“First of all, you have to resonate 100% Chardonnay,” declares Alexandre Ponnavoy, Taittinger's Chef de Cave. “Chardonnay that produces precise, mineral, chiseled, complex wines with a lace-like finish and an ability to age is what I’m looking for when selecting the grapes that will become part of the Comtes de Champagne blend.” Chardonnay has always been prominent in the house of Taittinger, typically 40% of their Brut Réserve. But when making a pure Chardonnay Champagne (the most delicate of the Champagne varieties), as a vigneron you have to change your mindset, “You must orient your tasting and see the vintage only through this grape variety,” Alexandre explains. All the grapes for Comtes are sourced from Champagne’s Côte des Blancs, a ridge running 30km north to south with east-facing vineyards, predominantly planted to Chardonnay (95%) and responsible for Champagne’s finest Blanc de Blancs Champagnes. Comtes de Champagne is sourced from all five Grand Cru villages situated on the Côte des Blancs – Avize, Chouilly, Cramant, Mesnil-sur-Oger and Oger, with the main base of the cuvée coming from Taittinger’s house vineyard surrounding the Château de la Marquetterie just south of Epernay.  According to Ponnavoy, each of these Grand Cru villages has distinct features that when blended can create something truly special. He identifies how Avize produces very pure, precise, chiseled, crystalline wines – “no exuberance but a lot of precision and freshness”. Chouilly is quite different: “I often say Chouilly is the most Pinot of Chardonnays! This Cru produces Chardonnays used by us for their structure and aromatic power. These are wines with a beautiful backbone. Cramant gives Chardonnays of great minerality with a slightly iodized, saline hint. Mesnil-sur-Oger offers wines of extreme depth, of beautiful aromatic generosity, with exceptional volume on the palate, with a precise and mineral finish. Oger gives us expressive, structured, fruity, gourmet wines with notes of pear, lemon and slightly honeyed.” After each harvest, each wine from these villages is tasted several times, analysed organoleptically in order for Ponnavoy and his team to predict their ageing and aromatic potential before making the decision on whether they will be selected for Comtes. “Some villages can express themselves better depending on the vintage,” states Ponnavoy. “The distribution of the percentage of these five villages lies in the alchemy to design a timeless wine faithful to its style year after year. What I can say is that the vintages of Avize, (precision), Chouilly (structure) and Mesnil-sur-Oger (depth) are nicely represented in the 2008 vintage.”
 While Alexandre Ponnavoy has a clear idea of what the Comtes de Champagne identity is, something he believes shines through despite the vintage conditions, the style of Comtes de Champagne has changed over the years, in line with trends across the region and the change in climate. The dosage of Comtes up until the 1980s was much higher – typically 15 to 16 g/l, now it is closer to 9g/l. “Of course, the growing maturity of the Champagne grapes has played a role in reducing the dosage,” explains Ponnavoy. But global warming does not explain everything: “Champagne consumption patterns have changed. Champagne tasters accept and seek out more restrained, fresher, less dosed Champagne.” And so Taittinger adapted Comtes’s style in line with those needs. Another change came in the late 1980s when Ponnavoy’s predecessor Loic Dupont re-introduced partial oak-ageing for the Comtes de Champagne. This woody part is today an integral part of the Comtes de Champagne profile. Only a tiny proportion of the wine sees oak (between 5 to 8%) depending on the vintage, but – for Ponnavoy – it is the oak that provides a touch of spice and more importantly helps frame the “aromatic concentration and precision required for ageing”. The 2008 vintage is one of the most celebrated in Champagne. It is in fact one of the few vintages in the last 20 years in which the harvest took place in October. Despite this "late" harvest (even if it was the norm in the 1980s and ’90s), Ponnavoy notes that the grapes retained a lot of acidity as well as concentration from what was an extended growing season. The acid-sugar balance is so important Ponnavoy and his team could see the quality of the grapes at harvest was very promising. “2008 is the perfect expression of our continental climate in Champagne, which is both hot and cool. The Comtes 2008 carries this very contrasting climatology within it, between sun and freshness, as well as the distinct identity of the chalky terroir and the allure and precision you can get from the Côte des Blancs.”   Much has been said and written about the similarity of 2008 to other vintages but Ponnavoy is reticent to compare it directly. For him, this vintage stands on its own and has its own personality. At a push in terms of concentration he compares it to 1996 and for elegance to the 2004. When it comes to the 2008’s drinking window, he believes it all depends on what you want from your Champagne. “The 2008 is ready to be discovered now, appreciated on its thin, elegant, chiselled, dynamic side. However, Comtes de Champagne is certainly produced with the purpose for ageing. I like to taste Champagnes with as much ageing time on the lees as disgorging time. I think it will be interesting to discover or rediscover this 2008 vintage in 10 years or so, at the dawn of 2030!” With fantastic lineage behind it, the 2008 Comtes de Champagne will no doubt be in high demand on release and provide fantastic drinking pleasure for decades to come.

2001 Chambolle-Musigny, Premier Cru, Les Amoureuses, Domaine Jacques-Frédéric Mugnier (and lashings of Beaujolais) – chosen by Daniel Johnnes, Wine Director of The Dinex Group and Founder of La Paulée, La Fête du Champagne, La Tablée and Pressoir  “This holiday I plan on opening several bottles of great wine. Great doesn't necessarily mean expensive or rare. I'll be sure to drink plenty of Beaujolais and mostly from my favorite producers, Morgon from Marcel Lapierre, Fleurie from Jean-Louis Dutraive and Chiroubles from Domaine Thillardon. As much as they are "drink everyday" wines, they also have the magic power of putting a smile on everyone's face.  “Yet, for that really special wine, I plan on opening a bottle of Chambolle-Musigny Premier Cru Les Amoureuses 2001 from Domaine Jacques-Frédéric Mugnier. Chambolle-Musigny is among my favorite villages in Burgundy and the Amoureuses vineyard could easily make a case to be classified as Grand Cru. It combines the perfume, texture, elegance and persistence typical of the very best red Burgundy. The style of Domaine Mugnier is one of refinement and grace. And with 20-plus years’ age, it should be perfect for drinking now. Even though it will accompany a roast chicken, this wine is like a celebration and a meal in and of itself.”  2018 Klein Constantia Vin de Constance – chosen by Jeffrey Koren, Head of Wine at Marceline, London  “While it’s easy to open a perfunctory bottle of Port or Sauternes at the end of a Christmas meal, the oh-so-delicious Vin de Constance by Klein Constantia has become my go-to sweet wine for the festive period over the past few years. Steeped in history, Vin de Constance was famously a favourite of Napoleon and lauded by authors like Jane Austen and Baudelaire. These days, winemaker Matt Day has revived this legendary dessert wine to its former acclaim. It always offers wonderful notes of apricot, honey and spice. But most importantly, it’s balanced by refreshing acidity that is an absolute necessity after an indulgent holiday meal.”  Hauller Frères Pinot Gris La Chappelle Signature – chosen by Joséphine Duffau-Lagarrosse, Ch. Beauséjour   “Ludovic Hauller is a long-standing friend I met during my studies in Burgundy. I appreciate the precision that his family channels into the wines, and this cuvée showcases great finesse, with freshness and elegance, mirroring the granite terroir in which the vines grow. It’s a Pinot Gris of remarkable complexity, hailing from a plot that sits below the Chapelle Saint-Sébastien de Dambach-la-Ville. Ludovic introduced me to Alsatian wines, which I knew little of previously, and I love this cuvée. As for when, this is definitely the kind of bottle I would open in the days following Christmas, with my family, playing board games by the fire and putting the world to rights, patiently waiting for the New Year!”  2002 Champagne Salon, Giuseppe Mascarello’s 2017 Barolo Villero, Tiberio’s 2018 Colle Vota – chosen by Lorenza Sebasti, Castello di Ama  “As usual, this Christmas we will open a magnum of 2002 Champagne Salon. I remember we had the chance to buy a few magnums a long time ago as they were precisely the birth years of our children (1997, 1999 and 2002). Then I guess I will spoil everyone at home with a beautiful Barolo Giuseppe Mascarello Villero 2017 and Colle Vota Montepulciano d’Abruzzo 2018 from my dear friend Cristiana Tiberio. She makes very few bottles of this very elegant and vibrant wine, which is among my favourite reds.”  2021 La Morandina Moscato d’Asti – chosen by Donald Edwards, Head Sommelier at La Trompette, London  “Beyond the best white Burgundy I can lay my grubby mits on, I’ll be cracking the second bottle on a case of La Morandina’s 2021 Moscato d’Asti – part of a new festive tradition. Back when my wine appreciation was still protean, I heard a rumour that Moscato d’Asti – the sweet fizzy floral stuff that we sold in my Glasgow Oddbins – ages magnificently. Twenty or so years later, I’m the Head Sommelier at La Trompette, hosting a big Piedmont-themed wine lunch. Barolos and Barbarescos aplenty litter the room, but the wine that stops me in my tracks? A 2013 Moscato d’Asti from Giuseppe Vajra. It was phenomenal, still gleefully tasty, but now with a touch of extra weight, more waxy lime skin and late-evening summer flowers, heady in its bouquet. Here she was, my white whale, and, boy, she didn’t disappoint.  “Last December, visiting La Morandina in Asti, I asked whether they had anything with a bit of age and lo! a 15-year-old magnum appeared. My stars had aligned for a second time – the wine equally lovely, offering a bit more exotic spice, cardamom and coriander seed along with the sweet creamy lime zest. Crucially, this time I could see the germ of a plan. Each year, I would buy a cast of Moscato d’Asti, building a reserve of Moscato to steadily enjoy over the coming years. I’ll be the Christmas king of deliciously sweet floral fizz. So, on the morning of 25th, I’ll be twisting the top off the second bottle from last year’s case and smugly enjoying my Moscato and crumpet as I let my mind wander over the riches I’m preparing for the coming years.”  François Cotat Sancerre Le Mont Damné and Massican Gemina – chosen by Alex Sarovich, Founder and CEO of Own Rooted Hospitality  "As the oldest of five in a large Italian family, I've learned that selecting the perfect wine is an art form that requires careful consideration of both the food and the audience. When I'm hanging out with my twin 24-year-old brothers, they're all about vibrant, crisp wines like Champagne or Sancerre. If I can get my hands on it, I love surprising them with a bottle of Cotat’s Le Mont Damné, a truly exceptional wine that never fails to impress.  “In contrast, when I'm with my mom and aunt, we lean into our Italian roots. White wines from Italy are a staple in our household, especially when we're in the kitchen, cooking and preparing a meal together. This year, I'm planning to bring a bottle of Massican Gemina to our holiday gathering in McMinnville. This beautiful white blend, composed of Greco, Falanghina, and Fiano grapes from top California vineyards, perfectly captures the essence of our family's wine appreciation – a nod to our Italian heritage with a California twist.”  Coche-Dury Meursault, Domaine de Trévallon and Jean-Michel Gérin Côte-Rôtie La Landonne – chosen by Philippe Abadie of Alvina Pernot  “First of all, we decided to open a bottle of 2022 Meursault from Domaine Coche-Dury, given to us by a client to celebrate the birth of our son Pâris, who was born on January 1st 2022. We also really like the new style introduced by Raphaël since he took over this magnificent estate. Then Trévallon: my grandfather Georges from the south of France was an unconditional fan of the estate, and during my childhood there was always a bottle on festive tables (for birthdays, Christmas, New Year, etc) – so this will be a little wink to him. Then last, a bottle of Côte-Rôtie La Landonne by Jean-Michel Gérin. The story goes back to a few weeks after I first met Alvina, for this is the bottle of red we drank on our first restaurant date.”  2022 Domaine Yui A Rouge – chosen by Carlito Chiu, Wine Director at Andō, Hong Kong  “Established in 2019 by the dynamic husband-and-wife duo Tetsuya and Aya Sugiyama, Domaine Yui is a Japanese winery with a profound mission of unity and togetherness. Inspired by the meaning of the Japanese word “yui”, “to connect/link”, the Sugiyamas are dedicated to bringing people together through their shared love for wine and agriculture. Their A Rouge is a remarkable expression of Burgundy-style red wine crafted in Hokkaido, Japan – a specific blend of Pinot Noir, Chardonnay and Pinot Gris that showcases the region’s terroir. Japanese whisky shortages have made the headlines once again and these days, it no longer comes as a shock to see another iconic Japanese whisky discontinued.  Over the past twenty years a fanatic, ever-growing fan base has risen around Japanese whisky. While the category deserves nothing less, this increased popularity continues to deplete the remaining stock from Japan's largest and most popular producers. 
 Following the footsteps of the Hibiki 12, Hibiki 17, Hakushu 12-year-old, and aged Yoichi and Miyagikyo expressions, Nikka has just announced the discontinuation of the Taketsuru Pure Malt blended range. The entire Taketsuru range will be coming off the shelves, from the affordable Taketsuru Pure Malt NAS, to the multiple award-winning aged expressions, the
25, 21, and 17-year-old. In 2019, Nikka also discontinued their popular Nikka Coffey Malt, Coffey Grain, and Nikka 12.  Discontinuations of Japanese whisky come almost every other month. Yet, for such a successful category, led by some of the world’s largest drinks companies one question arises - Why is this happening? After Suntory's Yamazaki 12-year-old brought in the first international award at the 2003 International Spirits Challenge, the floodgates opened, and accolades for Japanese whisky haven't stopped since. “World’s best single malt”, “World’s best blended whisky”, “World’s best single cask single malt”; Japan has topped almost every style category. Yet, before this success on the global stage the Japanese whisky industry was suffering. The rise of beer and Japan's own spirit, shochu, in the ‘80s saw whisky sales crash domestically. Being a rather closed-off nation, Japanese whisky makers like Suntory and Nikka never imagined their products would be sought after abroad and thus continued to produce whisky with the newly uninterested, domestic market in mind.  Production was dramatically reduced, and this has caused the current lack of well-aged stock we are experiencing today. Nikka, who has now stopped producing the Taketsuru range, halted production at their distilleries for two years. The late 80s were a period of great economic strain and uncertainty for the Japanese whisky industry and while most pushed forward, some distilleries had to shut down near the turn of the millennium. One such
case was the Karuizawa distillery, and the events surrounding this brand after its closure truly speak for Japanese whisky as a whole. After the aforementioned awards, the world began to notice Japanese whisky. Suntory led the charge with the Yamazaki, Hibiki, and Hakushu brands while Nikka came through with punchier, more Islay-esque expressions from Yoichi. Karuizawa’s remaining stock, in the hands of some successful and forward-thinking entrepreneurs, grew into one the most collected whisky brands in the world today. Awards, interest, and companies with a goal to push Japanese whisky abroad dynamically entered the industry and today Japanese whisky
is one of the rarest, most admired categories in the global whisky industry. Karuizawa has topped the charts, with their very final casks expected to be bottled in 2020. Suntory and Nikka continue to remove their most famed expressions from the shelves, further indicating that their dwindling supply means they are also likely to be discontinued at some point in the near future.  However, smaller producers, like the Chichibu distillery, have amassed a cult-like fan base despite producing and releasing much younger aged whiskies. The popularity surrounding no age statement or young three to eight-year-old releases, show that age in Japanese whisky is not everything. Well not exactly - with an age statement attached, prices skyrocket. The Taketsuru discontinuation shows clearly that Japanese whisky's popularity is continuing, and producers still can't keep up.  From a collector's point of view, the news will only see the prices of Taketsuru Pure Malt rise and as a result, this will bring up most other Japanese blended whiskies with it. For drinkers, sadly, this will make one of their favourite, go-to expressions harder to find and quite a bit
pricier. The tale of Japanese whisky has been an eventful one, to say the least. While discontinuations and stock depletion isn't the best news for whisky lovers, it’s all part of the story that has made Japan’s whisky what it is. The Tokyo 2020 Olympics are on the horizon. Rumour has it many distilleries will be releasing special bottlings and hosting events as the world's eye focuses on Tokyo. The Glenfarclas distillery is one of Scotland’s most successful. What sets the distillery apart is the family that owns it and has done so for six generations. While most large distilleries in Scotland are nowadays owned and run by large drinks companies and corporations, the Grant family continues to take pride in owning Glenfarclas, seen fully through their timeless slogan: The spirit of independence.  The Glenfarclas Distillery's history The Glenfarclas story began in 1836 when farmer Robert Hay received a license to distill spirit on Rechlerich farm, Ballindaloch. In 1865, after Hay’s passing, John Grant bought the farm and the distillery along with it and it has been owned by Grant’s descendants ever since. Grant was a successful farmer, and while he continued to operate his Blairfindy farm, he
left the new site in the care of his cousin, John Smith, and his son, George Grant. Smith left Glenfarclas and John Grant died in 1889, leaving the site in the hands of his son. Sadly, he also passed soon after leaving the distillery to his widow, Elsie, and his two sons, John and George. The 1890s brought with them a whisky boom which led to an unfortunate partnership with Pattisons Ltd. While expansion was in mind, this partnership led to many hard years for Glenfarclas. Luckily, the Grants retained full ownership of the distillery after the whisky crash, and in 1913 George took full control. John retired due to ill health.  George Scott Grant followed, and led the distillery for 52 great years, until his death in 2002. Under his leadership Glenfarclas built up its name and brand image. Glenfarclas is known to have a large number of very old and rare casks in its warehouses, and this is due to
George S. Grant’s decision to supply less stock to blenders, decades before.  John L.S Grant, the current chairman, has been with the company since 1973 and succeeded his father after his passing in 2002. The sixth generation comes in the form of George S. Grant who joined Glenfarclas in 2000 and works as the global brand ambassador, introducing the world to the amazing story and liquid behind the Glenfarclas brand.  Glenfarclas single malt whisky Glenfarclas has come to be known for its old and rare releases, with huge popularity in unique markets like China and Russia, and a cult-like following across the globe. As a family-owned company, the expansion speed and budget aren’t huge, therefore, they cannot reach the global popularity of The Macallan or Glenlivet. Yet, with an amazing story and even more impressive casks, the team has managed to cement Glenfarclas as both a loved brand for
drinkers and collectors.  Glenfarclas whisky is known for its full-bodied, Sherry matured expressions. The team only releases expressions at natural colour, often at cask strength, aged for long periods. The unique still shapes and sizes, alongside the traditional ingredients and distillation techniques
add to the distinct Glenfarclas character which has led to a very strong and loyal fan base for the brand.  Perhaps, the most famous releases by Glenfarclas come under the Family Cask range, single cask releases from each year between 1952 and 2008. The ongoing series has made Glenfarclas hugely collectable as fans attempt to hunt down each and every bottle. These are bottled at cask strength, natural colour, and retail for thousands of pounds.  Beyond special releases, the core portfolio includes the 10-, 12-, 15-, 17-, 21-, 25- and 30-year-old, and 105 Cask Strength. Most of these are available at very affordable prices for such well-aged whiskies, again showing the team’s amazing warehouse management skills, unlike many brands that have low reserves of well-aged stock.  Glenfarclas's collectability Glenfarclas is becoming increasingly collectable thanks to the Family Cask range, the well-aged Glenfarclas 60 Year Old, 50 Year Old, 40 Year Old, and the famed Glenfarclas Pagoda series.  Beyond this, the distillery has a strict policy about cask trading – almost no Glenfarclas full casks make it onto the market for trading and most do not allow naming of the distillery on the labels. This practice has helped properly control how the distillery’s name is used and given the brand a more “limited” image. Glenfarclas is widely traded in auctions across Asia with strong markets including Taiwan, Hong Kong, and Japan. Ch. Rayas is truly special. The estate’s bottles – with their classic, simple red-and-black design and distinctive triangular neck label – command instant respect amongst afficionados.  Pure Grenache grown on the estate’s sandy soils, this remarkable Châteauneuf-du-Pape transcends its appellation. The wines are perfumed, pretty and elegant, with extraordinary finesse – reminding more of red Burgundy than the bolder wines that the Rhône is often associated with.   The Reynaud family has owned the estate since 1880, and their determined avoidance of any publicity has only increased the property’s allure. Indeed, it’s perhaps this, combined with an off-hands approach in the winery, that means they are one of the few producers to broach the fine wine-natural divide – lauded equally by more traditional fine wine drinkers and the natural wine brigade. Held back and only released once mature, in tiny allocations to markets around the world, the wines are incredibly hard to get hold of.  Earlier this year, we arranged a special dinner tasting through 22 wines from the estate – three of its rare white Châteauneuf-du-Pape and 19 vintages of the flagship red, stretching back to 1990. The vertical offered unique insight into the estate, its character shining through in each wine on show.  Indeed, it was the freshness of the wines that amazed everyone in attendance – including longtime fan and Wine Advocate Deputy Editor William Kelley – stamped on every wine.  Only 400 cases a year are made of the Châteauneuf-du-Pape Blanc, from two hectares of Clairette and Grenache Blanc, fermented and aged in old oak. White Rhône is a wine for true geeks – and this is an exceptional example – a wine about texture and minerality, almost approaching Grand Cru Chablis in its pure stoniness. Suited perfectly to pairing with all sorts of food, it was clear – even with just three vintages of this unicorn – how well it ages, the 1999 still an outstandingly fresh and fine wine.  Of course, the reds were the main event. Much to everyone’s surprise, it was the so-called “off-vintages”, years that might be deemed “lesser”, that were the most impressive – it was in these bottlings that the singularity of Rayas shone through, over-riding the character of the appellation or year.   The 2008 (given “only” 93 points by Parker back in 2012, upgraded from its original 90 in 2010) was the wine of the night for most people. By contrast, the top-rated 2009 from a blockbuster vintage was impressive, yet the vintage ever so slightly masked the Rayas style – making the wine feel more like another (very good) Châteauneuf-du-Pape.  Overall, the wines showed an effortless timelessness – drinking beautifully now, yet clearly showing the potential to evolve for another 10-15 years or more, depending on the vintage. The more mature wines might show evolution on the nose – with tertiary sous-bois notes – but on the palate, there remained a remarkable energy and vibrancy, with immense clarity of fruit. On several vintages a citrus, almost orange, note shone through, with a mineral thread and juicy acidity. Despite the undoubtedly high alcohol levels, the wines were all amazingly delicate – with no heat from the punchy ABV. And the tannins were effortlessly integrated, remarkably soft despite the structure designed for the long-haul.  Tasting through this line-up was an absolute privilege; for these rightly revered, rare wines are incredible. With no new oak, they are all about the purity and quality of fruit. They show exceptional longevity, an ethereality and easy grace that mesmerises. 2001 Château la Mission Haut-Brion, Pessac-Léognan, Bordeaux “A couple of weeks ago, in an attempt to try and cheer up ‘Lockdown 2.0’, I decided to order a fancy takeaway from a favourite local restaurant. It was a classic French menu – pâté to start, boeuf bourguignon for the main course, all topped off with a tarte tatin. To further brighten up the evening, I wanted to open something special from my collection, and landed on a bottle of 2001 La Mission Haut-Brion (it really had to be something French to go with  that menu!). It was the ideal accompaniment, perfectly in its drinking window. It was full of dark red fruit, and – while being absolutely strong enough to stand up to the strew – was also wonderfully elegant. Everything was exactly as it should be, this is a stupendous wine, wonderfully balanced, perfectly pure and just downright delicious.” Rose Saunders, Senior Sales Manager 2015 Domaine de la Grange des Pères Blanc, Pays d’Hérault “Perhaps my favourite quality of a truly great wine is its power to make any occasion special. That being said, many of my most memorable wine experiences are those which aren’t planned – as was exactly the case with this bottle of 2015 Grange des Pères Blanc. During a weekend break in Cornwall last month, I managed to bag a last-minute booking at Outlaw’s New Road, and on opening the wine list this line immediately caught my eye – a rare find at fine wine merchants, let alone on restaurant lists. I asked the waiter, who to my great disappointment told me the last bottle had sold earlier that day. However, Outlaw has a second restaurant down the road, and having confirmed they had one bottle left, he promptly jogged down a very steep hill, and back, to fetch it. “The wine itself is simply unlike anything else: 90% Roussanne with a little Chardonnay and Marsanne, made by a man who trained under François Coche-Dury, G’erard Chave and Eloi Dürrbach. The 2015 is still very young, a behemoth of aroma, flavour, structure and texture.
 Decanted and enjoyed over five hours, it was almost overpowering to begin with – with rich tropical fruit, spice, garrigue herbs, candied lemon and intense minerality. Continually softening and evolving with time, exhibiting an extraordinary array of nuances, this is a masterclass of how to balance raw power with freshness and finesse. This, now a decade old, was still deeply coloured with an expressive nose of dark fruit (ripe blackberries, plums) with underlying tertiary notes. Think of a cocktail. Is vermouth in it? If you’re thinking of a classic cocktail, there’s every chance it is. The Martini, Negroni, Manhattan – I could go on. And on. For whatever reason, vermouth has not always received the recognition it deserves for propping up so many exquisite mixed drinks. In fact, I’d hazard that a fair amount of cocktail lovers don’t know vermouth is in their glass at all, or, if they do, their knowledge of the liquid might be a little patchy. When it comes to vermouth, there are a few things you need to know. Vermouth is an aromatised wine which hails from Torino, Italy. It is generally accepted that vermouth – as we know it, not the kind prescribed by Hippocrates in 400BC for ailments – was invented in the 16th century. In 2019, a Geographical Indication was introduced to protect the style and quality of vermouth from its birthplace, Turin. Under these regulations, vermouth must be made with at least one Italian wine, wormwood must be the predominant flavour and the wormwood used must be grown in Piedmont. The final liquid must also be between 16% and 22% alcohol in order for it to be labelled “Vermouth di Torino”. The two most common styles of vermouth are sweet and dry. The former is red in colour and as such is often called Rosso. This is the style used in your Manhattan and Negroni. Dry vermouth is white (Bianco) in colour and will be used in your classic Martini. Four classic Vermouth-based cocktails The Negroni It might be hard to believe given the Negroni’s current notoriety, but this simple serve of equal parts vermouth, Campari and gin was incredibly slow to catch on. As is often true in cocktail lore, there are a couple of people credited with its invention. The most widely accepted is a Count named Camillo Negroni who asked a bartender at Caffè Casoni in Florence to make his Americano cocktail a touch stronger. They duly obliged and switched the soda water for gin. This is believed to have taken place in 1919. A smaller camp credits a man named General Pascal Oliver Comte de Negroni with the invention of the cocktail in Senegal between 1855 and 1865. Setting aside the inventor for the moment, the Negroni, unrefutably, became de rigueur in the early 20th century – requested across Europe and favoured for its bitterness and alcoholic strength. Orson Welles was a very high-profile fan, famously quoted in 1947 for saying: “The bitters are excellent for your liver, the gin is bad for you. They balance each other.” In the years that followed, the Negroni’s popularity waned when appetites became more saccharine in nature. In the early 2000s, things shifted again as the Negroni began to appear on cocktail menus at some of the best bars in the world. It wasn’t long before the recipe featured in cocktail books and drinks sections of influential titles, such as The New York Times. Fast forward to today and the Negroni is regularly named the most popular cocktail by patrons and bartenders alike. There are countless riffs on the original recipe and an entire week is dedicated to celebrating it. How to make a Negroni 30ml sweet vermouth 30ml Campari 30ml gin Ice Slice of orange (garnish) Pour all ingredients into a glass with ice and stir well. Add garnish. The Manhattan The Manhattan has assumed many guises over the years, making its exact origin a hotly contested subject. Some believe Sir Winston Churchill’s mother was served the first Manhattan cocktail at the eponymous club in New York in the early 1880s. Others question the validity of this claim as she was likely in the UK, pregnant with the future Prime Minister, around this time. Some believe a New York bartender by the name of Black invented the recipe at the Hoffman House. The earliest known record of the Manhattan, in which this name and the recognised recipe, appear is in The Sunday Morning Herald in September 1882. Unhelpfully, some referred to a very similar recipe as a Jockey Club or Turf Club Cocktail. The classic recipe consists of Rye or Bourbon, sweet vermouth and bitters. During Prohibition, it was not uncommon for people to use a different whiskey as the base ingredient. If you substitute American whiskey for Scotch whisky, you have a Rob Roy cocktail. How to make a Manhattan 50ml Bourbon 25ml vermouth 3 dashes of orange bitters Cocktail cherry (garnish) Add all ingredients into a glass filled with ice and stir. Strain into coupe or Martini glass and garnish. The Americano The Americano recipe was invented at Gaspare Campari's bar in Milan in the 1860s. The cocktail of equal parts Campari, vermouth and soda water, was originally named “Milano-Torino” after the principle ingredients’ home towns of Milan and Torino respectively. The simple serve was renamed in honour of its growing fanbase: American tourists. The Negroni recipe was based on the Americano and contains two of the three main ingredients – with the soda water switched for gin. While many associate James Bond with the Vesper cocktail or a Martini – shaken, not stirred – the first cocktail associated with 007 in Ian Fleming’s work was actually an Americano in Casino Royale. It is later written, in A View To Kill, “Bond always had the same thing – an Americano”. How to make an Americano 30ml sweet vermouth 30ml Campari Soda water Slice of orange (garnish) Fill glass with ice, add Campari and sweet vermouth. Top with soda water and stir gently. Garnish. The Adonis A slightly less well-known vermouth-based cocktail, the Adonis was invented in honour of its Broadway musical namesake. The musical, based on William Gill’s novel, first opened in Chicago in 1884 and went on to become the longest-running show of its era. As the name suggests, the story follows a beautiful male statue who comes to life and ultimately opts to return to stone. The first reference to the Adonis cocktail was written in 1887.
