What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

Inside Burgundy – Jasper Morris MW  Côte de Beaune  Jasper Morris MW’s first assessment of Burgundy 2024 reveals a vintage of extreme adversity yet unexpected classical poise, particularly for whites. An “exceptionally wet year,” marked by poor flowering, mildew pressure, and limited sunshine, made 2024 one of the most challenging recent seasons. Conditions worsened moving north, with the Hill of Corton and northern Beaune hardest hit, while mid-slope vineyards benefited from better drainage and earlier flowering. Harvest was tightly compressed between 12–16 September.  Despite the difficulties, Morris calls 2024 “much more applicable” as a return to classic Burgundy than 2021, especially for whites, where quality is “relatively homogenous” and characterful. He found wines defined by citrus, fresh apple, and, at their best, “rapier-like acidity” and tension. These whites will be “accessible early,” though he warns buyers to avoid those lacking backbone and energy.  Reds are more mixed and occasionally fragile, yet the finest examples show charm and harmony. Morris highlights “aromatic pinots that could make you smile at first sniff,” with unusually refined tannins, aided by a return to a classical 100-day ripening cycle. Village wines and well-managed premiers crus represent the sweet spot of the vintage.  Chablis  Chablis faced the harshest conditions in 2024: floods, frost, hail, and relentless rain, with total rainfall reaching 634 mm and many organic producers harvesting below 10 hl/ha. Some, like Guillaume Vrignaud, “made hardly any wine and sold it off.” Morris expected “green… ugly and flawed” wines but found most were sound and “less fragile than their 2021 counterparts.” While few are truly great, many show classic Chablis character—crisp, defined, with “crushed oyster shell” notes. Best for short- to medium-term drinking, 2024 in Chablis demonstrates resilience and surprising drinkability after a punishing season.  Côte de Nuits  In the Côte de Nuits, Morris sees 2024 as a vintage of delicacy rather than power. Harvest ran 12–16 September, with Nuits-St-Georges hit hard by rain and further north affected by uneven conditions and hail. Losses came mostly from coulure rather than mildew, especially around Gevrey-Chambertin. Whole-bunch fermentation and reduced stem use were key, and while some wines need time to integrate, many show light, perfumed character. “If you like dark coloured powerful wines… there is nothing here for you,” notes Morris. Only 2% of wines achieve top accolades, making careful selection essential.  Explore Jasper Morris MW’s reports, notes and scores on his site (subscribers only)  Vinous – Neal Martin  Neal Martin portrays 2024 as a season of extremes, where relentless rain, frost, and mildew tested every winemaker. Flowering was uneven, yields sharply reduced (Pinot Noir suffered most) and frost damaged parcels from Marsannay to Clos de Vougeot. As one winemaker reflected, “Each day in the vineyard felt like a battle,” capturing the relentlessness of the season. Tiny harvests demanded meticulous vineyard work and careful vinification, with whole-bunch decisions critical: “2024 was not a vintage to play recklessly with stems.”  A sunny, warm August offered salvation, allowing grapes to reach phenolic ripeness. Martin notes it “enabled some to capture the brightness and freshness of vibrant red fruit where Pinot Noir reaches its apex” and lent Chardonnays “razor-sharp tension and delineation.” Whites show energy and mineral clarity, while reds are delicate, transparent, and expressive rather than powerful.  Despite the challenges, skill and perseverance triumphed. Careful vineyard management and thoughtful vinification produced wines of elegance, freshness, and charm. As Martin concludes, “The bottom line is that 2024 is an endlessly fascinating vintage that will enamour the small number who imbibe the fruits of much labour.”  Explore Neal Martin’s reports, notes and scores on the Vinous site (subscribers only)  Burghound – Allen Meadows  Allen Meadows’ Burghound report describes 2024 in the Côte de Nuits as a vintage of extreme difficulty and delicate character. Following “rain, rain, and yet more rain,” growers faced poor flowering, rampant mildew, and historically tiny yields, with clusters sometimes reduced to 15–20 berries. Meadows notes that “the variability in 2024 is that of 2023 squared,” making disease control, rigorous sorting, and careful vinification essential to preserving quality.  Despite the challenges, the best wines are “ultra-fresh, wonderfully energetic, impeccably well-balanced and the most transparent reds we’ve seen since 2010.” Alcohol levels are modest, around 12.5–13%, enhancing clarity and finesse rather than weight or power. Harvest ran from 16–21 September, slightly later than the traditional 100-day rule, allowing vines to achieve ripeness amid persistent rainfall.  Vinification emphasized restraint: light extraction, reduced stem use, and careful temperature control preserved purity and avoided harsh tannins. Minor faults, mostly reduction from copper or sulfur sprays or slight volatile acidity, rarely detract. Meadows notes some wines are “too skinny or too lean,” but the best display crystalline transparency that “puts the intrinsic terroir on parade.”  Most wines suit mid-term cellaring: villages and premiers crus are approachable in 4–8 years, while top grands crus can age 10–15. Stylistically, 2024 reds are elegant and energetic, rewarding careful selection in a year of extreme variability.  Explore Allen Meadows’ reports, notes and scores on the Burghound site (subscribers only) Jancis Robinson – Jancis Robinson Jancis Robinson MW sums up 2024 as “nightmare… misery… exhausting… unremittingly grim,” with “gruesome” final yields. Heavy rain and unusually low temperatures during flowering severely damaged Pinot Noir, particularly in the Côte d’Or, while Chardonnay fared slightly better. Many vignerons abandoned organic viticulture for systemic sprays to save their crops. Pierre-Yves Colin-Morey achieved “respectable, but most unusual for 2024” yields of 35–40 hl/ha only by switching early.  Losses were severe: reds down up to 80%, whites about 30%. Robinson notes that “the cool summer meant acidities were high, and successful reds could be described as pretty, but never concentrated,” with pale color and barely perceptible tannins. Late August brought some warmth, raising sugar levels, though many producers still had to chaptalise. She warns this is “a vintage to drink relatively early,” emphasizing elegance over opulence, fragility over power.  Cellar work was complicated by tiny harvests. Half-full tanks increased the risk of oxidation or stuck fermentations. Oak use was moderated, though some grands crus required up to 50% new barrels to fill them. Extraction and whole-bunch fermentation were carefully managed, with co-fermentation across parcels common.  Despite the challenges, Robinson highlights successful producers including Bertrand Bachelet, Yvon Clerget, Comte Armand, Philippe Colin, Sérafin, and Joseph Drouhin. Regions south of the Côte d’Or fared better, producing more generous, sophisticated wines. She frames 2024 as “a triumph of resilience over nature,” rewarding careful selection and precision in the cellar. Some estates, like the newly launched Domaine Henri Rebourseau, produced nothing, while others managed only tiny parcels. Yet Hayes notes, “producers actually had some wine; the second relief was that these had turned out better than feared.” Quality varies by village, vineyard, and even row, making careful selection essential.  The season was relentlessly difficult. Pinot Noir struggled with coulure, millerandage, and mildew, while Chardonnay fared slightly better thanks to earlier flowering. Organic producers faced doubled labor and costs, with some switching to synthetic sprays to save their harvests. Final yields were punishingly low, with red grape losses up to 85%. Harvest began in mid-September, balancing ripeness with botrytis and powdery mildew risks.  Winemaking focused on tiny lots, cautious extraction, and moderate oak. Reds are elegant, medium-bodied, and dominated by red fruit, while whites show precise acidity and finesse. Hayes notes, “This is not the Pinot Noir we have recently come to expect.”  Scarcity keeps prices high, yet the best wines are balanced and surprisingly drinkable. The northern Côte de Beaune largely avoided the worst rain and mildew, producing wines with the lush, supple fruit the region is known for. Pommard ranges from firm and tannic to approachable, while Volnay shows silky, expressive character.  Yields were exceptionally low: Paul Zinetti of Comte Armand recorded just 15 hl/ha, and Paul Négrerie of Château de Pommard 14 hl/ha. Careful extraction was key to avoid green tannins, producing wines of elegance over ripeness. Frédéric Lafarge notes that Volnay’s 2024 shows purity and terroir expression, comparing it favorably to 2021: “2024 showed more finesse and complexity due to the longer vegetative cycle.” Overall, the vintage is lighter than usual, suited to earlier drinking, though the best wines from top producers can age five to ten years.  Best Value Burgundy 2024 Wines   Finding value in 2024 requires a selective approach, as low prices rarely coincide with scarce wines. Curtis recommends starting with regional appellations, particularly the Hautes-Côtes of Nuits and Beaune, where top performers include Bourgogne Hautes-Côtes de Nuits Les Dames Huguette (Dufouleur) and Bourgogne Hautes-Côtes de Beaune blanc (Guiton).  Further south, the Côte Chalonnaise offers excellent options, with Maison Chanzy (Bouzeron), Domaine Belleville (Rully), Château de Chamirey (Mercurey), and Domaine du Cellier aux Moines and Domaine Stéphane Aladame (Givry/Montagny) standing out. Curtis also praises the Mâconnais for Chardonnay, noting “bright acidity, fresh fruit, and solid structure,” with Pouilly-Fuissé in particular shining.  In short, 2024 may be small in volume, but careful exploration of Pommard, Volnay, the Hautes-Côtes, southern Burgundy, and the Mâconnais reveals wines that combine quality, typicity, and attractive drinking windows.  Kristaps Karklins portrays 2024 in Chablis as a season of extreme attrition, marked by frost, hail and what he calls “historic mildew pressure—among the highest ever recorded.” Yields dropped by “60% to 70% on average,” with some estates losing entire crus, including Dauvissat’s Séchet, Montée de Tonnerre and Les Clos. By late August, rainfall had reached “around 600 millimeters, compared with the average 380,” making healthy fruit scarce and rigorous sorting decisive. Growers who waited to harvest were rewarded with “greater texture and mid-palate amplitude,” while early picking risked under-ripeness and dilution.  Despite the hardships, barrel tastings reveal notable successes. The finest 2024s are “classical Chablis,” defined by tension, clarity and site transparency, and approachable earlier than most vintages. While they cannot rival the concentration of 2023 or 2022, Karklins suggests they may delight purists more than a random selection of riper years. “No one would call 2024 a historic vintage,” he concludes, yet among the best producers the wines are “unmistakably, even nostalgically Chablisien,” rewarding careful selection with freshness, character and authenticity. Volumes are reduced, but quality is “solid,” and some wines “transcend the vintage,” reaching levels of maturity that are unusual for such a challenging year. Jean-Marie Guffens likens the domaine’s 2024s to 1998, a vintage that performed better in the Mâconnais than in the Côte de Beaune.  The true stars for Domaine Guffens-Heynen, however, are the bottled 2023s. Kelley ranks 2023 alongside 2020 as one of the finest vintages for domaine in the last 10 to 15 years and among the best of Guffens’s career. If the 2020s are “almost neoclassical” in style, the 2023s are more flamboyant, setting up a compelling contrast between two outstanding expressions of the domaine that will invite comparison for decades to come. Winemaker Jessica Servet has certainly been busy since our last visit to Hegarty Chamans, an enchanting vineyard in the hills of the Minervois. The winery’s success over the last few years and conversion to biodynamics has earned them an enviable reputation – both abroad and locally. Servet has since been elected deputy mayor of the local village and asked to take the lead on environmental sustainability issues in the wider district. Once a team of outsiders – with the estate founded by Englishman Sir John Hegarty and his wife Philippa, they are now increasingly influential in the region. But this wasn’t always the case: Hegarty Chamans has always seen itself as the “black sheep” of the Minervois.  From the outset it had a very clear goal to promote organic principles, which back in 2002 was radical for the region. The estate was also keen to produce wines of a certain style, wines that were elegant and very pure, resisting what Servet describes as “the make-up” of products that can be (and are) widely used in the region to affect the style and flavour profile of the wines. “People want the wines very ripe but with acidity,” Servet explains, “so they simply pick late and add acidity in the winery. This is something we are strongly against. We want to produce a balance in the wine without manipulation.” In the southern French heat, it can be tricky to produce wines that are fully ripe, while also keeping the alcohol in check and retaining freshness. Servet explains the key to their success is not to push the vines too hard. “You look around and some vignerons are willing to push their vines to the extreme to maximise yield, 80 to 90 hl/ha is not unusual for the region. The vines are weak, susceptible to uneven ripening and disease and finding balance in the wine is not easy. We realised we had to drop right down to 25 to 30 hl/ha to find that natural balance.”  She goes on to explain this approach produced a wine style that initially was deemed “not Minervois enough”. Their wines had even been rejected by the appellation at tasting (to carry the appellation’s name, wines have to be presented to a tasting panel).  The irony is that their purist attempts to reflect the vineyard were seen as atypical of the region. This rejection, while unhelpful, did not steer them off course. Thankfully in more recent years their philosophy and the success of the wines both locally and further afield has seen their approach become influential in what is a true representation of Minervois, or
perhaps what is more important for Servet, a true representation of the Hegarty Chamans vineyards. It is a very particular site and not dissimilar to the likes of the secluded wineries of Ch. Rayas, further north in Châteauneuf-du-Pape, or even the secluded vineyard of Soldera in Tuscany. What they all have in common, alongside low yields, is a belief that great vineyard sites need biodiversity to produce great wine.  All these vineyards are surrounded by forests that not only protect the vineyard from chemical infiltration from neighbouring sites, but benefit from a rich ecosystem that protects soil health and the vine’s natural resistance to disease, extending its natural life. The ultimate goal is to have a vineyard in perfect self-sustaining health. Servet believes this rich biodiversity is key to the vineyard working with its surrounding environment. Animals are a fundamental part of this: the estate raises a small flock of sheep which eliminates the weeds which grow between the vines and provides natural fertiliser, supplemented by other organic manures.  They also keep bees and prepare their own composts which are energised using specific biodynamic preparations. After spreading on agricultural soils, they encourage microbiological life and the mineral and organic richness which Servet believes is at the source of the strong terroir expression found in the wines. Beyond Hegarty Chamans, Servet is also encouraging others to employ a sustainable approach. In the region, all three of the main wineries are now organic and her latest domestic project is to organise a communal composting system for all residents living in the region.  Hegarty Chamans’ top cuvée, Black Knight, comes from the estate’s finest vineyards and is made only in the best vintages. We were fortunate to taste the 2016 on a number of occasions earlier this year, from barrel and following bottling (which is exclusively in magnum). We were blown away by the quality, the textural richness of the wine, the layering of the tannins and the purity of fruit – which is really special. It certainly has the signature elegance the winery has always promoted above anything else, but there is Minervois power too. Servet knows in the run up to harvest whether there will be a Black Knight cuvée – and in 2016, it proved to be a very easy decision. “We had enough rain in the spring to see us through the summer with very steady weather, no heat spikes and very even ripening, it was the most relaxed season I can remember,” she explains. The cuvée is made typically from the same favoured plots. Syrah, which makes up 80% of the blend, always comes from the Rabbit vineyard. “It's special due to the particular exposition of the vineyard and the effects of a distinct red and white clay in the soil. It produces an unbelievable freshness to the Syrah from this site,” says Servet.  The Carignan (typically around 10% of the blend) always comes from the oldest vines on the entire property, high up on the hill above the winery, 60 to 70 years in age and offering consistency every year. The Grenache, however, is not always from the same site, and is often chosen after vinification.  “I know the flavour profile I am looking for and when I find it, it goes in. The best expression of Grenache is based on picking it at exactly the right time. It gives you incredibly pure strawberry jam flavour with white pepper. When you capture both that sweet and spicy flavour in the wine you know you have got it right,” explains Servet. Using only natural yeast, the grapes go through fermentation and undergo a four-week maceration with gentle extraction, with the wine kept at a low temperature to retain aromatics. Only the free-run juice used for Black Knight – again retaining the elegance in the wine. The wine is then aged in a mix of one, two and three-year-old 300-litre barriques, Stockinger and Séguin Moreau barrels for 22-24 months. It is this long élevage that creates the wonderful layered texture in the wine. “There are lots of tannins in the wine and it needs this time to fully integrate in barrel,” Servet says. As I push further to understand the secret behind this cuvée, Servet admits there is always a sense of mystery in winemaking. A lot of the time her work is done on instinct and how she feels. Servet explains that if she is in a bad mood, she doesn't go near the wines. "There is energy here and I trust in that. I feel it in the vineyards and I feel it in the winery.” There is certainly a bit of magic that goes on in winemaking and the vineyards of Hegarty Chamans are certainly special – as you can feel in the wine. The 2016 Black Knight is the finest cuvée we have tasted from the property, and it is fast becoming one of the most exciting wines from the south of France. Making a mark in the Minervois

Ispirata da un russo, prima prodotta da un ungherese, poi da un francese e poi da un tedesco, la tradizione enologica di Masseto è stata decisamente internazionale, almeno fino ad ora. Da gennaio 2024, la principale azienda produttrice di Super Tuscan e gemella di Ornellaia ha avuto il suo primo autoctono al timone: Marco Balsimelli, nato ad Arezzo, non lontano da Siena, ha preso le redini dal direttore di produzione di lunga data Axel Heinz. 
Balsimelli vanta un illustre pedigree, avendo vissuto a lungo a Bordeaux, lavorando presso Gruaud Larose e, dal 2010, al fianco del celebre Eric Boissenot come enologo consulente per molte delle principali aziende della regione, ma l'opportunità di lavorare a Ornellaia e Masseto – nomi iconici della sua terra d'origine toscana – era un'opportunità che non poteva rifiutare. 
Fu André Tchelistcheff (enologo di origine russa di Napa Valley) a suggerire per primo a Lodovico Antinori che una particolare collina della tenuta di Ornellaia sarebbe stata perfetta per il Merlot. Tchelistcheff, consulente di Antinori, riconobbe il potenziale di quel terreno di argilla blu, lo stesso che è sinonimo di Pétrus. All'epoca, negli anni '80, il Merlot era scarsamente piantato in Toscana e rimaneva una quantità sconosciuta nella regione, con solo Castello di Ama, con sede più nell'entroterra del Chianti Classico, che possedeva alcune viti (oggi utilizzate per il suo vino di punta, L'Apparita). Ciononostante, il team di Ornellaia si arrischiò e piantò la maggior parte dei sette ettari di terreno argilloso nel 1984 (ulteriori impianti furono effettuati nel 1995). 
La ​​prima annata di Merlot da questa tenuta fu prodotta nel 1987: nacque il Masseto. Il nome deriva da "masso", che in italiano significa roccia, per i grandi ammassi di argilla simili a massi che punteggiano la superficie del vigneto. Non ci volle molto perché il vino ottenesse riconoscimenti internazionali, con Wine Spectator che assegnò all'annata 2001 100 punti, e il suo posto nella storia del vino si consolidò. Sebbene Tchelistcheff sia stato consulente fino al 1989, sostituito da Michel Rolland dal 1991, l'ungherese Tibor Gál fu il primo enologo della proprietà. A Gál successe Thomas Duroux (ora di Ch. Palmer), che nel 2005 passò il testimone ad Axel Heinz, l'enologo di origine tedesca che aveva preceduto Balsimelli. Anche la proprietà è cambiata di mano nel corso degli anni: la famiglia Mondavi ne ha acquisito una quota nel 1999, prima di acquistarla direttamente da Lodovico Antinori e venderla alla famiglia Frescobaldi, che ha acquisito la piena proprietà di Ornellaia e Masseto dal 2005. 
Molto potrebbe essere cambiato, ma il terroir è rimasto immutato. "È un sito davvero speciale", mi dice Balsimelli. L'argilla, fondamentale, domina lo strato superficiale del terreno, che è profondo solo circa un metro. Quando piove, l'argilla si gonfia, rendendo quasi impossibile lo sviluppo delle radici delle viti. Gli alti livelli di sodio nei terreni non fanno che accentuare il problema. "Per le radici, è una battaglia quotidiana", dice. È questa lotta, secondo lui, che si può assaporare nei frutti concentrati e ad alta acidità di questo sito. 
Anche il clima è fondamentale, trovandosi a soli 10 chilometri dal Mar Tirreno. Le fresche brezze marine fanno sì che la temperatura sia di circa 5 °C inferiore a quella della Toscana centrale, con un calo di circa 15 °C tra il giorno e la notte. Combinando questo con la luce riflessa dal mare, si ottiene una lunga stagione vegetativa, che preserva aromi e acidità, ma favorisce la maturazione fenolica: vini che combinano profumo e potenza. Circondato dai boschi, c'è un motivo per cui Masseto è gestito come un progetto completamente separato da Ornellaia, con una propria identità unica, anche se ha sempre condiviso un enologo (e, fino al 2019, una cantina) con la tenuta gemella. 
Per Balsimelli, il progetto ha rappresentato una nuova sfida. L'abbandono del ruolo di consulente – non più un semplice consulente prima di passare al progetto successivo, ma un semplice sostenitore di ogni decisione – aggiunge un nuovo peso di responsabilità. "Passo molto tempo a riflettere sulle questioni tecniche e sulle conseguenze", mi dice. Poiché la maggior parte del suo lavoro con Boissenot si era concentrato sulla Rive Gauche di Bordeaux, concentrandosi su blend a base di Cabernet provenienti da tenute più grandi, lavorare con una piccola proprietà, concentrandosi su un solo vitigno e diverse sottoparticelle, è un puzzle completamente diverso. L'approccio, per lui, è molto più borgognone, incentrato sull'espressione della purezza del sito e della sua argilla blu. "Bisogna essere perfetti con un solo tipo di terreno e un solo vitigno", spiega. La ricerca della perfezione è iniziata molto tempo fa a Masseto e oggi le viti hanno un'età media compresa tra i 20 e i 30 anni. Sono anche passati dal cordone speronato all'alberello, una tecnica sperimentata per la prima volta nel 2008, che hanno scoperto aiutare a mitigare gli effetti del riscaldamento globale (reagendo meglio in condizioni di siccità e proteggendo i frutti dal calore del sole). Coltivato biologicamente dal 2012, è stata posta particolare attenzione anche alla promozione della biodiversità in tutto il sito, anche utilizzando colture di copertura per ridurre la compattazione del suolo, aumentare l'organicità c e trattenere l'umidità nei terreni. 
La prima annata di Balsimelli è stata la 2024, che non uscirà prima del 2027. Ma è chiaramente entusiasta del sito, così come di come può modificare e migliorare un vino già lodato dalla critica e dai consumatori. "Quando assaggi vecchie annate di Masseto, puoi percepire l'eredità, assaporare il terroir", afferma – ed è esattamente ciò che vuole fare in futuro, incanalando la filosofia di Boissenot: comprendere un pezzo di terra e trovare la soluzione migliore per esprimerlo nel bicchiere. Per lui, quella soluzione consisterà nell'accentuare l'eleganza del vino. 
Fa notare come ci fosse – in tutto il mondo del vino – una tendenza verso basse rese e alti livelli di maturità nei primi anni 2000, ma le sue annate preferite sono quelle che hanno visto un maggiore equilibrio. Il 2006, ad esempio, è il suo preferito al momento: un anno con più precipitazioni, più vigore e, a suo dire, più energia. È un'annata che, a suo avviso, è "la chiave per il futuro". 
Il sito è in grado di maturare rapidamente e Balsimelli intende concentrarsi sulla freschezza, magari anticipando un po' la vendemmia, riducendo l'estrazione e abbassando le temperature di macerazione. Il 2022 è l'annata che uscirà a settembre: un vino che, a detta di Balsimelli, dimostra quanto sia buono il sito, performando anche in condizioni difficili come la calda stagione vegetativa del 2022. È, a suo dire, "la magia di Masseto". Magia che sia, ma Balsimelli è determinato a valorizzare ulteriormente questa tenuta speciale.

La magia del Masseto

Maylis Marcenat non rientra nello stereotipo del produttore bordolese. Vivace, con i piedi per terra e umile, è la più tranquilla che ci sia. È la quarta generazione della sua famiglia a gestire Clos de Sarpe, una piccola tenuta Grand Cru Classé Saint-Emilion che da tempo è passata sotto il radar. 
La storia del Clos de Sarpe 
Il nome Clos de Sarpe compare per la prima volta nel 1897, dato da un certo signor A. Ducarpe alla sua proprietà sull'altopiano della Sarpe. Il barone Henri du Foussat de Bogeron acquistò il vigneto nel 1905, unendolo ai vitigni della vicina Badette per creare Ch. Haut-Sarpe. Jean Beyney acquistò Clos de Sarpe nel 1923 e fece rivivere il nome originale. Suo figlio, Yvan Beyney, subentrò nel 1952, che a sua volta passò la proprietà a suo figlio Jean-Guy Beyney nel 1986. Jean-Guy possiede ancora oggi la tenuta ma si ritirò nel 2021, cedendola a Marcenat, che è sua nipote. (Jean-Guy ha un figlio, Charles, che dà il suo nome al secondo vino della proprietà e alla fine erediterà Clos de Sarpe ma non è interessato a gestirlo giorno per giorno.) 
Lo stile dei vini Clos de Sarpe attraverso i secoli 
Lo stile e la vinificazione si sono evoluti nel tempo, con ogni generazione che ha lasciato la propria impronta sui vini. Inizialmente il vino veniva fermentato tutto a grappolo intero, con lunghe macerazioni (dai 40 ai 50 giorni) e trascorreva diversi anni in vasche di cemento prima dell'imbottigliamento. In effetti, sotto Yvan, ciò continuò. Vendeva vino solo a coloro che sapevano conservarlo correttamente, e come tali alcuni vini trascorrevano lunghi periodi di tempo in cisterne: ad esempio il 1966 rimase nel cemento per 10 anni. Yvan cercava la purezza del frutto, raccogliendolo relativamente tardi (era sempre orgoglioso di dire di aver raccolto contemporaneamente a Figeac, dice Marcenat) e non usava mai il rovere. I vini erano duri in gioventù, avevano bisogno di tempo per ammorbidirsi, ma avevano una grande stabilità grazie al loro lungo affinamento. 
Sotto lo zio di Marcenat, arrivato nel 1986, le cose iniziarono a cambiare – con la fine degli anni ’90 un momento cruciale. Jean-Guy predilige vini potenti e ha ridotto la quantità di tempo che i vini trascorrono in vasca, introducendo la diraspatura (gradualmente, dal 1997, all'inizio tutta fatta a mano) e botti di rovere – con l'élevage che è passato da tutto cemento a rovere nuovo al 100% tra il 1997 e il 1999. Ha assunto Michel Rolland come consulente a partire dal 1998, e ha ridotto le rese – raccogliendo un massimo di 25hl/ha. 
Nel 2005, Jean-Guy ha introdotto un diraspatore meccanico e una cernita densimetrica, entrambi i quali hanno contribuito a un cambiamento significativo nella qualità, e tutto è stato diraspato dal 2010, per incoraggiare un profilo tannico più rotondo in gioventù. Nel 2012, alla proprietà è stato concesso lo status di Grand Cru Classé, riconoscendo i loro sforzi. Marcenat è entrata ufficialmente nel team nel 2014, portando la propria visione, spingendo per ulteriori cambiamenti a partire dal 2016 e assumendone infine il pieno controllo nel 2021. 
Clos de Sarpe oggi 
I vigneti di Clos de Sarpe si estendono per 3,68 ettari, tutti in un blocco sull'altopiano di Sarpe ed esposti a sud/sud-est, a solo un chilometro dal villaggio di Saint-Emilion stesso e vicino sia a TrotteVieille che a Troplong Mondot, così come a Sansonnet e Haut-Sarpe. 
Qui il terreno superficiale è sottile – solo 20 cm in alcuni punti – e si trova su un substrato roccioso calcareo, che contribuisce all'elevata acidità dei vini (normalmente con un pH basso di 3,2-3,4). Oltre la metà del vigneto ha tra i 60 e gli 80 anni, con il Cabernet Franc più vecchio che ha ormai più di 100 anni, piantato dal prozio di Marcenat nel 1923. 
L'età della vite si combina con il substrato roccioso calcareo per aiutare questo sito a resistere a condizioni calde e secche: un vantaggio particolare quando il clima cambia. Il calcare agisce come una spugna, trattiene l'acqua, e le radici penetrano in profondità nel substrato roccioso, accedendo a queste riserve. Le rese sono naturalmente basse data l'età delle viti, e le annate recenti hanno visto alcune rese minuscole, ma Marcenat punta a circa 35 hl/ha in una buona annata (più che sotto suo zio e l'influenza di Rolland). 
Per preservare l'età del vigneto, Marcenat sta gradualmente iniziando a reimpiantare il sito. Come parte di questo progetto, ha aggiunto un po' più di Cabernet Franc e una piccola porzione di Petit Verdot. Precedentemente 85% Merlot e 15% Cabernet Franc, oggi il vigneto comprende 78% Merlot, 20% Cabernet Franc e 2% Petit Verdot.
La famiglia ha sempre lavorato in modo biologico, senza mai utilizzare pesticidi o erbicidi, ma il vigneto è ufficialmente certificato dalla vendemmia 2020, cosa di particolare importanza per Marcenat. Per lei il lavoro si svolge tutto in vigna piuttosto che in cantina e la filosofia è molto borgognona, mantenendo tutto il più semplice possibile. 
La squadra è piccolissima e Marcenat fa quasi tutto da sola, coadiuvata da Frank Bartolomucci. Oggi la frutta viene raccolta tutta a mano, refrigerata durante la notte, diraspata e poi cernita per densità. Ogni parcella viene vinificata separatamente, la maggior parte fermenta nelle vasche di cemento utilizzate dagli anni '50, tuttavia il Cabernet Franc più vecchio viene fermentato in botti di rovere nuove da 600 litri. Usa solo lievito indigeno quindi le fermentazioni sono lente, almeno 10 giorni in genere. I tempi di macerazione sono lunghi, normalmente il vino trascorre sui 40 giorni, e fino a 50 giorni sulle bucce, a seconda delle annate, ma con un'estrazione molto delicata. La fermentazione malolattica può essere impegnativa con il basso pH, quindi deve regolarmente inoculare per forzarla (la malolattica è essenziale per la stabilità del vino, in particolare per il vino destinato a un lungo invecchiamento). 
La porzione di rovere nuovo è stata attenuata, con Marcenat che invecchia il vino per un anno in circa il 70% di rovere nuovo, con il resto in botti di secondo riempimento (e occasionalmente un po' di cemento se necessario). Viene poi assemblato e affinato in cemento per circa sei mesi prima dell'imbottigliamento senza filtrazione. Il rovere è costituito da botti borgognone da 228 litri (rispetto ai tradizionali 225 litri di Bordeaux), in gran parte Tronçaisoak del bottaio Taransaud. Marcenat ritiene che le botti borgognone si abbinino meglio al vino, apprezzando le doghe più spesse e la stagionatura più lunga (30 mesi contro i 24 della norma per Bordeaux). 
I vini Clos de Sarpe oggi 
Clos de Sarpe produce due vini: l'omonimo Grand Vin e un secondo vino, Charles de Sarpe, introdotto nel 1997, dal nome di Charles Beyney, figlio di Jean-Guy e cugino di Marcenat. Fino all'annata 2015 compresa, il secondo vino era un saignée del Grand Vin, utilizzato per aumentare la concentrazione del Grand Vin. Da allora, è stato prodotto solo in alcune annate quando c'erano abbastanza frutti per produrre un secondo vino, come il 2019 e il 2023. 
Mentre la maggior parte dei produttori parlerà della freschezza dei loro vini provenienti dal Cabernet Franc, per Marcenat è il Merlot a portare l'acidità, mentre il Cabernet Franc fornisce la struttura del vino. 
Degustando Clos de Sarpe negli anni '60, la freschezza del sito traspare costantemente, così come una distintiva mineralità terrosa. La purezza di un vino come il 1966 è straordinaria – e regge magnificamente anche oggi. Si possono ancora vedere le tracce dell'immensa struttura che i vini 1975 e 1988 devono aver avuto in gioventù, fornendo oggi una presa gentile insieme alla loro gustosa intensità. Mentre i vini avevano uno stile significativamente più potente alla fine degli anni '90 e negli anni 2000, quella potenza sembra equilibrata oggi, il rovere nuovo al 100% integrato e discreto - e il 2001 particolarmente straordinario. Le annate 2010 e 2015 di Charles de Sarpe sono vini meravigliosi, con una sensazione più morbida ed eleganza: un succo che sarebbe degno di molti Grands Vins. 
Questi vini un tempo erano conosciuti per la loro potenza e forza, ma Marcenat ha modificato lo stile, appoggiandosi alla naturale freschezza del sito. Cerca tannini setosi e una purezza che renda i vini più accessibili in gioventù. È, ti dirà, molto semplicemente il vino che le piace e che vuole fare. Ad ogni annata, l'impronta di Marcenat sui vini sembra più chiara e la qualità smentisce le condizioni della stagione di crescita, a testimonianza sia del suo talento che del terroir. 
Una nota sulle etichette del Clos de Sarpe 
Come puoi vedere nella line-up di questa degustazione (sotto), le etichette sono cambiate nel corso degli anni. I vini più antichi prodotti da Yvan Beyney portano un'etichetta molto tradizionale, che è cambiata nel 1986 per avere un bordo blu quando Jean-Guy (zio di Marcenat) è subentrato. Quando lo stile del vino cambiò negli anni '90, Jean-Guy cambiò nuovamente l'etichetta (dall'annata 1998) con una con bordo in lamina d'oro. L'etichetta attuale è stata introdotta nel 2012 quando la proprietà ha ottenuto lo status di Grand Cru Classé. 
La degustazione verticale: Clos de Sarpe 1966-2015 
2015 Charles de Sarpe: Maylis Marcenat ricorda vividamente la vendemmia 2015, poiché è avvenuta nello stesso periodo in cui ha dato alla luce le sue figlie gemelle. È stata l'ultima annata in cui il secondo vino è stato prodotto come saignée del Grand Vin, riecheggiando le sue proporzioni di 85% Merlot e 15% Cabernet Franc, ed effettivamente una versione meno potente, invecchiata in 50% rovere nuovo e 50% rovere di un anno. Il vino è ancora agile e vibrante, offrendo al naso frutti di bosco rossi brillanti. Al palato mostra toni più saporiti, con prugna rossa macerata e un sottile strato gessoso di tannini, tagliati da un'acidità brillante che conduce fino a un finale appetitoso. Questo è in un posto bellissimo adesso. 
Clos de Sarpe 2015: La tipica miscela di 85% Merlot e 15% Cabernet Franc (come ogni annata mostrata in questa verticale), il Clos de Sarpe 2015 è stato invecchiato in rovere nuovo al 100%. Come si può intuire dall'élevage e dalla potenza dell'annata, questo non è un vino timido e riservato, tuttavia l'acidità tipica di Clos de Sarpe si fa strada attraverso il suo nucleo e bilancia l'intensità del vino. Si sente ancora giovane, ricco di frutti di ciliegia scura sul naso compatto, che gradualmente offre toni più dolci e profumati con il tempo nel bicchiere. C'è solidità al palato - con una massa di frutta ricca e concentrata, ma c'è anche una succosità qui lo rende appetitoso, con una dolce carnosità. È rotondo e pieno, con una salda presa di tannino sul finale. Travasalo per godertelo adesso, con molta aria, ma questo si svilupperà nel prossimo decennio e oltre. 
2010 Charles de Sarpe: L'annata 2010 è stata la prima in cui i frutti sono stati tutti diraspati a Clos de Sarpe. Degustando il secondo vino con l'enologo Maylis Marcenat, non può fare a meno di chiedersi perché suo zio non abbia messo un succo così meraviglioso nel Grand Vin. Ora è un bell'esempio flessibile e maturo di Saint-Emilion: il naso sottile, che si sposta tra frutta dolce, fiori accentuati e complessità di tartufo nero. Il palato è lungo ed equilibrato, meravigliosamente risolto, senza soluzione di continuità e morbido, ancora con una freschezza appetitosa e un tocco minerale terroso nel lungo finale. Bello. 
Clos de Sarpe 2001: questo è stato un vino eccezionale nel nostro verticale e un vino che occupa un posto speciale per Marcenat. Come ci ha detto, "Per me è meglio del 2000 - con più freschezza, più equilibrio, più tutto". Il nuovo rovere al 100% è integrato, con il naso che mostra ora molta complessità terziaria: ferro, sousbois e una sottile fogliame si mescolano con il frutto della fragola ancora fresco e morbido. C'è trasparenza qui, ma ancora molta concentrazione: il palato è ancora agile con frutti rossi morbidi e succosi e un'acidità elevata e succosa che sostiene il frutto e riempie il lungo finale, completato da una nota terrosa. Superbo. 
1998 Clos de Sarpe: questa è stata una delle prime annate ad essere invecchiata in rovere, vedendo l'80% di legno nuovo per il suo élevage. È stata una grande annata per la Rive Droite, come dimostra questo vino. Il Clos de Sarpe del 1998 è meravigliosamente maturo, con aromi saporiti e coriacei e frutti di rovo più scuri rispetto al 2001 più fruttato rosso mostrato a fianco. Al palato ha una saporita cucitura di ferro, i tannini offrono ancora una soddisfacente presa gommosa per incorniciare il succoso frutto della siepe. Questo è sbocciato nel bicchiere, rivelando ulteriore complessità e vivacità. Lungo, equilibrato e molto impressionante. 
Clos de Sarpe 1988: L'annata 1988 ha offerto poche sfide ed è un'annata abbastanza classica. Viene dall'epoca in cui il Clos de Sarpe veniva fermentato tutto a grappolo intero e non vedeva rovere (invecchiato solo in cemento) - come con le due annate seguenti. All'inizio questo vino aveva un leggero sentore di muffa, ma gradualmente il vino ha rivelato il suo vero carattere, con frutta dolce e secca e note intense e salate - una ricchezza di umami che ricorda la marmite. C'è ancora una struttura e una potenza sorprendenti qui, anche se il vino non è così concentrato come, ad esempio, nel 1998. L'acidità mantiene il sapore fresco, con sentori di tartufo e sottobosco persistenti nel finale. 
Clos de Sarpe 1975: è stato tappato nuovamente nel 2020. L'annata 1975 ha prodotto alcuni vini particolarmente tannici - e qui si può ancora sentire la struttura dell'anno, con una presa fenolica che incornicia il palato. Il naso è intensamente sapido, attraente per gli amanti del Bordeaux vecchia scuola con cortile e pelle di cavallo, rivelando gradualmente un tocco erbaceo - qualcosa di quasi simile al mentolo. Sebbene questo sia decisamente terziario nel profilo, c'è ancora vivacità al palato, con morbide ondate di frutta e un finale dal bordo ferroso.
