What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

Taking root: the rise of biodynamic winemaking in Bordeaux

Processo ed Élevage Per comprendere Maison Leroy, bisogna prima comprendere il processo. Ogni vino viene degustato alla cieca da Madame Lalou Bize-Leroy prima che venga presa qualsiasi decisione. Centinaia di vini vengono valutati ogni anno, mettendo da parte produttore, denominazione e reputazione. Raramente nuovi vini superano la selezione. Solo quando un vino soddisfa i suoi standard porta il nome Leroy. Questa responsabilità rimane direttamente nelle sue mani. Ed è solo l’inizio. Oak barrels have been used in winemaking for thousands of years. While initially their purpose was simply as a holding vessel, today it is much more than this. As we have learnt about wine production at a molecular level, we have discovered the unique interaction between oak and wine – adding flavour, textural complexity and increased ageing potential. These intrinsic qualities have seen oak at the forefront of fine wine’s greatest success stories – but also some of its greatest failures. The use of oak to improve a wine requires great skill and finding that balance has shaped the modern history of fine wine.  What is rather beautiful about winemaking, particularly in fine wine circles, is that despite the input from developments in science and technology, production remains an artisan craft, relying both on tradition and technology. The barrel-maker is a perfect example of this partnership and no one understands this better than François Frères. This lauded Burgundy cooper’s ties to the world’s greatest wines make it one of a very small number that have lived through the development and fashions within fine wine.  Today, business has never been better for François Frères; they produce 30,000 barrels a year and export to every major wine region in the world. The secret to the François Frères barrels historically, Gigandet believes, is their consistency, while the all-important signature toasting is paramount. To keep up with the ever-growing world of fine wine, François Frères produces tailor-made barrels that fit the varying climates and varying styles of each winemaker, meeting the standards set by today’s precision-led winemaking. Despite the growth of the business in recent years, François Frères still remains intrinsically linked to its homeland in Burgundy and the specific microclimate of Saint-Romain that is so important for the seasoning of their oak – another key factor behind the company’s success. “The microclimate of Saint-Romain, in a windy and pollution-free environment is ideal for the seasoning and drying of the oak. This oxidation of phenolic compounds under the influence of fungi, releases enzymes that hydrolyse the phenolic compounds, reducing the wood’s astringency, producing oak of the finest quality for wine production,” Gigandet tells me. The art of the cooper is much more than just sawing and toasting – it’s about sourcing, traceability, control of drying time and heating, hygiene, temperature control, sorting and more. With increased knowledge, the quality of the barrels, like that of the wines, has greatly improved. Even just a few years ago, Gigandet admits that in colder Burgundy vintages, sometimes their barrels jarred with the wine – they “brought too much tension and could sometimes seem too austere”. But now they have a better understanding of the qualities their barrels can bring to Burgundy: “François Frères barrels remain attractive to winemakers because they are great at retaining freshness and minerality.” Perhaps most importantly, François Frères wants its barrels to amplify a wine’s intrinsic qualities. “It wants to accentuate the beautiful tannic structure of a wine, contribute to its flavour but without excess of sweetness from the toasting, as well as amplifying the wine's tension and minerality, helping retain its freshness and its fruit,” Gigandet says. As technology has developed, so has François Frères. It is what Gigandet aptly calls “the evolution of taste” – “the cask has evolved considerably over the last few decades along with the quality of the wines. Today, the barrel is much more specific, manufacturing almost tailor-made barrels for each customer’s needs.” The business was founded by Joseph François in the early 1900s, never imagining that being a cooper would become a full-time job. Back then, Gigandet reminds us, “It took several trades to live.” But the next generation, Robert and Henri François, saw the demand for oak casks rise, at that time mainly used to transport wines. They took the operation full-time, creating the François Frères brand in 1942. In those days, as Gigandet points out, “The tradition of maturing wines in barrels was reserved only for the very top red and white wines of Burgundy and the great Bordeaux châeaux.” Even within these regions, barrels were a luxury, re-used year after year given their expense, therefore keeping the demand for new barrels low. By the 1960s the brothers were met by the development of stainless steel and plastic containers. The barrel quickly lost it supremacy as the preferred vessel for transportation and demand plummeted. It was only the top producers that helped keep the cooperage going. By the 1970s François Frères was producing barrels for one of the world’s most famous estates, Domaine de la Romanée-Conti – a partnership that would be instrumental in the continuation of the business through a difficult period. The next generation – Robert's son, Jean – was confronted by the economic downturn of the early 1970s and turned to export to save the family business. Fortuitously at this time, oenologists in the United States started to highlight how ageing wines in new oak barrels brought complementary flavours and complexity to the wines. In the 1980s, the French market caught onto the idea and both export and domestic markets grew. The oak barrel was entering an era where it would become the star of the show – and a must for all top producers. François Frères’s reputation for working with the best saw it perfectly placed to capitalise on this new-found love for the barrel. But according to Gigandet, it wasn’t just the fashion of using new oak in the 1980s and ’90s that saw such a huge increase in demand. This trend emerged just as wine exports exploded. What he calls “the democratisation of wine” saw the world of wine suddenly open up to the middle classes – and this increase in sales saw an ever-increasing need to maintain quality and improve consistency. Such demand prompted and funded a better scientific and technological understanding of wine production. More importantly for François Frères, it fuelled the need for a better understanding of what barrel-ageing does to wine – and why. It was already clear that contact with new oak changed wine profoundly. Most obviously the aromas and flavours of the wine develop, becoming more complex. These aromas and flavours are formed during the toasting of the barrels. “It is this toasting of the barrel that remains the signature of the cooper,” explains Gigandet. But the oak didn’t just impact the flavour, they came to understand that, being porous, oak allowed the wine to undergo “controlled oxygenation”. The exchange of air through the oak staves, in particular for red wines, helps stabilise the colour and polymerise the tannins. This polymerisation not only softens the wine, but brings a textural complexity, a millefeuille layering of mouth-feel brought about by the linking of long tannin chains, encouraged by the micro-oxygenation process that the wine goes through when aged in oak barrel. “François Frères barrels are ageing tools, which contribute to the textural improvement of wines, when used wisely,” Gigandet explains. As the wine world’s love of oak grew, François Frères’ main export customers went from little-known names to pioneers in their respective regions – with Robert Mondavi in the US, Angelo Gaja in Italy, Nicolas Catena in Argentina and Australia’s Rosemount winery. Each of these producers further cemented the cooper’s reputation, representing the very pinnacle of oak barrel production. Of course, like all fashions, the oak craze of the ’90s saw some extreme uses – 200% new oak ageing or an over-reliance on oak to provide flavour to wines that lacked the natural concentration to carry it. This saw many producers and consumers react strongly against its presence in wine at all. Even Gigandet admits that there are wines with “excess woodiness” to their detriment. Today, the barrel also has to compete with new trends in wine maturation – concrete eggs and clay amphorae, for instance. But while these new vessels have captured the imagination of the world’s top winemakers, it is not necessarily at the expense of the barrel. “The barrel has an important oenological role in the development of wines from certain grape varieties,” states Gigandet – notably Cabernet Sauvignon, Merlot, Syrah and Pinot Noir. But he also outlines how different ageing vessels combined can also benefit a wine’s potential for complexity. This is certainly the case amongst some leading producers in Bordeaux and Burgundy that are using both oak barrels and alternative ageing vessels. Coopers like François Frères have weathered the changing relationship wine has had with the barrel; with shifting views of critics and drinkers over the last century. Fortunately for fine wine lovers, there’s little sign of oak fading into the background. Oak remains a vital ingredient in many of the world’s greatest wines, adding to its flavour, textural complexity and – of course – ageing potential. Philippe Guigal hadn’t yet met his future wife – it would be another nine years before he finally walked down the aisle but he had long known what vintage he would serve at his then-imaginary wedding. The 1999 season in the northern Rhône was as perfect as it gets and when he was picking the beautiful berries that were worthy of photographing he told his father it would the wines of the 1999 vintage would be served on his wedding day.  Baltimore-base wine critic Robert Parker seemed to agree with Philippe that Domaine E. Guigal’s 1999s were worthy of the most important day of a man’s life, handing out three perfect scores to its trio of Côte Rôtie wines, known affectionately as the La Las. It wasn’t just
one northern Rhône producer who basked in the glory of the 1999 summer: Michel Ogier’s Cuvée Belle Helène and Rene Rostaing’s Côte Blonde both nabbed their first–ever 100 Parker points and Michel Chapoutier’s Ermite l’Ermite Blanc received its first, of what would be many, 100-point scores.  While Parker was accustomed to handing out awards to the French wine fraternity, the tables were turned in 1999; he was named an officer of the Legion d’Honneur by French President Jacques Chirac “being the man who taught America about French wine”. France’s highest award, he joined an illustrious list of recipients including Queen Elizabeth II, American President Dwight D. Eisenhower and French poet Victor Hugo.  Another American Robert was making waves in Europe in the autumn of 1999. Robert Mondavi Winery bought a stake in Tenuta dell’Ornellaia, one of a handful of so-called Super Tuscan estates made famous for their law-breaking use of non-Tuscan grape varieties and
the superlative quality of the resulting wines. But it wasn’t just Antinori who was celebrating his windfall in 1999: it was a magnificent season growers across Tuscany. The winemakers of Brunello di Montalcino enjoyed a superb follow-up to the opulent 1997 vintage in an otherwise unremarkable decade for the area.  Burgundy was also bringing the century to a close with flourish: it was a record year with around 20 million more bottles than the five-year average. The late Henri Jayer, affectionately known as the "pope of winegrowers" recorded his thoughts on each vintage in notebooks and, in 1999, he said: "One has to go back to 1934 to find a similar association of quantity and quality."  If growers did not thin their crops, however, the vines struggled to ripen their loads while producers that normally ferment their wine with a portion of whole bunch had to destem to make room in their vats.  From the off the wines were succulent and seductive but they had greater staying power than many envisaged due to their rich phenolics and fine acidity. In 2018, Burgundy critic Stephen Tanzer said that the reds had just entered "their periods of peak drinkability" and this is a great time to crack the 1999 reds from the Côte d'Or. It was a truly great vintage to see out the 20th century. 
François Millet of Chambolle Musigny's Domaine Georges Comte de Vogüé shares his memories of the 1999 vintage. "The 1999 vintage was abundant. The previous vintage - 1998 - was marked by a hard frost and, as is often the case after a small crop, it is followed by a large one - like 2017 after 2016.  "The most important factor in 1999 was consequently whether you limited yields or not. We
had been very vigilant at the domaine and didn't hesitate to do a severe green harvest. The weather during the season was beautiful and we harvested on 20 September. It was not an early vintage and maturity was reached calmly.  "The wines are concentrated, complete, elegant and refined with black fruit dominating and a
beautifully spicy structure. It was quite a serious vintage in terms of its expression while also retaining a beautiful elegance; it is a quiet force that inspires respect." On Musigny "When it comes to the winemaking, there was no pigeage because I think that Musigny is a
sensitive terroir that doesn't like much intervention; you have to have a lot of empathy for the wine and to be forceful with it would risk having vegetal tannins and bitterness, which I perceive as a form of anger. By its structural nature, if you were too brutal with it, the 1999 vintage, could very quickly have become monstrous. [On the other hand] Bonnes-Mares likes and needs more intervention to best express itself and so I punch down.  For me, making wine is a message of peace and empathy, particularly for Musigny. Corton-Charlemagne: il Grand Cru del futuro?

I Thienpont regnano sulla Rive Droite di Bordeaux. A Vieux Château Certan, Alexandre Thienpont – quasi sempre vestito con il suo Barbour – comanda, producendo Pomerol di immacolata genealogia, come la sua famiglia fa ormai da oltre un secolo. Poco distante, il cugino Jacques Thienpont tiene corte a Le Pin, il primo indirizzo cult di Pomerol. Nicolas Thienpont è un altro cugino il cui dominio si estende da Saint-Emilion – da Pavie Macquin e Larcis Ducasse fino a diverse tenute nella Côte des Francs. E la dinastia continua a crescere, mentre ogni ramo di questa complessa famiglia trova un nuovo angolo della regione da padroneggiare. 
 La famiglia fiamminga ha una lunga storia nel mondo del vino, commerciando vino francese (soprattutto Bordeaux) dal 1842. Georges Thienpont – nonno di Jacques, Alexandre e Nicolas) fu il primo a passare alla produzione, acquistando Ch. Troplong Mondot nel 1921, poi Vieux Château Certan nel 1924. Tuttavia, non passò molto tempo prima che arrivasse la Grande Depressione, e Georges Thienpont fu costretto a vendere Troplong Mondot nel 1934. A quanto pare, l’unico motivo per cui mantenne Vieux Château Certan fu che nessuno voleva comprarlo – con le vigne che all’epoca esercitavano scarso fascino. Fu il château stesso a Troplong Mondot, posizionato nel punto più alto della regione e con vista sul villaggio di Saint-Emilion, a permettergli di vendere la tenuta di Saint-Emilion. Georges continuò a produrre vino durante la Seconda Guerra Mondiale e la devastante gelata del 1956. Nonostante un inizio difficile, “VCC” (come è affettuosamente noto dagli amanti del vino) è diventato uno dei nomi di punta di Bordeaux. Fu però Jacques Thienpont a portare la famiglia decisamente sotto i riflettori. Fu nel 1979 che Jacques, allora ancora commerciante di vini in Belgio, acquistò un vigneto di 1,6 ettari a Pomerol. Il sito aveva prodotto Pomerol generico, ma Jacques iniziò a realizzare minuscoli volumi di vino dallo stile opulento, chiamandolo come il pino solitario (“le pin”) che si ergeva sulla proprietà. L’annata 1982 fu determinante, ricevendo notevoli consensi dalla critica – soprattutto da Robert Parker – e presto Le Pin divenne uno dei vini più desiderati al mondo. 
 Poco più di 30 anni dopo quel primo acquisto di vigneto, parve destino quando Jacques andò a vedere una parcella di terreno a Saint-Emilion proprio accanto a Troplong Mondot. Precedentemente conosciuta come Ch. Haut-Plantey, il potenziale del sito era chiaro a Jacques e la simmetria dei Thienpont che tornavano dove era iniziata l’eredità vinicola della loro famiglia sembrava appropriata. Acquistò la proprietà nel 2010 e mise Cyrille Thienpont (suo cugino di primo grado una volta rimosso) a capo della gestione quotidiana. In linea con il tema arboreo, chiamò l’impresa di Saint-Emilion L’If (il tasso). 
 Il primo progetto intrapreso dal team fu una mappa dettagliata dei suoli per comprendere a fondo il sito. La cantina si trova a Saint-Laurent-des-Combes, appena a est di Troplong Mondot, con cinque ettari di vigneto intorno e altri due ettari di vigne esposte a ovest vicino a Saint-Hippolyte. Le parcelle più basse sono più erose e sabbiose, ma gran parte del vigneto poggia su puro calcare e argilla. Si misero a ristrutturare il vigneto – eliminando il 5% di Cabernet Sauvignon e aumentando la quota di Cabernet Franc, con circa il 25% sull’intera proprietà oggi (qualsiasi nuovo impianto è stato fatto con una selezione massale da Pavie Macquin). 
 Nel 2013, Jacques acquistò un altro ettaro circa di vigne a Saint-Etienne-de-Lisse, proprio accanto a Ch. Puy-Blanquet. Nonostante la qualità dei suoli, Jacques era esitante a comprare una parcella così “lontana”, ben tre chilometri in linea d’aria – o circa 10 minuti di auto. Estirparono le viti e reimpiantarono questa parcella aggiuntiva, raccogliendo i primi frutti nel 2018. Nonostante la sua giovane età, l’uva della parcella è entrata nel blend finale di ogni annata di L’If dal 2020 (“Ne è valsa la pena del viaggio,” scherza Cyrille). Anche con il significativo reimpianto e questa nuova parcella, l’età media delle vigne dell’azienda è di circa 40 anni – con le più vecchie oltre i 60 anni. 
 I lavori per una nuova cantina sono terminati appena in tempo per la vendemmia 2023, consentendo maggiore precisione e flessibilità – con più spazio di manovra (e 16 tini in cemento per i loro otto ettari di vigne). Ci si potrebbe aspettare un edificio appariscente, magari firmato da un architetto famoso – ma non è nello stile dei Thienpont. La discrezione è tutto per questa famiglia – e la cantina è una replica quasi esatta di ciò che c’era prima, semplicemente con più spazio all’interno, progettata per una funzionalità semplice. In un angolo si trova un serbatoio in acciaio inox altrimenti anonimo – il primo che Jacques acquistò per Le Pin nel 1979. Era forse inevitabile che L’If stesse all’ombra di Le Pin. Ma ora, 15 anni dopo l’acquisto della tenuta da parte di Jacques Thienpont, con una nuova cantina e il significativo lavoro nei vigneti completato, L’If sta costruendo una propria reputazione. 
 Sebbene lo stesso team sia in gran parte coinvolto in entrambe le tenute, L’If è un sito e un vino totalmente diversi. I suoli freschi hanno una migliore capacità di ritenzione idrica e il germogliamento avviene circa 10 giorni più tardi che a Le Pin, con le sue ghiaie calde e ben drenanti – un divario che spesso si amplia con l’avanzare della stagione vegetativa, il che significa che qui la vendemmia è significativamente più tardiva. Diana Berrouet Garcia – che funge da Direttrice Generale per i Domaines Jacques Thienpont, inclusi sia Le Pin che L’If – osserva come a L’If il terroir sembri parlare più forte dell’annata e riesca ad adattarsi meglio a condizioni più impegnative, mentre a Le Pin le viti possono faticare – soprattutto negli anni caldi e siccitosi. Dove Le Pin è rotondo, suadente ed esotico, L’If è lineare, teso e minerale; uno sensuale e sferico, l’altro appena dal lato giusto del severo, con una qualità cristallina. Anche negli ultimi anni, è sorprendente come il vino stia evolvendo – tallonando Le Pin in termini di qualità. Riassaggiando il 2019, è sorprendentemente accessibile, con un naso profumato e un frutto succoso e puro che completa la tensione naturale del vino. 
 Sono ancora giorni relativamente iniziali per L’If – e il team ha investito in modo significativo, concentrandosi sul modellare il vigneto e sull’assicurarsi di avere in cantina gli strumenti per tradurre il lavoro in vigna. Per ora, oltre metà del vigneto viene utilizzata per il second vin, Les Collines d’If – qualcosa che cambierà col tempo, man mano che continuano a reimpiantare parcelle. A quanto pare, i tassi crescono incredibilmente lentamente – ma sono anche tra gli alberi più longevi (il Perthshire in Scozia ospita il tasso di Fortingall, che si pensa abbia 2.000–3.000 anni ed è uno degli alberi più antichi d’Europa). La famiglia Theinpont si sta appena insediando a L’If, ma mentre mette radici, il potenziale è chiaro. 
 La famiglia Thienpont: chi fa cosa? Jacques Thienpont: Possiede Le Pin, L’If e L’Hêtre (quest’ultimo con sua sorella Anne de Raeymaeker), ma è anche comproprietario di Vieux Château Certan. Sovrintende all’originaria attività di commercio di vini della famiglia in Belgio, la Thienpont Wine, detentrice del Royal Warrant belga, gestita da sua moglie e premiata scrittrice di vino Fiona Morrison MW. 
 Alexandre Thienpont: Comproprietario e direttore di Vieux Château Certan con suo figlio, Guillaume, oltre a essere comproprietario di Le Pin con Jacques. Alexandre e Guillaume coltivano anche le vigne di Le Pin, L’If e L’Hêtre, oltre a quelle di Vieux Château Certan. 
 Guillaume Thienpont: Gestisce Vieux Château Certan con il padre, Alexandre, oltre a produrre L’Etoile e Les Fillottes con il suo cugino di secondo grado, François Thienpont. Gestisce anche ora Ch. Guillot-Clauzel, che non è di proprietà della famiglia.

Sono passati quattro secoli da quando la famiglia Giraud-Hémart iniziò a coltivare la vite ad Aÿ, scrivendo i primi capitoli di un’eredità straordinaria. 
 Anche se all’inizio erano mezzadri, la Chiesa concesse loro un’ampia porzione di terra nel XVII secolo – con François Hémart come primo membro della famiglia registrato nei registri parrocchiali. La storia moderna della famiglia, tuttavia, inizia nel XX secolo, quando un soldato di nome Léon Giraud fu di stanza ad Aÿ e si innamorò di Madeleine Hémart. La coppia si sposò presto e ebbe un figlio, Henri Giraud, trasferendosi nella proprietà in cui la famiglia vive tuttora. 
 All’epoca, i vigneti della regione erano stati abbandonati a causa della fillossera, e Léon si mise a ripiantare tre ettari di viti. Per 300 anni la famiglia aveva coltivato uva e venduto il frutto, ma dopo il ritorno di Henri dalla Seconda Guerra Mondiale, lui e suo padre decisero di iniziare a produrre il proprio vino – fondando l’etichetta Giraud-Hémart. L’attività crebbe ed evolse, soprattutto dopo l’arrivo di Claude Giraud (secondo figlio di Henri) nel 1972, a soli 20 anni. Lavorando con suo padre negli anni ’70 e ’80, riorganizzarono le proprietà viticole e acquisirono nuovi appezzamenti fino a raggiungere i 10 ettari che possiedono oggi, cambiando anche il nome della tenuta in Champagne Henri Giraud. Nel 1990 iniziarono ad acquistare uva aggiuntiva per soddisfare la crescente domanda e realizzarono la prima annata di Fût de Chêne – il vino che dal millesimo 2002 sarebbe diventato Argonne. Sebbene negli anni ’90 la famiglia già affinasse il vino in rovere, è solo nel XXI secolo che ha iniziato a lavorare esclusivamente con legno proveniente dalla foresta dell’Argonne – oggi parte integrante dell’identità della Maison. 
 La foresta dell’Argonne era storicamente la fonte di gran parte del legno utilizzato in Champagne, sede di oltre 150 bottai, ma fu gradualmente abbandonata e subì gravi danni durante la Seconda Guerra Mondiale. Henri Giraud ha fatto della sua restaurazione e protezione una missione, collaborando con l’Ufficio Nazionale delle Foreste francese (ONF) in un programma di riforestazione (ad oggi sono stati piantati oltre 60.000 alberi). La Maison considera la quercia dell’Argonne una componente essenziale del proprio terroir – tanto che il suo vino di punta ne porta il nome. I suoli poveri e aridi della foresta fanno sì che le querce crescano molto lentamente, sviluppando una grana particolarmente fine che dà al legno un aroma delicato, perfetto per accompagnare i vini eleganti di Aÿ. Oggi, l’azienda rimane un’impresa familiare strettamente unita – con la tredicesima generazione alla guida. Emmanuelle Giraud è al timone della Maison, avendo preso il posto del padre Claude, che – pur non essendo più ufficialmente parte dell’azienda – rimane presente e coinvolto nelle decisioni più importanti. La sorella di Emmanuelle, Anne le Golvet-Giraud, si è avvicinata alle pratiche terapeutiche, lanciando il marchio registrato della proprietà, la Craÿothérapie – un programma di benessere a base di gesso offerto nel loro hotel interno (furono tra i primi produttori della regione ad accogliere visitatori per degustazioni e, oggi, anche per soggiorni). È il marito di Anne, Sébastien le Golvet, a occuparsi della vinificazione.  “È molto importante essere sempre curiosi, cercare qualcosa di meglio dal vino, dall’uva,” ci racconta Giraud. Nessuno incarna questa filosofia alla Maison più di Le Golvet, una forza trainante che, dal suo arrivo nel 2002, ha spinto a sperimentare e innovare sia nei vigneti sia in cantina. Negli ultimi due decenni ha introdotto analisi dei residui nel suolo per certificare il loro approccio triple-zero (zero pesticidi, zero insetticidi e zero trattamenti fungicidi – qualcosa che ritengono più significativo della certificazione biologica e che hanno a lungo pionierizzato), ha bandito l’acciaio inox dalla cantina (utilizzando solo terracotta e legno) e tosta personalmente ogni botte che la Maison utilizza. Sempre alla ricerca di nuovi modi per elevare ulteriormente i vini, ha recentemente creato e iniziato a utilizzare botti personalizzate con fondi in arenaria. Come spiega Emmanuelle, la sua filosofia è ferma: “Il miglior vino sarà il prossimo.” Henri Giraud riesce a bilanciare un approccio all’avanguardia con la pazienza che il metodo classico richiede. Come spiega Emmanuelle, devono assicurarsi che tutto sia perfetto dal momento della raccolta delle uve – perché ogni errore si scoprirà solo dopo dieci anni. Sebbene si occupi della strategia e della pianificazione generale dell’azienda, durante la vendemmia la si trova sempre sul pavimento della cantina, a gestire la ricezione delle uve ogni anno, vedendo il culmine di un anno di lavoro. Essere indipendenti e a conduzione familiare permette loro il lusso di una visione realmente a lungo termine. Ogni annata conducono esperimenti i cui risultati emergeranno solo dopo dieci anni, ma l’investimento va ben oltre: piantano 12.000 alberi nella foresta dell’Argonne ogni anno, assicurandosi che Henri Giraud possa continuare a utilizzare questa quercia speciale anche tra due secoli. I vini straordinari della Maison riflettono questa visione, testimoni della loro instancabile ricerca della qualità e di un’attenzione al dettaglio senza pari. Chissà cosa porteranno i prossimi 400 anni – ma varrà certamente la pena seguirli. Chadwick incaricò il compianto Steven Spurrier di condurre l’evento. “Non avrei mai immaginato che ciò che stava per accadere sarebbe accaduto,” mi dice Chadwick. Con sua e l’altrui incredulità, il Viñedo Chadwick 2000 conquistò il primo posto, seguito dal Seña 2001, poi dal Château Lafite Rothschild 2000 e dal Château Margaux 2000 — ex aequo al quarto posto con il Seña 2000. Finalmente, c’era la prova che i vini del Cile meritavano un posto sul palcoscenico mondiale. 
 Ma, per Chadwick, un momento spartiacque non bastava. Ripeté la degustazione, prima a São Paulo, poi a Tokyo — e avanti, organizzando la stessa degustazione alla cieca 22 volte in tutto il mondo, ottenendo risultati parimenti spettacolari per i suoi vini. Serve nervi d’acciaio — e una buona dose di ego — per essere disposti a rischiare ripetendo una simile prova, eppure Chadwick fu giustamente premiato. La sua campagna è solo uno dei modi in cui ha tracciato un percorso per il vino pregiato cileno — con una determinazione implacabile e ostinata. Chadwick è la quinta generazione della sua famiglia a fare vino in Cile. Don Maximiano Errázuriz emigrò dai Paesi Baschi e fu il primo a piantare viti nella Valle di Aconcagua nel 1870. Individuò la località, a 100 km a nord di Santiago, con le sue brezze oceaniche fredde, estati calde e inverni piovosi, come perfetta per la coltivazione della vite. Operando sotto il motto “dalla migliore terra, il miglior vino”, piantò viti in questo sito idilliaco, vicino a Panquehue, e costruì una cantina — che ancora oggi esiste. 
 Gradualmente, l’azienda crebbe — diventando il vigneto più grande del mondo di proprietà di un singolo individuo, con 1.300 ettari coltivati al suo apice alla fine del XIX secolo. Nonostante questa prosperità iniziale, l’industria vinicola cilena non continuò a fiorire. Non esisteva un mercato d’esportazione e il consumo interno (che arrivò fino a 80 litri pro capite l’anno) venne decimato da pesanti tasse, mentre turbolenze politiche ed economiche, con regimi comunisti poi militari, misero in crisi non solo l’industria, ma la nazione. All’inizio degli anni ’80 il vino costava meno dell’acqua e circa la metà dei vigneti del paese venne estirpata. Fu in questo scenario instabile che arrivò Eduardo Chadwick. Si era inizialmente formato come ingegnere industriale prima di decidere di concentrarsi sul vino, andando a studiare a Bordeaux sotto il leggendario enologo Émile Peynaud. Suo padre riacquistò la cantina di famiglia alle banche, e Chadwick iniziò a spolverare le ragnatele, riaprendo Viña Errázuriz e — armato di nuove conoscenze tecniche — realizzò la prima annata del Don Maximiano Founder’s Reserve, il vino di punta della proprietà, nel 1984. L’operazione era ancora rudimentale — con tinozze in rauli (un legno nativo), nessun controllo della temperatura e viti allevate a pergola nei fondi fertili — ma fu un primo indizio di ciò che era possibile. Degustando quel vino quattro decenni dopo, ha retto sorprendentemente bene — con vivacità al naso e un profilo cesellato e sapido di puro Cabernet Sauvignon. 
 Gradualmente, Chadwick investì in attrezzature — serbatoi in acciaio inox, presse moderne e botti — e iniziò a impiantare vigneti sulle pendici con suoli più poveri. Parallelamente a questo cambiamento, le elezioni decisive del 1989 riportarono il Cile alla democrazia — e figure chiave del mondo del vino iniziarono a visitare. Presto i vini di fascia d’ingresso vennero esportati da realtà come Oddbins e Victoria Wine. Le porte si erano aperte per il vino cileno. Robert Mondavi visitò Chadwick nel 1991 — e i due uomini si trovarono in sintonia, condividendo un’esigenza inesorabile di spingere avanti la loro industria, e Mondavi riconobbe in Cile il potenziale che aveva visto a Napa negli anni ’60. Sapeva che la sua partnership con Château Mouton Rothschild (Opus One) era stata fondamentale per cambiare la reputazione di Napa — e la coppia sperava che la loro joint venture potesse fare lo stesso per il Cile: nacque Seña (letteralmente “segnale”). Bob Mondavi junior, Tim, collaborò con Chadwick al progetto e suggerì di cercare un sito più vicino alla costa nella Valle di Aconcagua, in cerca di ancora maggiore finezza, producendo la prima annata nel 1995. 
 E Chadwick non si fermò lì. Suo padre aveva acquistato un fondo nell’Alto Maipo nel 1945, sede di un campo da polo (Alfonso, il padre di Eduardo, era stato per anni capitano della squadra cilena). Nel 1992 Chadwick convinse il padre a lasciargli trasformare il campo da polo — con i suoi puri suoli ghiaiosi e un’escursione termica di 15˚C — in un vigneto, ritenendolo perfetto per il Cabernet Sauvignon. Alfonso morì l’anno successivo, ma la prima annata di questo progetto — Viñedo Chadwick, chiamato in onore del padre — venne realizzata nel 1999. 
 Chadwick sapeva che i vini erano buoni — ma convincere il mondo di ciò fu la sfida. È chiaro per lui che il Cile commise un grande errore nel produrre in massa vini di ottimo rapporto qualità-prezzo, di ingresso — buoni, ma non vini di pregio — una fascia di prezzo che finì per definire la nazione. “Per questo fu molto difficile convincere il pubblico che possiamo anche produrre vini di livello mondiale,” dice Chadwick. “Il Cile non aveva riconoscimento. Non avevamo valutazioni, punti Parker, punti Suckling.” E così si mise al lavoro per cambiare la situazione con la Degustazione di Berlino. Con i risultati che scossero il mercato (poi riecheggiati in tutto il mondo), creò una spinta al cambiamento. Un decennio dopo, superò un altro confine: il Viñedo Chadwick 2014 divenne il primo vino cileno a ottenere 100 punti (da James Suckling). Solo l’anno scorso, l’annata 2021 è stata il primo vino cileno valutato 100 punti dalla Wine Advocate. Quando mi sedetti con lui a marzo di quest’anno, fu in occasione di un evento che rendeva omaggio ai due decenni trascorsi dalla Degustazione di Berlino — con le prime annate di ogni tenuta e i loro più grandi successi. Il Seña 1998 fu particolarmente notevole — una vendemmia fresca che oggi è profumata, elegante, brillante e di incredibile persistenza. Qualsiasi dubbioso sul vino cileno rimase immediatamente in silenzio. E, come per la degustazione di Berlino, l’evento veniva replicato in tutto il globo — la campagna per promuovere il vino cileno non finisce mai. 
 Quando Chadwick iniziò nel 1983, Viña Errázuriz aveva appena 10 ettari di vigneto. Oggi, nelle loro tenute, Chadwick coltiva 900 ettari di vigna. Comprò le quote dei fratelli anni fa, quando scoprì che erano più interessati ai dividendi che a far crescere e investire nell’azienda. Ora tre delle sue quattro figlie lavorano al suo fianco — entusiaste del potenziale dei siti costieri (dove producono i vini Las Pizarras) e di un nuovo progetto spumante. Non sono mancate le difficoltà lungo il percorso, ma queste hanno solo alimentato la incessante ricerca di riconoscimento di Chadwick per il Cile e i suoi vini. “Dove siamo oggi supera i miei sogni più sfrenati,” mi dice, eppure è solo grazie alla sua instancabile ambizione che il vino cileno è arrivato a questo punto. Fortunatamente, sembra che i suoi figli abbiano ereditato la sua determinazione — pronti a governare il prossimo capitolo di questa epica storia.
