100% Cabernet Sauvignon. It is the house’s most prestigious single-vineyard wine. 1989 was a rainy vintage at the end of ripening. 18 months of ageing (six months in new barrels and the rest in second-year barrels). Nowadays, they have reduced the number of new barrels. 50,000 bottles made. Some can be found on the secondary market. It has a touch of plum, cherry in liqueur, but still a touch of menthol from pyrazines, which gives it freshness. The wine is totally developed, at the point of maturity, but I don't think it is going to improve. The tannin is totally melted. (FC)

TA 5.4 g/l. Six months in new French and American oak, then 12 months in used oak. Bronze rim, but still deep in the centre. Lovely maturity – earthy, mossy, truffles and meat – but not hugely concentrated. Quite light on the palate, but good freshness and balance. Classically Cabernet, but a bit bony and not as broad and deep as many. Drying out. (RH)
