“Two generations ago everyone made Chablis like this. Now I am the only one left,” says Daniel-Etienne Defaix proudly. It is amazing to think that production methods could completely reverse in such a short time, no doubt fuelled by the “Chardonnay boom” of the mid-70s onwards. This insatiable global demand for crisp, clean, saline-tinged Chardonnay has shown no sign of abating ever since.  The commercial success of Chablis (one of the few white wines found in practically every supermarket, off-licence and fine wine store around the world) is staggering, particularly as the region in itself is remarkably small. While both premium growers and commercial production have, in many ways, sat comfortably alongside each other (even among the top traditional premium growers such as Raveneau, Dauvissat, Billaud-Simon and Droin, the length of élevage has reduced considerably in this time. Despite being the oldest domaine in Chablis, established in 1610, his father (like most other producers in Chablis when exports boomed) started to produce Chablis in the modern way. The time spent ageing the wine on its lees dropped down to six to nine months, in order to release the wines as soon as possible, and meet market demand. Unimpressed by his father’s results and the wines’ ageing capacity, it was Daniel-Etienne’s decision to change tact and to retrace his grandfather’s footsteps, performing a longer élevage – which for Defaix brings out the complexity and terroir characteristics Chablis is truly capable of.   So why has Etienne persisted? What is it that makes this technique so valuable to him? He admits he is fortunate to own the largest cellars in Chablis, claiming to have seven to 10 times more cellar space than anyone else in the village. ”This gives me a lot more freedom,” he explains – both in terms of ageing his wines (of which he has up to 15 vintages of each Premier and Grand Cru in the cellars at any one time), but also financial freedom. “My wines are my own bank: I don’t need to take out loans when there is a poor harvest,” he says. This no doubt puts Defaix in a minority in Chablis, where yields have been pretty catastrophic over the last decade, plagued by spring frosts. Financial autonomy has allowed him to continue making his Chablis in a traditional long-ageing method, while at the same time keeping pricing incredibly fair.  According to Defaix the key to long-ageing Chablis is protecting the glycerol content in the grapes, since it is the glycerol that takes around two years on the lees to break down and starts to act as an anti-oxidant. He does this by carrying out slow, three-hour press cycles of the grapes and keeping only the first press for bottling. He ferments at a cool 18°C, again to preserve the glycerol in the must. “Glycerol provides the balance in aged Chablis between sugar and alcohol. Glycerol gives fat and seduction to the wine,” says Defaix. “It brings a brioche taste to the wine, without being sweet.” But this takes time to produce: Defaix typically ages his Premiers Crus a staggering seven to nine years on the fine lees in tank; for his Grands Crus it can be eight to 15 years!    It might come as a surprise that – despite making this almost forgotten, ultra-traditional style of Chablis – Defaix machine-picks all his grapes. But this decision was not made easily, nor without extensive testing. He explains that they were, in fact, one of the last domaines to buy a machine harvester. Back in the ’80s his father, sceptical of others’ results, started his own research – picking half the grapes by hand and half by machine. After 10 years in bottle each year, they invited wine professionals, chefs and sommeliers to blind taste both. Every single time, the wines by machine were unanimously thought to be better. Defaix came to the conclusion that the exact timing of the harvest is more important than the hand selection. He also states that the technology makes today’s picking machines extraordinarily accurate: ripe fruit falls in the basket, rotten fruit is too light and is easily filtered out, while any green grapes stay on the vine. Turbines attached to the machine suck in the leaves and insects and are removed prior to the grapes reaching the winery. During his experiments, his machine harvested-fruit was a full 1.5% higher in alcohol than the hand-selected fruit in poor vintages.  Daniel-Etienne is the 15th generation of his family to produce wine in Chablis over the last 400 years. Now in his 35th vintage, he has never been more convinced by his traditional style, its ageability and its ability to express the varied Chablis terroir.  Read more Editorial

Daniel-Étienne Defaix: Chablis built to age

“Il tempo è necessario“, mi dice Paul-Etienne Defaix. Dovrebbe saperlo: è la sedicesima generazione della sua famiglia a produrre vino a Chablis, e al Domaine Daniel-Etienne Defaix il tempo è tutto. 
Il vino viene prodotto al Domaine du Vieux Château (nome storico della proprietà, che ancora oggi compare sulle etichette) da otto secoli, e sotto la famiglia Defaix dal 1610. Tuttavia, molto è cambiato a Chablis negli ultimi 400 anni, e oggi la tenuta è l'ultimo baluardo dello Chablis di un tempo. 
La domanda di Chablis era in forte espansione negli anni '70 e i produttori hanno ridotto l'élevage (il tempo che il vino trascorre in botte o in vasca), imbottigliando, commercializzando e vendendo i vini prima. Questi vini moderni, spesso imbottigliati entro sei-dodici mesi, erano snelli e freschi, ma per il padre di Paul, Daniel-Etienne, erano deludenti: mancavano della complessità e della longevità dei vini che trascorrevano più tempo sui lieviti (le cellule di lievito morte). Daniel-Etienne decise di fare le cose in modo diverso, di tornare a produrre vino come facevano le generazioni passate, e la famiglia non si è più voltata indietro. 
In genere, il loro approccio è quello di lasciare che il vino sia – aspettare, osservare e aspettare ancora. La fermentazione avviene interamente con lieviti indigeni ed è particolarmente lenta, durando fino a sei mesi, mentre la fermentazione malolattica viene lasciata procedere secondo i suoi tempi, completandosi solo dopo un massimo di due anni. I loro vini Premier Cru trascorrono poi fino a nove anni sui loro lieviti fini, mentre per i Grand Cru possono arrivare fino a 15 anni, conservati a una temperatura fresca di 10-12 °C. Durante il lungo affinamento dei vini, avviene l'autolisi, ovvero la degradazione enzimatica delle cellule di lievito morte, o fecce. È lo stesso processo che avviene nello Champagne e in altri spumanti metodo classico invecchiati sui lieviti, ed è la chiave dello stile Defaix – e un tempo tradizionale – di Chablis, conferendo al vino un palato più rotondo e una complessità di pane e tostatura. È anche, per Paul, "la chiave per rivelare il terroir". Sebbene le piccole quantità di Grand Cru e Pinot Nero di Defaix vengano messe in rovere, la maggior parte dei vini viene invecchiata esclusivamente in acciaio inossidabile, il che significa che solo il luogo e il tempo si degustano in bottiglia. Una volta ritenuti pronti, i vini vengono imbottigliati e commercializzati. 
Invecchiando i suoi vini in vasche di acciaio inossidabile non per mesi, ma per anni, Defaix crea vini strutturati e complessi che vengono commercializzati solo al raggiungimento della finestra di consumo. È una ribellione, mi dice Paul, contro "una società del consumo rapido". 
Ora Paul è responsabile dei vigneti e della vinificazione della proprietà, sebbene suo padre sia ancora coinvolto nell'attività. Paul ha studiato a Beaune, maturando esperienza in una manciata di tenute – principalmente incentrate sul Pinot Nero – prima di tornare alla tenuta di famiglia, passando dalle vigne alla cantina. Come gli disse Daniel-Etienne, "Devi conoscere il tuo terreno, le tue viti, poi puoi fare il vino – e poi cercare di venderlo".
E, sebbene sia spesso lo stile di vinificazione a rubare la scena a Defaix, la tenuta vanta vigneti notevoli. La famiglia coltiva 28 ettari in totale. Ha due parcelle Grand Cru (0,15 ettari a Blanchot e 0,3 ettari a Grenouilles), ma sono i Premier Cru della proprietà ad aver costruito la sua reputazione, con quattro ettari ciascuno a Côte de Léchet e Vaillons. Da questi, producono tre vini: la loro Côte de Léchet, Les Lys e Vaillon. È importante notare che quest'ultimo è Vaillon, non Les Vaillons al plurale: la loro parcella si trova nel cuore storico di questo Premier Cru, prima della sua espansione nel 1976. Les Lys è un climat più fresco all'interno dei Vaillons più ampi, ed è spesso il nostro preferito della gamma, mentre la Côte de Léchet è decisamente ripida, con una pendenza del 45%. 
Gli ettari rimanenti sono in gran parte dedicati allo Chablis, il villaggio della tenuta, le loro Vieilles Vignes. Queste viti hanno tutte più di 45 anni, ma alcune sono molto vecchie, con radici proprie, sopravvissute alla fillossera e ora di 145 anni. Quando chiedo a Paul come questo mezzo ettaro sia riuscito a sopravvivere senza innesti, si ferma un attimo, prima di rispondere: "Penso che Dio preghi per queste viti". Raccolgono solo 15 hl/ha, ma producono frutti bellissimi ("Per la mia banca, è pessimo; per il mio vino, è perfetto!" scherza Paul) e ora vengono utilizzati per la selezione massale in tutta la tenuta. L'ultima parte della proprietà è una piccola porzione di Vaillons piantata a Pinot Nero, che viene imbottigliato come Bourgogne Rouge (poiché il terreno è classificato solo per la produzione di Chardonnay). Con una superficie inferiore a un ettaro, anche queste viti sono antiche, piantate nel 1900, e ancora sulle proprie radici. 
Le loro ampie cantine sono rifornite di annate precedenti, in affinamento accurato: una riserva di vino che attenua i capricci di ogni specifica stagione di crescita, proteggendole da drastici cali di resa, una minaccia costante a Chablis. Prendiamo il 2024, un'annata che è stata impegnativa in gran parte del nord Europa con le sue condizioni umide e l'elevata piovosità. La pressione del mare, ma a Chablis ha portato anche grandine che ha devastato vaste aree di vigneti, tra cui Vaillons. 
Il riscaldamento globale potrebbe aver facilitato la maturazione delle uve in questa regione marginale, ma ha anche favorito condizioni più estreme: alti e bassi che tengono i produttori in allerta. Ha anche, probabilmente, reso Chablis un po' meno Chablis. Con frutti più maturi, i vini sono meno rigidi, tesi e snelli. Le date di vendemmia sono inevitabilmente anticipate, osserva Paul, per preservare l'acidità e mantenere la struttura dello Chablis, ma sottolinea anche che il frutto richiede non solo la maturazione zuccherina, ma anche quella fenolica, per ottenere estratto secco e consentire ai vini di invecchiare. Per lui, lavorare con viti vecchie e basse rese è fondamentale, sia per la maturazione fenolica che per preservare lo stile di Chablis. 
L'annata 2014, la prima prodotta da Paul, è finalmente uscita dalla cantina, oltre un decennio dopo la sua produzione. È stata una lunga attesa, ma le soddisfazioni ritardate fanno parte della vita al Domaine Daniel-Etienne Defaix.

Vale la pena aspettare: i vini del Domaine Daniel-Etienne Defaix

I Thienpont regnano sulla Rive Droite di Bordeaux. A Vieux Château Certan, Alexandre Thienpont – quasi sempre vestito con il suo Barbour – comanda, producendo Pomerol di immacolata genealogia, come la sua famiglia fa ormai da oltre un secolo. Poco distante, il cugino Jacques Thienpont tiene corte a Le Pin, il primo indirizzo cult di Pomerol. Nicolas Thienpont è un altro cugino il cui dominio si estende da Saint-Emilion – da Pavie Macquin e Larcis Ducasse fino a diverse tenute nella Côte des Francs. E la dinastia continua a crescere, mentre ogni ramo di questa complessa famiglia trova un nuovo angolo della regione da padroneggiare. 
 La famiglia fiamminga ha una lunga storia nel mondo del vino, commerciando vino francese (soprattutto Bordeaux) dal 1842. Georges Thienpont – nonno di Jacques, Alexandre e Nicolas) fu il primo a passare alla produzione, acquistando Ch. Troplong Mondot nel 1921, poi Vieux Château Certan nel 1924. Tuttavia, non passò molto tempo prima che arrivasse la Grande Depressione, e Georges Thienpont fu costretto a vendere Troplong Mondot nel 1934. A quanto pare, l’unico motivo per cui mantenne Vieux Château Certan fu che nessuno voleva comprarlo – con le vigne che all’epoca esercitavano scarso fascino. Fu il château stesso a Troplong Mondot, posizionato nel punto più alto della regione e con vista sul villaggio di Saint-Emilion, a permettergli di vendere la tenuta di Saint-Emilion. Georges continuò a produrre vino durante la Seconda Guerra Mondiale e la devastante gelata del 1956. Nonostante un inizio difficile, “VCC” (come è affettuosamente noto dagli amanti del vino) è diventato uno dei nomi di punta di Bordeaux. Fu però Jacques Thienpont a portare la famiglia decisamente sotto i riflettori. Fu nel 1979 che Jacques, allora ancora commerciante di vini in Belgio, acquistò un vigneto di 1,6 ettari a Pomerol. Il sito aveva prodotto Pomerol generico, ma Jacques iniziò a realizzare minuscoli volumi di vino dallo stile opulento, chiamandolo come il pino solitario (“le pin”) che si ergeva sulla proprietà. L’annata 1982 fu determinante, ricevendo notevoli consensi dalla critica – soprattutto da Robert Parker – e presto Le Pin divenne uno dei vini più desiderati al mondo. 
 Poco più di 30 anni dopo quel primo acquisto di vigneto, parve destino quando Jacques andò a vedere una parcella di terreno a Saint-Emilion proprio accanto a Troplong Mondot. Precedentemente conosciuta come Ch. Haut-Plantey, il potenziale del sito era chiaro a Jacques e la simmetria dei Thienpont che tornavano dove era iniziata l’eredità vinicola della loro famiglia sembrava appropriata. Acquistò la proprietà nel 2010 e mise Cyrille Thienpont (suo cugino di primo grado una volta rimosso) a capo della gestione quotidiana. In linea con il tema arboreo, chiamò l’impresa di Saint-Emilion L’If (il tasso). 
 Il primo progetto intrapreso dal team fu una mappa dettagliata dei suoli per comprendere a fondo il sito. La cantina si trova a Saint-Laurent-des-Combes, appena a est di Troplong Mondot, con cinque ettari di vigneto intorno e altri due ettari di vigne esposte a ovest vicino a Saint-Hippolyte. Le parcelle più basse sono più erose e sabbiose, ma gran parte del vigneto poggia su puro calcare e argilla. Si misero a ristrutturare il vigneto – eliminando il 5% di Cabernet Sauvignon e aumentando la quota di Cabernet Franc, con circa il 25% sull’intera proprietà oggi (qualsiasi nuovo impianto è stato fatto con una selezione massale da Pavie Macquin). 
 Nel 2013, Jacques acquistò un altro ettaro circa di vigne a Saint-Etienne-de-Lisse, proprio accanto a Ch. Puy-Blanquet. Nonostante la qualità dei suoli, Jacques era esitante a comprare una parcella così “lontana”, ben tre chilometri in linea d’aria – o circa 10 minuti di auto. Estirparono le viti e reimpiantarono questa parcella aggiuntiva, raccogliendo i primi frutti nel 2018. Nonostante la sua giovane età, l’uva della parcella è entrata nel blend finale di ogni annata di L’If dal 2020 (“Ne è valsa la pena del viaggio,” scherza Cyrille). Anche con il significativo reimpianto e questa nuova parcella, l’età media delle vigne dell’azienda è di circa 40 anni – con le più vecchie oltre i 60 anni. 
 I lavori per una nuova cantina sono terminati appena in tempo per la vendemmia 2023, consentendo maggiore precisione e flessibilità – con più spazio di manovra (e 16 tini in cemento per i loro otto ettari di vigne). Ci si potrebbe aspettare un edificio appariscente, magari firmato da un architetto famoso – ma non è nello stile dei Thienpont. La discrezione è tutto per questa famiglia – e la cantina è una replica quasi esatta di ciò che c’era prima, semplicemente con più spazio all’interno, progettata per una funzionalità semplice. In un angolo si trova un serbatoio in acciaio inox altrimenti anonimo – il primo che Jacques acquistò per Le Pin nel 1979. Era forse inevitabile che L’If stesse all’ombra di Le Pin. Ma ora, 15 anni dopo l’acquisto della tenuta da parte di Jacques Thienpont, con una nuova cantina e il significativo lavoro nei vigneti completato, L’If sta costruendo una propria reputazione. 
 Sebbene lo stesso team sia in gran parte coinvolto in entrambe le tenute, L’If è un sito e un vino totalmente diversi. I suoli freschi hanno una migliore capacità di ritenzione idrica e il germogliamento avviene circa 10 giorni più tardi che a Le Pin, con le sue ghiaie calde e ben drenanti – un divario che spesso si amplia con l’avanzare della stagione vegetativa, il che significa che qui la vendemmia è significativamente più tardiva. Diana Berrouet Garcia – che funge da Direttrice Generale per i Domaines Jacques Thienpont, inclusi sia Le Pin che L’If – osserva come a L’If il terroir sembri parlare più forte dell’annata e riesca ad adattarsi meglio a condizioni più impegnative, mentre a Le Pin le viti possono faticare – soprattutto negli anni caldi e siccitosi. Dove Le Pin è rotondo, suadente ed esotico, L’If è lineare, teso e minerale; uno sensuale e sferico, l’altro appena dal lato giusto del severo, con una qualità cristallina. Anche negli ultimi anni, è sorprendente come il vino stia evolvendo – tallonando Le Pin in termini di qualità. Riassaggiando il 2019, è sorprendentemente accessibile, con un naso profumato e un frutto succoso e puro che completa la tensione naturale del vino. 
 Sono ancora giorni relativamente iniziali per L’If – e il team ha investito in modo significativo, concentrandosi sul modellare il vigneto e sull’assicurarsi di avere in cantina gli strumenti per tradurre il lavoro in vigna. Per ora, oltre metà del vigneto viene utilizzata per il second vin, Les Collines d’If – qualcosa che cambierà col tempo, man mano che continuano a reimpiantare parcelle. A quanto pare, i tassi crescono incredibilmente lentamente – ma sono anche tra gli alberi più longevi (il Perthshire in Scozia ospita il tasso di Fortingall, che si pensa abbia 2.000–3.000 anni ed è uno degli alberi più antichi d’Europa). La famiglia Theinpont si sta appena insediando a L’If, ma mentre mette radici, il potenziale è chiaro. 
 La famiglia Thienpont: chi fa cosa? Jacques Thienpont: Possiede Le Pin, L’If e L’Hêtre (quest’ultimo con sua sorella Anne de Raeymaeker), ma è anche comproprietario di Vieux Château Certan. Sovrintende all’originaria attività di commercio di vini della famiglia in Belgio, la Thienpont Wine, detentrice del Royal Warrant belga, gestita da sua moglie e premiata scrittrice di vino Fiona Morrison MW. 
 Alexandre Thienpont: Comproprietario e direttore di Vieux Château Certan con suo figlio, Guillaume, oltre a essere comproprietario di Le Pin con Jacques. Alexandre e Guillaume coltivano anche le vigne di Le Pin, L’If e L’Hêtre, oltre a quelle di Vieux Château Certan.

Bordeaux sta cambiando. La Rive Gauche, in particolare, è stata a lungo una regione di etichette – di tenute grandiose, enologi raffinati e delle bottiglie che producono – i vigneti a fare da sfondo ai loro imponenti castelli e alle nuove cantine all’avanguardia. Naturalmente, i vigneti sono sempre stati importanti, in quanto fonte delle loro uve, ma raramente sono stati al centro delle conversazioni con il commercio o i consumatori. Ora però, forse influenzata dall’ascesa fulminea della Borgogna – e da un approccio al vino ormai diffuso in tutto il mondo – la nozione di terroir sta prendendo il centro della scena. Dietro le quinte, i bordolesi hanno forse sempre guardato sotto i propri piedi, ma ora ne parlano apertamente anche loro. 
 Da nessuna parte questo è più vero che a Ch. Montrose – una proprietà che ha annunciato un cambiamento significativo con il rilascio della sua annata 2023. La tenuta ha sempre prodotto alcuni dei vini più raffinati di Bordeaux, ma negli ultimi 15 anni (sotto la proprietà dei fratelli Bouygues) la qualità di questo domaine di Saint-Estèphe ha raggiunto nuove vette. Da sempre noto per la sua austerità e capacità di invecchiamento, ora presenta una raffinatezza moderna che addolcisce il suo stile severo – senza sacrificare classicità e longevità. Ogni annata sembra rivelare un nuovo livello di precisione e finezza. Dal 2023, Montrose ha annunciato che il suo Grand Vin proverrà solo dalla Terrazza 4 (T4). Se questo non ti dice molto, non mi sorprende. 
 Le sei terrazze ghiaiose del Médoc e delle Graves furono identificate da Pierre Becheler in una serie di studi negli anni ’80 e ’90. Ogni terrazza risale a un periodo diverso e presenta suoli distinti, con la Terrazza 1 (T1) la più antica e la Terrazza 6 (T6) la più giovane – e considerate un fattore determinante nel terroir della Rive Gauche. T3 e T4 sono ampiamente ritenute le migliori per la viticoltura, e Becheler scoprì che, al momento della classificazione del 1855, oltre l’80% dei crus classés si trovava su questi due distinti strati geologici. 
 Nell’ultimo decennio, questi rilievi ghiaiosi sono diventati una parte fondamentale della narrazione bordolese, spiegando il terroir delle diverse tenute. Nonostante la diffusa consapevolezza che le terrazze siano parte integrante della qualità dei vini, non esiste ancora una mappa completa del terroir della Rive Gauche – che mostri quali vigneti si trovano su quali suoli (le migliori sono quelle create da Jane Anson e Kees van Leeuwen per il libro Inside Bordeaux di Anson). La maggior parte degli studi è stata condotta da singole tenute, come a Montrose – che ha incaricato lo stesso Becheler di indagare sulle specificità del loro sito. È notevole che, pur senza conoscere nulla dei sottosuoli della regione, Montrose si sia trovata così fortunatamente posizionata – anche se, naturalmente, è sopravvissuta grazie al suo sito prestigioso. Le prime viti della proprietà furono piantate – tutte sulla leggendaria T4 – nel 1815, da Étienne Théodore Dumoulin, che aveva acquistato la terra da Nicolas Alexandre de Ségur (di Calon Ségur). Il terreno era coperto di erica, i suoi fiori rosa che in autunno ricoprivano il dolce pendio, e i marinai che passavano lungo l’estuario della Gironda lo chiamavano la collina rosa – o “mont rose”, da cui la proprietà prese il nome. 
 Solo quarant’anni dopo la prima piantagione, la tenuta guadagnò il titolo di Second Growth nella Classificazione del 1855. Nel 1861, quando Dumoulin morì, la proprietà comprendeva 95 ettari – ma i suoi confini si sono spostati nel tempo. Fu poi acquistata da un industriale alsaziano, Mathieu Dolfus, che investì pesantemente nella tenuta. Fu un visionario – offrendo assistenza sanitaria gratuita, partecipazione agli utili e alloggi ai lavoratori. Utilizzò persino una turbina eolica per inondare i vigneti, ritardando così gli effetti della fillossera il più a lungo possibile. 
 Montrose fu gestita dalla famiglia Charmolüe tra il 1896 e il 2006, con Jean-Louis – che diresse la tenuta dal 1960 – fondamentale nel costruirne la reputazione moderna. Fu sotto la sua guida, negli anni ’70, che vennero piantate viti su terreni più bassi, vicini all’estuario, che si trovano su T5. Queste parcelle umide e sabbiose vengono oggi utilizzate per La Dame de Montrose, il secondo vino dello château. 
 Fu nel 2006 che i fratelli Olivier e Martin Bouygues (dell’omonima compagnia di telecomunicazioni) acquisirono la proprietà. Nel 2010 acquistarono altri 22 ettari da Phélan Ségur, terreni che storicamente erano stati parte di Montrose. Questi vigneti, circondati da aree boschive, si trovano sulla più sabbiosa T3, ma soprattutto riportarono la superficie totale del vigneto a 95 ettari – come ai tempi di Dumoulin – e tutti in un unico blocco (qualcosa di relativamente raro a Bordeaux). I fratelli Bouygues assunsero Vincent Decup come Direttore Tecnico della tenuta nel 2014. Decup si mise subito al lavoro per comprendere a fondo la proprietà e i suoi suoli. Quando arrivò, avevano una mappa che mostrava 16 diversi tipi di terreno nei vigneti – ma presto commissionò ulteriori studi, scoprendo altri 10 tipi di suolo. Questo diede loro, racconta Decup, “la possibilità di esplorare e separare” le parcelle, approfondendo il sito con una visione più borgognona che bordolese. Dal 2017, il team iniziò a delimitare le parcelle – vinificando le uve in 93 tini separati (più del doppio dei 40 usati solo tre anni prima), adattando la vinificazione a ciascuna. Analizzando il Cabernet Sauvignon su T3 e T4, spiega come abbiano raggiunto “un nuovo livello di precisione e comprensione del Cabernet su ogni terrazza”. 
 “Il Cabernet Sauvignon di Montrose ottiene naturalmente molta potenza,” mi dice Decup. “Dobbiamo essere attenti con l’estrazione.” Soprattutto per l’uva proveniente da T3, spiega, può facilmente diventare troppo austera. T4 ha sempre rappresentato la maggior parte dell’assemblaggio per il Grand Vin di Montrose – e nella mente di Decup non è solo il DNA storico della proprietà, ma ciò che dà identità al vino. Mi racconta di come ci sia qualcosa di magico nel modo in cui il Cabernet matura su queste parcelle, sviluppando contemporaneamente maturità tecnica (zuccherina), aromatica e fenolica. Produce un vino “potente, voluminoso, dimostrativo – un leone in gabbia”. 
 Nel 2022, lo stesso anno in cui Charlotte Bouygues è diventata Presidente e Pierre Graffeuille CEO, il team ha iniziato a concentrarsi maggiormente su T4, e dal 2023 il Grand Vin proviene esclusivamente da questa preziosa terrazza. Provenendo dalle tenute Delon, Graffeuille conosceva bene il potenziale di questi suoli, condivisi con Léoville Las Cases. L’annata 2022 è stata cruciale – ottenendo quattro potenziali punteggi da 100 punti, con quattro confermati in bottiglia – e la 2023 ha seguito le sue orme, con tre potenziali punteggi perfetti. Le terrazze ghiaiose si innalzano e si abbassano lungo la regione. T4 affiora a Saint-Estèphe, scorrendo sotto Meyney e Montrose, per poi scomparire fino al margine meridionale di Pauillac, riapparendo intorno a Latour, attraversando gran parte di Saint-Julien (inclusi i tre Léoville – Las Cases, Barton e Poyferré – e Ducru-Beaucaillou), emergendo nuovamente in tutta Margaux e poi ancora sotto Haut-Brion e La Mission Haut-Brion, con piccole sacche più a sud. 
 Il fattore distintivo di T4 è uno strato di ferro compatto sotto le ghiaie sabbiose. Il terreno sabbioso e ghiaioso consente alle giovani viti di sviluppare facilmente le radici, prima che incontrino lo strato di ferro compatto – costringendole a diffondersi orizzontalmente anziché in profondità. Questo strato compatto è fresco e trattiene l’acqua, nutrendo le viti negli anni caldi. Decup spiega come a luglio il terreno superficiale possa essere caldo, ma scavando si può percepire il freddo dello strato di ferro – qualcosa di perfetto per il Cabernet Sauvignon. A Montrose, T4 si trova tra i 12 e i 16 metri di altitudine, mentre altrove raggiunge un massimo di 22. T4 tende a correre vicino alla Gironda, che esercita un’influenza moderatrice – soprattutto a Montrose, dove l’estuario è largo 4,5 km (proteggendo notevolmente la tenuta dalle gelate, come nella dura annata 1991 – un anno in cui Montrose produsse il vino della vendemmia). 
 Come T4, anche T3 corre sotto molti crus classés – in particolare Cos d’Estournel, Mouton e Lafite. Con un terreno superficiale di ghiaia più sabbiosa, la differenza chiave è che T3 non ha lo strato di ferro di T4 – il suolo superficiale poggia invece direttamente su un sottosuolo di argilla-calcarea. Leggermente più elevata in altitudine (15-18 metri a Montrose, ma generalmente 20-26 nel Médoc), la profondità del suolo è notevole e le radici delle viti si spingono fino a tre metri o più a Montrose, racconta Decup. Con meno argilla nel suolo superficiale, i terreni drenano particolarmente bene, e le viti devono spingersi in profondità alla ricerca d’acqua. “In termini di espressione, non è affatto la stessa cosa,” dice Decup. Spiega che, pur producendo anche un Cabernet Sauvignon vigoroso, ha un’energia e una lunghezza particolari, un’austerità – ma “austerità positiva”. Le viti su T3 prosperano soprattutto negli anni caldi e secchi, aggiunge. Montrose conta un impressionante vigneto di 45 ettari su T4, 12 su T3, una porzione su quello che il team definisce un “suolo intermedio” – a metà tra le due terrazze – e una piccola parte su T5. E cosa succederà ora alle viti su T3? Sebbene lo château non lo confermi apertamente, è previsto un imbottigliamento separato di T3 – che dovrebbe arrivare sul mercato nel 2026, secondo le voci. Il resto delle uve confluisce in La Dame de Montrose, e una piccola parte in un terzo vino, Tertio de Montrose (precedentemente noto come Saint-Estèphe de Montrose), riservato esclusivamente a chi lavora nella tenuta. In totale, il Grand Vin rappresenta ora circa il 36% della produzione di Montrose – in calo rispetto a quasi il 45%. 
 “T3 e T4 sono, a nostro avviso, le terrazze che producono i migliori risultati viticoli,” dice Pierre Becheler, parlando del Médoc e dell’Haut-Médoc. Spiega però che nelle Graves la situazione è molto diversa, e che T2, quasi inesistente nel Médoc, produce risultati eccezionali. Non riesce a spiegare del tutto perché una terrazza funzioni meglio di un’altra, ma una delle ragioni per cui le terrazze sono così importanti è la loro influenza sulla disponibilità d’acqua. Con proporzioni variabili di argilla e dimensioni delle ghiaie, è un elemento chiave della viticoltura e, in ultima analisi, della qualità del vino. Tuttavia, pur avendo trascorso gran parte della sua carriera a studiare questi letti ghiaiosi, è molto chiaro: le terrazze sono un tassello molto importante del puzzle – ma non forniranno mai l’intera immagine. Alcune terrazze sono le migliori in certe appellations, dice, “ma non sappiamo davvero perché o come”. 
 Le complessità del terroir bordolese sono molteplici – e alcuni sostengono che il substrato roccioso, dalle argille più ricche ai calcari duri, sia più influente delle terrazze ghiaiose che li sovrastano. A ciò si aggiungono l’esposizione del pendio, la vicinanza alla Gironda e molti altri fattori che influenzano il microclima, senza dimenticare l’influenza umana – tutti elementi che contribuiscono al concetto di “terroir”. È entusiasmante vedere il sito spinto in primo piano, soprattutto insieme a una crescente attenzione alla sostenibilità nei vigneti. La conversazione si sta evolvendo – e, se l’annata 2023 di Montrose è un’indicazione, non potrà che elevare ulteriormente la qualità della regione.

Castello di Solomeo Welcomes La Paulée

Domaine de Montille is one of the most historic estates in the Cote d’Or, founded in 1730 and family-run and owned ever since. Today Etienne de Montille is the ninth generation at the helm.  The De Montille story through the ages is a familiar one in Burgundy in which for a long period there was a dwindling of holdings as more and more of their prized vineyards were agonisingly sold off to make ends meet during the lean years of the early twentieth century. Etienne’s father, Hubert de Montille took over the estate in 1947, aged just 17, by this time the domaine had just 2.5 hectares to its name. Etienne’s father knew that he had to change tack if the domaine was to survive and worked both as a vigneron and a lawyer to finance returning the estate to its former glory. Like his father, Etienne used his earnings as a lawyer to build up the domaine’s acreage, including a novel acquisition approach that in 2005 saw him acquire one of the region's finest Premier Cru sites - Vosne-Romanee Premier Cru Les Malconsorts – neighbouring the Grand Cru of La Tache.  The estate now produces over 35 cuvées from appellations throughout the Cote d’Or. Etienne talks us through the De Montille’s bumpy history, its extensive vineyard acquisition in recent years, how he learnt to make white wine from his brother-in-law (who just so happened to be Jean-Marc Roulot), as well as mapping out the different flavour profiles of his favourite sites at the heart of the domaine in Volnay and neighbouring Pommard. 
The history of the domaine 
Based in Volnay, the De Montille estate has had its fair share of ups and down. It once had one of the finest portfolios of vineyards anywhere in the Cote d’Or (including Bonnes Mares, Musigny and Amoureuses), before these famed sites were sold off to make ends meet. Hubert de Montille on taking over the estate in 1947, brought renewed fame to the domaine, being one of the first in Burgundy to domaine bottle his wines and whose Volnay 1er crus quickly became some of the finest in the appellation. At this time, 90% of all Burgundy was made and bottled by the large négociant houses.  
Whilst historic estates such as Domaine de la Romanee Conti, Georges Roumier and Armand Rousseau were bottling their own wines, it was the Marquis d’Angerville of Volnay that no doubt set a trend in the Cote de Beaune by bottling his own wine, starting in the 1930s. Marquis d’Angerville chastised the exploitation of the main negociants at the time, who in response refused to bottle his wines, forcing him to bottle them himself.  As Etienne explains the Marquis d’Angerville was an important figure in Burgundy at the time, not only setting the trend of domaine bottling in the region but also becoming one of the main instigators behind developing the AOC framework of the Cote d’Or, mapping the official boundaries of the Grand Cru and Premier Cru sites, a process that began in 1935. 
The distinct influence of Hubert de Montille 
The De Montille estate became famed for Hubert’s single-minded approach of making wines how he wanted them, austere and built for long ageing, making them fairly unapproachable in their youth. He was also known for his minimal chapitalisation, a method which he discovered accidentally by miscalculating his sugar levels on one of his cuvees in the 1959 vintage. It was only a couple of years later that he discovered how much better this cuvee aged than his other wines of the 1959 vintage and therefore adopted this approach going forward.  
Whilst, as Etienne explains, chapitalisation (the addition of sugar to the grape juice prior to fermentation to increase alcohol levels) in top estates in the modern era is very rarely adopted, it certainly didn’t harm the estate’s reputation when critics in the '90s started to raise concerns over over-chapitalisation as a worrying trend in the region.  Whilst over-chapitalisaton is rare today, the process is still adopted in the wineries when necessary. Very rarely spoken about amongst vignerons, Etienne describes it as similar to the seasoning of food. Certain cuvees in certain vineyards may benefit from a light chapitalisation or even acidification if required; two processes that remain contentious outside of Burgundy. With De Montille famed for low chapitalisation and long ageing wines, the domaine's reputation continued to grow. 
Etienne takes on the domaine 
On taking over the domaine in 1998 (following a staggering 50-year stint by his father), Etienne de Montille was an early advocate of organic farming. He continued to grow the estate, incorporating more Chardonnay vineyards to what was previously exclusively a Pinot- Noir producing domaine. Their first white wine vineyard purchase was the 1er Cru Puligny Montrachet Le Caillerat bought by Hubert in 1993. Etienne learnt how to make white wine under the guidance of his brother-in-law, who just so happened to be Jean-Marc Roulot and only helped see the domaine’s reputation grow.  Etienne recounts how Jean-Marc Roulot had a similar route to winemaking in that they both had successful careers outside of wine before returning to their family estates. Jean Marc Roulot is an actor, and was based in Paris at the same time Etienne was working as a lawyer there. Having both a separate career and being a vigneron, Etienne believes, made them both very open-minded in their second profession as winemakers and Jean-Marc Roulot was happy to share his knowledge in white wine production as well as them both being more innovative with their methods.  
Having two professions was a tradition passed down from one generation to the next of the de Montille family, with one of the siblings always working in legal services either as judges or lawyers. Etienne explains how it was in fact Hubert de Montille’s work as a lawyer looking after the estates of Monsieur Chatron that led to the acquisition of De Montille’s first chardonnay vineyard – Puligny Montrachet 1er Cru Le Caillerets – one of the finest sites in Puligny neighbouring the Grand Cru of Montrachet.  
Hubert worked as his lawyer advising him on how to pay off his inheritance fees in order to pass down the estate to the next generation. To do this he had to sell off some vines and offered Hubert to buy the Le Cailleret vineyard in Puligny to thank him for his services. Although not an experienced white winemaker, with Jean Roulot recently marrying his daughter, it seemed to be the perfect opportunity to get him on board and teach the young Etienne his white wine philosophy. 
A novel acquisition approach  
Etienne’s experience as a lawyer gave him the confidence to incorporate a novel approach to acquiring vineyards in the Cote d’Or at a time when vineyard acquisition was and remains a contentious issue for vignerons in the region. It led to Etienne successfully buying up vineyards including one of the Cote d’Or’s greatest sites: Vosne Romanee 1er Cru Malconsorts, neighbouring the Grand Cru of La Tache. Etienne explains that although his father had successfully taken his 2.5 hectares estate to 10 hectares over a 50-year period, the land prices of Burgundy were becoming too expensive for this to continue.  With the Malconsorts vineyard along with the vineyards of the Thomas Moillard domaine put up for sale, Etienne thought the opportunity was too good to miss and approached the Seysses family (Domaine Dujac) to see if they would be interested in setting up a land company, buying the land together and using minority shareholders to finance the acquisition.  
These minority shareholders would then rent out their share of the land to the two estates and were often paid back in wine. Back then, Etienne states, it was the first time ever in Burgundy that two smaller family estates had bought a larger property. Etienne pioneered the legal structure to favour the vignerons with the controlling share and it became a popular method that was copied all over Burgundy by other vignerons following their success. Etienne states “this is unlikely to happen again, land in Burgundy between now and 2005 has gone up by almost 12 times the value”.  Despite this, Etienne successfully managed another huge acquisition following the financial crash of 2008 when he purchased Domaine de Puligny Montrachet. This estate was a property he had managed ever since he returned back to Burgundy from Paris in 2001. At that time it was owned by a bank and following financial pressures of the economic crash in 2008, viewed the estate as a non-performing asset and therefore put it up for sale. Due to Etienne’s connection, he was given first refusal.  Since taking over the property in 2009 an EU law that came into practice in 2017 banned the use of an appellation name to be part of a domaine name, so since 2017, the wines under the original Chateau de Puligny Montrachet have been incorporated into the De Montille domaine, increasing their holdings to a total of 37 hectares (20 in red; 17 in white) in 35 separate appellations. 
Etienne de Montille's winemaking philosophy 
But Etienne’s skills are not only in acquisition. He was an early advocate of organic farming, practising organic principles from 2003. He also changed the style of the De Montille wines making them less austere than his father’s with his influence coming through the wines from the 1998 vintage onwards. Etienne incorporates whole bunch fermentation but varies the quantity depending on the specific terroirs.  
Identifying the nuance of each site and how much whole cluster to use is the key to his red winemaking, ranging from 20% to 100% whole bunch depending on the site. He carries out no cold soak prior to fermentation which takes place at ambient temperatures with low-level extraction, punch downs are carried out only when necessary. All wine is aged in barrel between 5% to 60% new oak depending on the site and vintage conditions, followed by a long élevage prior to bottling. The approach to white wines, under the influence of Jean-Marc Roulot’s teachings, is to be very conscious of preserving the acidic backbone of the wine providing a precise length and expression of terroir. The wine is barrel fermented followed by long élevage (12 months in barrel) and aged further on the lees in tank - 2 to 6 months with one racking. The percentage of new oak again varies depending on the specific plots, ranging from 5% to 50% new oak barrel. 
Mapping Volnay and Pommard’s Premier Crus  
Etienne states that all the top Volnay Premier Cru sites are on the middle slopes of the appellation. Whilst slightly varying in topography and exposition, Etienne believes the flavour profiles of each of the vineyards is 80% to do with the geology and topsoil of the specific vineyard, with the winemaking of each producer, the vintage variation and the exposition of the vineyards combined making up the remaining 20%.  This highlights the overwhelming terroir influence of these Premier Crus.  Volnay 1er Cru Brouillards  "This is the most accessible of our Premier Crus and what is best described as 'very Volnay'. It has all the characteristics most closely associated with the appellation – pretty red fruit, very juicy, elegant light tannins and very approachable." Volnay 1er Cru Champans "The Champans is similar to Brouillard in its fruitiness and approachability, although the tannins are firmer and slightly more structured.  "But it is a very expressive and immediate, open-style Volnay. We use two-thirds whole cluster in this cuvee."  Volnay 1er Cru Mitans  "The Mitans is the most perfumed and fragrant of the Premier Crus in Volnay. And whilst the Champans is also very expressive, the aromas of Mitans are more serious, not just fruit but mineral too. Here we use 100% whole cluster fermentation." Volnay 1er Cru Taille Pieds "This is the flagship cuvee of our estate. It is the most mineral-driven wine in Volnay. Very spicy, very stony and lots of saline character. The wine has huge depth and a very long finish.  "It is however the least open and the less approachable requiring time in bottle to develop. Even at 40 – 60 years old the wine shows beautiful combination of rose petal, earth, morrel mushroom and truffle character. The wine has so many facets to it."  Pommard 1er Cru Rugiens Bas  "This wine is a planet on its own. It has the elegance and finesse of top Volnay site but with the depth and breadth and structure more akin to top Pommard vineyards. It is Grand Cru quality and the top site in Pommard."  Pommard 1er Cu Grands Epenots "The most classic Pommard in style. Deep clay soils give the wine huge structure, sometimes can be a bit rustic to start with. Tannic, big, powerful wine." 
Pommard 1er Cru Pezerolles "This is the most Volnay-like Pommard 1er cru in the appellation despite being the furthest site away from Volnay. It is the most elegant Premier Cru of Pommard."  Nuits Saints Georges 1er Cru Aux Thorey  Etienne describes how this single vineyard site was bought in the acquisition of the Thomas Moillard domaine, along with the Malconsorts vineyard. When identifying which vineyards to buy in the sharing of the estate Etienne heard that Sylvain Cathiard considered the Aux Thorey vineyard to be amongst the best terroirs in Nuits St Georges and that was enough to persuade him of its potential. The site is certainly more Vosne in profile than Nuits Saint Georges, with fine tannins, elegant structure and beautiful perfumes similar to the vineyards of the much admired La Damodes.

its energy and food culture, so I’ve always been drawn to it. I also used to work at Claridge’s over 25 years ago as a commis, way at the beginning of my career. It’s a real full-circle moment to come back to one of the places where it all started for me, especially when I consider how lucky I am to open a restaurant in one of the most highly-regarded grande dame hotels in Europe." 
How does it differ from Eleven Madison Park?  Daniel Humm: "Though there is a lot of influence from Eleven Madison Park to be found
at Davies and Brook, it is definitely its own project with its own personality. We are really influenced by the culture of London and how it is truly a global city, and I am also inspired by my own travels over the past few years.  "We wanted to look at what fine dining is and then try to imagine what it could be – our menu is more flexible and accessible here, with a la carte and tasting menu options. We serve lunch every day and have an all-day bar menu where you can order small dishes throughout the day and into the evening. Being at Claridge’s really inspired us as well – we wanted to create a restaurant that respected and extended the history of one of the world’s most storied hotels." What are the key signature dishes you have brought over to Davies and Brook and what new creations are you most excited about? Daniel Humm: "We of course brought our classic lavender and honey duck dish from Eleven
Madison Park to London, and it has been received really well by guests. Our team in London, led by Chef Dmitri Magi, has done an incredible job making sure that the quality is consistent on both sides of the ocean. I’m really excited to have the opportunity to work within the culinary traditions and with local produce here in the UK." 
You grew up in Switzerland. What were your favourite dishes growing up? Daniel Humm: "I grew up in a place where what we ate was determined by what my mother
found at the market that day. Of course, one dish that has always inspired me
wasn’t really a dish at all – the milk and honey that my mother used to make me before I went to bed every night has inspired so many desserts at all my restaurants and remains one of my favourite flavors." Who has been your biggest influence in your cooking and why? Daniel Humm: "I am lucky to have had many mentors in my career and people who looked
out for me and inspired me. Gerard Rabaey taught me discipline early on in my career and that has had an impact on me my whole life. Many artist friends like Roni Horn, Daniel Turner and Rashid Johnson have inspired me and helped me find my voice and understand my own philosophy about cooking." The wine list at Eleven Madison Square is mind-blowingly epic! How long did it take to collate such a collection? Cedric Nicaise: "Thank you, that means a lot. The cellar at Eleven Madison has been a labour of love since 2006/2007. Before then the restaurant had invested some resources, but nothing like it would moving forward. The one thing that should be noted is that the cellar at EMP has only had three caretakers in that time and at least 2 have had tremendous impact.   First was John Ragan who became the wine director around the same time that Daniel
Humm became the chef. John is the one who started the growth of the list. When he took over the list was a few 100 wines. When he left towards the end of 2011 the wine list had grown to 2500+ wines. He was replaced with Dustin Wilson. Dustin had much less overall growth to do, by the time he was done after 3.5 years the list was at most 4000 wines.  "But Dustin added a cool factor to the list, before him the wines were very classic, Dustin placed an importance on some of the things happening around the wine world, things with a natural bent, “new Spain”. Things like that. He also developed the Northern Rhone section to being a world-class section. I took over for Dustin in May 2015.  My job has been the easiest.   "The list has grown to 5000 wines and I have tried to keep up with the ideals of my predecessors. While also adding my fingerprint.  I have developed white Burgundy the most, but also represented back vintage California Cabernet to a greater degree.  "Red Burgundy has also been fleshed out quite a bit. Overall I have not actively tried to grow the list, even though it has grown, but I have been buying with an eye to the future. Trying to keep wines in the cellar for longer. Hoping to have more wines that are 3-5 years old, instead of just old wine and young wine. I have also, like my predecessors tried to keep a great deal of value on the list.  Right now we have roughly 350 wines under $100."
 Was it always the plan to have such a comprehensive fine wine list? 
Cedric Nicaise: "I don’t think that it was a spoken intention. I know that when Chef Humm took over the kitchen, his goal was to have a world-class restaurant, and part of that was to have a world-class wine list. When the restaurant started speaking openly about being the best in the world, on the wine team we spoke about having the best wine list in the world.  I think we are far from that, but you have to have goals." How important is matching the restaurant dishes with the right wine, or do you see them as separate entities?  
Cedric Nicaise: "I believe that those two ideas are not mutually exclusive. I think that it is very important to have wines that go with the food. And I think we do. But the wine list is not for me, or for Chef Humm, the wine list is for our guests. And if our guests want to drink young Cabernet with their oysters, or white burgundy with their steak, who am I to tell them that they are wrong, even if I thought they were.  "Wine should be egalitarian, and not pretentious. Drink what you like. Ideally, if the wine is good, and the food is good, isn’t that a good pairing? However, if a guest wants us to choose wines to go with their food, its so important to have wines that can do that." What was the lightbulb moment for you with wine – what wine blew your mind? Daniel Humm: "For me, it wasn’t that I had a lightbulb moment – from the early days, wine was always a big part of my life. Wine was always on the table at every meal, and I love that part of the European culture. Because of that, I always find myself drawn to wines that have a sense of place and tradition." 
How important is wine in your life? Would you call yourself a collector? Daniel Humm: "No I am not a collector, but wine is something that I am always thinking about when we are developing a dish or a menu. It’s a central thought to me, what wine does to food and vice versa. That dialogue is so essential to the way that I cook and the way that I eat. Wine is so important because it carries a real sense of place and culture – you can taste the soil, the appellation, everything.  "When you are drinking wine you are informed about a place and a time, like reading a book or eating a meal. There is pleasure there, but also information. I believe that wine is one of the best ways to get to know a place."

2001 Chambolle-Musigny, Premier Cru, Les Amoureuses, Domaine Jacques-Frédéric Mugnier (and lashings of Beaujolais) – chosen by Daniel Johnnes, Wine Director of The Dinex Group and Founder of La Paulée, La Fête du Champagne, La Tablée and Pressoir  “This holiday I plan on opening several bottles of great wine. Great doesn't necessarily mean expensive or rare. I'll be sure to drink plenty of Beaujolais and mostly from my favorite producers, Morgon from Marcel Lapierre, Fleurie from Jean-Louis Dutraive and Chiroubles from Domaine Thillardon. As much as they are "drink everyday" wines, they also have the magic power of putting a smile on everyone's face.  “Yet, for that really special wine, I plan on opening a bottle of Chambolle-Musigny Premier Cru Les Amoureuses 2001 from Domaine Jacques-Frédéric Mugnier. Chambolle-Musigny is among my favorite villages in Burgundy and the Amoureuses vineyard could easily make a case to be classified as Grand Cru. It combines the perfume, texture, elegance and persistence typical of the very best red Burgundy. The style of Domaine Mugnier is one of refinement and grace. And with 20-plus years’ age, it should be perfect for drinking now. Even though it will accompany a roast chicken, this wine is like a celebration and a meal in and of itself.”  2018 Klein Constantia Vin de Constance – chosen by Jeffrey Koren, Head of Wine at Marceline, London  “While it’s easy to open a perfunctory bottle of Port or Sauternes at the end of a Christmas meal, the oh-so-delicious Vin de Constance by Klein Constantia has become my go-to sweet wine for the festive period over the past few years. Steeped in history, Vin de Constance was famously a favourite of Napoleon and lauded by authors like Jane Austen and Baudelaire. These days, winemaker Matt Day has revived this legendary dessert wine to its former acclaim. It always offers wonderful notes of apricot, honey and spice. But most importantly, it’s balanced by refreshing acidity that is an absolute necessity after an indulgent holiday meal.”  Hauller Frères Pinot Gris La Chappelle Signature – chosen by Joséphine Duffau-Lagarrosse, Ch. Beauséjour   “Ludovic Hauller is a long-standing friend I met during my studies in Burgundy. I appreciate the precision that his family channels into the wines, and this cuvée showcases great finesse, with freshness and elegance, mirroring the granite terroir in which the vines grow. It’s a Pinot Gris of remarkable complexity, hailing from a plot that sits below the Chapelle Saint-Sébastien de Dambach-la-Ville. Ludovic introduced me to Alsatian wines, which I knew little of previously, and I love this cuvée. As for when, this is definitely the kind of bottle I would open in the days following Christmas, with my family, playing board games by the fire and putting the world to rights, patiently waiting for the New Year!”  2002 Champagne Salon, Giuseppe Mascarello’s 2017 Barolo Villero, Tiberio’s 2018 Colle Vota – chosen by Lorenza Sebasti, Castello di Ama  “As usual, this Christmas we will open a magnum of 2002 Champagne Salon. I remember we had the chance to buy a few magnums a long time ago as they were precisely the birth years of our children (1997, 1999 and 2002). Then I guess I will spoil everyone at home with a beautiful Barolo Giuseppe Mascarello Villero 2017 and Colle Vota Montepulciano d’Abruzzo 2018 from my dear friend Cristiana Tiberio. She makes very few bottles of this very elegant and vibrant wine, which is among my favourite reds.”  2021 La Morandina Moscato d’Asti – chosen by Donald Edwards, Head Sommelier at La Trompette, London  “Beyond the best white Burgundy I can lay my grubby mits on, I’ll be cracking the second bottle on a case of La Morandina’s 2021 Moscato d’Asti – part of a new festive tradition. Back when my wine appreciation was still protean, I heard a rumour that Moscato d’Asti – the sweet fizzy floral stuff that we sold in my Glasgow Oddbins – ages magnificently. Twenty or so years later, I’m the Head Sommelier at La Trompette, hosting a big Piedmont-themed wine lunch. Barolos and Barbarescos aplenty litter the room, but the wine that stops me in my tracks? A 2013 Moscato d’Asti from Giuseppe Vajra. It was phenomenal, still gleefully tasty, but now with a touch of extra weight, more waxy lime skin and late-evening summer flowers, heady in its bouquet. Here she was, my white whale, and, boy, she didn’t disappoint.  “Last December, visiting La Morandina in Asti, I asked whether they had anything with a bit of age and lo! a 15-year-old magnum appeared. My stars had aligned for a second time – the wine equally lovely, offering a bit more exotic spice, cardamom and coriander seed along with the sweet creamy lime zest. Crucially, this time I could see the germ of a plan. Each year, I would buy a cast of Moscato d’Asti, building a reserve of Moscato to steadily enjoy over the coming years. I’ll be the Christmas king of deliciously sweet floral fizz. So, on the morning of 25th, I’ll be twisting the top off the second bottle from last year’s case and smugly enjoying my Moscato and crumpet as I let my mind wander over the riches I’m preparing for the coming years.”  François Cotat Sancerre Le Mont Damné and Massican Gemina – chosen by Alex Sarovich, Founder and CEO of Own Rooted Hospitality  "As the oldest of five in a large Italian family, I've learned that selecting the perfect wine is an art form that requires careful consideration of both the food and the audience. When I'm hanging out with my twin 24-year-old brothers, they're all about vibrant, crisp wines like Champagne or Sancerre. If I can get my hands on it, I love surprising them with a bottle of Cotat’s Le Mont Damné, a truly exceptional wine that never fails to impress.  “In contrast, when I'm with my mom and aunt, we lean into our Italian roots. White wines from Italy are a staple in our household, especially when we're in the kitchen, cooking and preparing a meal together. This year, I'm planning to bring a bottle of Massican Gemina to our holiday gathering in McMinnville. This beautiful white blend, composed of Greco, Falanghina, and Fiano grapes from top California vineyards, perfectly captures the essence of our family's wine appreciation – a nod to our Italian heritage with a California twist.”  Coche-Dury Meursault, Domaine de Trévallon and Jean-Michel Gérin Côte-Rôtie La Landonne – chosen by Philippe Abadie of Alvina Pernot  “First of all, we decided to open a bottle of 2022 Meursault from Domaine Coche-Dury, given to us by a client to celebrate the birth of our son Pâris, who was born on January 1st 2022. We also really like the new style introduced by Raphaël since he took over this magnificent estate. Then Trévallon: my grandfather Georges from the south of France was an unconditional fan of the estate, and during my childhood there was always a bottle on festive tables (for birthdays, Christmas, New Year, etc) – so this will be a little wink to him. Then last, a bottle of Côte-Rôtie La Landonne by Jean-Michel Gérin. The story goes back to a few weeks after I first met Alvina, for this is the bottle of red we drank on our first restaurant date.”  2022 Domaine Yui A Rouge – chosen by Carlito Chiu, Wine Director at Andō, Hong Kong  “Established in 2019 by the dynamic husband-and-wife duo Tetsuya and Aya Sugiyama, Domaine Yui is a Japanese winery with a profound mission of unity and togetherness. Inspired by the meaning of the Japanese word “yui”, “to connect/link”, the Sugiyamas are dedicated to bringing people together through their shared love for wine and agriculture. Their A Rouge is a remarkable expression of Burgundy-style red wine crafted in Hokkaido, Japan – a specific blend of Pinot Noir, Chardonnay and Pinot Gris that showcases the region’s terroir. It is particularly special to me because it embodies the innovative spirit of Japanese winemaking, while honouring traditional techniques. For me, this wine represents the potential of Japanese terroir and the dedication of winemakers committed to producing world-class wines, making it a wonderful choice for celebrating the joy and warmth of the Christmas season.”  Read more Editorial
