Note di degustazione
The accessible 1995 Cabernet Sauvignon Chabot Vineyard reveals medium to full body, and a knock-out nose of roasted herbs, grilled meats, coffee, cassis, and cherry fruit. In the mouth, it is viscous and full-bodied, with a chewy mid-section, and a spicy, long, rich finish. It will last for 2 decades. Undoubtedly the Chabot Vineyard is Beringer's best known single vineyard Cabernet. Like the other single vineyard offerings, this is a 100% Cabernet Sauvignon aged in 100% new oak casks. The single-vineyard Cabernet Sauvignons are part of what Beringer calls their "Vineyard Collection." Produced in 200 case lots, readers expecting to find them sitting on a shelf in their local retail shops will be disappointed, as they are destined to be sold via Beringer's mailing list, or directly from the winery. Because of the limited quantities available, my notes on these wines are intentionally abbreviated. Release date, 4/00. Tel. (707) 963-7115; Fax (707) 963-1735

Deep red-ruby color. Seductive aromas of black raspberry, minerals, violet and brown spices, plus sweet, smoky oak scents. Sweet and silky in the mouth; offers impressive concentration and intensity of flavor without excessive weight. This has the firm acid spine of the vintage, but is impeccably balanced from the outset. Finishes firmly tannic, youthful and very long. A very impressive '95.
