For a while, the oak is in total control and allowing little but forests of tannin to make their play. But slowly the oaky sharpness throttles back and allows increasing amounts of vanilla-rich sugars to come through. This greatly aged Speysider has all of the components for the perfect after dinner dram. Left for six decades to mature in a medley of Sherry casks, this dram’s nose is full of well-defined Sherry influences. The sweet mature fruit aromas are accentuated by rich stewed apple, beeswax, and zesty lemon notes; after a few moments of savouring, a menthol edge develops. The golden amber liquid explodes on the palate with a ginger spiciness complemented by juicy ripe oranges; dark chocolate remains shifting into a lingering bonfire edge.<br><br>The addition of a small drop of clear spring water brings tropical fruit notes to the fore; mango, pineapple, and kiwi complement the Sherry aromas. The sweetness symphonises with the tartness of raspberries, the earthiness of freshly ground coffee beans, and hints of milk chocolate. The highlight of a prolonged sample of this full-bodied tipple is the warm pear flavours that follow the initial burst of white pepper. The long finishing dram has a subtle smokiness with a cigar ash edge.
