Until I joined Vinfolio, the US arm of our business, I hadn’t heard of Ch. Belle-Brise. But I rapidly fell in love with this little-known, yet much-loved Pomerol property. Our retrospective was to be held at three-star Michelin SingleThread in Healdsburg (Sonoma County, California), and examine 23 vintages of Belle-Brise, from 2020 all the way back to 1993. As proprietor Henri-Bruno de Coincy unfortunately couldn’t make it to our event, I was tasked with hosting on his behalf, and gave him a call to learn more about what he feels are the most important details to share about his property. (My degree in French, which was instrumental in my becoming a sommelier, proved to be quite useful. While M de Coincy speaks four languages, English is not one of them.) During our conversation, I confirmed the embarrassment of riches as far as what sets Belle Brise apart from its illustrious neighbours. Located in the southwestern corner of the already diminutive Pomerol appellation, Belle-Brise consists of only two hectares (around five acres) of vines. Planted to 80% Merlot and 20% Cabernet Franc, the vines average 70 years in age, with some 110 years old. The vines are farmed biodynamically, using horses to complete the necessary labour in the vineyard. While the subsoils have a mix of clay and sand, they also possess the famous crasse de fer – the iron-rich sand that is said to impart the aroma of truffles, a facet which only reveals itself as the wine ages. M de Coincy refers to Belle-Brise as his “jardin” (indeed, while the family spends much of their time in Armagnac, the house at the heart of the vineyard is very much their second home) and takes great pride in the fact that everything can be harvested by hand in a single day. 
Wine has been made at Belle-Brise since the 18th century, but the property did not see its first commercial release until 1991, after M de Coincy acquired the estate, with the wine sold only to family and friends before that date. If you are familiar with your Bordeaux vintages, you will know that 1991, ’92, and ’93 were all extremely difficult harvests. While not the auspicious start he may have hoped for, it did offer an opportunity to explore the vineyard and learn how to best care for it. Today the winemaking is identical from year to year, with the vintage – and site – speaking loudest. The wines are fermented in concrete before being placed in a third new, a third second-use and a third third-use 400-litre barrels, the traditional size used for Armagnac, rather than the more conventional 225-litre Bordeaux barrique. The Coincy family has been making Armagnac for 32 generations and over 700 years, so the exact size is not arbitrary, but the decision to use larger barrels is also deliberate – reducing the impact of the wood on the final wine. While the story of the château and the history of the De Coincys are both compelling, I must return to what is most important to keep in mind when tasting Belle-Brise: elegance and finesse. Serving Pomerol with kaiseki-influenced Japanese cuisine (as at SingleThread) may not be the obvious choice, however the delicacy of the wines ensured that the harmony of the dishes was kept intact, leading to many unexpected moments of delight. Unsurprisingly, exceptional vintages were beautifully cohesive and balanced, however, it was the less well-respected vintages (2011, 2004, 2002, 2018 and 2008, among others) that truly showed how attention to detail and care can surmount challenges that nature may present. While we were not able to taste every vintage of Belle-Brise (with the tiny volumes produced, the family simply doesn’t have stocks of everything), this retrospective tasting was one of the largest ever presented. The favourite vintage among guests on the night was 2011, a vintage which also came up in my conversation with M de Coincy, as it has been chosen as the “desert island” of wine professionals and aficionados many times before. The most interesting flight for me came later in the meal, with the 2004, ’03, and ’02 grouped together. These vintages all presented different challenges during the growing season. The 2002 saw extreme rain in many parts of France, with heavy downpours affecting flowering and fruit set. The 2003 saw a summer with extreme heat, which taught many lessons that were applied in 2022. Lastly, the 2004 had a larger harvest on the whole, but the vintage is often forgotten, left in 2005’s long shadow. In the glass, however, the 2002 was pure and bright, with the 2003 showing its suntan but still refined, and the 2004 had a concentration and depth that was remarkable (especially as the wines were all around two decades old).  Regardless of vintage, elegance and finesse were constant throughout the entire evening, reminding me of a concept I learned in one of my French philosophy classes at university. If my memory serves me correctly, Michel de Montaigne proposed in his Essais the concept of a “forme maîtrise” or master form when referring to the evolution of a person as they age, and as something that cannot be easily defined in simple terms. While I am now much different than I was at age five, 15, 25, etc, there is still a governing sense of self (or possibly a single thread) that connects the person writing this to the child I once was. As we continued to taste through the vintages of Belle Brise, this forme maîtrise kept asserting itself, via the performance of the wine in the glass, reminding me of the “garden” where these wines were made. As many of the variables seen at other châteaux (differing blends, oak regimes, etc) remain constant at Belle-Brise year after year, one can focus on the vintage and its effect on the wine in the glass. This results in a singular experience, when one can truly feel the sense of place that only certain wines can offer. Tasting Ch. Belle-Brise: 1993-2020 vertical 2020 Ch. Belle-Brise: The 2020 Belle-Brise has an opulent nose with ripe fruit – plums – and violet. It’s already very approachable now, with remarkably fine rounded tannins. Plush. 2019 Ch. Belle-Brise: The nose is packed with ripe raspberry fruit and vanilla cream, currently more open than the 2020, with lovely sweet spice too. The tannins are slightly firmer with bright acidity – this is generous but focused. Very impressive. 2018 Ch. Belle-Brise: From a hot vintage, this is a very concentrated Belle-Brise with blackberry and black plum. Brooding, powerful and structured, the 2018 shows a very dark fruit profile, and needs a little more time to integrate fully and show its best – but this will be a wine for the ages. 2017 Ch. Belle-Brise: Packed with red fruit, this is open and expressive, fragrant and floral. The palate is tighter and more linear in style versus the warmer vintages that preceded it; the wine precise and delicate. 2016 Ch. Belle-Brise: This is a bold and age-worthy Belle-Brise. The nose is ripe, layered with dried fruit, prune and hints of dark chocolate. The wine is big and dense, with ripe tannins, and will benefit from more time in bottle. This is built to go the distance. 2015 Ch. Belle-Brise: The 2015 offers a nose of sweet, ripe fruit. It’s plush and mouth-filling, yet retains amazing elegance and great freshness. There’s beautiful balance, with very fine tannins that frame the fruit. 2014 Ch. Belle-Brise: This is just starting to reveal some maturity, with cedar, hints of truffle and tobacco alongside the plum fruit. It’s an earlier-drinking vintage versus the 2015, for example, but has lovely restraint and is showing beautifully right now. 2012 Ch. Belle-Brise: This may have been a tricky year, however the 2012 Belle-Brise shines – with bright fruit and violet florals on the inviting nose. The palate is delicate, supple and charming – a very pleasing wine packed with appeal. 2011 Ch. Belle-Brise: Another less lauded year, the 2011 is not as powerful as warmer vintages, but is still an hallmark Pomerol from this estate. It’s layered with plums and spice, the wine rounded, smooth and welcoming in style, 2010 Ch. Belle-Brise: The 2010 is a concentrated, powerful and muscular Belle-Brise that is destined for the long-haul. The palate is mouth-filling and tightly packed at this still comparatively youthful stage, even 13 years on, with dense berry fruit. 2009 Ch. Belle-Brise: This bottle wasn’t showing flawlessly – the tannins prominent and fruit not as concentrated as in other bottles we’ve tasted, although it still showed toasty, coffee complexity on the nose. 2008 Ch. Belle-Brise: This is beautifully expressive, with notes of mint, violet and plum on the nose. It’s fragrant with herbal lift, while the palate is vibrant, fresh and nervy. A joy from this less famous vintage. 2007 Ch. Belle-Brise: This may not be a top year, but Belle-Brise produced a lovely wine that is beautiful at the moment. The nose is evolved with earthy tones, truffle, cedar and tobacco. Ready to go, this is open and elegant, with lovely resolution on the palate. 2006 Ch. Belle-Brise: This is absolutely textbook Pomerol from Belle-Brise in 2006. The nose is lovely, with opulent fruit, while the palate is smooth and velvety, the tannins gorgeously polymerized. It’s still fruit-forward but really delicious. A delightful wine. 2005 Ch. Belle-Brise: This top-rated vintage offers a brooding, dark-fruited nose, with notes of chocolate, earth and truffle. The palate is dense and powerful, with chalky, rich tannins that cloak the layers of damson, cigar box and mushroom. 2004 Ch. Belle-Brise: The 2004 shows remarkable concentration and depth. The wine is mature, showing an evolved nose of cedar, tobacco and forest floor, while the palate is almost fully tertiary, but with ethereal dried fruit. Fantastic. 2003 Ch. Belle-Brise: Although this shows the warmth of the year, with baked fruit, it’s still refined, with resolved tannins. Unlikely to evolve further, so worth drinking up. 2002 Ch. Belle-Brise: This is showing beautifully – pure and bright, with aromas of dried flowers, dried cranberry and prune alongside lifted spice notes – cardamom and clove. On the palate, it’s elegant, with fruit still driving through to the refined finish. Haunting. 2000 Ch. Belle-Brise: This is full of ripe plum fruit, damson and vanilla with a sweet earthiness. It’s still amazingly fresh and tasting impressively young. It’s got a great backbone and plenty of life in it yet, but delicious now. 1999 Ch. Belle-Brise: Notes of forest floor, earth and dried leaves dominate the nose, accompanied by more delicate potpourri aromas. This is a beautifully delicate, fine-boned wine with a long, lingering finish.  1995 Ch. Belle-Brise: The 1995 is still surprisingly fragrant – with dried cranberry and redcurrant fruit alongside dried herbs, cedar and sandalwood aromas. It is alluring and enticing on the nose, leading to a seamless, lifted palate. 1994 Ch. Belle-Brise: The nose of the 1994 combines expressive dried orange peel with richer prune and raisin fruit, as well as savoury, earthy notes. On the palate, this offers richer fruitcake tones – with currants and spice, and impressive depth. 1993 Ch. Belle-Brise: This 30-year-old Claret is remarkable. It was only Henri-Bruno’s third vintage, and it is evolved but very much alive. The nose combines forest floor and more herbal tones, while the palate is silky, supple and perfumed. Ch. Belle-Brise: discovering the walled garden of Pomerol

Ch. Belle-Brise is a rather inconspicuous Bordeaux property with a “garden” vineyard of just two hectares and an annual production of just 800 cases. With such small quantities produced and a legion of loyal followers, the wine is little known outside of an exclusive list of top restaurateurs, a few lucky distributors and their clients. Henri-Bruno is the 20th generation of the de Coincy family, famous for their Armagnac production that dates back an incredible 700 years. Despite this impressive lineage, Henri-Bruno's winemaking skills are a much more recent labour of love. Similarly, Ch. Belle-Brise was late to commercial winemaking – an enterprise started by Henri-Bruno when he bought the property in 1991 – despite producing wine since the 18th century. Ch. Belle-Brise is often compared to the Grand Crus of Burgundy and has been referred to as the "Musigny of Pomerol", such is the elegance and weightless power this wine consistently seems to possess. Theories abound about why this is the case. Perhaps it is Henri-Bruno's  Burgundian wife's influence, or the pre-1956 vines, or small-scale operation? For De Coincy, it is all of the above that makes this little wine of Pomerol so unique. The foundations of Ch. Belle-Brise What is really special about the Belle-Brise vineyard is the age of the vines, more than 100 vines are a staggering 120 years old and the average vine age is around 70 years old.   It is rare to find any Pomerol vines that pre-date 1956, as devastating frosts that year destroyed virtually all the region's vineyards. Many vines planted in Pomerol post-1956 were reliable clones but not as good in terms of wine quality. This is not the case at Belle-Brise, where vines either pre-date 1956 or were propagated from the surviving old vines. Outside of Belle-Brise, there are just a few pre-1956 vines dotted around Pomerol and Saint-Emilion – most noticeably at Ch. Lafleur and Ch. Ausone. Old Cabernet Franc and Merlot vines, De Coincy believes, create an overall elegance, finesse and depth of flavour on the palate that is something really special. The Belle-Brise vineyard contains a split of around 80% Merlot and 20% Cabernet Franc. The soil has gravel on the surface and beneath, a layer of clay, chalk and crasse de fer (iron rich bands of sand that play an important role in the flavour characteristics of many top Pomerol wines). Many believe this is responsible for the truffle aromas commonly found in Pomerol wines. Others believe it provides viticultural benefits, limiting vigour and excessive leaf growth, in turn producing smaller concentrated berries. Natural winemaking at Ch. Belle-Brise Despite being an experienced Brandy producer, De Coincy's project in Pomerol required considerable learning on the job and was faced with a challenging start. His first crop in the 1991 vintage was largely decimated by frost, meaning he had very small quantities to work with and likely not enough to sell. This did, however, mean he was able to experiment with the vintage and trial different approaches. Three very challenging Bordeaux vintages followed as Mother Nature threw everything at De Coincy. It was a steep learning curve. When the more successful 1995 and 1996 vintages arrived, the winemaker was ready to produce Belle-Brise in his style, with confidence. The approach is artisan and natural. There is no electricity on site and everything is made much as it would have been centuries prior. The grapes are grown using biodynamic and organic principles, and De Coincy employs horses to work the vines. The grapes are all harvested within one day allowing pin-point accuracy on picking dates. They are then hand-sorted exclusively by women – something de Coincy is insistent upon. Once picked and sorted, the grapes are then left uncrushed in concrete vats in the winery. De Coincy then closes up the cellar and leaves the grapes for five days, so the natural coolness of the cellar retards the fermentation process. After five days, De Coincy returns to open up the cellar. As the heat of the day enters the cellar, the grapes naturally begin to ferment from natural yeasts. De Coincy tends to pump over the juice twice a day over six to 10 days depending on the vintage and then leaves the wine to settle in-tank prior to the pressing of the skins. This traditional method is not very common in modern winemaking as it can run the risk of contamination. De Coincy, however, believes this method helps extract the delicate aromatics from the wine. After this stage, De Coincy carries out a very slow pressing of the skins using an old manual vertical process, which he believes is another vital element in the process that retains a delicate finesse typically found in Belle-Brise. Many of these methods are not possible in larger estates as they are laborious and manual. The Belle-Brise wines are then matured in large 400-litre barrels (one-third new, one-third one-year-old, one-third two-year-old), eschewing smaller barriques which De Coincy feels has too strong an affectation on the wine. The Ch. Belle-Brise drinking window Ch. Belle-Brise has always been a fairly accessible wine in its youth with its compact but soft tannins already beautifully integrated. For De Coincy, Belle-Brise needs five years maturation in bottle before you can really benefit from the full impact of the wine and then, depending on your tastes, it drinks beautifully over the next decade. De Coincy has often served his wine blind to his restaurateur clients and found it has been mistaken for premium Burgundy. The similarity with Grand Cru Burgundy is difficult to fathom, considering the completely different varieties and different climates, yet Belle-Brise does boast the silkiness, finesse and almost weightless power of Grand Cru Burgundy, with a touch more opulence you expect from Pomerol. Ch. Belle-Brise's rarity With a mere two-hectare walled -garden vineyard, production at Belle-Brise is minuscule, making it one of the rarest wines on today's marketplace. The vast majority of liquid never reaches private clients as it is snapped up by some of France's finest three-Michelin-starred restaurants. In fact, 80% of three-star-Michelin restaurants in France (and 25 other countries) list the wine, including Georges Blanc and Alain Ducasse: Le Louis XV. Ch. Belle-Brise: talking to Henri-Bruno de Coincy

One name that kept cropping up when speaking to winemakers about wine and cheese pairing was Bernard Antony, a man who now supplies 20 of the world’s 3* Michelin chefs as well as working alongside many of the world’s top winemakers matching cheese and wine at events for Guigal, Angelus, Humbrecht and many more.   We caught up with Jean Francois Antony (Bernard's son and protege) to find out more about Affinage (the ageing of cheese) and their perfect cheese and wine pairings. 45 years at the service of taste Bernard Antony is one of the world’s great cheese makers. Strictly speaking, his mastery
is in affinage, that is finishing and ageing cheeses. From humble beginnings working as a travelling grocer in Alsace, in 45 years he has gone on to become one of the most recognised men in the world of fine cheese.  Bernard Antony was the protegé of the late great Maitre Pierre Androucet – known as “the Pope of Cheese”. Bernard says of Pierre: "To me, he was like a father. He was the man who created me, who taught us everything, to my wife and me. He didn't like me to say it because he wanted to give me all the credit for my success”.  Following on from Androucet’s advice and support, Bernard set up his own cheese ageing cellars in the early eighties in the southern Alsace village of Vieux-Ferrette. The ageing cellars are made up of seven different chambers all at different humidity and temperature levels – ideal for raising and ageing various different styles of cheese. Only when the cheeses are deemed ready and at perfect ripening are they released to the markets and delivered to restaurants. Ageing of cheeses can range from just a few months for the fresher goat’s cheeses to several years for some hard cheeses. Speaking with Jean Francois Antony, Bernard’s son, who works alongside his father, running the day-to-day operations of the cellars, he identifies that the skills in good affinage revolve around a number of key elements. First of all, “raw (unpasteurized milk) is essential if one is to speak of cheese with authenticity…taking into account the breed of animal, the animal's diet, the talent of the cheesemaker and then of course the controlled process of ripening are also key”. The cheeses arrive at the cellars already halfway through ripening and their ageing cellars go into action to give them the final touch. They provide the perfect environment and temperature for ageing as well as the most important element in the Bernard Antony cheese cellars, the natural yeasts that live there helping the cheese mature distinctly and in the best way possible. website. They often pair the cheeses with fine wine so we thought who better to ask for advice on the ultimate cheese and wine pairings than the man himself.  Below is the Bernard and Jean Francois Antony’s essential guide to food and wine matching, split up between the different styles of cheese, with additional advice passed down from Pierre Androucet.  The Floury crust family of cheeses Camembert        Brie de Meux (un peu sale)         St Marcellin and St Marcellin (runny)     Petit Mosellan         Coulommiers         Chaource
 The classic pairing would be Champagne (Blanc de Blancs, Aged and even Rose Champagne) however Bernard Antony advises that you remove the crust as it can make the wine appear more harsh. The bubbles work brilliantly in refreshing the palate from these rich cheeses and the yeast flavours from the Champagne also work really well. Avoid tannic reds with these cheeses. One of Bernard's favourite matches include a Gevrey Chambertin 2012 from Domaine Denis Mortet with the St Marcellin. He states a white wine with both gentle oxidation and good acidity works particularly well with Petit Mosella (Saint Peray from
Domaine Tunnel or Alain Voge) or a fruity red wine with well-coated tannins such as a Beaujolais Cru wines with the Chaource and Colombier fermier. The Washed Crust family of cheeses Epoisses       Langres         Livarot     Munster  Maroilles    Vacherin         Pont-l’Eveque According to Androuet: robust and virile wines, with sap and generous bouquet work best with these potent washed crust cheeses. They require “solar wines“ which can harness the power of washed crusts. Gewurtztraminer Grand Cru from Albert Mann, Chambolle Musigny from Liger Belair would both work well. Pinot Noir from Zind Humbrecht, Bollinger 2008 Grande Annee also a particular favourites with Bernard Antony. The pressed crust family of cheeses Comte     Emmenthal        Beaufort         Gruyere Suisse According to Androuet the matches depend on the evolution of the cheese. Dry white or red wines with bouquet work well, red wine brings a balancing touch of bitterness. These cheeses flatter any red wine by erasing astringency and promoting fruit therefore making White or Red Burgundy a good match. With more ageing of the cheese, wines from the greater South-West, the Rhône Valley and Languedoc Roussillon become better matches. Other personal
favourites from Bernard Antony include Vernaccia di San Gimignano (Italy) White
wines from Valais (Switzerland), and Savignin wines from the Jura. The pressed (uncooked) crust family of cheeses Morbier   Tomme de Savoie fermiere       Mimolette demi étuvé         Salers     Roblochon  Sainte Nectaire Pairing again depends on the maturity of the cheese. The older the cheese the richer the wine. Chateau Latour 2001 is Bernard’s match with Morbier. Saint Joseph Pierre Gonon 2013 works well with Reblochon and Chateau Canon La Gaffeliere Grand Cru Classe St Emilion 2008 works well with Saint Nectaire. The family of blue cheeses Bleu d’Auvergne     Roquefort        Fourme d’Ambert      Blue de Gex          Stilton    Gorgonzola These are best paired with sweeter fruited wine or sweet wines. Avoid red wines as the mould changes the structure, the aromas and brings out the bitterness. Top picks are Rivesaltes Vins Doux Naturels, Pacharenc du Vic Bilh or aged Sauternes even red Vins Doux Naturels such as Maury, Banyuls work well with blue cheeses. The family of Goat and sheep cheeses Ossau-iraty         Brebis cremeux et parfume Brebis Corse     Chevre Frais    Chevre Moelleux et onctueux   Chevre Affiné. Vieux et sec   St Maure de Touraine Banon de Provence Chevrotin des Aravis With this family of cheeses the wine must tame the acidity of milk. The wine must work with the texture of the fat and complexity of the flavours. Androuet confirms the well-known phrase – match local wines with cheese of the same origin, particularly very dry and fruity whites. Dry white wines from the Loire – include the smoky Pouilly Fume, Sancerre, Menetou-Salon, Quincy and Reuilly work well with the goats cheeses from the region. From Burgundy, try the lighter Aligoté, Saint-Véran, Macon villages and from the Alpine pastures the white wines of Savoie or lighter reds of the Loire – Bourgueil and Chinon. Bernard Antony’s particular favourites with these cheeses include wines closer to home including Riesling Vendange Tardive 2007 from Barmes Buecher, 2002 Brundlmayer Gruner Veltliner Kaferberg 2002 and Pinot Gris Grand Cru Osterberg 2016, Domaine Agape. Le Pin doesn’t really do events. I guess it doesn’t need to. This tiny 2.7-hectare property produces on average 600 cases each year and the wines are instantly snapped up on release by collectors lucky enough to be privy to the merchants’ miniscule supply.  But FINE+RARE, after much searching, collated an extraordinary collection of Le Pin bottlings (some coming from Thienpont’s own personal cellar) right back to the inaugural 1979 vintage. The tasting consisted of 12 vintages of Le Pin, as well as three vintages from L’If, Thienpont’s relatively new project in neighbouring Saint-Emilion. We also persuaded Thienpont to come to London and share Le Pin’s fascinating story from the beginning. The setting was perfect for such an intimate event. With just a handful of guests alongside Jacques Thienpont and Diana Berrouet Garcia (MD of Domaines Jacques Thienpont), the dinner took place in Claridges’ L’Epicerie restaurant. L’Epicerie, which seats just 14 guests, is set within Claridges’ hallowed kitchens. It meant the guests could watch the chefs at work and discuss with them why they paired certain dishes with certain vintages. In hindsight, it was amazing just how versatile the Le Pin wines turned out to be. The younger vintages paired beautifully with poached lobster, fois gras terrine, black truffle and artichoke. The older vintages worked just as well with beef fillet and aged cheeses. But, however well the food worked, everyone was there to taste Le Pin.  Le Pin needs little introduction. The youngest of all the Right Bank icons, it became an almost overnight success thanks to the critical acclaim of the property’s fourth vintage in 1982. Combined with its tiny production levels and an ever-expanding collectors’ market, Le Pin became the ultimate wine collectable – and the market price of this tiny estate quickly rose to stratospheric levels.   Such are its size and popularity that it is rare to taste one bottle of Le Pin, let alone 12 vintages back-to-back. I’ve been lucky enough to taste the wine en primeur over the years, so I had some idea of what to expect, but it’s only at maturity that this extraordinary wine’s vivid personality really comes to life.  The elusive address has humble beginnings. From the 1920s to the late 1970s, the land was owned by the Loubie family. During this time, the wine was made by a contract-winemaker based in Lalande de Pomerol and was sold with little fanfare.  In 1979, Jacques Thienpont jumped at the chance to purchase the property when it came up sale, privy to the extraordinary terroir of the site, located next to his uncle Gérard’s esteemed Pomerol estate Vieux Château Certan. Thienpont named his new acquisition after a single pine tree that shaded the property. Over the years, he gradually expanded the vineyard to 2.7 hectares by purchasing slivers of land from adjacent producers.   It’s hard to imagine that a wine of such prestige came from what was – in the early days – a very basic operation. The project and space were so small that there was little flexibility when it came to vinification. Everything was done by hand and malolactic fermentation took place in barrel because Thienpont had nowhere else to store the wines (although this eventually set the trend for modern winemaking). In time, the Belgian vigneron made improvements in the winery and vineyard, including replanting a significant part of the land with new Merlot clones and re-trellising the vines. Now, 40 years later, Thienpont is as hands-on as ever, insisting he is involved in every stage of winemaking.   Wine experts consider Le Pin’s key advantage to be its unique terroir and soil composition. With sandy gravel topsoil on a pocket of gravel which runs five to 10 metres deep, the vineyard has perfect drainage. As it’s south-facing, it is a warmer site and that gives the vineyard great benefits, particularly in poorer, cooler vintages. It is notably different from surrounding vineyards. The vineyard contains a high proportion of iron oxide, aka “crasse de fer”, which Jacques Thienpont attributes to the soil’s fantastic drainage and feels helps Le Pin perform well in wetter vintages.   There are a few odd Cabernet Franc vines in the vineyard at Le Pin, but the wine is 100% Merlot. A significant portion (40%) of the vineyards were replanted in the late 1970s, and replanting has continued under Thienpont’s ownership. In fine wine terms the average age of the vineyards is relatively young. The fact that Le Pin can already produce such incredible wines suggests the future looks bright for the property.  The property produces low volumes but with great consistency, with the wine always expressing a beautiful integration of tannins, wonderful depth and detail. It also ages beautifully, as this stunning line-up showcased so well. Tasting a younger vintage (2018) earlier in the day, it became apparent how versatile Le Pin is. Despite its youth, the 2018 is drinking beautifully right now. Berrouet Garcia believes it is one of Le Pin’s trump cards – it just performs so well at any time, in its youth, at full maturity and any time in between, such is its openness and versatility.  With a couple years in bottle, the 2018 really expresses a signature trait of Le Pin, a trait that through the tasting is so distinctive and emanates from almost every vintage – a trademark tannin texture and mouthfeel. The best way I can explain it is as if the tannins are totally spherical in the mouth. There are no edges, you can feel they are there by their density on the palate. They are the “dark matter” equivalent of tannin – they are there but you just can’t feel them.  Before the Le Pin vertical, guests were introduced to Jacques Thienpont’s Saint-Emilion estate, L’If. Thienpont’s first vintage from this young estate was 2010 and the wines are the perfect antithesis to Le Pin. Whereas Le Pin is voluptuous and opulent, L’If is stricter, more linear and has amazing energy. Thienpont has fallen in love with the limestone soils of Saint-Emilion. While still similar in climate to Pomerol (warm and sunny) the limestone soils in Saint-Emilion keep freshness in the wine and importantly, in winemaking terms, the pH low.  Whereas Le Pin’s opulent levels of ripeness and high pH (due to the soils) can sometimes have problems with fermentations getting stuck (so much so from 2015 onwards that Le Pin has been fermented using a special commercial yeast that avoids this problem), L’If’s limestone soils mean they can push ripeness levels and never lose freshness. Like Le Pin, tasting through the vintages of L’If there is a strong character trait across the vintages – a vibrant energy that is just so expansive on the palate. The 2015, 2013 and 2012 all express distinct vintage traits too, the 2015 the most powerful, the 2013 lighter but beautifully clean and vertical, while the 2012 is soft and juicy with lovely floral delicacy.  Le Pin’s roundness and silk-like texture is such a lovely contrast to L’If and tasting them side by side only accentuates how different in style these two wines from Jacques Thienpont are.  The vertical of Le Pin starts with two legendary vintages – the 2010 and 2009. Strangely, the 2009 throws a lot of sediment, something not found in the other wines. It is hugely concentrated and opulent. Pushing the levels of ripeness, there is a touch of VA, but it doesn’t diminish the wine at all. Despite the richness and ripeness, it is very much on the red fruit spectrum– but the 2010 was even better. It has an electricity to it that adds another level of excitement to the dense, rich fruit and smoky tones. This electric energy was also present in my wine of the night – the 2001. This wine is so elegant and refined, and is in its perfect drinking window today, the light tertiary notes complement the exquisitely pure, fresh fruit. But it’s the clenched tautness to the wine and that extra burst of energy that makes it so special and surpasses even the hugely anticipated 2000. This too has the tension, the sinewy tannins, the textbook spherical mouthfeel but the tertiary development is more advanced than the 2001.  The 2008 was also a highlight for me. It had all the classic Pomerol hallmarks, the irony-minerality and opulent fruit. It was also impressively structured while remaining heavenly soft. It was perhaps the vintage that showed off this contrast best, but it was a trait running throughout. The 2007 was lighter, earthier even with a touch of menthol and shorter on the palate but still delightful. The 2006 for me also outshone the “better” vintage of 2005. The density of the 2006 is just so impressive. If anything, the 2005 tasted the least like Le Pin. It had an almost Cabernet-esque feel, more structured, more extracted and, in that sense, felt like the odd one out in the tasting.  The 1996 was fully developed with lovely tertiary notes and dried fruit flavours. But the spherical mouthfeel clearly synonymous with Le Pin was very much intact and there was still plenty of tension and a very long finish. The 1990 was a revelation, so light on its feet – almost Pinot Noir-like in its daintiness and purity. It had a lovely freshness still, despite the concentration from this warm vintage. Again, it is still spherical in character, with lovely mature Claret flavours.  The 1983 was slightly unclean on corking, perhaps unsurprisingly, but this blew off in the glass. It was fully mature, dominated by tertiary flavours, but the tannins interestingly were less dried out than the 1996. Finally, the inaugural 1979 vintage. Amazingly, this first vintage already has the Le Pin DNA on the palate. The spherical mouthfeel was there. It is a remarkably clean bottle considering the age. It tasted more youthful than the 1983 alongside and still had fresh fruit characters and more tertiary notes. The spherical tannins are beautifully integrated. What a wine and what condition! It’s quite incredible.  There were clear takeaways from the tasting. Firstly, Le Pin’s consistency was self-evident, performing year-in, year-out. Secondly, the DNA of Le Pin was distinct throughout the flight (bar the 2005) both in youth and at full maturity. Also, it is clear that its character, its distinctness exists right back to its humble beginnings. Le Pin is a special wine, a rare treat, but not just a wine for the well-initiated. Bordeaux has seen a plethora of good to great vintages over the last 10-15 years most notably 2009, 2010, 2015, 2016, 2018... and now 2019. Speaking with some of Bordeaux's top winemakers in the build-up towards the eventual release of the 2019 vintage, has only further cemented the change in tone in Bordeaux in regard to the expectations of a vintage. No one today talks about a great vintage with surprise.  No vigneron in Bordeaux can say “it’s another vintage of the century” without a smirk. The discourse on vintage overviews has been forced to change. Looking at statistics from analytical data on climate, grape ripeness levels through to critics' approvals, wines in Bordeaux are much more regularly the result of almost perfect vintage conditions. Has global warming helped push Bordeaux into a modern-day golden era? What has been the knock-on effects of more regular vintages in Bordeaux? How long will this last and how will it change and shape the Bordeaux of the future?  Bordeaux is no longer a region whose Cabernet Sauvignon and Merlot run the gauntlet to reach sugar ripeness. If anything, it is rising alcohol levels, hail, drought, sunburn and vine shutdown that keeps the vigneron up at night.  But these concerns are increasingly becoming better managed thanks to huge investment by many of the top estates using both technology and ever more advanced scientific data to better cope with the issues at hand. Even within this trend of excellent vintages, vignerons in Bordeaux have only got better at dealing with the new norm of warmer vintages. Arguably the wines of the warm 2018 vintage were better handled than the similarly warm 2009.  The bi-polarisation of the Bordeaux wine market Whilst the picture at the entry level end of the scale within Bordeaux is a lot more gloomy, with many vignerons facing real sustainability issues, no doubt further enhanced by the effects of the current global pandemic, the prestigious classified growths and other top estates are currently benefiting from a perfect storm.  More consistent vintages have led to an increased income flowing into the estates which has seen increased reinvestment into the property’s infrastructure to offset tax on profits. The benefit being huge scientific and technological investments into many of these châteaux with precision viticulture and vinification becoming standard practice in many of the top estates. From a region in which heritage and tradition exude from the grandeur of turrets and towers, it is behind the castle walls that you find futurism and innovation. Precision and transparency Whilst the weather remains the most important factor that the vigneron can’t control, the Bordeaux châteaux who can afford to, have made great strides in off-setting poor weather conditions with a shift in attention towards viticultural practices. Whilst the battle between Mother Nature and machine is still very much one-sided, innovations in the field, as well as the winery, have seen good to excellent results as standard in Bordeaux’s modern era.  Also the earlier start to the vine's growing cycles is pushing the key veraison period earlier (where there are longer hours of sunlight) resulting in being able to bring in the harvest earlier if necessary, to avoid the risk of the heavy rains at the end of the season ruining the vintage. Whilst similar developments are happening throughout the fine wine regions of the world, the sheer volume of premium fine wine produced from the top estates in Bordeaux means the regularity of good to excellent vintages at this scale is unmatched anywhere else in the world, giving them a huge advantage when it comes to reinvestment.  Behind these traditional, historic château walls is some of the most cutting-edge technology in operation in global wine production. From optical sorting machines to UV light technology managing micro-bacterial issues in the winery, these innovative techniques are producing some of the most precise wines ever to come out of Bordeaux.  In the not-too-distant past Bordeaux had been particularly susceptible to wine faults such as brettanomyces due to high pH, rising alcohol levels and extensive barrel ageing, but amongst the top estates today, potential faults remain tightly controlled. But the investment in technology is not the only reason behind the modern success stories of Bordeaux, but an investment in people too, with full-time viticulturalists operating in the vineyard throughout the year as standard.  An increase in experimentation has also led to more variety in both viticulture and vinification practices leading to more variety in structure and style in wines from across the Médoc and beyond. Experiments with different-sized vessels and trialling materials for élevage, whole bunch fermentations, intra-plot picking and vinification as well as investments in heritage projects such as the recovery of original Bordeaux clones that were practically wiped out prior to the devastating effects of the great frost of 1956 are all adding breadth and scope to the innovative side of today’s Bordeaux.  Tradition and terroir With an ever-expanding fine wine market in terms of both consumers buying fine wine as well as more regions producing fine wine, Bordeaux has never had more competition within the region itself as well as further afield. With this additional pressure, there is a strong ambition for each château to further distinguish itself. One clear advantage is their history; few winemaking regions in the world have the prestige and the back catalogue found at the top estates today.  Chateau Lafite Rothschild serving vintages back to 1881 at their 150-anniversary birthday party last year to a hall full of guests on five consecutive nights is something no other region could come close to pulling off. Despite this, the growing competition from other emerging fine wine regions around the world has forced Bordeaux onto its toes and lit the fire under many top estates to better communicate what makes the wines of Bordeaux unique. The Bordelais openly admit that they have had to look outside of the Bordeaux bubble and take note of developments in fine wine regions further afield. With Bordeaux wines almost always blends of varieties encompassing a collection of scattered vineyards, the discourse surrounding terroir was largely glossed over in favour of more generic phrases such as Pauillac‘s graphite minerality.  The seemingly flatlands of the Médoc are "flat" no longer, the top châteaux emphasising their “hauts”, their “grand-puy’s” and “moutons” justifying their classified status comes from distinct terroir, whether that be the raised grounds of gunzian gravel or the outcrops of blue clay or crasse de fer soils of Pomerol or the various distinct types of limestone found in different parts of Saint-Emilon. The breakdown of single vineyards and their influence on the blend is now regularly part of the estates' patter when describing their terroir and this more exhaustive investigation into its vineyards has helped better communicate what is special and distinct about each château.  Bordelais are quick to admit, that for a region whose historic importance is unmatched in fine wine production, they have in the past been guilty of following fashion. Perhaps because of their global impact, their fashion faux pas only became more obvious. Not just in Bordeaux but throughout the world of fine wine there has never been such a heightened sense of self awareness and an emphasis on transparency in wines.  Bordeaux too has adapted to this and while being naturally powerful, intense, long-lived wines thanks to the varieties used and unique climate, there is also a strong emphasis on the Bordeaux wines of today retaining a sense of purity and elegance too. The ability to be both powerful and elegant is surely Bordeaux’s greatest calling card. When interviewing Andrew Jefford last autumn, I asked what he thought was the most exciting emerging region in the fine wine world today, I was pleasantly surprised to hear him state Bordeaux, saying “I’m in awe of the progress made there over the last 20 years, particularly in terms of the understanding of tannins. Tannins are the key to quality in fine red wine. Nothing would help southern hemisphere regions making ambitious red wines more than a breakthrough in the extraction and expression of tannins in their wines – the hallmark of all great European reds. Red winemakers in general need to stop stressing about acidity and become obsessed by tannin. To learn about tannin, go to Bordeaux.”  The future of Bordeaux Despite the top châteaux of Bordeaux today enjoying a bout of legendary vintages, there are real dangers posed to the longevity of Bordeaux’s current success (along with many other fine wine regions of the world). How long will it be before global warming pushes the region to the points where heat and drought no longer make growing wine grapes viable? No doubt early signs are there.  If Bordeaux becomes too hot and too dry, vines will shut down completely and tannins will not ripen as sugars go through the roof. Merlot is already a concern for many and considering its dominance in much of the vineyards of the Right Bank and in a significant part of blends on the Left Bank, there is no way things will remain as they are. Whether clonal development, irrigation or winemaking techniques can rescue it seems at odds with the current emphasis on natural winemaking.  Either way, things will eventually have to change. At least for today Bordeaux classified estates are unquestionably enjoying a golden era of vintages where their wines have never been so transparent. In such uncertain times, it is not clear how long this golden era will last, particularly with the typical Bordeaux varieties we know and love today, but those who think Bordeaux is passé are failing to look in the right places. Rum has been positioned as the next big thing. The one to watch. The spirits category to steal market share from Scotch whisky and the sure-bet to clean up when that gin bubble finally bursts. These claims have been made for the past five years, if not longer. When you look at the figures, which don’t tell the whole story but are a good starting point, rum has been in rude health since 2018 when sales in the UK surpassed the £1 billion mark for the first time. This same year, a rum was named the best spirit at one of the most prestigious blind tasting competitions for the first time. Rum, for many, had finally arrived. “What has changed in the industry is what we can bring to market,” Master Distiller Richard Seale says, in a typically matter-of-fact and non-marketeer way. “So, it is not so much that we are changed in our rum making but today we can think to invest in very old rums, we can think to release cask strength rums, we can offer more specialised rums like pot still or pure cane juice rums and we can think about non-traditional markets – like the Far East. Twenty years ago the market for any of this was extremely limited.” Seale’s family-owned Foursquare Distillery in Barbados was the winner of the aforementioned 2018 blind tasting and the awards have continued to rain down on them since. While always destined to join the family business, Seale says that didn’t necessarily mean a career in rum, other than to sell. “What happened was the year I officially joined, my father made the biggest acquisition we had ever made in acquiring the Martin Doorly and Alleyne Arthur brands. This made for two big changes: one, we would have to invest in aged stocks as these were premium brands and two, we would start exporting. This naturally drew my focus.” Rum has been produced in the Caribbean for centuries. Historically, the new-make was sold to brokers and blenders in much the same way as Scotch whisky. Whereas Scotch distilleries started to bottle single malts from the 1970s, most rum producers wouldn’t have the epiphany to move away from a purely bulk model for another 20 years. It was from this time that rum brands as we know them began to appear in the European market. El Dorado from Guyana, for example, had been produced for centuries before it was marketed for the first time in the early 1990s. Similarly, Hampden Estate, which had been producing rum since 1753, only came to market in 2018. Legendary Trinidadian rum Caroni never actually saw the light of day as a brand in the traditional sense before it closed for good in 2003. “The rum category has changed out of all recognition,” Ken Grier, Creative Director at Colombian brand Dictador, says. “It has progressed from a white and dark mixable spirit to a premium spirit aged in good quality oak casks.” The reason for this progress is down to a multitude of factors – one of which is the realisation that rum has tremendous breadth and depth. “People have realised the rum world has a beautiful range of quality liquid to offer at the top end (rather than just the stock-standard ‘every bar has a bottle of this’ at the low end) and it has encouraged the rum-curious to be more adventurous,” Mitch Wilson, Black Tot Global Brand Ambassador, says. “We’re even starting to lead astray some of our more open-minded whisky brethren who are used to having to pay several times the price for a bottle of their favourite malts,” he adds. Wilson says better access to rums and rum makers have also contributed to this seed change. During the pandemic, the world in many ways got smaller and rum makers who had previously shied away from using technology were forced to embrace it (wifi permitting) to ensure their survival. He says thousands of people came together to discuss sugarcane spirits and meaningful connections were established between rum producers in the Caribbean and their ever-growing appreciators. Physical access to rums has also changed in recent years. Historically, French markets would predominantly sell rhum Agricole (made from sugarcane juice) from the likes of Martinique and Guadeloupe, and English speaking countries would typically sell rums from Barbados and other Caribbean islands, limiting the discovery of rums. As this has shifted, so too has the understanding and appreciation of rum. Similarly, social media has narrowed the gulf and empowered distilleries and rum enthusiasts to disseminate accurate information on rum and campaign against perceived wrongdoings. “In any spirits category there are many different levels of quality available,” Wilson explains. “I firmly believe that anyone who loves spirits but doesn’t love rum yet, just hasn’t tried the right rum for them. Perhaps their perceptions are skewed by some cheap bottle of rum they had when they were younger, or the fact that the average pub or supermarket might not offer a particularly premium selection (especially when considered next to the other spirits offerings).” Now things are changing, Wilson believes everybody has the chance to explore the very best of each spirits category and not just the “commercial rank and file” if they are willing to spend a little more on quality liquid. And rum is no different. “There are some exceptional rums that are of comparable quality to their favourite spirits,” he adds. In the same way whisky has its hard-core enthusiasts who are authorities on the subject in their own right, certain rums have developed a cult following which has driven up the cost of bottlings of certain styles from certain distilleries. High ester rums, for example, are a source of great fervour among rum fans. Jamaica is arguably the godfather of this style, with Réunion Island and a few other French territories also famed for this funky rum that in many cases wasn’t produced for consumption. Part of its appeal, according to Daniele Bondi from La Maison & Velier, is that high esters satiate in a way that whisky currently does not – on the matter of fermentation. “Historically, whisky has never spoken about raw materials or about the fermentation,” Bondi says. “Whisky normally speaks about the ageing, the master blender, and the magic. Here it is more a matter of raw materials so it is another point of view.” This point of difference and palate-altering taste is gaining in popularity. Bondi and others are quick to caution that it might be unwise to follow high ester count alone, in the same way whisky fans have pursued age statements. “It’s important not to chase the highest level of ester regardless the quality,” he says. “Esters are classified by quantity, and we know that connoisseurs love numbers on label, like for the ageing, where the worst mistake is the highest number equals the best. Also in ester amount this is a mistake: what is important is the balance of the product.” Another comparison that can be drawn with the whisky world and collectability is mothballed and closed distilleries. There have been several significant closures in the rum world – Caroni arguably being the most devastating to rum enthusiasts almost 20 years ago. Blends from closed distilleries, proprietary bottlings from a single distillery, and rums that have been produced via methods that have long since been lost have all become collectors’ items and driven scarcity in the category. While there is a market for these collectors’ items, Wilson feels true excitement towards rums that are currently flying under the radar. “You can get tremendous rums for incredible value and have something really enjoyable to explore,” he adds. “This may not always be the case though – we are already starting to see incredible demand for rums like Foursquare, Velier, and Caroni bottlings, all of which command multiple times their retail price at auction mere days after they are launched and sold out. “Even with the demand for rum going up, it is still incredible value when compared to liquid of a similar quality from the whisky categories.” For many reasons, we’re in the eye of a perfect storm for rum. Its high quality credentials, point of difference, and the tireless campaigning of certain individuals to put an end to the nefarious practices of some, ensure that rum is finally having its time in the sunshine. “If ever there was a time to build your rum collection, it was 10 years ago,” Wilson says. “The next best time is right now.” Explore rum or read more Editorial

We caught up with the dynamic winemaker about how to define the undefinable – and why it’s determined to lead the appellation into a new era Saint-Emilion has always been difficult to define. Unlike other top terroirs of Bordeaux – Margaux with its silky tannins and aromatic flair, Pauillac with its graphite minerality and structure, and Pomerol’s opulent, rich palate – the profile of Saint-Emilion has never been so easy to identify. Beyond that, the wines can be frustratingly inconsistent in quality too, making it Bordeaux’s most idiosyncratic appellation. Beyond the variation in quality and flavour profile, a political splintering of the appellation in the last few months, resulting in three of the four Premier Grand Cru Classé A wineries (Cheval Blanc, Ausone and Angélus) withdrawing from the classification has brought further turmoil to this seemingly troubled appellation. “Perhaps,” Ch. Cheval Blanc’s Technical Director Pierre-Olivier Clouet begins, “the many idiosyncrasies of Saint-Emilion are easier to understand, when you realise it is the largest appellation in France, consisting of over 800 growers on nearly 6,000 hectares of vineyards.” Put in context, the second largest commune in France, Châteauneuf-du-Pape, is almost half that area at 3,300 hectares. Given its large area, Saint-Emilion doesn’t have the same homogeneity of soil as Bordeaux’s other appellations and it is this, Clouet believes, that goes some way in accounting for the region’s variety. While many of the top estates are situated on the limestone plateau, on the outskirts of the historic town itself, the appellation’s borders stretch way beyond this most prevalent feature and cannot be accurately defined by limestone alone. This is no more evident than with Cheval Blanc – arguably the most atypical estate in Saint-Emilion. “If the DNA of Saint-Emilion is Merlot grown on limestone, it is bizarre that Cheval Blanc is in the appellation at all,” Clouet chuckles. “We grow Cabernet Franc on clay!” Cheval Blanc sits at the appellation’s limits, four kilometres away from the limestone plateau, bordering Pomerol. But Cheval Blanc is not such an easy fit with Pomerol either. “We should have a monopole appellation,” jokes Clouet. His point is serious, however, Cheval Blanc straddles both the Right Bank’s top terroirs, yet is not typical of either. It certainly makes Cheval Blanc more difficult to explain, admits Clouet, compared to the other great estates of Bordeaux that can be defined by their parity of variety and terroir. “Pétrus is Merlot on clay soils. Lafleur is Cabernet Franc on gravel. Ausone is Cabernet Franc on limestone. Latour is Cabernet Sauvignon on clay. But Cheval Blanc is impossible to know like that, because of its range of soils,” Clouet explains. For Clouet, this multi-faceted personality gives Cheval Blanc great flexibility and is a key reason for the estate’s success and consistency. “We think we are very lucky because we can play on the two parts of the Right Bank,” he says. “Every time it’s a vintage for Merlot, we blend for Merlot. When climatic conditions are better for clay, we play with clay, so we can play with the identity of the vintage.” Cheval Blanc has 53 plots on 10 different soil types – clay, sand, gravel in varying proportions – and grows Cabernet Franc, Cabernet Sauvignon and Merlot. For Clouet, the DNA of Cheval Blanc is its diversity. “We are an orchestra, not a soloist. We need all our musicians to play the music.” Perhaps then, Cheval Blanc’s wide-ranging terroir makes it a fitting mascot for the heterogeneous nature of the Saint-Emilion appellation. Despite Cheval Blanc’s recent withdrawal from the classification system, Clouet is keen to emphasise that the Saint-Emilion appellation is important, and something they should continue to defend and invest time and money in. The wines of Saint-Emilion are all linked by the place – and this is much more important than variety or blend, which he feels other regions have wrongly placed emphasis on. “Each bottle of wine should tell the story of that place,” says Clouet. However varied Cheval Blanc’s terroir may be, it’s undeniable that the wine captures a distinct sense of this place. Indeed, beyond a small increase in its holdings in 2012 encapsulating a neighbouring vineyard, it is one of the few châteaux in Bordeaux whose perimeters have barely changed in 150 years. For Clouet, however, the appellation is about more than terroir, there is a “dynamic spirit” at the heart of Saint-Emilion. While not so easy to define, Clouet believes it is an appellation that has greater flexibility than others. It is often cited as the most Burgundian of the Bordeaux communes, due to the high number of small estates and the sheer number of vignerons, something which makes it a “dynamic place” in Clouet’s eyes. “It never stops thinking how to change,” he says. This, he believes, provides some great advantages. “Smaller estates have the capacity to move quickly. This is arguably the most vigneron-led place in Bordeaux.” Such dynamism in the past has certainly seen Saint-Emilion leading trends in the region, both good and bad – depending on your point of view. The garagiste movement in the early 2000s, for examples, is a fashion that continues to divide the region. But Clouet believes Saint-Emilion is an appellation ahead of its Bordeaux counterparts, leading in sustainability and the trend towards freshness and delicacy, and terroir-driven wines. That said, there’s no “recipe”, he says. “Each and every château has to find its own balance.” But, he warns: “We need to be careful and not go too far one way or the other. A new recipe is to pick too early, another is to use too little oak.” He quotes Coco Chanel, “fashion changes, style endures” – each producer should find their own identity, their own style and stay true to it. It’s essential to be opened minded, he says – but to never copy others, follow a recipe or chase trends. The current move in Saint-Emilion to plant more Cabernet Franc is a perfect example, for Clouet, where fashion is being followed foolishly. “Cabernet Franc today is probably the most trendy variety in the world. I don’t know any winemaker who doesn’t talk to us about Cabernet Franc. It seems to be the solution to global warming, but I think it is completely the opposite,” he says. For Clouet, Cabernet Franc has no capacity to adapt: in the right soil it produces top wine, but in average soil the results are terrible. The hot 2020 vintage, for Clouet, proves his point – with producers favouring Merlot over Cabernet Franc, even when the latter dominates their vineyards, pointing to Lafleur and Ausone, as well as Cheval Blanc. The warm, dry conditions didn’t favour the modish variety – and an overreliance on Cabernet Franc planted in the wrong place could prove disastrous in the face of climate change. For the already atypical estate, Cheval Blanc is looking instead at further diversifying. While Cabernet Franc is key to its identity, the estate has shifted from once having Merlot on gravel and Cabernet Franc on clay to have “everything, everywhere”. “We want to multiply the diversity,” Clouet explains. Diversification is at the heart of everything Cheval Blanc stands for today, laid out in their recently published manifesto – a clear statement of intent that unless Bordeaux moves away from monocultural farming, its future is at risk. “In the last 10 years agriculture was a problem,” says Clouet, “but I think agriculture could be the solution.” He gives carbon dioxide as an example: while there’s too much in the atmosphere, trees, vines and cover crops can be used to capture it. Clouet believes the manifesto is not just a piece of paper or marketing pamphlet, but a roadmap to show how a more sustainable approach is possible. “The biggest problem in the 20th century for agriculture was not just pesticides but monoculture.” While Cheval Blanc will continue to only earn money with their wines, admits Clouet, other crops and livestock will be used to provide “resilience, a capacity to decrease disease and problems in the vineyard”. Clouet goes on to explain how 50 years ago, trees were removed from vineyards to make it easier for tractors, but prior to this vines, trees and other plants co-existed. “Organic production is not enough today,” says Clouet, who does not want to simply return to the past. “We want to take the best of modernity.” Cheval Blanc is not organic because it believes that copper, permitted and widely used in organic viticulture to fight mildew, is more harmful than a synthetic alternative. “It’s common sense,” says Clouet. “When you use organic methods to tackle mildew you have to spray every week – it is nonsense. We try to think sensibly. The solution will be through science and research. We shouldn’t go just with philosophy. We need to be agronomic and practical to find a solution.” If the spirit of Saint-Emilion is about dynamic change, then it is fitting that the appellation’s most recognised estate is leading the charge to revolutionise the region’s approach to viticulture and safeguard its future. For Cheval Blanc, agriculture is at a crossroads. “Viticulture is at the mercy of climate change and the drastic reduction in biodiversity,” states Cheval Blanc in its manifesto. Over the last few years Cheval Blanc has been transforming its vineyards into permacultures – interplanting trees, plants, other fruits and vegetables, as well as introducing animal grazing, flower farming and beekeeping to the vineyard in an attempt to ensure soil fertility, promote diversity and capture carbon. Reading about the latest political spat over the current Grand Cru Classé system, the endless court cases and corruption charges, you would be forgiven for thinking that the spirit of Saint-Emilion is imploding. But it is the spirit of Saint-Emilion, according to Clouet, that unites this somewhat idiosyncratic appellation. Beyond the classification chaos lies a heterogenous band of vignerons, united by their diversity and dynamic approach. With the release of its manifesto, could Cheval Blanc unite the troubled appellation, with growers working together towards a fully sustainable, future-proof Bordeaux? Cheval Blanc certainly hopes so.
