Still youthful ruby-hued with even some still purple hints, the 2001 Cabernet Sauvignon offers vibrant cassis, blue fruits, violets, graphite, and spring flowers on the nose. Full-bodied on the palate, it has a focused, concentrated mouthfeel, good acidity, and still-present tannins. It's a ripe, powerful, concentrated Spring Mountain beauty that has another 20 years of longevity. However, this was tasted from a bottle at Bern’s in Tampa, which is known to keep wines very cold, so I wouldn't be surprised if bottles stored at a more normal 55 degrees would show additional evolution. Drink 2026-2046.

The 2001 Cabernet Sauvignon Estate is the first wine in this dinner that is at its full peak of maturity. That provides an incredible opportunity to see what happens in the bottle over time. Rich and heady to the core, the 2001 is a super-classic Spring Mountain Cabernet Sauvignon. The 2001 is glorious today, but it still has plenty of life ahead of it. For those who may be wondering, Togni did not bottle a Cabernet Sauvignon in 2002 because of a problem in the cellar; all the lots went into that year’s Tanbark Hill.

Togni's 2001 Cabernet Sauvignon is monumental, and very clearly also one of the wines of the vintage. Dark, layered and deep, the 2001 captures all the best qualities of 2001 and then blows them through the roof. Several recent bottles have all shown tremendous fruit density, captivating aromatics and breathtaking balance. My only regret is not owning more than a bottle or two. Magnificent.

The utterly compelling 2001 Cabernet Sauvignon Estate was last year's library release (now sold out at the winery). There's a hint of bricking at the rim, but the wine remains dark to its core and should easily last at least the rest of this decade. Hints of mint and cassis appear on the nose alongside developed notes of beef drippings, leather and cigar box, while the medium to full-bodied palate is fantastically silky and resolved, just a wonderfully elegant mature Cabernet, finishing long and mouthwatering.
