Non capita tutti i giorni di poter assaggiare vini prodotti oltre mezzo secolo fa – ma all’inizio di questo mese ho potuto ripercorrere l’Imperial Gran Reserva di punta di CVNE fino all’annata 1947. Victor Urrutia, quinta generazione della sua famiglia alla guida di questo leggendario produttore della Rioja, ha organizzato una degustazione di quella che ha definito “la sporca dozzina” – affiancando 12 annate di Imperial. I vini sono stati scelti per mostrare come il vino si esprima attraverso una gamma di annate – non solo le più celebri, ma le calde, le fredde, le possenti e le mediocri. 
 CVNE produce vino nella Rioja Alta dal 1879, quindi – anche risalendo al 1947 – questa degustazione ha offerto solo un’istantanea della sua storia. Imperial fu creato agli inizi del XX secolo (1917 è l’annata più antica assaggiata dallo stesso Urrutia), concepito come una “super Rioja”, ha spiegato Urrutia. L’idea era di fare il miglior vino possibile, a prescindere dal suo potenziale commerciale, in un’epoca in cui la Rioja non aveva il prestigio di oggi. Si producono circa 50.000 bottiglie, ma – cosa importante – Imperial non viene realizzato in ogni annata, poiché in alcuni anni la qualità dell’uva non soddisfa i rigorosi standard di CVNE (ad esempio non ci sono state le annate 2003, 2006 o 2013, e non ci sarà nemmeno la 2023). 
 Per Urrutia, l’obiettivo con Imperial oggi è riflettere ciascuna annata e mettere a punto il vino piuttosto che cercare rivoluzioni. Le annate più antiche sono il loro punto di riferimento e fonte d’ispirazione. Attraverso le annate, tuttavia, Urrutia indica un naso “da chiesa” – qualcosa che trova distintamente Imperial e che ricorda la cantina. 
 È facile, forse, dimenticare quanto bene invecchi la Rioja – e non solo per un decennio o due, ma per oltre mezzo secolo. L’annata più vecchia di questa degustazione, la 1947, è stata senza dubbio la stella – un vino che ha conservato la sua freschezza, con aromi delicati e un palato magnificamente lungo, puro, risolto. L’intero volo ha impressionato – con la qualità di Imperial a risplendere. Sono comparse alcune delle annate leggendarie della Rioja (la 1970 e la 1959, che siedono accanto a 1982 e 1964 nei libri di storia), ma i miei preferiti personali sono stati la già citata 1947, la 2004 ancora compatta (nominata Wine of the Year da Wine Spectator nel 2013), la cupa 2011 e la graziosa, elegante 2018. I vigneti di Imperial L’uva per l’Imperial Gran Reserva proviene dai migliori vigneti di CVNE, tutti con oltre 40 anni di età e quasi tutti ad alberello, con rese di circa 4.000 kg/ha (equivalenti a circa 25 hl/ha o meno di 1,5 tonnellate/acro). Le parcelle si trovano tutte vicino ai monti Cantabrici, a circa 500–600 metri di altitudine, e su suoli poveri ma freschi (argilla e calcare) – conferendo grande freschezza ai vini, anche negli anni caldi e siccitosi, spiega la storica Direttrice Tecnica María Larrea. 
 Il villaggio di Villalba de Rioja è stato la spina dorsale del vino sin dalla sua concezione. Questo villaggio è il luogo in cui i fratelli Real de Asúa (che fondarono CVNE) acquistarono per primi dei vigneti, quattro chilometri da Haro. I vigneti sono ripidi ed esposti a sud, soggetti ai venti e quindi alcune viti devono essere allevate a cordone speronato (cordón Royat), ma ciò apporta acidità e freschezza al vino – elementi essenziali per il suo potenziale di invecchiamento. Parcelle nei villaggi di Briones e Torremontalbo furono aggiunte in seguito, negli anni ’60. Briones ha suoli più ricchi, pendii dolci e un clima più caldo, conferendo struttura e corpo al vino, mentre Torremontalbo ha pendii ripidi e sassosi con suoli calcarei e una significativa escursione termica, aggiungendo mineralità e finezza al blend. 
 Il blend di Imperial Il blend è cambiato nel corso degli anni, con il vino originariamente attorno al 40% Garnacha e 40% Tempranillo, con il restante 20% Graciano e Mazuelo. I vecchi vigneti erano field blend, con le varietà interfilari e raccolte insieme, implicando livelli di maturazione misti – qualcosa che probabilmente apportava equilibrio e complessità ai vini, anche se parte dell’uva poteva non essere matura. Oggi, ogni varietà è piantata separatamente da CVNE – permettendo maggiore controllo e precisione, vendemmiando ciascuna uva al momento perfetto e componendo il blend in cantina. 
 Negli anni ’70 si è assistito a un allontanamento dalla Garnacha, con sempre più Tempranillo piantato al suo posto. La Garnacha era meno apprezzata, vista come un cavallo da tiro, impressione soltanto rafforzata quando cloni meno pregiati e ad alta resa furono piantati negli anni ’80 e ’90. Come ha anche osservato la Larrea, la Garnacha è molto più soggetta a colatura e acinellatura (scarsa fioritura e allegagione), il che potrebbe essere stato un altro fattore del suo declino. C’è stato anche un periodo, ha spiegato Urrutia, in cui Bordeaux era il punto di riferimento per il vino fine, e si cercava di imitare la regione, privilegiando il Tempranillo per il suo colore più scuro rispetto alla più sottile di buccia e quindi più pallida Grenache. Oggi, il blend è dominato dal Tempranillo (con sia il 2017 sia il 2018 Imperial all’85% Tempranillo), ma la Grenache sta vivendo una rinascita in tutta la Rioja e – a patto di avere il giusto materiale clonale e/o vigneti più vecchi – potrebbe contribuire maggiormente al blend in futuro. 
 La proporzione di Graciano e Mazuelo è stata leggermente ridotta, ma la Larrea sottolinea quanto siano importanti le due uve di fronte al cambiamento climatico. Il Mazuelo (alias Carignan/Cariñena) fornisce struttura e colore, mentre il Graciano apporta acidità e complessità aromatica. La vinificazione Sebbene sia entrata in CVNE nel 1991, María Larrea ha preso in mano la vinificazione di Imperial con l’annata 2005, succedendo a Basilio Izquierdo, che aveva diretto le operazioni per oltre 30 anni (dal 1973). Prima di Izquierdo venne Ezequiel García, noto come “El Brujo” (“Il Mago”), enologo di CVNE per oltre tre decenni (tornò brevemente nel 2014 per ricreare il loro leggendario bianco, Monopole). 
 Attraverso i tre enologi e quasi 70 anni, sorprendentemente è cambiato poco. La vinificazione qui rimane estremamente tradizionale, sebbene la tecnologia abbia permesso al team di monitorare i vini più da vicino e di migliorare l’igiene di cantina, come nella maggior parte delle regioni. La fermentazione rimane indigena, anche se non è più spontanea – i vini vengono inoculati con un ceppo selezionato del loro lievito indigeno dall’inizio degli anni 2010 (con alcuni esperimenti negli anni ’90). Tradizionalmente la fermentazione avveniva in vasche di cemento, ma negli anni ’90 si è passati al rovere, con una sola annata (1994) fermentata in acciaio inox quando le botti non arrivarono in tempo. 
 I vini venivano un tempo conservati in botte e imbottigliati solo al momento della vendita, quindi alcune vecchie annate di Imperial hanno trascorso oltre un decennio in botte, mentre oggi il vino resta normalmente in botte tra due e tre anni. (Le date di imbottigliamento per ciascuna annata sono incluse di seguito – la 1947 non fu imbottigliata fino al 1960!) In origine il rovere era tutto americano, semplicemente perché era quello a cui avevano accesso tramite le loro storiche rotte commerciali, e le botti venivano mantenute per decenni (la Larrea ricorda l’uso di botti di 40 anni quando arrivò negli anni ’90). CVNE ha iniziato gradualmente a introdurre rovere francese negli anni ’80, con circa il 30% di rovere francese negli anni ’90 e circa il 60–70% oggi, con il resto americano. I vini: degustare otto decenni di CVNE Imperial Una nota sulle bottiglie: le annate più vecchie sono in vetro verde, ma si è passati al vetro ambrato circa 10–15 anni fa. 
 2018 Imperial Gran Reserva: Questo è stato un vero highlight della verticale. È ancora molto giovane, fruttato, ma con straordinaria finezza e delicatezza. Il naso è preciso con aggraziati aromi di spezie, grafite e fiori insieme al frutto cristallino. Il palato è succoso e agile, puro, setoso e fresco con tabacco saporito e frutti rossi disidratati che riempiono il finale saporito. Bellissimo e molto aperto, già ora. Fermentato in rovere, 14% alcol e imbottigliato a luglio 2021. 
 2017 Imperial Gran Reserva: Gelate hanno colpito gran parte dell’Europa a fine aprile 2017, sebbene il resto della stagione sia stato relativamente caldo, producendo un raccolto minuscolo di frutta concentrata. È un vino drasticamente diverso dal 2018, ma ancora con grande freschezza e un guizzo floreale accanto a frutta rossa matura e dolce. Il palato è teso, molto meno approcciabile del 2018, con tannini compatti, un morso di acidità croccante e una stretta di tannini fermi, mentre toni affumicati riempiono il finale. Decantare per goderselo ora, ma sarà ancora migliore con un paio d’anni in bottiglia. Fermentato in rovere, 14% alcol e imbottigliato a luglio 2020. 
 2015 Imperial Gran Reserva: Il 2015 Imperial è scuro e intenso, stratificato con ricchi frutti di rovo, cedro, tabacco, spezie e qualcosa di carnoso – forse un accenno di biltong. Il palato riecheggia la concentrazione del naso, con tannini masticabili e una linea di acidità che incide la sua intensità. Potente, quasi severo, con più frutta secca che emerge con l’aria, il finale è lungo e saporito, con un tocco di miso rosso. Fermentato in rovere, 14,5% alcol e imbottigliato a giugno 2018. 
 2011 Imperial Gran Reserva: Un altro spicco della verticale, il 2011 Imperial offre un naso scuro e puro, ancora sorprendentemente primario con frutta di ciliegia nera e cassis, sollevato da un dolce profumo speziato. Il palato è setoso e puro, ancora così giovane, scorre sulla lingua, incorniciato da tannini fermi ma integrati. È concentrato e lungo, con aromi floreali che danzano sul finale succoso. Difficile resistergli, con grande equilibrio. Fermentato in rovere, 13,5% alcol e imbottigliato a luglio 2014. 
 2009 Imperial Gran Reserva: Questo è un Imperial molto serio, ora in una fase di bella maturità – con sottobosco saporito e note speziate accanto al vibrante frutto di bacche scure. Il palato è intenso ma con una morbidezza, nonostante l’impalcatura tannica masticabile. È succoso ed espressivo, con note affumicate, speziate, di tabacco sul finale, e appena un leggerissimo accenno di cuoio che inizia ad apparire. Fermentato in rovere, 13,8% alcol e imbottigliato a gennaio 2013. 
 2004 Imperial Gran Reserva: Da una “annata da manuale”, nelle parole del CEO di CVNE Victor Urrutia, il 2004 brilla. Trucioli di matita e bacon completano frutta matura e scura. Il palato è teso e compatto, ma con una succosità che allunga l’insieme, con un’acidità che guida fino al lungo finale. I tannini sono soffici e morbidi, integrati con il frutto, ma offrono ancora presa sul finale. Luminoso ed equilibrato senza sforzo. Fermentato in rovere, 13,8% alcol e imbottigliato a ottobre 2008. 
 1994 Imperial Gran Reserva: Questa è un’annata intrigante di Imperial, l’unica ad essere stata fermentata in acciaio inox durante il passaggio dal cemento al legno, ma le botti nuove non arrivarono in tempo per l’annata. Fu anche servita al matrimonio del Principe della Corona di Spagna, poi divenuto Re Felipe VI. Dopo il 2004, questo segna uno spostamento verso vini dominati da note terziarie, sebbene qui ci sia ancora molta frutta. Il naso è speziato con fungo e sottobosco accanto a incenso e toni di cuoio. Il palato è carico di umami – con cuoio fresco e frutti di bosco disidratati – oltre a fragole essiccate, tannini morbidi e acidità rinfrescante. Fermentato in acciaio inox, 13,16% alcol e imbottigliato a giugno 1998. 
 1980 Imperial Gran Reserva: Come ha detto il CEO Victor Urrutia, il 1980 è stata “un’annata di merda” – ed è sempre rimasta all’ombra del 1981 e del 1982. Assaggiando il vino oggi, probabilmente è giusto – tuttavia resta un vino impressionante. Il naso ha un accento nettamente erbaceo, mentolato, sulla dolcezza del frutto – fragole macerate, con un accenno balsamico. I tannini offrono ancora mordente, mentre il frutto vira verso toni più scuri e di rovo verso il finale. Fermentato in cemento, 13,4% alcol e imbottigliato a maggio 1985. 
 1970 Imperial Gran Reserva: L’annata 1970 fu calda e produsse vini potenti – guadagnandosi la reputazione di una delle migliori annate della Rioja. Dopo oltre 50 anni, il vino è intensamente saporito – combinando soia, marmite e sentori di stalla con frutto scuro intenso. Con l’aria, il vino offre strati di spezie (quasi reminiscenti della paprika), bacon frazzles e mandorle affumicate, a complemento del concentrato nucleo di frutto. È intenso ma equilibrato, con acidità brillante che mantiene tutto fresco e riempie il lungo finale. Fermentato in cemento, 12,97% alcol e imbottigliato a marzo 1975. 
 1968 Imperial Gran Reserva: Da un’annata più difficile, il 1968 Imperial ha un naso affascinante che combina senza soluzione di continuità il salato e il dolce – con una ricchezza terrosa che siede accanto a frutto di bosco intriso d’incenso e una gradevole nota erbacea. Il palato è elegante e vibrante, con ancora molta frutta che guida attraverso il suo nucleo, mentre note più saporite e affumicate dominano il finale. Fermentato in cemento, 12,7% alcol e imbottigliato ad aprile 1974. 
 1959 Imperial Gran Reserva: L’annata 1959 è un’altra tra le più lodate della Rioja, sebbene sospetto che questa bottiglia non si sia espressa al meglio. C’è una morbidezza e intensità al palato, con una spinta acida affilata, mentre il naso è dominato da cuoio, liquirizia nera e sentori di stalla. Fermentato in cemento, 13% alcol e imbottigliato a febbraio 1968. 
 1947 Imperial Gran Reserva: Un vino straordinario da assaggiare, il 1947 CVNE Imperial ha una reputazione – che questa bottiglia ha più che confermato. Note di caffè e tabacco con frutto brillante – ciliegia rossa matura e lampone, oltre a fiori, incenso, tè nero e salvia, accanto a un profumo affumicato. È lungo e fresco al palato, senza soluzione di continuità e pienamente risolto ma puro e persistente, con un accento di Bovril sul finale che è vibrante e lungo. Splendido ora – bevetelo finché ne avete l’occasione. Fermentato in cemento, 12,4% alcol e imbottigliato ad agosto 1960.

Un'icona attraverso i secoli: Imperial Gran Reserva di CVNE

Quando Alain Hudelot si ritirò nel 2008, fu suo nipote a prendere le redini della tenuta di famiglia, il Domaine Hudelot-Noëllat. Charles van Canneyt – allora appena ventenne e fresco di studi enologici – si ritrovò improvvisamente a gestire 10 ettari di vigneti e un’intera cantina. Ma non era un ventenne qualunque. Gradualmente modernizzando le attrezzature della tenuta e perfezionando la vinificazione (in particolare moderando l’estrazione), trasformò la reputazione del domaine. In breve tempo divenne noto come una delle stelle emergenti della Borgogna, con Domaine Hudelot-Noëllat presto tra i nomi più rispettati della regione. Non incline alla compiacenza, nel 2012 avviò un’etichetta négoce, offrendo un’ulteriore via per gli amanti della Borgogna di accedere al suo talento enologico. Oggi, insieme alla moglie Anne-Sophie, ha intrapreso una nuova sfida, acquistando una nuova proprietà: il Domaine des Chézeaux. Probabilmente non conoscerete il nome di questa tenuta di Gevrey-Chambertin, ma quasi certamente ne conoscerete i vigneti. La storia del Domaine des Chézeaux Il Domaine des Chézeaux fu creato da François Mercier nel 1982, anche se la famiglia possedeva vigneti a Gevrey-Chambertin dal 1928. Il nome della tenuta deriva dal Clos des Chézeaux, il vigneto recintato accanto al domaine. La famiglia era proprietaria terriera più che vinicola, quindi tutti i vigneti erano affittati – en métayage – ad altri produttori. Questa pratica è comune in Borgogna: i vignaioli che affittano i vigneti li gestiscono tutto l’anno e producono il vino, cedendo una parte della produzione (spesso circa un terzo) al proprietario come affitto. La storica tenuta crebbe dai possedimenti originari e, dal 1994, contava circa quattro ettari. I vigneti erano divisi tra tre produttori: Domaine Ponsot (poi Laurent Ponsot), René Leclerc e Domaine Berthaut (poi Domaine Berthaut-Gerbet). Ponsot affittava il lotto originale di 0,89 ettari di Griotte-Chambertin, così come i parcelle di Clos Saint-Denis*, Chambertin e Chambolle-Musigny Premier Cru Les Charmes. Domaine Berthaut affittava due Premier Cru di Gevrey-Chambertin (Les Cazetiers e Lavaux-Saint-Jacques) e i parcelle del villaggio, incluso il Clos des Chézeaux. Pur essendo tecnicamente un monopole, Berthaut non possedendo il terreno non poteva rivendicarne tale status. Prima della vendemmia 1994, la famiglia Mercier acquistò un altro lotto di Griotte-Chambertin, 0,68 ettari appartenuti a Suzanne Thomas di Thomas Bassot, ottenendo il maggior possedimento di questo Grand Cru. La famiglia Esmonin coltivava già le vigne, vendendo parte dei frutti a Jadot; i Mercier affittarono poi il lotto a René Leclerc (pur continuando la vinificazione di alcune bottiglie da parte della famiglia Esmonin fino al 1999). Una parte dei vini finiti era imbottigliata con l’etichetta Domaine des Chézeaux, ma identica a quella dei produttori Ponsot, Leclerc o Berthaut, spesso a un prezzo inferiore. Domaine des Chézeaux oggi Nel 2021 Charles van Canneyt riuscì ad acquistare la tenuta e i suoi prestigiosi vigneti. Con tutti i vigneti sotto contratto en métayage, la sfida successiva fu riottenerli – negoziando con ciascun produttore. Nel 2022 ottenne il monopole Clos des Chézeaux e Premier Cru Les Cazetiers, ma vendette i frutti. Nel 2023, recuperato un lotto di Griotte-Chambertin, realizzò i primi vini dalla proprietà. Nel 2024 riuscì a recuperare tutti i vigneti – aggiungendo Chambertin, Clos Saint-Denis e Chambolle-Musigny Premier Cru Les Charmes. Come parte delle negoziazioni, furono venduti i parcelle Lavaux-Saint-Jacques, alcune vigne di Gevrey-Chambertin village e due piccoli lotti di Griotte-Chambertin. I vigneti sono generalmente vecchi in tutta la tenuta, e coltivazione e vinificazione seguono gli stessi metodi di Hudelot-Noëllat: frutti totalmente diraspati e estrazione molto delicata. Le prime annate furono vinificate a Domaine Hudelot-Noëllat (ma affinano nelle cantine del Domaine des Chézeaux) e è iniziata la costruzione di una nuova cantina, prevista per la fine del 2025. Van Canneyt ha già notato una maturazione diversa delle uve a Chézeaux, con cantine fresche e umide che rallentano l’élevage e richiedono meno rabbocco. Prevede quindi di affinare i vini più a lungo rispetto a Hudelot-Noëllat. La tenuta mantiene il nome storico, ma con nuove etichette – per differenziare le bottiglie precedenti all’arrivo di Van Canneyt. Il nome ha la stessa origine di Echezeaux: chesaux – plurale di chesal (dal latino casellum o casalis) – che significa casa o edificio in pietra. I vigneti del Domaine des Chézeaux Oggi la tenuta conta circa tre ettari di vigneti, di cui oltre la metà Grand Cru, distribuiti su sei appellations: Gevrey-Chambertin Clos des Chézeaux: monopole di 0,5 ettari, alcune vigne quasi centenarie (piantate nel 1929), su pendio medio esposto sud-est, su suoli profondi argillosi e ghiaiosi. Gevrey-Chambertin Premier Cru Les Cazetiers: 0,216 ettari in due parcelle, nord 0,1615 e sud 0,045 ha. Chambolle-Musigny Premier Cru Les Charmes: circa 0,6 ha, con ulteriore parcella a Domaine Hudelot-Noëllat. Clos Saint-Denis Grand Cru: 0,3776 ha, comparirà nel 2024 con un solo barile, ora reimpiantato fino al 2029. Chambertin Grand Cru: 0,143 ha nel cuore del Grand Cru. Griotte-Chambertin Grand Cru: 1,264 ha, il lotto più grande del piccolo Grand Cru, cuore dell’appellation. Focus su Griotte-Chambertin Griotte-Chambertin, o En Griotte, è il più piccolo dei Chambertin Grands Crus (2,69 ha) e tra i più piccoli della Côte d’Or, insieme a La Romanée, La Romanée-Conti e La Grande Rue. Situato sotto Clos de Bèze, con esposizione nord-est, permette maturazioni lente, vini delicati, aromatici e profumati, meno muscolosi rispetto al tipico Gevrey-Chambertin. Suoli ghiaiosi e calcarei con argilla a pendio. Domaine des Chézeaux è il maggiore proprietario (1,246 ha, quasi metà del vigneto). Altri proprietari: Joseph Drouhin, Fourrier, Claude Dugat, Marchand Frères, Joseph Roty, Duroché, Laurent Ponsot e un investitore che affitta il lotto a Cécile Tremblay. L’origine del nome è dibattuta: “griotte” (ciliegia amarena) o “criotte” (piccola pietra calcarea nei suoli). Storia delle etichette Griotte-Chambertin Le bottiglie storiche sono state un segreto per gli insiders, spesso Ponsot o René Leclerc sotto altre etichette. 1982–1993: unico lotto di Griotte-Chambertin, affittato a Ponsot. 1994: prima annata con secondo lotto, affittato a René Leclerc, blendato con il primo. 1995–2001: due imbottigliamenti identici senza indicazione del produttore. Dal 2002: produttore indicato sulle etichette. Fino al 2004 due bottiglie, dal 2005 René Leclerc solo occasionalmente. Il futuro del Domaine des Chézeaux Nonostante la lunga storia per una tenuta moderna, è solo l’inizio. Con un vignaiolo talentuoso come Charles van Canneyt e vigneti così prestigiosi, la qualità è destinata a crescere e i vini diventeranno presto ambiti quanto quelli di Hudelot-Noëllat. Annate 2023 del Domaine des Chézeaux 2023 Gevrey-Chambertin Clos des Chézeaux: 0,5 ha, vigne quasi centenarie, frutto rosso intenso, fiori di iris e violetta, tannini fini e salinità nel finale lungo. 2023 Gevrey-Chambertin Premier Cru Les Cazetiers: vigne vecchie, vino delicato, minerale e floreale, frutti trasparenti e tannini minerali equilibrati. Cinque barili prodotti. 2023 Griotte-Chambertin Grand Cru: lotto più grande del Grand Cru, aromatico ed elegante, frutti rossi succosi, spezie dolci e leggeri toni tostati, struttura che richiede tempo. Our team spent several weeks exploring the 2023 vintage in Burgundy – visiting, tasting and talking to a range of producers up and down the Côte d’Or. Here, we offer a run-down of the year by producer, from north to south, reporting on how each fared and our pick of their range this year

Montrachet, Chambertin, Richebourg: these names will send chills down the spine of any Burgundy lover. But many of the Côte d’Or’s most famous domaines are looking beyond these grand names, making wines from vineyards and appellations that might otherwise fly under the radar. With reputations at stake, the likes of Domaine d’Auvenay, Coche-Dury and Bizot put as much effort and care into these “lowly” wines as for their Grands Crus. Quality in these appellations is soaring – with better vine material, cooler sites that are benefitting from the warming climate, not to mention better winemaking and know-how all contributing. Here we offer a guide to just a handful of the treasures to be found in Burgundy if you look a bit further afield. Auxey-Duresses Right in the middle of the Côte de Beaune, Auxey-Duresses is a small, sleepy village situated above Meursault. Prior to AC regulations, the white wines of Auxey-Duresses were sold as Meursault and the Pinots sold as Pommard or Volnay. While probably better known for Pinot Noir production, some of its top wines are Chardonnays made in a specific part of the appellation directly bordering Meursault.  Here, high up on the hill, over the brow of Meursault’s highest vineyards you will find vineyards facing unusually north-west. While these vineyards are too cool to adequately ripen Pinot Noir, they have proven to be a great climate for Chardonnay, particularly in today’s warming climate. In a warm vintage, the whites can give the top Meursault vineyards a run for their money. Domaine Leroy, one of Burgundy’s most eminent estates run by Madam Lalou Bize-Leroy, has holdings in this part of Auxey-Duresses in Les Lavières, while Domaine d’Auvenay also regularly produces an Auxey-Duresses Blanc on this particular northwest-facing slope from the vineyards of La Macabrée and Les Boutonniers. Depending on volumes D’Auvenay can produce three separate Auxey-Duresses Blanc cuvées in one vintage or if volumes are down will blend into one. While these are expensive options, the quality is undoubtedly there and this is a great lesser-known spot in the Côte d’Or to source outstanding Chardonnay, particularly in warmer vintages.  Domaine Roulot, Olivier Leflaive and a Jasper Morris MW favourite Domaine Diconne (which has vines dating back to 1924) also produce excellent Auxey-Duresses Blanc on these slopes adjacent to Meursault. While stricter in style than their neighbours, they remain fantastic value. For reds, Domaine Comte Armand’s Premier Cru Auxey-Duresses is another great buy. Made from two complimentary Premier Cru sites – La Duresses (whose brown clay soil brings density and tannic structure) and Les Breterins (on lighter soil bringing fruitiness) combine to make a fabulous Auxey-Duresses well worth discovering. Monthélie Next door to Auxey-Duresses, sandwiched in between Meursault and Volnay, is another lesser-known appellation which has an impressive line-up of producers on its roster. Comtes Lafon, Coche-Dury, Philippe Pacalet, Domaine Roulot and Leroy all produce Pinot Noir from this little, oft-forgotten appellation.  Monthélie is actually one of Bize-Leroy’s favourite appellations for her Maison Leroy selection. Historically, Monthélie tended to produce Gamay more than Pinot Noir, but that is not the case today. While the village wines tend to be a little lean and err too far towards vegetal flavours, the Premiers Crus within the appellation deserve much more attention. Domaine Coche-Dury produces a Premier Cru Les Barbières, while Comtes Lafon’s Premier Cru is in Les Champs Fulliot.  Both have full south exposure, enabling the wines to ripen fully even at higher Hautes-Côtes-like altitudes. In the warmer vintages, you could be justly rewarded for sourcing wines from this under-appreciated little corner of Burgundy. Monthélie is also home to Domaine Potinet-Ampeau, whose collection of older bottlings can wow the senses, provides a fascinating and educational insight into mature Burgundy. Pernand-Vergelesses Few Chardonnay appellations in the Côte d’Or are as underrated as Pernand-Vergelesses. Proximity to Corton-Charlemagne makes this unsurprising. This winemaking enclave, tucked behind the hill of Corton, has long been a consistent appellation where you find outstanding quality at a fantastic price.  While consistent in quality, it is often inconsistent in quantity due to its position between two rising hills. The lay of the land produces natural airflow that attracts hailstorms and is also susceptible to frost as cold air sits in this natural pocket of vineyards. If the region escapes these climatic perils, the Chardonnays are linear and have a flinty, mineral character. The wines can age well, gaining richness as they mature. A top producer of particular note is Domaine Rapet – of whom Wine Advocate critic William Kelley recently noted, “It’s a mystery these wines are not better known or distributed.” Being the biggest landowner of Corton-Charlemagne, they are one of the region’s most consistent white wine producers. Domaine Chandon de Brailles (based in Savigny-lès-Beaune) is also widely recognised for producing the best Pinot Noir in the appellation.  Their Pernand-Vergelesses Premier Cru Ile de Vergelesses regularly competes with top Pinot Noirs made in the more famous appellations and is often described as one of Burgundy’s bargains given the quality. Other better-known producers such as Dugat-Py and a more recent purchase in 2012 by Domaine Jean-Claude Ramonet (one of the world’s top Chardonnay producers) – testify to the quality found here. Perennial FINE+RARE favourite, Domaine Jean-Marc & Hugues Pavelot, also produce outstanding Chardonnay from Pernand-Vergelesses. Morey-Saint-Denis While Morey-Saint-Denis can hardly be described as under the radar, it continues to be undervalued amongst its neighbours despite its obvious pedigree. Morey-Saint-Denis’s prime location in the Côte d’Or sandwiched between Gevrey-Chambertin and Chambolle-Musigny, for some reason – despite being home to five Grands Crus (Clos de la Roche, Clos de Tart, Bonnes Mares, Clos des Lambrays and Clos St Denis) – never gets the same limelight as either of its neighbours.  It’s possible to blame the autonomous nomenclature of its Grands Crus – with only Clos St Denis having a clear link to the village. It has meant that Morey-Saint-Denis as an appellation is seen as somewhat lesser in quality than its neighbours. Another reason might be that, like Auxey-Duresses, before the AC regulations came into play, the wines of Morey-Saint-Denis were either sold as Gevrey-Chambertin or Chambolle-Musigny.  Outside the Grands Crus, our excellent recent discovery is Domaine René Bouvier. Their  Morey-Saint-Denis En la Rue de Vergy is a simply stunning Pinot Noir no matter where it is from. While only classified as village, this vineyard is surrounded by Morey-Saint-Denis’s most illustrious Grands Crus – Clos des Lambrays, Clos de Tart and Bonnes-Mares – on the border with Chambolle-Musigny. In a sunny vintage, this cooler site has excelled and remains one of the great value-buys of 2019. Chassagne-Montrachet Rouge It is not simply lesser-known appellations that get missed. While its Chardonnays get all the attention today, Chassagne-Montrachet was historically a Pinot Noir appellation (as was Meursault). Today, Pinot Noir only represents about 20% of production within the Chassagne-Montrachet Premiers Crus, but until the 1960s, the appellation was dominated by the red grape. Some of the top Pinot Noir sites here were judged to be as good as Musigny, Clos de la Roche and Clos de Tart. Today Chardonnay is the better variety in the village, but there are still top examples of Pinot Noir to be found – often at a great price for the quality. The red wines from the Clos Saint Jean Premier Cru are often described as a unique expression of Pinot Noir – a wine of fantastic finesse, quite at odds with the appellation’s reputation for robust reds. It is arguably the finest site for red wine in Chassagne-Montrachet. Jean-Claude Ramonet produces a top example and Premier Cru La Boudriotte is also great, if not a little leaner in style. Marsannay Most Burgundy buyers rarely explore further north than Gevrey-Chambertin in search of the next big thing, but all indications point in that direction. Marsannay was only given appellation contrôlée status in 1987, encompassing three districts of Chenôve (on the outskirts of Dijon’s urban sprawl), Marsannay La Côte and Couchey.  Unique to the appellations of Burgundy, Marsannay can produce a rosé wine from Pinot Noir.  The foundation for the village’s reputation, many vineyards within the appellation are dedicated exclusively to rosé production. If a red wine is made in these vineyards, it must be declassified to Bourgogne Rouge). While Sylvain Pataille and René Bouvier make the most serious and age-worthy rosés in the appellation, the whites and reds are arguably the most exciting development in recent times. The village of Marsannay is arguably producing the best Pinot Noir for the money in the whole of Burgundy. Cult producers such as Domaine Bizot with Jean-Yves Bizot’s Marsannay Clos du Roy and his Bourgogne Le Chapitre, situated just south of Dijon, are already on aficionado's radars.  These wines are made in tiny quantities and has only further increased the collectability of these wines made in a distinct style (100% whole-bunch fermentations and zero sulphur additions). If sourcing Bizot wines is too painstaking and out of one’s budget, there are plenty of other exceptional growers in this region. Domaine Audoin is producing outstanding Premier Cru Marsannay that can compete with some of the top Gevrey bottlings and the wines still remain fantastic value. Domaine René Bouvier also makes exceptional wines from Marsannay. Côte Chalonnaise: Givry, Montagny and Rully Outside the Côte d’Or, to the south in the Côte Chalonnaise, Mercurey dominates the limelight compared to neighbouring appellations Rully, Montagny and Givry. When handled correctly, however, Givry, can produce fantastic, powerful Pinot Noir that also offers finesse. Rully and Montagny are also a great source of Chardonnay and remain outstanding value.  Montagny only produces Chardonnay – the top producers being Domaine Stéphane Aladame, Domaine Bruno Lorenzon and Domaine Maxime Cottenceau. Rully produces white and red, but the domaine's Chardonnay represents one of Burgundy’s best-value white wines. Producers worth looking out for include Domaine Jaeger-Defaix and Domaine Vincent Dureuil-Janthial. Domaine Joblot is the leading producer in Givry. Their wines consistently compete with those in the Côte d’Or, a beacon for the appellation’s reputation, yet remain sensibly priced. Of the estate’s 14 hectares, nine are Premier Cru, including some of the village’s finest plots such as Clos de la Servoisine and Cellier aux Moines.  L’Empreinte –  a blend of their four red Premier Cru sites (Clos de la Servoisine, Cellier  aux Moines,  Clos  Marole  and  Les Bois  Chevaux – is the property’s top wine. The white, Cuvée Mademoiselle, is a blend of  their  older-vine  Premier Cru  Chardonnay from  En  Veau  and  Clos de la  Servoisine. Joblot is rightfully praised by the likes of Clive Coates MW,  Robert Parker, Allen Meadows and Jasper Morris MW for being the leading address in Givry and one of the greatest estates in Burgundy. Hautes-Côtes de Nuits Situated over the brow of the main Côte d’Or slope and further to the west are the vineyards classified as the Hautes-Côtes (the higher slopes) of the Côte de Nuits. Typically around 100 metres higher in altitude, only the southwest and southeast slopes are warm enough to ripen grapes, but geologically parts of the region are identical to the Côte d’Or.  With warmer vintages, quality here is greatly improving and you can find some outstanding wines at a great price. Two top examples of this come from Vosne-Romanée’s Domaine Gros Frère & Sœur and Domaine David Duband. Both estates have invested heavily in the region believing in the potential of these cooler sites in a warming climate. Aubert de Villaine’s Domaine de la Romanée-Conti also produces an Hautes-Côtes de Nuits Blanc, from grapes grown on the slopes below the historic Abbaye de Saint Vivant. Noel Verset is a true wine legend of Cornas. In fact, the fine wine region might not even have existed today were it not for his resilience and that of his compatriots Auguste Clape and Rene Balthazar.  Today, Cornas is widely recognised as one of the world's greatest sites for Syrah production and although the history of winemaking in this village dates back over a thousand years, just 50 years ago it was largely a forgotten backwater of the Rhone Valley. Even up until the 1990s Cornas' top producers did not share the gravitas of the more established nearby villages of Côte-Rôtie and Hermitage. But it is now common for Noel Verset’s wines to out-price top  Côte-Rôtie and Hermitage due to its rarity and historical importance. Like much of Europe’s viticultural regions, Cornas was left devastated by the Phylloxera outbreak in the late 1800s. The onset of World War I, The Great Depression and World War II only further damaged the region. Production levels were in continual decline and many vineyards were left abandoned. Despite its dwindling production, however, Cornas was awarded its appellation status in 1938. Noel Verset and his vigneron father witnessed much of this downfall. Born in Cornas (in 1919)  Verset was working with his father in the vineyards by the age of 12. Despite the region being on its knees at this time, Noel and his father continued to manage vines on the steepest, most difficult and low-yielding granite sites, which they knew produced the finest wines in the region.  In 1943, after marrying his wife Aline Balthazar (sister of Rene Balthazar, another godfather of Cornas), Noel stopped working with his father and set up his own business. Five years later, Noel Verset purchased Domaine del Sabarotte, a 1.3-hectare vineyard,  from Cornas négociant Delaygue. Verset continued to secure arguably the finest plots in the Cornas appellation, including the lieu-dits of Chaillots, Champelrose and Reynard which are all very steep granite sites. The industrialisation boom in the 1950s further depopulated the region making it a largely forgotten site for wine production. According to John Livingstone Learmonth’s book on Northern Rhone, Cornas remained in a time warp right through the 1970s. From 1968 to 1976 Verset, now in his mid-fifties, was forced to take on a second job in the town of Valence,
unpacking parcels from railway wagons, working evening shifts whilst managing his vineyards during the day.   However, the northern Rhône's star was starting to rise, as wine collectors from around the world started to look beyond Bordeaux and Burgundy. Neighbouring Hermitage and Côte Rôtie were starting to enjoy fame and although Cornas was playing catch up, quality improvements were taking place as growers started to bottle their own wine.  It was slow progress. Auguste Clape was the first to bottle his Cornas in 1955 and by the 1980s only 20 of the 60 growers, including Verset, had followed suit. However, the greatness of these low-yielding, estate-bottled expressions needed time to show its potential. Verset and Clape's benchmark style for Cornas was fiercely traditional, rugged Syrah, built for bottle maturation.   Cornas was brought back from the brink by the tireless efforts of Noel Verset, Auguste Clape and Rene Balthazar. Between the 1970s and 2005, the appellation had doubled in size to more than 100 hectares and there was growing demand for its vertiginous sites. In 2001, and nearing retirement at 82 years of age, the sale of his original Sabarotte vineyard to Auguste Clape and Laurent Courbis yielded four times more than it had been valued at just six years earlier. Finally, the vineyards of Cornas and Verset's wines had gained the recognition they deserved.  
In 2015, Verset passed away, aged 95, but his legend lives on in his wines, which often fetch prices exceeding the very best Côte Rôtie and Hermitage bottlings.  A number of the most prized 21st-century Cornas wines hail from the plots Verset nursed over eight decades. Thierry Allemand bought his Reynard vineyard and would go on to become the darling of the new generation of Cornas while his nephew Franck Balthazar took over the Chaillots vineyard in 2006 and has become a highly respected Cornas producer in his own right. The current custodians of these have inherited the Cornas earth and they have Verset to thank for it. Noel Verset also used to sell two barrels of wine to respected négociant Tardieu Laurent who were producing their top Cornas Vieilles Vignes cuvee made from Verset’s wine blended with another Cornas legend Robert Michel’s wine. On discovering the connection we couldn’t believe our luck when we were able to source the cuvee from the widely respected 1999 vintage retailing at under £40 a bottle. If you can even find a Verset bottle from this period it is retailing at well over £400 a bottle. Of course, it is not the same thing, but the interwoven web of wine production can sometimes lead you to some pretty magical discoveries. Whilst the odd case of Noel Verset’s Cornas comes up on the market every now and then, you might have more luck sourcing the Tardieu Laurent Cornas Vieilles Vignes which he contributed to, up until the 2006 vintage. Philippe Guigal hadn’t yet met his future wife – it would be another nine years before he finally walked down the aisle but he had long known what vintage he would serve at his then-imaginary wedding. The 1999 season in the northern Rhône was as perfect as it gets and when he was picking the beautiful berries that were worthy of photographing he told his father it would the wines of the 1999 vintage would be served on his wedding day.  Baltimore-base wine critic Robert Parker seemed to agree with Philippe that Domaine E. Guigal’s 1999s were worthy of the most important day of a man’s life, handing out three perfect scores to its trio of Côte Rôtie wines, known affectionately as the La Las. It wasn’t just
one northern Rhône producer who basked in the glory of the 1999 summer: Michel Ogier’s Cuvée Belle Helène and Rene Rostaing’s Côte Blonde both nabbed their first–ever 100 Parker points and Michel Chapoutier’s Ermite l’Ermite Blanc received its first, of what would be many, 100-point scores.  While Parker was accustomed to handing out awards to the French wine fraternity, the tables were turned in 1999; he was named an officer of the Legion d’Honneur by French President Jacques Chirac “being the man who taught America about French wine”. France’s highest award, he joined an illustrious list of recipients including Queen Elizabeth II, American President Dwight D. Eisenhower and French poet Victor Hugo.  Another American Robert was making waves in Europe in the autumn of 1999. Robert Mondavi Winery bought a stake in Tenuta dell’Ornellaia, one of a handful of so-called Super Tuscan estates made famous for their law-breaking use of non-Tuscan grape varieties and
the superlative quality of the resulting wines. But it wasn’t just Antinori who was celebrating his windfall in 1999: it was a magnificent season growers across Tuscany. The winemakers of Brunello di Montalcino enjoyed a superb follow-up to the opulent 1997 vintage in an otherwise unremarkable decade for the area.  Burgundy was also bringing the century to a close with flourish: it was a record year with around 20 million more bottles than the five-year average. The late Henri Jayer, affectionately known as the "pope of winegrowers" recorded his thoughts on each vintage in notebooks and, in 1999, he said: "One has to go back to 1934 to find a similar association of quantity and quality."  If growers did not thin their crops, however, the vines struggled to ripen their loads while producers that normally ferment their wine with a portion of whole bunch had to destem to make room in their vats.  From the off the wines were succulent and seductive but they had greater staying power than many envisaged due to their rich phenolics and fine acidity. In 2018, Burgundy critic Stephen Tanzer said that the reds had just entered "their periods of peak drinkability" and this is a great time to crack the 1999 reds from the Côte d'Or. It was a truly great vintage to see out the 20th century. 
François Millet of Chambolle Musigny's Domaine Georges Comte de Vogüé shares his memories of the 1999 vintage. "The 1999 vintage was abundant. The previous vintage - 1998 - was marked by a hard frost and, as is often the case after a small crop, it is followed by a large one - like 2017 after 2016.  "The most important factor in 1999 was consequently whether you limited yields or not. We
had been very vigilant at the domaine and didn't hesitate to do a severe green harvest. The weather during the season was beautiful and we harvested on 20 September. It was not an early vintage and maturity was reached calmly.  "The wines are concentrated, complete, elegant and refined with black fruit dominating and a
beautifully spicy structure. It was quite a serious vintage in terms of its expression while also retaining a beautiful elegance; it is a quiet force that inspires respect." On Musigny "When it comes to the winemaking, there was no pigeage because I think that Musigny is a
sensitive terroir that doesn't like much intervention; you have to have a lot of empathy for the wine and to be forceful with it would risk having vegetal tannins and bitterness, which I perceive as a form of anger. By its structural nature, if you were too brutal with it, the 1999 vintage, could very quickly have become monstrous. [On the other hand] Bonnes-Mares likes and needs more intervention to best express itself and so I punch down.  For me, making wine is a message of peace and empathy, particularly for Musigny. As Claude Debussy said: 'Music is the silence between the notes'." Explore more Editorial

The glitterati of the food world gathered in Antwerp last night to celebrate the World’s 50 Best Restaurants. It’s perhaps no surprise that Copenhagen’s Noma came out on top yet again (with its original location having won four times before, 2010-2012 and 2014). René Redzepi’s iconic New Nordic concept, championing the finest foraged ingredients and the art of fermentation, is rightfully at the top of many gastronomic wish lists.  This year’s list includes eight new entries – including Lido 84 (Gardone Riviera, Italy) which came in at no 15. Other new entries were: Diverxo (no 20 – Madrid, Spain), Burnt Ends (no 34 – Singapore), SingleThread (no 37 – Healdsburg, USA), Florilège (no 39 – Tokyo, Japan), Atomix (no 43 – New York, USA), Nobelhart & Schmutzig (no 45 – Berlin, Germany) and Wolfgat (no 50 – Paternoster, South Africa).  Hong Kong’s The Chairman climbed a massive 31 places to no 10, while two chefs earnt special recognition. Victor Arguinzoniz of Asador Etxebarri (Atxondo, Spain) was named Chefs’ Choice and Will Goldfarb (Room4Dessert – Bali, Indonesia) took home the title of the World’s Best Pastry Chef. Steirereck (Vienna, Austria) won the Art of Hospitality Award and Boragó (Santiago, Chile) was recognised for its sustainability. Spain and the US were confirmed as gourmet hotspots – each having six restaurants in the top 50.   Previous winners of the top spot include El Bulli (2002, 2006-2009), The French Laundry (2003-2004), The Fat Duck (2005), El Celler de Can Roca (2013, 2015), Osteria Francescana (2016, 2018), Eleven Madison Park (2017) and Mirazur (2019).  The list is decided by 1,000 industry experts who vote for the establishments they feel are the best. Voters are given certain freedom, with no strict criteria to consider – and previous winners of the coveted number-one spot are no longer allowed to vote. The 1,000 voters are food writers, critics, chefs, restaurateurs – in short the globe’s most experienced diners. The group is evenly split between male and female, with a panel of 40 members in 26 different regions. Each year, 25% of any panel has to change.
