The 1999 Vin de Pays de l'Herault (white) has a boisterously rich nose of minerals, dried honey, and buttered toast. It's medium-bodied, intense, as well as loaded with yellow fruits, minerals, smoke, and spices. A complex wine, it also reveals exemplary focus, balance, and a long, supple finish. Vaille believes it will close down in its youth before blossoming after a few years of cellaring, something that often happens with Roussanne based wines. Drink it between 2005 and 2014. (mostly roussanne, with some marsanne and chardonnay) Pale gold color. Spicy, leesy, slightly exotic aromas of honey, clove, oatmeal and smoke. Fat, sweet, spicy and dense, with a flavor of butterscotch. Boasts a remarkably silky, oily texture for Languedoc white wine. Persistent and chewy on the back end.
