The 2007 Cabernet Sauvignon (Napa Valley) is classy, elegant and polished. Although fully mature, the 2007 has enough energy to hold on for at least a few more years. I would not push my luck, as the fruit is fading, and most of the youthful intensity has faded. Sweet dried cherry, spice, tobacco, wild flowers and cedar linger on the perfumed finish.

Medium to deep garnet colored, the 2007 Cabernet Sauvignon offers up a mature nose of crème de cassis, baked plums and fruitcake with hints of incense and leather. Full-bodied, rich, concentrated and in a sweet place at the moment, it gives layers of evolved black fruits and savory notions with a plush frame and fantastic length.
Ramey was gracious enough to open a small retrospective of 2007s, all of which showed beautifully. The 2007 Cabernet Sauvignon Napa Valley was singing, with lots of tobacco leaf, earth, and tapenade notes, medium to full body, and great elegance and purity.
Ramey's 2007 Cabernet Sauvignon (Napa Valley)is gorgeous. Supple, radiant and expressive, the 2007 has developed beautifully, especially for an appellation-level wine. Dark cherry, mocha, espresso, wild flowers and sweet spice notes are all bright and very nicely lifted. At ten years of age, the 2007 remains fresh and full of life. This is a super-impressive showing. Readers who own the 2007 can look forward to another decade of fine drinking.
