Average age 17-20 years. Mid orangey gold. Tangy notes of bitter orange and wild-flower honey, without the sweetness. On the palate is sour apricot and caramelised orange but all tangy, fresh and dry. Tight and fresh on the finish. Tastes burnished with an aftertaste of walnut skin and the smokiness of lapsang souchong. Like all the Pedro's sherries, it has a generosity and roundness, almost a gentle more wine-like character, to appeal to more than just die-hard sherry lovers and to go well with food – you could try this with the classic combination of hard cheese but also with smoked ham and even a roast joint of meat. Selected by Peter J Dauthieu. From the first criadera, ie not yet in the solera. 12 years old. RS 1.8 g/l. Medium gold. Smells nutty and golden and has a sort of chamomile aroma that I often get from oxidative styles. Intense, dry and with plenty of drive. Slightly abrasive and hot on the finish. (JH)
Nutty, honey, treacle and burnt sugar plus apple juice fruit. Remarkable the way it seems sweet until the actual, very dry, finish. (RH)
Pale orangy tawny color, a little bit sweaty, not as fresh as the Puerto Fino actually, fine and tense but just a little tired on the nose. Zabaglione on the finish. (JR)
