100% Assyrtiko, whole-bunch pressed, fermented in steel tanks. After fermentation, the wine remains on the lees for 7 months. pH 3.05, TA 6.32 g/l. Intense and open aroma of citrus – fresh and dried lemon peel – and a touch of cedar and crushed stones but the fruit is to the fore, a light note of clementine. Subtly spicy and intensely pure. Good freshness and tension with just a slight stony (not tannic) grip. Extreme purity and expressive fruit and a long, almost chalky finish. The long drinking window is a result of having tasted some older vintages of this wine. (JH)

This is an elegant and fleshed-out expression of Assyrtiko with the concentration and honey-like flavors you can expect of the sun-drenched southern Aegean Sea. In a heavy glass bottle, the Vassaltis Vineyards 2022 Santorini Assyrtiko has a mid-weight and waxy texture with concentrated fruit, honeycomb and quince. Its texture is glossy, silky and generous.
Six months on lees. A very mineral style of Assyrtiko, stony and then lemon/lime fruit. A touch chewy, crisply citrus underneath, clean-cut, mineral, chalky and long. (JH)

Whole-bunch-pressed and seven months on lees. Tasted blind. Pale apricot. Very smoky nose, not unlike last night’s Hatzidakis Nykteri . Lots of acidity and a very smooth texture. Salty finish.
