Cerbaiona is widely recognised as one of the top estates in Montalcino, but has been a little elusive of late. Under Diego Molinari’s stewardship, the winery achieved cult status, but the property was sold in 2015, and hasn’t released any Brunello since. The new owner Matthew Fioretti has added to the radio silence, requesting critics not to score the wines, believing “a softer and more inquisitive form of journalism and criticism might be better than the score bazooka”.  Production is so small that Fioretti doesn’t need to rely on critics to promote the wines, but Cerbaiona has been noticeably absent from recent rave reports on the 2016 vintage from the likes of the Wine Advocate and Vinous. Our woman on the ground in Italy, Annalisa Florian, is one of the few people to have tasted the about-to-be-released 2016 Brunello, the first under Fioretti. Fioretti and his team have overhauled the estate. It’s a brave decision to make such a clear break from the past with a winery of such repute, and testament to their commitment to quality. Due to massive restructuring, Fioretti decided to declassify all the wine made in 2014 and 2015 to Rosso di Montalcino. As he points out, “Several aspects of this wine had formed before taking over the business.” Despite the obvious success of the 2015 vintage, Fioretti commendably didn’t want to rest on Cerbaiona’s reputation. All the vineyards are located on the Cerbaiona hill, just northeast of the town of Montalcino, and neighbouring another Brunello icon, Salvioni. The success of Sangiovese grown on this specific site long predates the Brunello appellation, with vineyards located here for hundreds of years and the wine historically produced known simply as Cerbaiona. The soil is a distinct limestone shale infused with sand and, according to Fioretti, “Almost by doing nothing, you can make an exceptional wine at Cerbaiona. Its vineyard location is that special and unique.” Fioretti, however, wasn’t happy with doing “nothing”. While praising Molinari’s legacy, he felt the estate desperately needed modernising – with serious work to be done in the vineyard and winery. He is very much inspired by what he calls a “tectonic shift” in winemaking in Italy (and elsewhere) over the last 30 years, with a move towards precision viticulture and a more hygienic approach to winemaking. Fioretti sees this as a shift from winemaking as an “art form” to winemaking as “craftmanship”.  In his mind, it was the pioneering efforts of producers like Romano dal Forno in Valpolicella and Luciano Sandrone in Barolo who have shown what can be achieved in Italy with such an approach. Just after taking over Cerbaiona, Romano dal Forno commented to Fioretti, “I’ll tell you what I told Molinari: you can’t make great wine in a barn.” Until recently, the sacristy of the small chapel was the fermentation cellar. The chapel itself was used for wine storage, while the granary and old animal stables acted as barrel cellars. “Hardly a precision and hygienic environment for winemaking,” Fioretti quips. As for the vineyards, “The rootstocks and clones of all the plantings at Cerbaiona were not selection massale nor specially selected material.  It was simply what the nurseries were selling at the time,” says Fioretti. “By 2010, the knowledge that had been gathered around Sangiovese was incomparable to what was understood in the 1970s and '80s.” Fioretti knew they needed replanting with better clones and rootstocks.  He retained and harvested the oldest vineyards for four harvests, working with top agronomists. “We made many attempts to overcome the shortcomings of these rootstocks and clones (which tended to produce enormous bunches, especially in wet years). But we all agreed: the sooner we replanted, the better off Cerbaiona would be.” As such, they’ve embarked on a six-year replanting program, making significant changes. The original three hectares (of which one hectare was dedicated to Bordeaux varieties) have been completely replanted to Sangiovese. An additional hectare of olive groves located on the steepest slope (and Fioretti believes the finest of the estate) has also been replaced with vines. Where possible, vines have been planted at a higher density and Fioretti has also converted the property to organic viticulture. Finally, with the release of the 2016, we find ourselves on the eve of the first Brunello release from Cerbaiona since the 2013 vintage. Fioretti believes 2016 to have been the “perfect” growing season. “The Sangiovese produced is captivating and sumptuous,” he tells me – the latter something he feels isn’t common for the variety. The moderate summer temperatures, the correctly timed rain and dry harvest conditions saw the Sangiovese thrive. The result, says Fioretti, is “a wine with fragrant aromas and a strong acidic shoulder – a guarantee of ageing”. It was in fact the latest harvest in the last five years at Cerbaiona. In Fioretti’s opinion, the 2016 is “not very far from” the 2010 – a vintage he feels is definitive for Montalcino – and comparable to other top modern Brunello vintages such as 2006 and 2007. There is tremendous excitement about the 2016 vintage, as well as the long-awaited return of this much-loved Montalcino estate. The 2016 Cerbaiona will no doubt be constantly compared to the wines made under Molinari, and it will be a fascinating comparison considering the effects of vine material, age of vines, viticultural techniques and winemaking practices versus overriding terroir.  What is clear is that Fioretti has no interest in resting on the laurels of this cult estate, nor simply following the footsteps of his predecessor. From what we’ve heard, it sounds like his labour-intensive approach both in the vineyards and winery is having the desired effect, and Cerbaiona’s legacy is safe. Cerbaiona: a new era

Barolo remains the most important region in the world for Nebbiolo. This variety is one of the world’s most sensitive and difficult to grow, rarely found outside Piedmont. While there are a handful of other high-quality enclaves across Piedmont including Valmaggiore (24km north of Barolo) and the cooler sites of Gattinara and Ghemme – collectively known as Alto Piedmont (or Alto Piemonte), nowhere else matches Barolo and neighbouring Barbaresco for complexity and ageing potential.  The wines are typically pale ruby in colour with grippy tannins, high acidity and a flavour profile of red cherry, mulberry, camphor and rose petal. The grape’s almost transparent character (similar to Pinot Noir) makes it a great transmitter of terroir – producing many nuanced styles, flavours and aromas – from the most delicate and floral to the most structured and mineral, and everywhere in between. It is this complex variety within such a small region that makes the grape, and the varying communes of Barolo, so interesting. Barolo has a cooler microclimate compared to nearby Barbaresco, resulting in a longer ripening season. While this means it is more sensitive to vintage variation, in the best years the wines reach highs unmatched anywhere else. Dry Barolo has been produced in the region since the mid-1800s. A wine that was a favourite amongst the aristocratic families of the Savoy dynasty, it is thought to have been first produced in this style by King Carlo Alberto’s estate in nearby Pollenzo. The aristocracy bankrolled wine production in Barolo, helping the pioneering winemakers at the time – such as Staglieno and the French oenologist Oudart – improve the quality and reputation of the wines. Their aristocratic link earned Barolo the nickname “the king of wines and the wine of kings”. Understanding the variety of styles of Barolo to a large extent depends upon where the grapes are grown. The landscape of Barolo is made up of many small undulating hillsides where exposition, topography and altitude all play important roles in the final character of a wine made in a specific part of the region or vineyard. Historically the sub-regions were not so important, largely due to the fact that Barolo wines existed exclusively as blends of fruit from across the region (often including grapes from the vineyards of Barbaresco). The 1961 vintage, however, represents a significant turning point when both Prunotto and Vietti released single-vineyard Barolos from Barolo Bussia and Rocche di Castiglione. While it was common knowledge amongst the local grape brokers which parts of the valley produced the best Nebbiolo, it wasn’t until the 1970s when these place names first came to print in Luigi Veronelli’s map. At the most basic level Barolo is divided into two valleys: the Central Valley and the Serralunga Valley. The Central Valley – including sub-regions of La Morra, Barolo and Novello – produce a more approachable style, noted for their fragrance and elegance, thought to be due to the distinct blue-grey marl content in the Tortonian soils found in these vineyards. The Serralunga Valley – with its sub-regions of Serralunga d’Alba and Monforte d’Alba – tend to create more powerful, tannic, concentrated wines due to the higher content of clay, limestone and sandstone found in the Serravalian soils. In Castiglione Falletto there is a richer concentration of sandstone and this is generally thought to produce a middle ground between the more structured character of the Serravalian soils and the elegance brought about by the Tortonian soils.  While these variations in soil throughout the sub-regions play some part in the differences in the structure and flavour profile of different Barolos, this is just one factor and should be understood as broad generalisations. The complex terroirs are defined not just by the soils, but by the varying expositions, altitudes, viticutural techniques, clones, pruning and winemaking methods which vary from estate to estate – making it impossible to provide a completely definitive profile of each area.    
A guide to Barolo's communes  There are 11 village communes within the Barolo DOCG: La Morra, Barolo, Castiglione Falletto, Serralunga d’Alba, Cherasco, Diano d’Alba, Grinzane Cavour, Monforte d’Alba, Novello, Roddi and Verduno. Below you’ll find a guide to the distinctive style of the main communes, as well as the best growers from each.  La Morra Wines from La Morra can be some of the most perfumed Barolo, typically with soft, smooth tannins. It is believed that the fine sandy soil of the region is behind the wines’ elegance. As the largest Barolo subregion, however, La Morra is the most diverse both in style and quality. Typically, these wines can be much more approachable in youth and tend to fair better in cooler vintages. Top producers in the region include Roberto Voerzio – who makes a unique style for the region, with strict pruning leading to miniscule yields and austere, tannic wines with long ageing potential. Poderi Oddero is more typical for the commune, producing bright, fruity Barolos with distinctly elegant tannins. Elio Altare is known for more modern-style Barolos which are matured both in traditional large barrels, as well as smaller barriques, and some new oak for their single-vineyard wines. Top vineyards: Brunate, Cerequio, Rocche dell’Annunziata Barolo Similar to La Morra, the Barolo sub-region produces broad, open, velvety Barolo but often with a bit more structure and concentration than those from La Morra. The region is home to some of the most historic sites, including Cannubi – a Cru that was singled out as an exceptional site even before the creation of the Barolo appellation (with the earliest bottled example of this site dating back to 1752). It is also home to some of the most respected producers in the region, who make markedly different styles of Barolo – further confirming that location is only part of the puzzle. Fierce traditionalists Bartolo Mascarello famously don’t make single-vineyard wines but their blended Barolo remains one of the region’s finest. Guiseppe Rinaldi’s winery is also staunchly traditional in their winemaking, seeing cross-commune blends as the ultimate expression of Barolo. winery is also staunchly traditional both in their winemaking, and blending of vineyards, seeing cross-commune blends as the ultimate expression of Barolo. Luciano Sandrone is more modern in style, the wines made in an elegant style that is more approachable in youth but also offers fantastic ageing potential – making them some of the region’s most collectable. Top vineyards: Cannubi, Ravera, Bricco delle Viole Castiglione Falletto  Although situated in the Serralunga valley, Castiglione Falletto falls somewhere in the middle between the elegant and fragrant qualities of La Morra and Barolo, and the boldness and concentration of Serralunga and Monforte. This is due to the aspect of the best slopes here, where the vines have maximum exposure to the sun, meaning riper fruit and added concentration. Giuseppe Mascarello produces one of Barolo’s most famous single-vineyard wines from the Monprivato Cru. Traditional in style, the wine is fermented in tank and aged in large oak. Vietti – a true pioneer of single-Cru Barolos – is also based here, as it has been since the 1800s. This estate has not only some of the best label designs in the world, but access to some of the finest Crus in Barolo, including Ravera, Rocche di Castiglione and Brunate. Top vineyards: Rocche di Castiglione, Fiasco, Villero Serralunga d’Alba  Serralunga is defined by its high concentration of Sant’Agata soils. Growers here talk about the vines feeling pain, as the harder soils put more stress on the vine, producing wines of great depth and power – as well as some of the highest tannin levels and the most full-bodied Barolos of any region. The wines can often have a distinctive bitter orange aroma. The wines are solid and typically austere, but can also be incredibly elegant and expressive, some of the most terroir-driven and long-lasting Barolo. By far the most famous and revered wine from Serralunga is Giacomo Conterno’s Monfortino. Monfortino was in fact the first ever producer-named Barolo made in the Riserva style, with the first vintage made in the 1920s (today it comes from the Cascina Francia Cru). Although based in Barbaresco, Bruno Giacosa produces two of Barolo’s most revered wines from the Serralunga Cru of Falletto, released only in top vintages. These are two of the most consistent expressions of top single-vineyard Nebbiolo in Barolo. Top vineyards: Cascina Francia, Falletto, Ornato Monforte d’Alba Defined by concentration and structure, the soils in Monforte d’Alba contain more clay than limestone – the opposite of Serralunga. The resulting wines tend to have more volume on the palate and boldness, making them the most concentrated Barolos. The wines exhibit classic rose petal, clay pot, clove, camphor and cardamom aromas, and particularly bold tannins. Look out for bottlings from Elio Grasso whose Case Matè Barolo comes from Ginestra. Bussia is one of the most famous, but also largest Crus, producing many different styles. The best part of the vineyard is Upper Bussia; a natural amphitheatre with varying expositions, when combined it produces wines of fantastic complexity. “Corriamo rischi ogni giorno,” mi dice Vanessa Martin. Se non sapessi che ci troviamo in una cantina, potresti pensare che Martin fosse una pilota da caccia, una vigile del fuoco o forse una doppiogiochista. Le due donne davanti a me, Martin e la sua collega Chantal Uldry, non incarnano necessariamente l’immagine dei temerari – ma tra le loro mani sono passate migliaia di bottiglie di uno dei vini più preziosi al mondo: Ch. d’Yquem. Non sarà questione di vita o di morte, ma questo liquido è così ambito che può sembrarlo. 
 L’unica tenuta di Sauternes o Barsac ad essere stata dichiarata Premier Cru Supérieur nel 1855, Ch. d’Yquem ha una lunga storia che risale al Medioevo. Il vino prodotto da questa proprietà, nel punto più alto di Sauternes, è stato elogiato per secoli. Fu gustato da personaggi come Thomas Jefferson nell’Ottocento, mentre Jay-Z e Beyoncé hanno fatto visita alla fine dello scorso anno. La proprietà e i suoi vini sono roba da leggenda, ricercati da appassionati e collezionisti di tutto il mondo. 
 La produzione di questo dolce nettare è meticolosa – le viti sono curate con attenzione durante l’anno, e l’uva viene raccolta solo se Madre Natura fornisce le condizioni giuste perché si sviluppi la botrytis cinerea, alias “muffa nobile”. Se tutto gioca a loro favore, con la giusta quantità di umidità e calore al momento opportuno, questo fungo si insinuerà nei grappoli, perforando la buccia, concentrando acidi e zuccheri negli acini, oltre a conferire i suoi distintivi aromi speziati e di marmellata d’arancia. La squadra di Yquem passerà tra i filari fino a sei volte, raccogliendo grappoli e acini singoli al giusto punto. Le rese sono minuscole, con all’incirca un solo bicchiere di vino prodotto da ogni vite. Una volta che l’uva è arrivata in cantina, pressata, fermentata e affinata in botte, con solo il meglio selezionato per l’assemblaggio finale, il vino deve essere imbottigliato ed etichettato – preparato per il suo debutto nel mondo. Ed è qui che entrano in scena Martin e Uldry, parte della squadra che garantisce che ogni bottiglia che lascia la proprietà sia degna del nome Ch. d’Yquem. 
 “Cerchiamo la perfezione,” mi dice Martin. Lavora nella tenuta da due decenni, avendo iniziato tra i vigneti prima di passare in cantina; ha lavorato con la storica enologa della proprietà Sandrine Garbay sulla vinificazione così come sull’imbottigliamento e l’etichettatura, e ora sotto l’attuale Maître de Chai Toni El Khawand. Martin, come Uldry, è del posto – e il vino è il mestiere della regione. I suoi genitori hanno lavorato tra le viti, così lei ha seguito le loro orme. Ma non le piaceva, trovava il ciclo annuale ripetitivo – fare le stesse cose anno dopo anno – e chiese di cambiare. “Questo lavoro, cambia ogni giorno,” mi dice del suo ruolo in cantina. “Vedo persone diverse ogni giorno; il mio lavoro cambia ogni giorno.” Osservare il lavoro della squadra è notevole. Sebbene oggi molto sia meccanizzato, tutto viene controllato da un membro umano del team. Martin preleva una bottiglia dalla linea per controllare un’etichetta, tira fuori un metro e sospira, prima di staccare con cura la retroetichetta e riapplicarla un millimetro più in alto sulla bottiglia. Guardo una loro collega allineare un righello contro una doppia magnum (tutti i grandi formati sono ancora etichettati a mano), riapplicando un’etichetta cinque volte per assicurarsi che sia perfetta. A un’altra postazione, una donna arrotola delicatamente ogni bottiglia in carta velina traslucida, avvolgendo ciascuna con lo stesso tocco leggero, prima di adagiarla con cura in una cassa. 
 Uldry era pronta a ritirarsi alla fine dello scorso anno, dopo 23 anni a Ch. d’Yquem. Come Martin, ha visto molti cambiamenti nella tenuta, con la sua evoluzione sotto LVMH (Louis Vuitton Moët Hennessy), che ha investito molto da quando ha acquistato la proprietà nel 1999. Ricorda quando lavavano le bottiglie a mano, e i macchinari erano molto più goffi – mentre ora l’operazione è molto fluida, con standard più elevati che mai. C’è stato un periodo in cui lo château faceva molto riconfezionamento – vecchie annate venivano rimandate per essere controllate, autenticate, colmate e reincorciate, oltre a essere eventualmente rietichettate, prima di essere rispedite a un negoziante o a un collezionista. Di conseguenza, sia Martin sia Uldry hanno visto bottiglie straordinariamente antiche e – per loro fortuna – hanno avuto la possibilità di assaggiarne alcune. Martin ha assaggiato la 1921, mentre l’esperienza di Uldry risale all’annata 1904 – vini che faticano a trovare le parole per descrivere. Ricordo Sandrine Garbay raccontarmi di una bottiglia dell’Ottocento che si trovava in una cantina in Spagna, ma fu accidentalmente rotta, e la squadra di sommelier chiamò urgentemente lo château, cullando la bottiglia mentre guidavano fino a Bordeaux, disperati di salvare il prezioso vino. “È motivo d’orgoglio che queste bottiglie vadano in tutto il mondo,” dice Uldry, quando chiedo della destinazione finale del vino che passa tra le loro mani. Sono ben consapevoli del valore del vino che maneggiano, dell’impatto di eventuali rotture e di quanto sia cruciale il loro ruolo.
