The 2017 Chardonnay Done & Done Talley Rincon comes from vines planted in 1999 on Salinas loam and was aged 15 months in 70% new French oak. It features warm peach, baked quince, orange blossom, sliced almond, crushed stone and honey toast with hints of dried hay and button mushroom. Like the It's All Good bottling, this shows great depth and layering. The medium to full-bodied palate is singular in its texture—ethereal but muscular—with slowly evolving flavor layers and seamless freshness, finishing long and energetic. 110 cases were made.

The 2017 Chardonnay Done & Done Talley Rincon Vineyard is slightly more masculine and chiseled, showing more caramelized stone fruits, crushed citrus, honeyed toast, and subtle minerality. It too has subtle background oak, a layered, medium to full-bodied, vibrant texture, and a great finish. It's going to keep for upwards of a decade. I continue to be blown away by the wines of Paul Lato, and these are unquestionably some of the most profound and exciting wines coming from the Central Coast today. The lineup has grown substantially over the past decade, and Lato now releases upwards of five Chardonnays, six Pinot Noirs, two Grenaches, three Syrahs, a Sauvignon Blanc, and a Malvasia. Despite the number of wines, quality hasn’t slipped an inch, and the wines show incredible site and varietal typicity always paired with sensational fruit and balance. In short, don’t miss these wines!

The 2017 Chardonnay Done & Done offers a slightly brighter, more citrus and floral driven profile than the Oliver's. Lemon confit, tangerine oil, sage, mint and hints of vanilla are all finely knit in this super-expressive, inviting Chardonnay. Deceptively light on its feet, the 2017 has plenty of intensity and nuance.
