno trascorso lunghi periodi di tempo in vasca prima dell'imbottigliamento, come nel caso di questa 1966, che è rimasta in cemento per quasi 10 anni. È stato tappato nel 2019 ed è un vino straordinario che sta cantando oggi. Pochi conoscono Ch. Clos de Sarpe – e ancora meno ne hanno seguito l’evoluzione recente. Abbiamo incontrato Maylis Marcenat, quarta generazione alla guida della tenuta di 3,7 ettari, per una degustazione verticale e per esplorare l’identità del sito attraverso i secoli.

Sessant'anni di Clos de Sarpe

Non capita tutti i giorni di poter assaggiare vini prodotti oltre mezzo secolo fa – ma all’inizio di questo mese ho potuto ripercorrere l’Imperial Gran Reserva di punta di CVNE fino all’annata 1947. Victor Urrutia, quinta generazione della sua famiglia alla guida di questo leggendario produttore della Rioja, ha organizzato una degustazione di quella che ha definito “la sporca dozzina” – affiancando 12 annate di Imperial. I vini sono stati scelti per mostrare come il vino si esprima attraverso una gamma di annate – non solo le più celebri, ma le calde, le fredde, le possenti e le mediocri. 
 CVNE produce vino nella Rioja Alta dal 1879, quindi – anche risalendo al 1947 – questa degustazione ha offerto solo un’istantanea della sua storia. Imperial fu creato agli inizi del XX secolo (1917 è l’annata più antica assaggiata dallo stesso Urrutia), concepito come una “super Rioja”, ha spiegato Urrutia. L’idea era di fare il miglior vino possibile, a prescindere dal suo potenziale commerciale, in un’epoca in cui la Rioja non aveva il prestigio di oggi. Si producono circa 50.000 bottiglie, ma – cosa importante – Imperial non viene realizzato in ogni annata, poiché in alcuni anni la qualità dell’uva non soddisfa i rigorosi standard di CVNE (ad esempio non ci sono state le annate 2003, 2006 o 2013, e non ci sarà nemmeno la 2023). 
 Per Urrutia, l’obiettivo con Imperial oggi è riflettere ciascuna annata e mettere a punto il vino piuttosto che cercare rivoluzioni. Le annate più antiche sono il loro punto di riferimento e fonte d’ispirazione. Attraverso le annate, tuttavia, Urrutia indica un naso “da chiesa” – qualcosa che trova distintamente Imperial e che ricorda la cantina. 
 È facile, forse, dimenticare quanto bene invecchi la Rioja – e non solo per un decennio o due, ma per oltre mezzo secolo. L’annata più vecchia di questa degustazione, la 1947, è stata senza dubbio la stella – un vino che ha conservato la sua freschezza, con aromi delicati e un palato magnificamente lungo, puro, risolto. L’intero volo ha impressionato – con la qualità di Imperial a risplendere. Sono comparse alcune delle annate leggendarie della Rioja (la 1970 e la 1959, che siedono accanto a 1982 e 1964 nei libri di storia), ma i miei preferiti personali sono stati la già citata 1947, la 2004 ancora compatta (nominata Wine of the Year da Wine Spectator nel 2013), la cupa 2011 e la graziosa, elegante 2018. I vigneti di Imperial L’uva per l’Imperial Gran Reserva proviene dai migliori vigneti di CVNE, tutti con oltre 40 anni di età e quasi tutti ad alberello, con rese di circa 4.000 kg/ha (equivalenti a circa 25 hl/ha o meno di 1,5 tonnellate/acro). Le parcelle si trovano tutte vicino ai monti Cantabrici, a circa 500–600 metri di altitudine, e su suoli poveri ma freschi (argilla e calcare) – conferendo grande freschezza ai vini, anche negli anni caldi e siccitosi, spiega la storica Direttrice Tecnica María Larrea. 
 Il villaggio di Villalba de Rioja è stato la spina dorsale del vino sin dalla sua concezione. Questo villaggio è il luogo in cui i fratelli Real de Asúa (che fondarono CVNE) acquistarono per primi dei vigneti, quattro chilometri da Haro. I vigneti sono ripidi ed esposti a sud, soggetti ai venti e quindi alcune viti devono essere allevate a cordone speronato (cordón Royat), ma ciò apporta acidità e freschezza al vino – elementi essenziali per il suo potenziale di invecchiamento. Parcelle nei villaggi di Briones e Torremontalbo furono aggiunte in seguito, negli anni ’60. Briones ha suoli più ricchi, pendii dolci e un clima più caldo, conferendo struttura e corpo al vino, mentre Torremontalbo ha pendii ripidi e sassosi con suoli calcarei e una significativa escursione termica, aggiungendo mineralità e finezza al blend. 
 Il blend di Imperial Il blend è cambiato nel corso degli anni, con il vino originariamente attorno al 40% Garnacha e 40% Tempranillo, con il restante 20% Graciano e Mazuelo. I vecchi vigneti erano field blend, con le varietà interfilari e raccolte insieme, implicando livelli di maturazione misti – qualcosa che probabilmente apportava equilibrio e complessità ai vini, anche se parte dell’uva poteva non essere matura. Oggi, ogni varietà è piantata separatamente da CVNE – permettendo maggiore controllo e precisione, vendemmiando ciascuna uva al momento perfetto e componendo il blend in cantina. 
 Negli anni ’70 si è assistito a un allontanamento dalla Garnacha, con sempre più Tempranillo piantato al suo posto. La Garnacha era meno apprezzata, vista come un cavallo da tiro, impressione soltanto rafforzata quando cloni meno pregiati e ad alta resa furono piantati negli anni ’80 e ’90. Come ha anche osservato la Larrea, la Garnacha è molto più soggetta a colatura e acinellatura (scarsa fioritura e allegagione), il che potrebbe essere stato un altro fattore del suo declino. C’è stato anche un periodo, ha spiegato Urrutia, in cui Bordeaux era il punto di riferimento per il vino fine, e si cercava di imitare la regione, privilegiando il Tempranillo per il suo colore più scuro rispetto alla più sottile di buccia e quindi più pallida Grenache. Oggi, il blend è dominato dal Tempranillo (con sia il 2017 sia il 2018 Imperial all’85% Tempranillo), ma la Grenache sta vivendo una rinascita in tutta la Rioja e – a patto di avere il giusto materiale clonale e/o vigneti più vecchi – potrebbe contribuire maggiormente al blend in futuro. 
 La proporzione di Graciano e Mazuelo è stata leggermente ridotta, ma la Larrea sottolinea quanto siano importanti le due uve di fronte al cambiamento climatico. Il Mazuelo (alias Carignan/Cariñena) fornisce struttura e colore, mentre il Graciano apporta acidità e complessità aromatica. La vinificazione Sebbene sia entrata in CVNE nel 1991, María Larrea ha preso in mano la vinificazione di Imperial con l’annata 2005, succedendo a Basilio Izquierdo, che aveva diretto le operazioni per oltre 30 anni (dal 1973). Prima di Izquierdo venne Ezequiel García, noto come “El Brujo” (“Il Mago”), enologo di CVNE per oltre tre decenni (tornò brevemente nel 2014 per ricreare il loro leggendario bianco, Monopole). 
 Attraverso i tre enologi e quasi 70 anni, sorprendentemente è cambiato poco. La vinificazione qui rimane estremamente tradizionale, sebbene la tecnologia abbia permesso al team di monitorare i vini più da vicino e di migliorare l’igiene di cantina, come nella maggior parte delle regioni. La fermentazione rimane indigena, anche se non è più spontanea – i vini vengono inoculati con un ceppo selezionato del loro lievito indigeno dall’inizio degli anni 2010 (con alcuni esperimenti negli anni ’90). Tradizionalmente la fermentazione avveniva in vasche di cemento, ma negli anni ’90 si è passati al rovere, con una sola annata (1994) fermentata in acciaio inox quando le botti non arrivarono in tempo. 
 I vini venivano un tempo conservati in botte e imbottigliati solo al momento della vendita, quindi alcune vecchie annate di Imperial hanno trascorso oltre un decennio in botte, mentre oggi il vino resta normalmente in botte tra due e tre anni. (Le date di imbottigliamento per ciascuna annata sono incluse di seguito – la 1947 non fu imbottigliata fino al 1960!) In origine il rovere era tutto americano, semplicemente perché era quello a cui avevano accesso tramite le loro storiche rotte commerciali, e le botti venivano mantenute per decenni (la Larrea ricorda l’uso di botti di 40 anni quando arrivò negli anni ’90). CVNE ha iniziato gradualmente a introdurre rovere francese negli anni ’80, con circa il 30% di rovere francese negli anni ’90 e circa il 60–70% oggi, con il resto americano. I vini: degustare otto decenni di CVNE Imperial Una nota sulle bottiglie: le annate più vecchie sono in vetro verde, ma si è passati al vetro ambrato circa 10–15 anni fa. 
 2018 Imperial Gran Reserva: Questo è stato un vero highlight della verticale. È ancora molto giovane, fruttato, ma con straordinaria finezza e delicatezza. Il naso è preciso con aggraziati aromi di spezie, grafite e fiori insieme al frutto cristallino. Il palato è succoso e agile, puro, setoso e fresco con tabacco saporito e frutti rossi disidratati che riempiono il finale saporito. Bellissimo e molto aperto, già ora. Fermentato in rovere, 14% alcol e imbottigliato a luglio 2021. 
 2017 Imperial Gran Reserva: Gelate hanno colpito gran parte dell’Europa a fine aprile 2017, sebbene il resto della stagione sia stato relativamente caldo, producendo un raccolto minuscolo di frutta concentrata. È un vino drasticamente diverso dal 2018, ma ancora con grande freschezza e un guizzo floreale accanto a frutta rossa matura e dolce. Il palato è teso, molto meno approcciabile del 2018, con tannini compatti, un morso di acidità croccante e una stretta di tannini fermi, mentre toni affumicati riempiono il finale. Decantare per goderselo ora, ma sarà ancora migliore con un paio d’anni in bottiglia. Fermentato in rovere, 14% alcol e imbottigliato a luglio 2020. 
 2015 Imperial Gran Reserva: Il 2015 Imperial è scuro e intenso, stratificato con ricchi frutti di rovo, cedro, tabacco, spezie e qualcosa di carnoso – forse un accenno di biltong. Il palato riecheggia la concentrazione del naso, con tannini masticabili e una linea di acidità che incide la sua intensità. Potente, quasi severo, con più frutta secca che emerge con l’aria, il finale è lungo e saporito, con un tocco di miso rosso. Fermentato in rovere, 14,5% alcol e imbottigliato a giugno 2018. 
 2011 Imperial Gran Reserva: Un altro spicco della verticale, il 2011 Imperial offre un naso scuro e puro, ancora sorprendentemente primario con frutta di ciliegia nera e cassis, sollevato da un dolce profumo speziato. Il palato è setoso e puro, ancora così giovane, scorre sulla lingua, incorniciato da tannini fermi ma integrati. È concentrato e lungo, con aromi floreali che danzano sul finale succoso. Difficile resistergli, con grande equilibrio. Fermentato in rovere, 13,5% alcol e imbottigliato a luglio 2014. 
 2009 Imperial Gran Reserva: Questo è un Imperial molto serio, ora in una fase di bella maturità – con sottobosco saporito e note speziate accanto al vibrante frutto di bacche scure. Il palato è intenso ma con una morbidezza, nonostante l’impalcatura tannica masticabile. È succoso ed espressivo, con note affumicate, speziate, di tabacco sul finale, e appena un leggerissimo accenno di cuoio che inizia ad apparire. Fermentato in rovere, 13,8% alcol e imbottigliato a gennaio 2013. 
 2004 Imperial Gran Reserva: Da una “annata da manuale”, nelle parole del CEO di CVNE Victor Urrutia, il 2004 brilla. Trucioli di matita e bacon completano frutta matura e scura. Il palato è teso e compatto, ma con una succosità che allunga l’insieme, con un’acidità che guida fino al lungo finale. I tannini sono soffici e morbidi, integrati con il frutto, ma offrono ancora presa sul finale. Luminoso ed equilibrato senza sforzo. Fermentato in rovere, 13,8% alcol e imbottigliato a ottobre 2008. 
 1994 Imperial Gran Reserva: Questa è un’annata intrigante di Imperial, l’unica ad essere stata fermentata in acciaio inox durante il passaggio dal cemento al legno, ma le botti nuove non arrivarono in tempo per l’annata. Fu anche servita al matrimonio del Principe della Corona di Spagna, poi divenuto Re Felipe VI. Dopo il 2004, questo segna uno spostamento verso vini dominati da note terziarie, sebbene qui ci sia ancora molta frutta. Il naso è speziato con fungo e sottobosco accanto a incenso e toni di cuoio. Il palato è carico di umami – con cuoio fresco e frutti di bosco disidratati – oltre a fragole essiccate, tannini morbidi e acidità rinfrescante. Fermentato in acciaio inox, 13,16% alcol e imbottigliato a giugno 1998. 
 1980 Imperial Gran Reserva: Come ha detto il CEO Victor Urrutia, il 1980 è stata “un’annata di merda” – ed è sempre rimasta all’ombra del 1981 e del 1982. Assaggiando il vino oggi, probabilmente è giusto – tuttavia resta un vino impressionante. Il naso ha un accento nettamente erbaceo, mentolato, sulla dolcezza del frutto – fragole macerate, con un accenno balsamico. I tannini offrono ancora mordente, mentre il frutto vira verso toni più scuri e di rovo verso il finale. Fermentato in cemento, 13,4% alcol e imbottigliato a maggio 1985. 
 1970 Imperial Gran Reserva: L’annata 1970 fu calda e produsse vini potenti – guadagnandosi la reputazione di una delle migliori annate della Rioja. Dopo oltre 50 anni, il vino è intensamente saporito – combinando soia, marmite e sentori di stalla con frutto scuro intenso. Con l’aria, il vino offre strati di spezie (quasi reminiscenti della paprika), bacon frazzles e mandorle affumicate, a complemento del concentrato nucleo di frutto. È intenso ma equilibrato, con acidità brillante che mantiene tutto fresco e riempie il lungo finale. Fermentato in cemento, 12,97% alcol e imbottigliato a marzo 1975. 
 1968 Imperial Gran Reserva: Da un’annata più difficile, il 1968 Imperial ha un naso affascinante che combina senza soluzione di continuità il salato e il dolce – con una ricchezza terrosa che siede accanto a frutto di bosco intriso d’incenso e una gradevole nota erbacea. Il palato è elegante e vibrante, con ancora molta frutta che guida attraverso il suo nucleo, mentre note più saporite e affumicate dominano il finale. Fermentato in cemento, 12,7% alcol e imbottigliato ad aprile 1974. 
 1959 Imperial Gran Reserva: L’annata 1959 è un’altra tra le più lodate della Rioja, sebbene sospetto che questa bottiglia non si sia espressa al meglio. C’è una morbidezza e intensità al palato, con una spinta acida affilata, mentre il naso è dominato da cuoio, liquirizia nera e sentori di stalla. Fermentato in cemento, 13% alcol e imbottigliato a febbraio 1968. 
 1947 Imperial Gran Reserva: Un vino straordinario da assaggiare, il 1947 CVNE Imperial ha una reputazione – che questa bottiglia ha più che confermato. Note di caffè e tabacco con frutto brillante – ciliegia rossa matura e lampone, oltre a fiori, incenso, tè nero e salvia, accanto a un profumo affumicato. È lungo e fresco al palato, senza soluzione di continuità e pienamente risolto ma puro e persistente, con un accento di Bovril sul finale che è vibrante e lungo. Splendido ora – bevetelo finché ne avete l’occasione. Fermentato in cemento, 12,4% alcol e imbottigliato ad agosto 1960.

Un'icona attraverso i secoli: Imperial Gran Reserva di CVNE

Caprifoglio, pesca, gelsomino. Maturo, profumato ed esotico, viscoso e inebriante – ma, al suo meglio, con una linea minerale e salina e una presa fenolica che tengono a bada il suo edonismo. Il Condrieu è un vino come nessun altro – e che non potrebbe essere molto meno alla moda, anche volendo. 
 Eppure, le sue migliori bottiglie sono incredibilmente difficili da trovare. Coteau de Vernon di Georges Vernay o La Doriane di Guigal vanno esaurite appena escono. Il Coteau de Chery di Chapoutier viene assorbito senza sforzo dalle migliori carte dei vini dei ristoranti francesi. L’iconico Château-Grillet è quasi scomparso dal mondo della vendita al dettaglio da quando è passato sotto Artémis. La produzione può essere limitata – ma è anche chiaro che c’è più che sufficiente domanda per questi vini davvero speciali del Rodano settentrionale. L’appellazione e la sua espressione unica dell’uva Viognier hanno una storia accidentata. I Romani furono i primi a coltivare la vite in questo angolo della Valle del Rodano – e da allora è rimasta. Nel XVII secolo, i vini dei ripidi pendii attorno al villaggio di Condrieu erano rinomati in tutta la Francia. Nel 1853 c’erano 143 ettari di vigneti nella regione – ma poi arrivarono piaghe e parassiti: l’oidio dilagò tra le viti, seguito rapidamente dalla fillossera, decimando i vigneti in tutta Europa. Con due guerre mondiali, oltre all’industrializzazione della valle, la manodopera abbandonò le vigne per lavori di fabbrica più stabili e salariati: guardando l’angolo spezza-schiena dei pendii, del tutto non meccanizzabili, è facile capire perché i vigneti della regione furono quasi completamente abbandonati. Quando fu creata l’Appellation d’Origine Contrôlée (AOC) Condrieu nel 1940 (che comprende i villaggi di Condrieu, Vérin e Saint-Michel-sur-Rhône), restavano solo sei ettari di vigne. 
 Negli anni ’60 erano piantati solo otto dei 170 ettari potenziali e il futuro di Condrieu sembrava incerto. Ma un vigneron stava silenziosamente lavorando per cambiare le cose. 
 Georges Vernay – il cui padre Francis Vernay aveva contribuito a creare l’appellazione dopo aver piantato le prime vigne di famiglia sul Coteau de Vernon nel 1937 – credeva nell’alchimia tra i pendii granitici a biotite di Condrieu e l’uva Viognier. All’epoca, la regione era conosciuta soprattutto per la frutta a nocciolo – con un chilo di pesche che valeva significativamente più di un chilo d’uva. (La zona è ancora oggi nota per la frutta; Jean-Marc Roulot si rifornisce delle albicocche per la sua eau de vie e il suo liquore dal Rodano.) Quando Georges Vernay sradicò i frutteti per piantare Viognier, lo chiamarono pazzo. 
 “Nessuno credeva più in Condrieu, né nel Viognier,” mi racconta Philippe Guigal – enologo e terza generazione alla guida dell’azienda di famiglia. Il padre di Philippe, Marcel, fu un altro pioniere della regione, perseverando nel produrre vini di pregio dai terrazzi della zona, economicamente proibitivi. 
 Vernay mantenne la sua fede – promuovendo Condrieu, ma anche il Viognier. Quasi tutto il Viognier del mondo era piantato allora a Condrieu, e Vernay fornì talee a chi era fuori regione – incoraggiando altri a piantare questa varietà distintiva. Allo stesso tempo, promosse la regione con i suoi vini longevi, soprattutto l’ormai iconico Coteau de Vernon. Nel 1986 c’erano ancora solo 19 ettari piantati a Condrieu, ma la battaglia di Vernay iniziò a dare frutti – gli appassionati si innamorarono dei bianchi ricchi e tattili di Condrieu e gli impianti schizzarono in alto. Si contavano 38 ettari di vigne nel 1992 e 217 nel 2024. Ma non fu solo nel Rodano che il Viognier trovò finalmente il suo posto – apparvero impianti nell’Ardèche, nel Languedoc, in Australia, in California (soprattutto con l’ondata dei Rhône Rangers, guidati da Randall Grahm) e oltre. Lo splendore del Viognier era stato restaurato. 
 Sebbene oggi sia molto più diffuso, è solo a Condrieu che il Viognier raggiunge tali vette. Qui, sui ripidi pendii terrazzati in questo angolo consacrato del Rodano, le viti poggiano quasi direttamente sulla roccia granitica – un tipo specifico di granito attraversato dalla biotite, una mica nera ricca di ferro. È questo granito a biotite che definì l’originaria appellazione Condrieu creata nel 1940 – comprendendo i vigneti attorno ai villaggi di Condrieu, Vérin e Saint-Michel-sur-Rhône. L’appellazione-monopole Château-Grillet (che purtroppo non ha potuto commentare per questo articolo) si trova all’interno di Condrieu, classificata quattro anni prima, e condivide lo stesso granito a biotite. Il ferro nei suoli è fondamentale, conferendo la tensione tanto necessaria al Viognier, potenzialmente molle. 
 Trovare – e mantenere – quella tensione è la chiave dei migliori Condrieu. E non si tratta dell’acidità in sé, quanto di un senso di freschezza. 
 Per Emma Amsellem – che lavora accanto a sua madre Christine Vernay al Domaine Georges Vernay – “È una combinazione di cose diverse.” Attribuisce molto alla loro agricoltura (sia biologica sia biodinamica), così come al lavoro con vecchie vigne e rese basse (normalmente intorno a 27-30 hl/ha). Maxime Chapoutier – che lavora assieme al padre larger-than-life Michel Chapoutier nell’omonimo impero – ribadisce quanto l’età della vite sia importante per il Viognier, molto più che per Syrah o Marsanne, dice. Trova che il Viognier inizi a produrre uve di complessità significativamente maggiore a 20-30 anni, ma che le viti possano anche perdere vigore se sono troppo vecchie. 
 “La bellezza dell’equilibrio del Viognier proviene dal suo estratto secco – dalla sua amarezza,” ha spiegato. È, dice Chapoutier, l’uva più difficile da vendemmiare – raccogli troppo presto e non avrai l’estratto secco necessario, raccogli troppo tardi e gli aromi saranno eccessivi. Ansellem ha sottolineato anche l’importanza della data di vendemmia: sebbene si voglia trattenere quanta più acidità naturale possibile, bisogna anche che il Viognier sia sufficientemente maturo – e la finestra si sta facendo sempre più stretta con il cambiamento climatico. 
 La sfida, come la mette Philippe Guigal, è mantenere la ricchezza, la piena espressione del Viognier, insieme alla sua bevibilità e salinità. Ha introdotto un ciclo in stile champenois, molto lungo e lento, per il loro Condrieu – qualcosa che aiuta a far emergere gli aromi e la struttura dell’uva, un concetto ripreso sia da Ansellem sia da Chapoutier, lavorando sulle naturali bucce spesse del Viognier. Chapoutier ha anche evidenziato l’importanza di ossigenare il mosto e poi travasare il meno possibile, trattenendo le fecce per valorizzare la “nobile amarezza” dell’uva. Guigal è anche particolarmente attento alle temperature di fermentazione, ritenendo fondamentale mantenere le fermentazioni sotto i 12°C per evitare potenziali aromi pesanti. È proprio quell’estratto secco che permette ai grandi Condrieu di invecchiare così bene. Chapoutier spiega che gli piace attendere almeno cinque anni prima di aprire il loro Coteau de Chery, ma può invecchiare per 25, sviluppando ulteriori strati di complessità – con note di miele, lanolina, pan di zenzero e scorza di agrumi essiccata. “Un grande Condrieu è un vino che non sa di Viognier,” dice. 
 Degustare una batteria dei vini di punta della regione la settimana scorsa è stato affascinante – dal Coteau de Chery di Chapoutier, notevolmente fresco e floreale, al decadente ma minerale Coteau de Vernon di Georges Vernay. Più di tutto, forse, è stato vedere la reazione dei degustatori – i vini hanno superato di gran lunga le loro aspettative stereotipate. Non tutti gli scettici se ne sono andati innamorati, ma di certo hanno acquisito un rinnovato rispetto per lo stile; e chi già ne era fan se n’è invaghito ancor di più. 
 A Condrieu c’è praticamente nessuno spazio per ulteriori impianti, in gran parte grazie agli sforzi di Georges Vernay nel promuovere la regione, e la qualità nell’appellazione è più alta che mai. Lo stile dei suoi vini inebrianti sarà sempre divisivo – e forse è un bene, dato quanto limitata sia la produzione dei migliori vini. Le sue credenziali “cool” forse non hanno ancora colmato il gap, ma è tempo di aprirsi all’opulento abbraccio della regione – non te ne pentirai. Top cuvée di Condrieu da tenere d’occhio Coteau de Chery di Chapoutier: Da una singola parcella di viti tra i 40 e gli 80 anni, è affinato interamente in rovere vecchio (botti più grandi da 600 litri). La produzione è minuscola (spesso solo due barili) e va quasi esclusivamente ai ristoranti in Francia. 
 Coteau de Vernon di Georges Vernay: Si trova a un tiro di schioppo (circa 100 m) dall’altra vigna singola di Vernay, Les Chaillés de l’Enfer (letteralmente le terrazze dell’inferno, per i suoi ripidi pendii esposti a sud). Dal più famoso pioniere della regione, le viti sono state piantate negli anni ’30 e ’60, in un anfiteatro naturale, producendo un’espressione profonda di Viognier che invecchia magnificamente. 
 La Doriane di Guigal: Il Condrieu di punta di Guigal è un assemblaggio delle loro cinque migliori parcelle dell’appellazione, con età media di 35 anni, maturato in rovere nuovo al 100% – perfettamente integrato con il frutto concentrato e potente. 
 Château-Grillet: La minuscola appellazione-monopole copre 3,5 ettari di vigne. Di proprietà del gruppo Artémis (proprietari di Ch. Latour) dal 2011, i suoi vini sono tra i più ricercati al mondo, scomparendo in gran parte nelle carte dei vini. 
 Condrieu di Yves Gangloff: Rinominato per il suo stile voluttuoso, nel senso migliore, questa bottiglia del celebre produttore è giustamente molto ambita. 
 Chéry di André Perret: Conosciuti anche per la loro cuvée Clos Chanson, Chéry proviene anch’essa dal Coteau de Chery, da una parcella di tre ettari con viti di 70 anni. 
 Les Vieilles Vignes de Jacques Vernay di Ogier: Si producono solo 125 casse di questo vino all’anno, il che lo rende incredibilmente difficile da trovare.

What defines a fine wine? For many, it is a bottle’s ability to improve with age. A wine’s longevity is even seen, by some, as the ultimate measure of its quality. It’s true that aged wine can be some of the most memorable – capturing an essence of time that’s impossible to recreate. The ageing process can be central to a wine’s (or, for that matter, whisky’s) progression to another, unparalleled level of complexity. Yet how a wine ages remains something of a mystery to both winemakers and collectors. There is still a great deal of conjecture about how a wine will develop, why it does so, and whether it is even worth the wait. Unlike whisky, wine is much less stable on its journey into maturity. As Christian Moueix puts it, “Wine is a complex matrix of thousands of compounds suspended in a delicate equilibrium.” This equilibrium is fragile, age a potential threat and a wine’s trajectory therefore incredibly difficult to predict. There was a time when wine drinkers dismissed the New World. Today, fortunately, that’s not the case – and it’s rightfully acknowledged for producing fine wine. However, some snobbery remains. Drinkers tend – beyond a handful of the very top names – to drink New World wines much younger than their Old World counterparts. Ask any oenophile about the oldest bottle they’ve drunk, and we’d put money on it being from Europe – Bordeaux, Burgundy, the Mosel, Alsace or Douro. Of course, one element is undoubtedly availability. The traditions of drinking Bordeaux (even from modest châteaux), for example, at full maturity – 20 or 30 years down the line – is not uncommon, and these wines continue to be regularly traded among collectors. New World wines at full maturity are much more of a rarity. Many of the younger regions in the New World still haven’t had the chance to build up such an extensive back catalogue, yet the wines have everything they need to comfortably age as long as their counterparts. Burgundy maestro Jean-Marie Fourrier, who now also manages Mornington Peninsula winery Bass Phillip in Australia, is an advocate for New World wines’ ageability, with Bass Phillip’s Pinot Noirs a case in point. But he believes the reputation for a shorter drinking window is partly due to practical, economic necessity. “When you start making wine at a young winery, you need a quick turn over, a quick return on investment,” he says. Therefore, producers craft wines that can be drunk younger. It is only once a winery, or a region, is established that winemakers can afford to have a longer-term approach and deliberately make wines to age or hold back stock. In this respect, the established classical regions of Europe have hundreds of years of history to fall back on. Napa has long since proved its mettle producing wines that can age. But just what it is that allows a wine to improve with age has been a hot topic of conversation in the region for decades. Tor Kenward – of Tor Wines – recollects a conversation between himself, Robert Mondavi and another legendary Napa winemaker, André Tchelistcheff over 40 years ago. Sitting around a table, they were trying to determine the key factor that makes great wine age. Was it the winemaking? The quality or concentration of the grapes? Or was it all about harvesting at the right time? Tchelistcheff – who trained in Europe and, by this time, had been making wine in Napa for over four decades – contemplated the suggestions. High acid levels (low pH), high concentration of tannins and oxygen management were all tabled and, while he accepted all were important, for him, a great wine for ageing needed “flesh”. By this, recalls Kenward, he meant the grapes needed a certain type of ripeness – not over, not under, but perfect physiological ripeness. Forty years on and Kenward still believes Tchelistcheff was right, yet it is an aspect often forgotten in the discussion of a wine’s ability to age. Finding this perfect window of physiological ripeness can be a challenge in warmer regions, and a warming climate, and therefore remains an obstacle for much of the New World. These regions tend to be warmer than historically marginal wine-growing regions of Europe, and therefore grapes can ripen quickly, but with this fast ripening comes a risk of reaching sugar ripeness before the skins have had the necessary time to reach maturity. Christian Moueix is one of the world’s most experienced winemakers, having managed both Pétrus, Trotanoy and other top Pomerol estates, as well as Napa’s Dominus. He agrees with Tchelistcheff that picking the grapes at optimum ripeness is a hugely important factor when producing wines that can age. “If harvested too early, grapes have a smaller quantity of extractible phenolic compounds and […] may not have formed the longer chains and bonds that make them stable.” On the other hand, when overripe, “These phenolic compounds are degraded through oxidation.” For Moueix, the temperate climates in Europe are ideal for “developing and maintaining a high ratio of phenolic compounds”, whereas in many New World regions, there is a propensity for excessive heat, over-ripeness and therefore oxidative winemaking which he feels is, “likely to contribute to wines that age prematurely”. In warmer climates, Moueix believes, “extreme heat, enzymatic and physiochemical reactions degrade anthocyanins within the berry, lowering the concentration of total phenolic compounds and subsequently, the wine’s capacity to resist oxidation, leading to premature aging”. For Moueix, then, a temperate climate (whether in the New or Old World) is key to producing wines that can age. It is, he believes, the reason why Dominus ages so well. This corner of the southern Napa Valley is relatively mild, thanks to the San Pablo Bay’s cooling influence. This slows sugar accumulation and gives the berries time for the tannins to ripen. They also don’t use irrigation, putting the vines under more stress, producing small berries with high phenolic concentration. Like Moueix and Tchelistcheff, Fourrier believes picking dates and high concentration of tannins is important – but he ties this to vine age, rather than the microclimate. “As vines get older, the size of the berries gets smaller,” explains Fourrier. It is this that gives a high skin-to-juice ratio and natural concentration. For Fourrier, this natural concentration is what gives ageing potential – rather than any actions in the winery. All are in agreement that the ageing ability of red wines comes down to the quality of the berries, rich in anthocyanins (ideally then from older vines) and picked at the right time in order to extract them at their optimal level of ripeness. But these factors affect Old World producers as much as those in the New World. Paul Roberts – Master Sommelier and COO of Colgin in Napa – makes a compelling point that New World regions in the right climate regularly produce higher concentrations of tannins than the Old World’s cooler climates. In fact, they have to pay close attention to extract less tannin during the winemaking, not more, to maintain the balance in the wine for it to age. Colgin’s mountainside IX Estate vineyard on Pritchard Hill produces berries that are, on average, 30% smaller than those grown in Pauillac. Often, Roberts notes, Napa Cabernets have higher skin-to-juice ratios than the Bordeaux First Growths – and therefore much more “anti-oxidant” tannins than their Bordeaux counterparts. According to Moueix’s belief that it is the concentration of tannins and phenolics found in the skins that protects wine from oxidation and degradation, this should mean that top Napa wines have the potential to outlive Bordeaux wines at the top level. Andy Smith, winemaker at the Russian River’s DuMOL estate, makes some of the region’s top Pinot Noir and, like Colgin, has no shortage of tannins in his grapes. Compared to Burgundy, his Pinot Noir has smaller berries, “with uncommonly thick skins that create huge natural power if you choose to extract fully”. For Smith, “this leads to a potential for powerful, deep wines with high structure for aging, and high natural acidity”. Like Colgin, it is an overabundance of tannins that is more of a concern at DuMOL. “The key is balancing the extraction,” says Smith, “to take the positive and leave behind the excessive elements from the skins.” For leading Chilean winemaker Francisco Baettig (Errazuriz, Seña and Chadwick) it is an excess of tannin, and an excess of extraction in some more ambitious wines, in the New World that has tainted its reputation for producing wines with long ageing ability. “There was an obsession for creating monster wines, with lots of extraction, trying to extract as much tannin as possible,” Baettig notes, looking back 10-15 years. Many producers in Bordeaux were doing the same at the time, but the different climates – the same elements highlighted by Roberts and Moueix for leading to higher concentrations of tannin – influence the tannin and extraction. “In Chile with higher intensity and higher levels of ripeness, the extraction happens much quicker,” he explains. This resulted in over-extraction – “wines that were rough, too tannic and did not age well”. For New World producers, better tannin management is clearly key to producing wines that can age. Producers like Tor, Colgin, DuMOL and Baettig all believe gentle extraction of tannin and reducing the wines’ contact with oxygen is fundamental for ageing. In cooler, less sunny European climates, it could be argued that in the past, due to the less easily extracted tannins, producers could get a way with being a lot less precise in their tannin management. With this in mind, Baettig notes the Old World might need to learn from the New World, how best to adapt their winemaking to the effects of climate change – and, in many ways, they already are. Vignerons are already looking back at sunny vintages such as 2005 and 2010 (with high levels of extractable tannins) and questioned some producers’ apparent over-extraction of tannins, adapting accordingly in years like 2019 and ’20. The transformation of grapes into wine is magical; the secondary transformation that can take place with maturity is possibly even more extraordinary. However, a wine with so much promise can disappoint if left too long – a frail, bitter example of its former self. It is no surprise that many drinkers choose to avoid such risks and savour wines in their more muscular youth. There is a cultural change too. DuMOL’s Smith notes that the average US consumer is not particularly interested in ageing their Pinot Noir and questions whether ageing wine is an outdated notion. In a society that favours immediate gratification, modern consumers are impatient and few have cellars in their homes. And the savoury flavours that come with maturity aren’t to everyone’s tastes. “There’s a big difference between positive evolution, plateau-ing and the gradual downward slope of oxidation,” he says. “All wine ultimately wants to become vinegar!” Because of this, some winemakers are deliberately pulling back from making wines that peak at 20 years, instead looking to produce wines that will appeal in youth and peak closer to 10 years, since that’s what their customers want. Even the most tannic red wines from the more traditional regions are these days much more approachable in their youth, something that just wasn’t possible just a few years ago (as noted by Lisa Perrotti-Brown MW). Making fine wine is an art – and especially so when it comes to building a wine for the future. Choosing the perfect moment to pick in the given climate, as well as the right style and level of extraction in the winery will determine a wine’s ageability – but only if the underlying quality of fruit is sufficiently high. With better winemaking equipment, we no longer need to wait for tannins to soften to enjoy even the best Bordeaux or Napa. Does that mean you can’t age it for a half-century? Or that it won’t improve over that period? Absolutely not. As much as they are "drink everyday" wines, they also have the magic power of putting a smile on everyone's face.  “Yet, for that really special wine, I plan on opening a bottle of Chambolle-Musigny Premier Cru Les Amoureuses 2001 from Domaine Jacques-Frédéric Mugnier. Chambolle-Musigny is among my favorite villages in Burgundy and the Amoureuses vineyard could easily make a case to be classified as Grand Cru. It combines the perfume, texture, elegance and persistence typical of the very best red Burgundy. The style of Domaine Mugnier is one of refinement and grace. And with 20-plus years’ age, it should be perfect for drinking now. Even though it will accompany a roast chicken, this wine is like a celebration and a meal in and of itself.”  2018 Klein Constantia Vin de Constance – chosen by Jeffrey Koren, Head of Wine at Marceline, London  “While it’s easy to open a perfunctory bottle of Port or Sauternes at the end of a Christmas meal, the oh-so-delicious Vin de Constance by Klein Constantia has become my go-to sweet wine for the festive period over the past few years. Steeped in history, Vin de Constance was famously a favourite of Napoleon and lauded by authors like Jane Austen and Baudelaire. These days, winemaker Matt Day has revived this legendary dessert wine to its former acclaim. It always offers wonderful notes of apricot, honey and spice. But most importantly, it’s balanced by refreshing acidity that is an absolute necessity after an indulgent holiday meal.”  Hauller Frères Pinot Gris La Chappelle Signature – chosen by Joséphine Duffau-Lagarrosse, Ch. Beauséjour   “Ludovic Hauller is a long-standing friend I met during my studies in Burgundy. I appreciate the precision that his family channels into the wines, and this cuvée showcases great finesse, with freshness and elegance, mirroring the granite terroir in which the vines grow. It’s a Pinot Gris of remarkable complexity, hailing from a plot that sits below the Chapelle Saint-Sébastien de Dambach-la-Ville. Ludovic introduced me to Alsatian wines, which I knew little of previously, and I love this cuvée. As for when, this is definitely the kind of bottle I would open in the days following Christmas, with my family, playing board games by the fire and putting the world to rights, patiently waiting for the New Year!”  2002 Champagne Salon, Giuseppe Mascarello’s 2017 Barolo Villero, Tiberio’s 2018 Colle Vota – chosen by Lorenza Sebasti, Castello di Ama  “As usual, this Christmas we will open a magnum of 2002 Champagne Salon. I remember we had the chance to buy a few magnums a long time ago as they were precisely the birth years of our children (1997, 1999 and 2002). Then I guess I will spoil everyone at home with a beautiful Barolo Giuseppe Mascarello Villero 2017 and Colle Vota Montepulciano d’Abruzzo 2018 from my dear friend Cristiana Tiberio. She makes very few bottles of this very elegant and vibrant wine, which is among my favourite reds.”  2021 La Morandina Moscato d’Asti – chosen by Donald Edwards, Head Sommelier at La Trompette, London  “Beyond the best white Burgundy I can lay my grubby mits on, I’ll be cracking the second bottle on a case of La Morandina’s 2021 Moscato d’Asti – part of a new festive tradition. Back when my wine appreciation was still protean, I heard a rumour that Moscato d’Asti – the sweet fizzy floral stuff that we sold in my Glasgow Oddbins – ages magnificently. Twenty or so years later, I’m the Head Sommelier at La Trompette, hosting a big Piedmont-themed wine lunch. Barolos and Barbarescos aplenty litter the room, but the wine that stops me in my tracks? A 2013 Moscato d’Asti from Giuseppe Vajra. It was phenomenal, still gleefully tasty, but now with a touch of extra weight, more waxy lime skin and late-evening summer flowers, heady in its bouquet. Here she was, my white whale, and, boy, she didn’t disappoint.  “Last December, visiting La Morandina in Asti, I asked whether they had anything with a bit of age and lo! a 15-year-old magnum appeared. My stars had aligned for a second time – the wine equally lovely, offering a bit more exotic spice, cardamom and coriander seed along with the sweet creamy lime zest. Crucially, this time I could see the germ of a plan. Each year, I would buy a cast of Moscato d’Asti, building a reserve of Moscato to steadily enjoy over the coming years. I’ll be the Christmas king of deliciously sweet floral fizz. So, on the morning of 25th, I’ll be twisting the top off the second bottle from last year’s case and smugly enjoying my Moscato and crumpet as I let my mind wander over the riches I’m preparing for the coming years.”  François Cotat Sancerre Le Mont Damné and Massican Gemina – chosen by Alex Sarovich, Founder and CEO of Own Rooted Hospitality  "As the oldest of five in a large Italian family, I've learned that selecting the perfect wine is an art form that requires careful consideration of both the food and the audience.
