I tasted the 2014 L'Etoile Vin de Paille the day before it was due for bottling. This is a blend of Chardonnay and 20% each of Savagnin and Poulsard, which are harvested early, selecting the bunches that are less compact and healthier and set to dry for six weeks to achieve 19% potential alcohol. However, in 2014 they achieved a potential alcohol of 23%—the wine fermented to 14% alcohol and some 120 grams of residual sugar remained to make a powerful vintage of this rare sweet wine. It has a touch of volatility in the nose, with nutty flavors and great balance; it doesn’t feel very sweet. The flavors are pure, while the balance and all the ingredients are there for a great development in bottle. It felt very stable, and these wines age and change very slowly, so I'm positive that what I tasted is going to get captured pretty much the same in bottle. The Vin de Paille from Montbourgeau is one of the most elegant in Jura.
