The 2017 Chablis Les Pargues shows a lovely balance of floral notes with beautiful tropical overtones that match its mid-weight, gracious personality. The 2017 is beautifully perfumed with remarkable aromatic complexity and nuance. Lemon confit, mint, pineapple and light tropical notes grace this weightless, airy Chablis.

Servin's 2017 Chablis Les Pargues is showing very well a year later, wafting from the glass with an expressive bouquet of white flowers, fresh peach, citrus oil and citrus blossom that's much more outgoing than it was 12 months earlier. On the palate, it's medium to full-bodied, satiny and charming, with a pretty core of fruit and a fragrant finish. It's bottled under Stelvin for the US market.
Domaine Servin is the leading Chablis producer for importer Peter Weygandt. Their 2017 Chablis Les Pargues is rock-solid as well as a terrific value. Coming from the southern end of the appellation, it offers classic juicy citrus, tart apple, and subtle mineral-like aromas and flavors. Medium-bodied, fresh, moderately concentrated, yet beautifully balanced, it’s well worth its going rate.
The 2017 Chablis Les Pargues offers bright Granny Smith apple and fresh pear scents on the tightly knit nose. The palate is clean and fresh with a fine line of acidity. It is a classic Chablis, a little reserved towards the finish but with a pleasant bite of sour lemon and spice towards the finish. Enjoy this over the next four to five years.
