Many believe Scotch blends are single malt whisky’s poor relation in price, quality and taste profile. In actuality, this could not be further from the truth. It takes great mastery to produce a blend. Some of the most exquisite single malts – that people pay handsomely for – are blended in perfect harmony by some of the most talented whisky makers in the world to create remarkable blended whiskies. And yet, this lesser label seemingly sticks to blended whisky – as it has for decades. The tide does, however, show signs of turning as more collectable and well-aged blended whiskies are appearing on the market. Few people know more about blended Scotch than Colin Scott and Dr Emma Walker. Scott held the title of Chivas Brothers Master Blender for 31 years and today, after a very short-lived retirement, produces superlative blends for remarkable spirits curators The Last Drop Distillers. Walker has also not long stepped into a new role, succeeding Dr Jim Beveridge as Johnnie Walker Master Blender. Dr Walker (no relation to Johnnie) and her trusty team of 12 highly skilled blenders preside over more than 10 million casks of whisky from 30 distilleries across the length and breath of Scotland to create all the Scotch in Diageo’s extensive portfolio. “Because it’s a blending operation, we just call it all blends,” Walker says – adding, with a chuckle, “just to confuse people.” The same team that looks after Diageo’s single malts looks after all its Scotch whisky, including the blends, new releases and highly collectable Cask of Distinction releases. At last count, there are 138 whisky distilleries in Scotland. Of these, 131 are malt distilleries and seven are grain, and Diageo by far and away owns the most at 30. It is Walker’s job to know these distilleries (28 malt and two grain) inside and out to produce all of Diageo’s Scotch whisky bottlings. “Our single malts are amazing. Our single grains are amazing. But so are the blended Scotch whiskies,” she says with unabashed excitement. Walker is three months into her new role at the helm of one of the world’s most formidable blending operations – and is clearly loving every minute, despite being “slightly terrified”. A chemist by trade, she is acutely aware of Johnnie Walker’s legacy as the world’s most foremost whisky blender and she carries this responsibility, that might weigh heavy on others, with a healthy dose of reverence and buckets of zeal. The ebullient Colin Scott has worked in the Scotch whisky industry for almost 50 years, blending some of the world’s most well-known and coveted whiskies for Chivas Brothers. There’s little he hasn’t seen and you sense he’s just as excited by the goings on today as he was as a young whippersnapper in the blending room half a century ago. “It’s interesting that everybody talks about [single] malts rather than blends,” Scott muses. “For the last 100 years, blends have actually dominated global sales – over 90% is blended Scotch and less than 10% is [single] malts.” Scott thinks the reason for this is simple: “People can understand a single malt because it comes from a single distillery. You can go to it, you can see it, you can touch it, and you can feel it. It’s a little bit more sexy than a blend because a blend has anything between three and a 100-plus whiskies in it.” But, what many fail to realise, according to Scott, is the skill required to create these blended whiskies – at all price points. “There is an art to blending. It’s quite a complicated art,” he says wistfully. And an ever-changing one at that. “A lot of people don’t understand that if you take a premium blend, it might have 50 whiskies in the blend one year, the next year it might have 60, the following year it might have 45, the next year might have 48 – so year on year, because of availability within the inventory, the actual number of whiskies in the blend will change. “And it is the art of the blender who brings and rebalances all of those flavours back so the taste experience remains consistent.” Walker picks up the point: “You take these individual great characters and you just bring them together. You’re not doing something that cheapens it. You’re not doing something where you’re trying to bulk things out, you’re trying to bring those different, individual characters together in the best way possible. You’re amplifying rather than cancelling each other out.” Walker is always trying to reach the golden ratio for the desired mouthfeel, texture, aroma, taste and length. When she achieves this, Walker says: “It’s just really exciting. To find these amazing individual things and bring them together, it’s heaven in a glass.” It takes years of experience and skill – passed down from one generation to the next – to achieve this divine state or you’d have to face the wrath of the loyal drinker who knows what should be in that bottle. “You’re always looking for that consistent quality,” Scott explains spiritedly. “Whether it’s standard, premium, super premium or ultra ultra premium. “Working at Chivas, you would use pretty much the same amount of time on a standard blend as a niche blend,” Scott says with great candour, “because you just don’t compromise on quality – it is not part of the game.” Scott has blended at all the levels during his career. His decision to join the Last Drop in 2021 was somewhat serendipitous. Scott and the late Last Drop co-founder Tom Jago were responsible for one of the most successful blends of all time: Chivas 18. The remarkable spirits curators have championed blended whisky since day dot. Founders Jago and long-time friend James Espey OBE initially set out to bottle single malts – because the demand was there at the higher end – but that all changed when the formidable duo were bewitched by a certain 1960 blended Scotch. This became the Last Drop’s inaugural release in 2008 and is said to have been the best whisky Jago ever tasted during his lifetime. Scott is the first to acknowledge that blended whiskies carrying an age statement are an easier sell than those without – his debut for the Last Drop was a very special 50-year-old signature blend. “If you’ve got an age on a product, people know exactly what they are dealing with,” he says matter-of-factly. While the Master Blender does feel there is a groundswell of appreciation for blended whiskies, helped by older bottlings and ever-increasing auction prices, he understands there is work to be done to remove this legacy inferiority association. “People have been drinking blends forever,” Scott explains. “But because it is usually the standard blend, they don’t really consider it special.” He continues: “Many think blends are inferior and the main reason for that was way back in the day, 30, 40, 50 years ago, people regarded grain whisky as an industrial spirit because a grain distillery, even today, makes 10 times the spirit than a malt whisky distillery makes. “Malt whisky distilleries are maybe now making 10 million or 20 million litres a year – the big ones – and a grain distillery produces over 100 million litres. I wouldn’t consider it a cheaper product, because once you have bought the cask and matured the product you’re pretty much talking the same value as a mature malt. “And this concept, that this ‘industrial’ grain spirit was added to the malt just to give volume in the actual blend is basically nonsense,” he says animatedly. Scott ardently believes grain whiskies have a very important role to play from a blender’s point of view because it has its own flavour and character. He explains: “When you taste the grain and add it with malts, it actually promotes and harmonises and brings those sort of heavier flavours of the malts together. “If you change the percentage of the grain in the blend, it will change the balance of the malts and the grains, and change the taste experience of the final blend. It’s not just a case of you just blend the malts and then add the grain for the sake of it to give you volume. You have to put it all together because if you don’t, you get a different product.” Walker seconds this. “Some of the best, most amazing [grain] whiskies I’ve got to try was when I was looking at making the John Walker 50-year-old Masters' Edition with Jim and Maureen and it was just phenomenal.” Her face lights up as she recalls that time and takes a moment to finish her train of thought. “Amazing, amazing grain whiskies,” she says with a smile. “And at those ages, when you taste them, they make your mouth water, they are so luscious, and fruity and it’s just astounding. But when you mix them together with these great individual casks of single malts, you have that lusciousness and that fruitiness but you also have these other flavours coming and mixing together.” A large part of Walker’s new role is extolling the virtues of all Scotch whiskies – grains, malts, blends, single malts and single casks – to the world. A lack of in-person events, which are slowly starting to pepper the calendar again, have presented an additional challenge but you’d be foolish to think anything can stop the new Johnnie Walker Master Blender from spreading the gospel. For Scott, it’s a case of once tasted, never forgotten. “I always feel like a great blend is the blend that has huge complexity but there is no individual flavour or character that dominates from the nose to taste to finish,” Scott tells me. “You take a sip and you smile and you put it down and it just invites you to have another one. Because you think wow, that is something I must taste it again.” With more remarkable blended whiskies to be found than ever before, you feel it won’t be long before the rest of the world is singing from the same hymn sheet. La vendemmia 2022 è stata la seconda consecutiva caratterizzata dalla siccità. Nel suo primo sguardo sull’annata, Walter Speller (jancisrobinson.com) ha sottolineato come l’inverno abbia offerto poca o nessuna neve – e quindi scarsissimo scioglimento nevoso. Mentre le forti piogge spesso defluiscono dai pendii, il lento scioglimento della neve viene più facilmente assorbito dai terreni, il che significa che nel 2022 le già ridotte riserve idriche (dopo la stagione di crescita secca del 2021) non sono state reintegrate. 
 Il clima secco è proseguito in primavera e a fine maggio le temperature hanno iniziato a salire. La fioritura è avvenuta precocemente (circa 10 giorni in anticipo rispetto alla media). Luglio è diventato più caldo e secco, e i produttori hanno prestato attenzione alla gestione delle chiome per evitare possibili danni da sole. La scarsità d’acqua ha prodotto acini e grappoli piccoli, con un alto rapporto buccia-polpa, ma la principale preoccupazione legata allo stress idrico era che potesse bloccare la maturazione – in particolare quella fenolica. Grazie alle condizioni calde e costanti, la vendemmia è iniziata in anticipo, con tutto il Nebbiolo raccolto entro i primi di ottobre – i produttori puntavano a preservare gli aromi e la freschezza durante il caldo. In assenza di pioggia, la pressione da malattie è stata minima, ma la selezione degli acini è rimasta importante per evitare frutti raggrinziti o scottati dal sole. Infatti, ai Produttori del Barbaresco, Aldo Vacca ha dichiarato di aver perso circa il 10% tramite selezione, mentre con acini piccoli e selezione, Dave Fletcher (Fletcher Wines) ha avuto tra il 20 e il 30% in meno rispetto a un anno normale. 
 Per avere successo nell’annata, i produttori hanno dovuto preservare l’acidità e gestire i tannini potenzialmente eccessivi derivanti dai piccoli grappoli prodotti, oltre a scartare eventuale frutta danneggiata dal sole. 
 Da Burlotto, Fabio Alessandria ci ha detto che il 2022 è stato “qualcosa mai visto” – una stagione di crescita atipica, senza paragoni con le precedenti. Con condizioni calde, secche e basse rese, si aspettavano vini grandi, ricchi e tannici – ma sono rimasti sorpresi dalla loro gradevole accessibilità. Non è una vendemmia classica o eccezionale secondo lui, ma offre grande piacere. Analogamente, Nicola Oberto (Trediberri) ritiene che i vini non riflettano l’intensità delle condizioni dell’anno. Pochi critici hanno recensito l’annata finora, sebbene vi sia un chiaro consenso sul fatto che non si tratti di una vendemmia straordinaria, collocandosi dietro il 2021, con vini più fruttati ma comunque accessibili. Antonio Galloni di Vinous è rimasto piacevolmente sorpreso dai vini fino ad ora. Sottolinea che la gestione della resa è stata fondamentale, assicurando che il carico di frutti fosse sufficiente per permettere alla vite di maturare correttamente. Nonostante il rischio di maturazione fenolica insufficiente, ha trovato i vini più morbidi del previsto, con generalmente meno uso di legno, producendo vini che offriranno “bevibilità da breve a medio termine”, se non grande longevità. Non è mancato l’hype attorno alla vendemmia 2021 – un anno che produttori e critici hanno lodato come uno dei migliori della storia recente, spesso paragonandolo al 2016 o al 2019. Ma soddisfa davvero queste altissime aspettative? L’inverno precedente è stato fondamentale – mite e piovoso, ha ricaricato le riserve idriche nei suoli, una risorsa essenziale di cui le viti avrebbero potuto disporre più avanti nella stagione. La stagione vegetativa non è iniziata troppo presto e, sebbene ci sia stato un calo di temperature a inizio aprile (un rischio per i Nebbiolo a germogliamento precoce), i danni da gelo sono stati limitati. I rapporti indicano che le zone a bassa quota sono state le più colpite, ma le perdite si sono aggirate solo intorno al 10% – e alcuni produttori le hanno considerate una forma naturale di diradamento verde. Dopo questa minaccia iniziale per la raccolta, la fine di aprile e maggio sono stati mesi freschi e piovosi, ma poi il clima è stato in gran parte caldo e secco fino alla vendemmia. Le temperature non sono state eccessive, fatta eccezione per una breve ondata di calore all’inizio di agosto, ma le riserve idriche sono state fondamentali per permettere alle viti di sopravvivere nelle condizioni di siccità. Il winemaker di Vietti, Eugenio Palumbo, ha spiegato che hanno ricevuto circa 400 mm di pioggia durante la stagione, rispetto ai 600-700 mm di un anno normale. All’inizio di luglio la regione è stata colpita da temporali con un po’ di grandine – sebbene localizzata, ha interessato Roero, Monferrato e alcune zone di Barolo. Le condizioni secche hanno mantenuto bassa la pressione delle malattie. A settembre è caduta qualche pioggia, aiutando le viti a completare il ciclo, mentre le temperature notturne sono scese – fornendo un ampio escursione termica che ha contribuito a preservare aromi e freschezza durante lo sviluppo della maturità fenolica dei frutti. La vendemmia è iniziata alla fine di settembre (Philine Isabelle Dienger è stata tra le prime il 29), proseguendo fino a metà ottobre, con tutto il Nebbiolo raccolto entro la terza settimana del mese. Aldo Vacca dei Produttori del Barbaresco e il team Gaja hanno entrambi paragonato la vendemmia al 2016 – sottolineandone lo stile classico. La lunga stagione vegetativa ha permesso vini strutturati con tannini maturi, mentre le notti fresche prima della vendemmia hanno preservato tensione e aromi. Non tutti sono d’accordo sul suo classicismo; per Dave Fletcher (Fletcher Wines) è una vendemmia con struttura, profondità e densità straordinarie, ma lontana dall’essere tipica. Valentina Grasso di Ca’ del Baio ha spiegato quanto i vini siano chiusi e fruttati scuri rispetto al 2016, necessitando tempo per rivelare la loro complessità. Allo stesso modo, Nicola Oberto di Trediberri ha sottolineato come – sebbene molti produttori di Monforte d’Alba pensassero fosse una vendemmia perfetta per il comune – lo stile potente dell’anno non si adattasse necessariamente a loro, preferendo la purezza di un anno come il 2022. Philine Isabelle Dienger ha osservato come le condizioni calde e secche siano state uno shock per le viti dopo il 2018, 2019 e 2020, e come le fermentazioni siano state difficili da gestire, lente. Alcuni hanno notato che è stato un anno difficile per usare lieviti indigeni, e molti hanno optato per lieviti selezionati per garantire fermentazioni pulite. Per Fabio Alessandria di Burlotto, le condizioni calde e secche hanno fornito lo stress giusto alle piante, ed è molto soddisfatto della qualità dei vini 2021 – strutturati, con buona densità e concentrazione, pur mantenendo equilibrio, forse simili al Borgogna 2019. I vini avranno sicuramente bisogno di tempo, dice, ma la vendemmia premierà chi saprà aspettare. La maggior parte dei critici non ha ancora espresso un giudizio completo sulla vendemmia, sebbene Kerin O’Keefe abbia scritto in un primo sguardo all’anno che, sebbene sia stata “una vendemmia difficile”, i migliori vini sono “stupefacenti, capaci di invecchiare”, combinando “l’austerità del 2019 con l’eleganza del 2016”. Riprendendo Alessandria, ritiene che i vini avranno bisogno di un decennio per esprimersi al meglio. Per jancisrobinson.com, Walter Speller era inizialmente cauto sull’anno “enigmatico”, chiedendosi se fosse davvero così buono come si diceva, ma ora lo considera “un’eccellente vendemmia”, offrendo “più corpo e profondità del 2019, assolutamente affascinante e facilmente accessibile”. Antonio Galloni (Vinous) ha pubblicato il suo report e – sebbene non presenti “picchi stratosferici come gli anni più eccezionali”, ci sono “numerosi vini straordinari”. I 2021 sono “vini eleganti e raffinati che delizieranno gli appassionati del Piemonte”, con “aromi aperti, frutto flessibile e tannini maturi e raffinati” – e i migliori, dice, sono “profondamente espressivi”. Peat in whisky is divisive – both in terms of its intense flavour profile, but also its sustainability. It has long been used in Scotch whisky, adding complexity to the region’s spirits, but has – over the last two decades – been thrust into the limelight.  Essentially, peat is baby coal – decomposed organic matter, in particular sphagnum moss, that takes thousands of years to form. Historically, these peatlands – wetlands such as bogs and fens – were used for fuel, especially where other energy sources weren’t readily available. Slabs of peat, cut out of the ground and left to dry, were burnt, valued for their ability to (like coal) smoulder steadily. Peat would have originally been used to heat pot stills, giving off intensely scented smoke that distillers eventually looked to capture.  Today, energy sources are largely more sustainable, and peat is used in significantly smaller volumes in the kilning process. After the barley has been malted, it is kilned (essentially dried). For peated whiskies, this is done (at least in part) over a peat-fed fire, so that the barley picks up the flavours from the smoke. This barley is then milled, mashed, fermented and distilled to produce the whisky, with the peat smoke lending flavours that range from soot, smoke and asphalt to seaweed and iodine.   Peatlands have been put in the spotlight with climate change, given their incredible capacity to hold carbon – and release it. As a NatureScot report (2023) states, “Although peatlands cover less than 3% of the world’s surface, it is estimated that they store double the amount of carbon held in global forest biomass and more than 30% of the total global soil carbon store (Bonn et al., 2016). Peatlands make up some 9.5% of the UK’s land area with an estimated carbon store of over 3,200 million tonnes, of which 1,600 million tonnes are estimated to be in Scotland (Bonn et al., 2016).” But while they have an impressive ability to lock away carbon, once peatlands are damaged they release some of that carbon – and the same report estimates that degraded peatlands account for circa 13% of Scotland’s carbon emissions. (It’s worth noting that the same institution – then known as Scottish National Heritage – came under fire in 2020 for its agreement with Diageo, allowing for unlimited peat extraction on Islay.)  Peat accumulates at a mere 1mm a year, so it’s easy to see why peat extraction is a hot topic. Protecting and restoring Scotland’s peatlands are firmly on the national agenda, and in 2020, the Scottish government announced £20 million earmarked for restoration, with a commitment to invest more than £250 million by 2030. Unsurprisingly, it’s put Scotch whisky’s use of peat under the magnifying glass. In reality, a fraction (just 1%) of Scotland’s peat goes to the spirits industry – with horticulture the main culprit.  As Bruichladdich’s Head Distiller Adam Hannett says, however, it has provided “a great lens to look at what we’re doing with peatlands”. For him, “It’s about responsible extraction.” Bruichladdich’s production director is also looking at restoration projects with local farmers. In 2021, two giants of the industry announced significant projects – one from Diageo’s Johnnie Walker, partnering with the RSPB to repair wetlands, and a more ambitious pledge from Beam Suntory, with its Peatland Water Sanctuary Initiative. The project aims to restore twice the volume that the company harvests for use in whisky production, with $4 million invested by 2040. Some producers – such as Nc’nean – have sworn off peat totally, while others are moderating usage, or looking for alternatives.   In Sweden – where peatlands represent up to 20% of the entire land area, Mackmyra’s Blender Lii Johnson explains how there is strict regulation around their usage. They are one of a growing number of producers looking to use peat as another way to explore their terroir. As few producers malt and kiln their own barley today, often this is shipped from Scotland (in turn adding to distilleries’ carbon footprints). At Mackmyra, they instead use Karinmossen – local peat, harvested around 40km south of the distillery – seasoned with juniper twigs. She estimates they use a mere 0.1% of the peat bog, bringing in around 30 cubic metres per year.  Johnson feels that it is the juniper in the Karinmossen, along with the small twigs they add (picked from the woods around the distillery), which give a light citrus, almost medicinal note to their peated malts. In Seattle, Westland has pioneered using local peat, and a process with a backhoe to keep the bog intact and limit their carbon footprint. Co-Founder and Managing Director Matthew Hofmann feels the local peat brings Mezcal-like aromas to their peated whisky, Solum.   This quest for sustainability, combined with emphasis on the concept of terroir in whisky, has had interesting results at distilleries around the world. In Minnesota, Brother Justus sources peat from the Boreal Forest and has trademarked a cold-peating process to produce more delicate aromas. Tasmanian distillery Lark looks to Browns Marsh for its peat (around one cubic metre a year) and has had the International Mire Conservation Group confirm that it is having zero impact on the marsh. Others are looking to use alternatives – New Zealand’s Thomson Whisky uses manuka, while Archie Rose has looked to Australian hardwoods and, perhaps most distinctively, Iceland’s Eimverk sources sheep dung from local farms in lieu of peat.  As we’ve touched on, however, it’s not just what is used to peat malt – but how it’s used, that impacts the flavour of the final whisky. “Duration, in my opinion, is the key,” says Mackmyra’s Johnson, emphasising that it is how long the barley spends in contact with the peat smoke that influences the level of peatiness, while it is only the type of peat (or peat alternative) that will effect the nature of the peat flavour. She explains how whether the barley is peated pre- or post-break is also important: it’s most common to do pre-break, as if it is done post-break, when the barley is largely dry on the surface, it doesn’t pick up phenols – the compounds that produce peat’s smoky flavours. For Mackmyra’s peated barley, it is kilned for one day with peat and then for a second day just with hot air.  There are other factors too however – with fermentation times and cuts often a focus. While longer ferments are generally thought to engender complexity, shorter ferments preserve phenols. There are three factions to a still run – the foreshots, heart and feints. The foreshots and feints, the liquid that runs off first and last, are generally discarded, and the cuts between these determine the character of the heart. Phenols generally come late in the distillation process, so later cuts can be preferential when looking for peat character. For Mackmyra’s Extra Rok 2.0 – an extra-peated malt, they do shorter ferments and a later cut, to preserve the phenols.   It's become fashionable to talk about “ppm” in peated whisky – parts per million (perhaps familiar to wine lovers as the same term that is used for sulphur levels), to measure the level of total phenolic compounds. It’s perhaps unsurprising that the compounds are the same as those for smoke taint, including guaiacol and 4-methylguaiacol, for example, but while in the world of wine these are avoided, distillers of peated whiskies have competed to produce the spirit with the highest. This race to make the peatiest whisky possible was arguably inspired by Compass Box’s Peat Monster (first produced in 2003), building to and culminating with Bruichladdich’s Octomore 8.3 (released in 2017) – a whisky with a remarkable 309ppm, the highest level measured to date (compare this to the first Octomore release which had 131ppm). In this frenzied period, Ardbeg’s Dr Bill Lumsden even buried a barrel of peated whisky in a peat bog (which was released as an NFT in 2022, Ardbeg Fon Fhòid). But while one number is an easy way for whisky drinkers to grasp how peaty a spirit is, not everyone believes it’s helpful.  “We don’t like to talk about those numbers,” says Johnson. She explains how ppms are somewhat farcical, in her view. When the reading is taken varies from distillery to distillery, and therefore provides something that is almost impossible to compare. While most are taken at the mashbill stage, if you are later blending, it’s an estimate at best. Not only that, but the make-up of the phenolic compounds will influence how peaty one 100ppm whisky is versus another 100ppm whisky. For Mackmyra, their pure peated malt sits at around 300ppm, but the mashbill for their peated and extra peated whiskies are respectively around 70 and 140ppm, Johnson reluctantly tells me. The level of phenols can also vary significantly between batches of barley – and at Mackmyra they aim to combat this by doing one kilning a year, distilling all their peated whisky at once and blending the batches to create a consistent product.  It's almost for this exact reason that Bruichladdich created Octomore, Head Distiller Adam Hannett explains. The project’s numbered releases have significantly different levels of peatiness, and were a project inspired by their curiosity to see how far they could push the peat level, as well as their partnership with Bairds maltings, who had batches of barley with irregular phenol numbers.   Although peat is intrinsically associated with Islay’s malts, things aren’t as clear-cut today – and as Hannett says, “You can’t categorise flavour by region”. Islay-based Bruichladdich produces both peated and unpeated whiskies. Originally the distillery made heavily peated malts, switching to unpeated styles in the 1960s, and today makes both. Its Port Charlotte brand was first conceived to capture what Bruichladdich would have been like in the old days, as a heavily peated malt. Intriguingly, Bruichladdich briefly tried using Islay peat, however found that they couldn’t get the phenol levels as high. Hannett highlights that another element in phenol levels is the depth the peat is cut from – with lower levels having more vegetation and therefore more phenols.  For Bruichladdich, when they’re looking for an overtly peated spirit, the quality of the underlying spirit is key – working with the right barley and fermentation times, for example. While peated malts might be thought of as heavy, oily and medicinal, they try to avoid this character. He deliberately won’t delay making a cut in the name of phenols, with that decision based on quality – and the result, he feels, is that, “The essence of the peat smoke is light – it’s barbecued.” For him, it’s about the balance between the peat character and everything else.  For blending specialists, House of Hazelwood, peated whisky “is a tool in our arsenal we can use to build a complex blend”, says Eilidh Muir from their Whisky Blending Team. She emphasises that using peat doesn’t necessarily equate to a smoky whisky, but can contribute something to a blend that is much harder to pin down – but something you’d notice if it wasn’t there. “A whisky dominated by a single flavour is often too one-dimensional,” she says – they too are looking for that fine balance.  Peat is just one element that can be used to shape a spirit – and there remains a certain amount of mystery to its influence. The sustainability question isn’t going away, but – as Bruichladdich’s Hannett says, “I don’t know what the solution is at the moment… but we’re looking for one.” As producers look for an answer, they’re pushing boundaries – experimenting with local sources and alternatives – something that will only benefit whisky-lovers, and the environment.  Browse a range of peated whisky or read more about spirits

The big smoke: peat and whisky

Dalmore, Mortlach and Macallan fetch tens of thousands of pounds at auction today – but they likely wouldn’t exist if it wasn’t for an independent bottler. In times of great economic hardship, Gordon & MacPhail provided cash-strapped distilleries with much-needed capital when they secured new-make spirit to mature and bottle as a single malt, rather than a blend. “The world was so focused on blends in the 1970s that to get the financial return on the malts was really challenging,” Gordon & MacPhail’s Director of Prestige Stephen Rankin says. To put that into perspective, a bottle of 35-year-old Macallan from 1937 that would fetch approximately £32,000 in today’s market would sell for a mere £4.54 then. A top-end blend might sell for £2. Rankin says if it wasn’t for his forebears’ patience and foresight, 50-, 60-, and 70-year-old bottlings wouldn’t be available today. “It’s not just matching spirit with oak,” he explains. “It’s actually matching the spirit with the oak and then time and the patience.”   The Gordon & MacPhail name has endured where countless others have not. Today, the fourth generation can pull out samples dating back nine decades from more than 100 distilleries. “It’s that lineage that stands us apart,” Rankin says. “As a company we have had this incredible respect for whisky and depth of relationships forged from 1895.”   “Business was done on the strength of a handshake when my father started the company in the 1940s,” Fred Hamilton Laing – Douglas Laing & Co Chairman and second-generation family member – says. “And so many of our filling programmes still continue today because there was a trust given and a confidence that there would be no abuse of the stock.” If it wasn’t for the “fairly substantial” stocks Laing’s father had built up since the 1950s then the Scottish independent blenders and bottlers might not have survived the 1990s financial crash in Asia Pacific. “All of a sudden our blended business was made very difficult to continue. We were constantly adding to our stocks of grain and malt whisky for these blends, so it was a survival instinct that took us into the single cask business in the year 2000.” This business proved to be “very good” and steadied the ship. Laing says it was with great delight the company was able to come back into the blending business with Big Peat in 2009, much to the dismay of the “crusty old men in the industry”. This launch, looking at younger, slightly more rebellious whisky consumers heralded a new era for the company and brought them full circle. It was the filling programme’s breadth of stock and the relationships with the distilleries that allowed Douglas Laing to carry out the same process for Big Peat and Scallywag into the Scottish Highlands for Timorous Beastie, into the Lowlands with the Epicurean, into the Campbeltown area with the Gauldrons, onto the Island distilleries with Rock Island and introduce the Remarkable Regional Malts. “It’s a busy game,” Laing adds.  Fledgling in comparison, That Boutique-y Whisky Company stormed onto the independent bottling scene in 2012 with their 50cl illustrated bottles. “We are all about throwing fun back into whisky,” Head of Whisky Sam Simmons says. “We take the whisky very seriously, but we don’t take ourselves seriously.” The goal here is simple: curate delicious whiskies you would never see from an official bottling. This disruptive attitude has led to a cult-like following which Simmons readily acknowledges “doesn’t speak to everybody”. The Boutique-y whiskies might originate from around the world, but they are all bottled in the Scottish tradition – bought direct from the distiller or from brokers and other independent bottlers. The retail price is always calculated from the cost of the liquid rather than market value or cost. “The kind of whiskies we want to bottle may not be delicious to everybody, but they are the kind of whiskies that make you say: you got to try this,” Simmons adds. When it comes to bottling exquisite liquids, few ventures are as compelling as “curators of the most remarkable spirits”, The Last Drop Distillers. “I really love the word remarkable,” Managing Director Rebecca Jago says with a smile. “Because it is not saying it is the oldest or the best even, but that it is intrinsically delicious. If I gave you a glass of something from The Last Drop, I would want you to find it as delightful as someone who has been nosing spirits for 50 years.” The company started by Rebecca’s father Tom and his long-term friend James Espey OBE in 2008 is somewhat unique in that it crosses category. The two drinks industry icons initially set out to bottle single malts, but that all changed when they tasted a certain 47-year-old blended Scotch. From that day onwards, the two men – who had previously developed the likes of Johnnie Walker Blue Label and Chivas 18 – broadened their brief to seek out exceptional old parcels of any amazing spirit. By the time the company was sold to Sazerac in 2016, The Last Drop had released seven remarkable liquids and both Espey and Jago’s daughters (Beanie Geraedts-Espey and Rebecca Jago) had joined the business. In addition to being a source of great pride for the two founders, the acquisition also brought new freedoms and opportunities for the team. The US drinks group backing enabled The Last Drop to source stock for immediate release, granted them a greater ability to lay down stock and create their own libraries of future stock, and gave them the opportunity to venture into liquid creation. “I think finding treasure is not just about uncovering it,” Jago says. “It would be disingenuous to suggest that we’re Indiana Jones in Scotland, going and hunting out that barrel that is hidden at the back of the cellar because it is not,” Jago says. As romantic as the image might be, every single barrel of Scotch whisky of any age, of any sort, is known about by HMRC.  “We can talk about some of the lovely discoveries that we have genuinely been party to,” Jago adds. “Going back to the very first release of three unassuming barrels of an old blend. The treasure in that was the liquid inside. It had perhaps been discounted or forgotten about.” Or the “genuine discovery” of a Cognac barrel that had been lying untouched in an outhouse for over 70 years that was happened upon by a family member doing renovation work at the distillery. “I think that is the sort of ultimate Indiana Jones story,” Jago adds, “not by us, but we were fortunate enough to be there and I suppose our story of making the liquid the hero is sufficiently compelling that they are prepared to let us put it in a bottle.” All four bottlers, whether in their infancy or maturity, are bound by a sense of honour and wanting to do right by the liquid. And everyone benefits.   Browse all Scotch whisky or read more Editorial

The 2019 vintage in Montalcino has been hotly anticipated – following on from two trickier years, 2017 and 2018 (although we found the latter to offer some very elegant wines), it’s a year that seemed set to receive critical acclaim to match the lauded 2016.  A wet winter replenished water reserves, with a damp spring and warm, dry summer. There were no serious extremes in the conditions, with rain showers arriving in September allowing for a harvest of juicy berries, with little disease pressure, from the middle of the month, finishing in early October. It delivered both quality and quantity, and from what we’ve tasted the wines are extremely impressive – combining power and elegance, offering approachable yet clearly age-worthy styles with effortless balance.  Vinous – Antonio Galloni  For Antonio Galloni, one of the defining features of the 2019 vintage is its consistency: “The entire region excelled, from southwest to east and northeast to west. Frankly stated, finding a 2019 that doesn’t show remarkable balance, vivid fruit and freshness is a difficult task,” he writes.   The stress-free growing season produced wines of “utter harmony”, “a blending of power and elegance in a way seldom seen”. He explains that many producers describe the wines as “crunchy”, something he feels is apt, and compares the wines to the 2016s, but with more energy and the aforementioned crunchy tannins. “This is a vintage of radiance and appeal,” he says of 2019, a vintage with wines that are aromatically expressive, offer sense of place and typicity – often earning descriptors such as “classic, racy, cool-toned, crunchy and sleek”, as well as being built for the cellar (maturing over the next 10-15 years or more). It is, he writes, “the vintage we’ve all been waiting for”.  He emphasises that it isn’t just the 2019s that are so enticing, but that the “high-energy and fruit-forward” 2021 Rossos that make for “an embarrassment of riches” with the current releases. The 2021 Rossos offer “charming, wildly aromatic, drink-me-now personalities” – and are, he says “an excellent choice for collectors”, he suggests, providing “open drinking windows and gobs of pleasure” while the 2019s mature in the cellar.  Antonio Galloni’s top 2019s: Canalicchio di Sopra Vigna La Casaccia, Il Marroneto Madonna delle Grazie, Le Potazzine, Pian dell’Orino Bassolino di Sopra, Valdicava Vigna Montosoli, Mastrojanni Vigna Schiena d’Asino, Canalicchio di Sopra Vigna Montosoli, Baricci, Le Ragnaie Casanovina Montosoli, Argiano Vigna del Suolo, Altesino Vigna Montosoli  Explore Antonio Galloni’s full report, notes and scores on Vinous (subscribers only)   Wine Advocate – Monica Larner  “Now is the time to take a closer look at this storied Tuscan appellation,” advises Monica Larner – who is clearly excited by the quality of the 2019 vintage in Montalcino.   For Larner, 2019 offers “good balance between acidity, concentration and tannins” – with the latter more elegant than those of the 2018s. The wines are concentrated and weighty, yet balanced and elegant, and therefore remind her of 2007 or 2015. As other critics note, the wines are likely to be approachable in youth yet have the acidity and structure to age. The season was “uniformly easy” in both the vineyard and winery, and she highlights the large number of wines scoring between 97 and 99 points.  While both Kerin O’Keefe and Antonio Galloni feel 2019 has the edge on 2016, Larner believes that “2016 remains superior in my view in terms of elegance and longevity”, although 2019 “ranks close”. For her, one of the reasons the vintage feels so significant is that it marks the beginning of what she perceives as a “new wave” for Montalcino, with a group of producers pushing quality forward, inspired by Burgundy and Barolo to make wines with “vibrant flavors, light and energy”.  Monica Larner’s top 2019s: Le Ragnaie V. She was the Italian Editor for Wine Enthusiast for almost a decade, before she set up her own platform, however she is perhaps best known for her most recent book, Barolo and Barbaresco: The King and Queen of Italian Wine, and also wrote a book on Brunello di Montalcino in 2012.  For O’Keefe, the 2019 vintage is clearly an excellent year for Montalcino. “I’ve never tasted so many drop-dead-gorgeous young Brunellos from a single vintage,” she writes. It “has definitely lived up to its lofty reputation” and “the 2019s are overall even better than the 2016s”, she says. The wines combine “intensity, exuberance and great fruit as well as balance”, with many estates making their best wines ever. The growing season was “ideal”, and most 2019s offer “vital energy and refined tannins that allow the wines to showcase their [terroir]”.  Of course, while “it’s hard to find any defects with the 2019s”, there are of course some “more densely concentrated wines with generous alcohol levels”. Most, however, are “incredibly fragrant”, “full-bodied”, with “great energy” and “taut but refined tannins”, with the best combining body and finesse. She anticipates the wines ageing beautifully over the next 20 or so years.  Kerin O’Keefe’s top 2019s: Conti Constanti, L’Aietta, Le Chiuse, Ciacci Piccolomini d’Aragona Pianrosso, Gianni Brunelli, Canalicchio di Sopra, Gorelli, La Gerla, Lisini, Mastrojanni Vigna Loreto, Podere Le Ripi Cielo d’Ulisse, Salicutti Sorgente, Talenti Piero, Ciacci Piccolomini d’Aragona  Explore Kerin O’Keefe’s full report, notes and scores on her site (subscribers only)  jancisrobinson.com – Walter Speller  The comparison between 2016 and 2019 continues in Walter Speller’s report and he highlights how divided producers are on which is better. All agree, however, that 2019 provided a growing season without extremes – something “which has become the definition of a great year”.  He draws comparisons between 2004 (which offered quantity and quality), as well as 2015. “I’m not entirely convinced 2019 has the same pedigree as 2016,” Speller writes. While there are some outstanding wines, he feels there are wines with stubborn tannins – and he doesn’t find it as consistent as other critics, but rather confirms that the best producers make fantastic wines year in, year out. V., Sesti, Fuligni  Explore Walter Speller’s full report, notes and scores on jancisrobinson.com (subscribers only)   James Suckling  James Suckling remarks that, as a growing season, 2019 was “a throwback to the late 1990s”, echoing other critics in saying that producers found it an easy year with no major challenges in the vineyard and winery. “I loved them,” he writes of the wines, enjoying a “crunchy and pure fruit character” in many. His two 100-point wines (Casanova di Neri Giovanni Neri and Valdicava Vigna Montosoli) have “incredible clarity of fruit and fine tannins as well as a transparency that takes them to their unique soils and locations on the hillsides surrounding Montalcino”.  Suckling also highlights how there is decreasing emphasis on new barriques, with old oak and larger casks increasingly favoured by producers in the region, as well as a growing number of single-site wines.  While he notes that producers compare the year to 2010, 2015 and 2016 (or some combination of those years), for him they are closest to 2004, 1997 or 1998 – having a “neoclassical character” thanks to their “agility and harmony”, and recommends giving them three to five years in bottle “to come into their own”. She reports that 2019 wines are “exceptional and offer consistent greatness across the region”. She compares the wines to those of 2015 for their depth and concentration, 2016 for the vibrancy and tension, and 2010, saying that they offer “outstanding freshness, incredible balance of richness, and a great deal of complexity”. No matter your tastes, there is, she says “something for everyone regardless of style”. The easy growing season, with no major heat spikes or challenges, has resulted in a vintage that is defined by its “completeness” and advises “collectors are going to want to snatch up top bottles from across the region”. She highlights Poggio di Sotto and Il Marroneto Madonna delle Grazie in particular, identifying them as two, contrasting wines that “highlight the incredible potential of this vintage”. Il cavallo grigio allunga il collo verso di me, arricciando il labbro verso il palmo teso, prima di frugare nella mia tasca, alla ricerca forse di uno spuntino. La sua testa è grande quanto il mio busto, gli zoccoli quanto la mia testa, e l’intero, splendido animale pesa circa una tonnellata, mi dicono. Si percepisce la potenza della sua immensa massa muscolosa. Poco distante, Adelaide Bonnefond, una minuta ventenne, sta chiamando il resto della sua troupe di giganti amichevoli. Balthazar – il grigio di cui sopra – è “un vero pigroncello”, Baudoin può essere un po’ veloce e troppo impaziente, mentre Olive è un cavallo di straordinaria pazienza. “Ognuno ha il proprio carattere,” dice Bonnefond. 
 Siamo in un campo a due passi dallo Ch. Pontet-Canet, dove i 10 cavalli della proprietà trascorrono weekend e vacanze. Questo Fifth Growth di Pauillac è una delle poche tenute nella regione e, in effetti, nel mondo, ad aver ripreso a usare i cavalli in vigna – al posto della moderna meccanizzazione. In modo insolito, hanno internalizzato l’operazione – con scuderie proprie e una squadra di cinque persone dedicata alla cura, gestione e lavoro con i cavalli, guidata da Bonnefond. 
 “Non ne ho idea,” dice Mathieu Bessonet – Direttore Tecnico della proprietà – quando gli chiedo quanto incida sui loro conti. “Per noi non è importante… è una filosofia.” Gli erbicidi sono stati banditi da tempo nella tenuta, e praticano agricoltura biologica dal 2004, certificati biologici e biodinamici dal 2010 (il primo Cru Classé a ottenere quest’ultima), con i cavalli introdotti per la prima volta nel 2008. Sono solo una delle forme di bestiame che troverete nella proprietà. Quando arrivo, un branco di maiali è recintato sul prato antistante, incaricato di sgranocchiare l’erba infestante gramigna comune – ma ci sono anche bovini e asini. Nel complesso, consumano 60 tonnellate di fieno, tre tonnellate di orzo e 600 chili di erba medica (ovviamente biologica) – gran parte dei quali finirà di nuovo tra i filari. “Tanti soldi vengono investiti per prenderci cura di questo luogo – che è in realtà il nostro strumento di produzione,” dice Bessonet. “La proprietà ha oltre 300 anni, quindi noi siamo solo di passaggio. Se resto qui 20 anni, è tanto – ma è solo il 3% della storia di Pontet-Canet. Dobbiamo prenderci cura di questo posto per poterlo tramandare.” E lavorare con i cavalli è solo uno dei modi con cui mirano a farlo, riducendo il compattamento del suolo e permettendo a acqua, aria e microrganismi di muoversi nel terreno. Possono essere più precisi nel lavoro e – soprattutto – rompere meno viti. Un numero impressionante di viti viene spostato o danneggiato dai trattori, qualcosa che è considerato una naturale conseguenza dell’agricoltura moderna – ma non da questa tenuta, che non è disposta ad accettarlo. 
 “Il vino, lo fanno le radici delle viti,” dice Bessonet. Con l’età, le radici sprofondano sempre più nel terreno e Pontet-Canet ha alcuni dei vigneti più vecchi del Médoc, con un’età media di 55 anni. Ed è l’età delle loro viti, ritiene Bessonet, che “ci permette di esprimere il terroir”, oltre ad attenuare gli estremi climatici (una preoccupazione crescente con il cambiamento climatico). Sebbene non fosse un motivo chiave per il cambiamento nel 2008, l’uso dei cavalli consente anche di ridurre l’impronta di carbonio – sia utilizzando meno combustibili fossili sia aumentando la capacità dei vigneti di trattenere carbonio, qualcosa che è oggi al centro dell’attenzione dei produttori. 
 Il passaggio dal trattore al cavallo ha cambiato il loro modo di coltivare più di quanto si possa misurare con i risultati analitici, però. “Non sono piccole macchine; lavorando le viti con i cavalli, diventiamo davvero una cosa sola con le viti,” dice Bonnefond. Il modo in cui si interagisce con un animale rispetto a una macchina è totalmente diverso, e lei sente che di conseguenza sono molto più reattivi, più consapevoli del loro lavoro e in grado di fermarsi in qualsiasi momento. E, come osserva Bessonet, anche chi lavora in proprietà da 10 o 15 anni non può fare a meno di sorridere quando i cavalli passano. Come sa ogni buon responsabile, una squadra felice darà dividendi infiniti. 
 Nel 2008 hanno iniziato con soli due cavalli, ma quel numero è cresciuto fino a 10 oggi. Hanno una combinazione di razze – oggi soprattutto Percheron e Comtois, anche se in passato hanno avuto dei Bretoni. I Percheron sono più grandi, e si stanno orientando sempre più verso i Comtois, preferendo la razza, leggermente più piccola e ancor più docile, originaria del Giura. Sono tutti cavalli da tiro, storicamente usati in guerra e in agricoltura – con un peso circa doppio rispetto alle razze più snelle che potresti vedere nel completo o nel salto ostacoli. 
 La nonna di Bessonet, racconta, fu quasi offesa quando le disse che stavano usando i cavalli – vedendolo come un passo indietro; ma, come spiegano lui e Bonnefond, il lavoro è totalmente diverso da quello delle generazioni passate. Non saranno alimentati a elettricità, ma la tecnologia moderna e il know-how vengono utilizzati per affinare il loro modo di lavorare e gli attrezzi impiegati. Nel corso degli anni, hanno sviluppato molti strumenti da soli e hanno collaborato con un’azienda locale per crearne altri – un processo lento che può essere affrontato solo da chi ha una visione davvero di lungo periodo. Comprano i cavalli quando hanno circa tre o quattro anni, così sono stati già domati e hanno iniziato l’addestramento ma possono essere completati e perfezionati in-house (“Conoscono i comandi, ma sono ancora giovani quindi non necessariamente ascoltano,” spiega Bessonet. “Sono adolescenti!”). Sono, com’è ovvio, molto esigenti sugli allevatori con cui lavorano e sul garantire che la formazione ricevuta negli anni formativi sia all’altezza. Quando il processo è completato, nel momento in cui il vomere tocca il tronco di una vite, un cavallo saprà fermarsi all’istante, senza nemmeno bisogno di un comando umano, evitando qualsiasi danno significativo. In tenuta hanno una mini finta vigna con una manciata di filari corti allineati da pali (ma senza viti), una sorta di scuola dove possono addestrare i cavalli più giovani e che usano all’inizio della stagione, trascorrendo mezza giornata affinché gli animali riprendano il ritmo di lavoro. 
 Dal lunedì al venerdì i cavalli lavorano, alloggiati accanto alla cantina (con box ricavati da vecchie botti). Ogni cavallo lavora per mezza giornata (a volte più a lungo se gli attrezzi che trainano sono sufficientemente leggeri), prima di essere riportato alle scuderie per permettere un recupero attivo – evacuando l’acido lattico nelle gambe, qualcosa di essenziale per mantenere la loro salute. Tra tempo per strigliare, imbragare e disimbragare, lavare, pulire il box e nutrire i cavalli, ciascuno lavorerà circa tre ore al giorno. La squadra di Bonnefond porta fuori un cavallo al mattino, per poi tornare nel pomeriggio con un altro. Accanto al lavoro in vigna, i cavalli vengono lavorati alla corda (si muovono in cerchio attorno a un conduttore, con una lunga lunghina) – lavorando sia sui comandi sia sulla flessibilità. “Anche per cambiare loro la mente, vedendo qualcosa oltre le viti,” spiega Bonnefond. 
 Ci sono circa 10 passaggi per filare all’anno, quattro o cinque per lavorare i suoli e altri cinque circa – trattamenti per proteggere le ferite di potatura (per prevenire le malattie del legno), fare buche per piantare nuove viti, trattare con equiseto per controllare la pressione della peronospora, oltre alle preparazioni 500 e 501 (spruzzi biodinamici). Oggi, circa la metà degli 81 ettari della proprietà è lavorata a cavallo – e la squadra lavora sempre per fare di più, ma Bessonet non è sicuro che il 100% sia un obiettivo realistico. Il solfato di rame – il principale trattamento usato in viticoltura biologica e biodinamica – viene distribuito col trattore, non essendo qualcosa a cui vorrebbero esporre i cavalli (né mettere loro maschere antigas, come si fece durante la Seconda guerra mondiale). 
 Il lavoro è, inevitabilmente, stagionale – e nel fine settimana e nei periodi tranquilli vengono messi al pascolo, con lavoro alla corda per mantenerli pronti. Non appena ha luogo la véraison (il cambiamento di colore degli acini da verde a rosso), “È tempo di vacanza per i cavalli,” dice ridendo Bonnefond. A quel punto gli acini diventano troppo fragili e potrebbero essere urtati dai cavalli, rompendo le bucce e danneggiando il frutto. Se tutto va bene, i cavalli lavorano fino ai 18 o 20 anni, e poi Pontet-Canet trova loro una casa dove vivere la vecchiaia. Il pensionamento può, in effetti, essere la fase più difficile per questi cavalli da lavoro, spiega Bonnefond. “Sono abituati a vedere tutti ogni giorno,” dice. Un cavallo, Turbo, ha continuato ad aspettare ai cancelli, pronto per andare a lavorare, per ben oltre un mese dopo aver lasciato la tenuta, faticando ad adattarsi alla sua nuova, tranquilla vita. 
 Bonnefond non aveva mai lavorato in agricoltura prima di arrivare a Pontet-Canet, essendo stata in un centro equestre, e la sua squadra ha background altrettanto vari (uno addestrava trotteri e uno lavorava con cavalli da circo, per esempio). Hanno tutti i loro preferiti nella mandria di Pontet-Canet, confessa (il suo è un bel baio particolarmente energico), ma tutti lavorano con ciascuno dei cavalli, per mantenere l’interesse degli animali e affinché nessun cavallo si abitui troppo a un particolare conduttore. 
 Non è certo un lavoro leggero – almeno per Bonnefond e la sua squadra. Le giornate sono lunghe e il lavoro è fisicamente impegnativo, ma vedendo Bonnefond nel campo con i cavalli, la sua figura minuta in contrasto con i giganteschi cavalli da tiro che la circondano, è chiaro che lo ama. Avere una squadra del genere in-house è qualcosa che poche tenute possono permettersi, ma riflette – come dice Bessonet – la filosofia di Pontet-Canet. La loro speciale fascia di terrazze di ghiaia nel Médoc, condivisa con giganti come Mouton Rothschild, Lafite Rothschild e Cos d’Estournel – proprietà che rappresentano l’apice del Cabernet Sauvignon nel mondo, merita di essere protetta e preservata in ogni modo possibile.
