The 2022 Ostrea Virgula, the top Savagnin here, was finally bottled after three years of aging, because it took a very long time to finish fermenting and Étienne had to do some tricks... It has really exceeded my expectations, even though I liked the unbottled sample very much last year. It has a fantastic and complex nose, with a mixture of dried flowers, pollen and chamomile, and a very fresh, precise, pungent and vibrant palate with very good acidity. The grapes were picked early in anticipation of the very warm year, and that has really paid off. It comes from an unusual terroir for Savagnin, limestone instead of marl, and my experience with Savagnin from limestone is that it can be as good (and sometimes better!) than from classical marl soils. It's stunning! I'm eager to uncork a bottle soon.
