Picked out concurrently with the corresponding Grosses Gewächs, and reflecting berries in various states of ripeness, desiccation and botrytization (most, in fact, healthy), this strikingly combines oily richness and creaminess of texture with animating, rivetingly bright acidity. Grapefruit, lime and white peach are laced with peat and crushed stone, delivering in the exceptionally persistent finish a minerally aspect rare in such a rich Auslese. This is virtually certain to have an even more impressive future.

The 2015 Nierstein Hipping Riesling Auslese Gold Capsule displays a clear and delicate bouquet of great finesse and noble intensity; ripe Riesling flavors intertwine with the purity and flintiness of the red slate. This is lush and erotic on the palate, but at the same time precise and clear like a Gothic cathedral. With fine botrytis flavors, this is an extraordinary Hipping Auslese of great complexity and expression. The background is firm and salty, and the sweetness has integrated with the prominent acidity of 11.1 gram per liter. The finish is pure, piquant and so salty that the wine tastes almost dry—almost. Picked at 120° Oechsle.
