A marzo di quest'anno, Opus One ha annunciato l'assunzione di Meghan Zobeck come Direttrice della Vinificazione. È il primo passo nella transizione, poiché l'enologo di lunga data Michael Silacci intende lasciare l'azienda nei prossimi cinque anni. Silacci è in Opus dal 2001 ed è oggi una vera e propria leggenda nella valle: trovare un successore adatto non è un compito da poco. 
Zobeck non era necessariamente la scelta ovvia. Ha scalato rapidamente i ranghi dell'élite vinicola di Napa, ma è entrata nel mondo del vino solo nel 2012. Quel passaggio è stato un atto di fede per Zobeck, un atto insolito per qualcuno immerso nel mondo della NFL. 
Zobeck è cresciuta a Greeley, in Colorado, "una città di contadini", come lei stessa l'ha definita, ma che per puro caso era anche il luogo in cui i Denver Broncos tenevano i loro ritiri di allenamento ogni anno. Durante il liceo, ha trascorso le sue estati lavorando per la squadra, come facevano molti locali. Frequentò l'università (poi la facoltà di medicina), ma continuò a lavorare per i Broncos, passando a tempo pieno mentre studiava per gli esami MCAT. 
Durante l'ultimo anno di università, fece uno stage con la squadra, lavorando con gli osservatori e sedendosi nella "war room" il giorno del draft. "Adoravo l'azione, il ritmo veloce", dice. Più o meno nello stesso periodo, si rese conto che la medicina non faceva per lei: accettò invece un ruolo nella negoziazione dei contratti dei giocatori per i Broncos, diventando una delle poche donne a ricoprire quel ruolo, e ne fu entusiasta. Fu un viaggio di fine settimana a Los Olivos, nella Santa Ynez Valley, a far nascere il suo interesse per il vino e, più specificamente, per la vinificazione. Tornata a casa, trovò un annuncio su una rivista locale per un negozio di birra artigianale, che offriva la possibilità di acquistare uva durante la vendemmia. Ben presto si mise a sperimentare, fermentando lotti di vino nella sua cantina e organizzando feste di imbottigliamento con gli amici. "Ho visto come unisse davvero le persone", dice. Ha viaggiato in altre regioni vinicole e si è innamorata del modo in cui il vino combinava scienza, creatività, storia e comunità. La NFL le era stata utile, ma era giunto il momento di fare il grande passo e lasciarsi i Broncos alle spalle. 
Ha prodotto la sua prima vendemmia a Clos Apalta nel 2012 e non si è più voltata indietro: ha vendemmiato in Piemonte, Bordeaux e Barossa, prima di concentrarsi su Napa, prima presso Stag's Leap Wine Cellars e Screaming Eagle, poi ha accettato un incarico con il consulente di punta Philippe Melka. Più recentemente, Zobeck è stata enologa presso Burgess Cellars, dove ha avuto carta bianca per plasmare i vini, dalla vigna alla cantina. 
Zobeck ha incontrato per la prima volta Michael Silacci al Premiere Napa Valley, il suo primo a mostrare campioni di botti di Burgess. Silacci è venuto ad assaggiare e poi, in una chiara dimostrazione di approvazione, ha continuato a consigliarle altri. Zobeck si stava concentrando su uno stile di vino più fresco, un ritorno al Burgess di un tempo, ma stava anche lavorando a un approccio rigenerativo in vigna, e presto scoprì che il team di Opus One stava conducendo esperimenti simili. Lei e Kimberlee Marinelli, Assistente Enologo e Viticoltrice di Opus One, si misero in contatto e iniziarono a discutere di tutto, dagli impollinatori ai fermenti autoctoni. Zobeck fu colpita dalla chiara mancanza di compiacimento da parte di una proprietà che non aveva bisogno di dimostrare ulteriormente il suo valore. Non immaginava che Silacci stesse osservando ciò che stava facendo con particolare interesse, e decise che avrebbe potuto essere l'erede al suo trono. 
"È un lavoro che non penseresti mai, nemmeno tra un milione di anni, di poter trovare", racconta Zobeck del momento in cui le fu proposto di diventare Direttore della Vinificazione di Opus One. Non avrebbe certo rifiutato un'opportunità del genere, soprattutto quando avrebbe avuto la possibilità di lavorare con Silacci per diversi anni. Zobeck raccoglierà l'eredità di Silacci presso Opus One, una tenuta in continua evoluzione durante il suo mandato. L'agricoltura biologica è stata la norma presso Opus per oltre due decenni, sebbene l'azienda abbia richiesto la certificazione solo nel 2021. Per oltre un decennio, Silacci ha sperimentato la biodinamica, ma ha scoperto che le viti erano diventate troppo vigorose. Ha abbandonato l'approccio prima di lanciarsi nell'agricoltura rigenerativa a partire dal 2022. L'azienda ora utilizza colture di copertura permanenti tra le viti, contribuendo ad abbassare le temperature nelle chiome, trattenere l'acqua nei terreni e allungare il periodo di maturazione, senza aumentare i livelli di zucchero. Silacci ha sperimentato l'agricoltura a secco dal 2007 e ha ridotto l'irrigazione in tutta la tenuta, sebbene per ora rimanga essenziale. Il team spera, tuttavia, di poter avviare un nuovo sito di coltivazione a secco a Oakville una volta che le viti saranno stabilizzate. Tutto questo lavoro si riflette nei vini prodotti oggi. 
"Opus One non è la Napa stereotipata dei primi anni 2000", sottolinea Zobeck. "È uno stile fresco, e per mantenerlo dobbiamo coltivare in modo diverso". Silacci è famoso per aver detto di non voler lasciare le sue impronte nel vigneto o le sue dita sul vetro, ma Zobeck nota come la sua influenza su Opus One sia evidente nel corso degli anni, soprattutto a partire dal 2004. Dal 2019, tuttavia, Ritiene che il vino si sia evoluto ulteriormente, con una maggiore trasparenza del sito. L'annata 2023 è appena stata imbottigliata con una modesta gradazione alcolica del 13,5%, indicativa dell'attuale approccio della tenuta, che intende proseguire. 
Silacci prevede di rimanere per almeno tre anni, lavorando al fianco di Zobeck come enologo capo. Un periodo di transizione di questa durata testimonia la visione a lungo termine di Opus One, che non guarda solo alla prossima annata, ma al prossimo decennio e oltre. L'entusiasmo di Zobeck per il ruolo è evidente, così come la sua ammirazione per la squadra attuale. Come nella NFL, un buon capitano è fondamentale, ma ci vuole più di un giocatore per vincere una partita, e Zobeck completa una formazione già impressionante. È un passaggio di consegne davvero notevole.

Dopo un inverno mite, senza gelate né grandine, da marzo a giugno è arrivata la pioggia. Peronospora e colatura sono comparse presto e non sono mai scomparse del tutto. Alcuni viticoltori hanno raddoppiato i trattamenti, poiché le tempeste hanno ripetutamente spazzato via la protezione. Alla fine della stagione, le precipitazioni si sono attestate intorno ai 1.200 millimetri, quasi il quaranta percento in più del normale. Il prezzo da pagare per le rese è stato pesante. Molti domaine hanno perso tra un quarto e il quaranta percento dei loro bianchi e, in alcuni casi, fino al settanta percento dei loro rossi. Da luglio in poi è tornato il sole, portando un ritmo più costante e uve sane per ciò che è rimasto. La maggior parte è stata vendemmiata tra la seconda e la terza settimana di settembre, con un'attenta selezione sia in vigna che in cantina. Ciò che è emerso è un'espressione più fresca, più fine e più tradizionale della Borgogna. I vini hanno un'alcolizzazione moderata, un'acidità chiara e un senso di sobrietà che piacerà a coloro che amano la linea classica e l'equilibrio della regione. Charles van Canneyt lo ha espresso al meglio: "Non è perché abbiamo avuto maltempo che abbiamo prodotto un vino cattivo". Le nostre prime degustazioni sottolineano questo punto. Da Paul Pernot i bianchi mostrano una freschezza vibrante e una profonda acidità, con il Puligny-Montrachet Les Folatières che si distingue per la sua tensione e grazia. Da Alvina Pernot, i 2024 portano la freschezza del 2017 e l'accessibilità del 2021, ma con maggiore profondità e compostezza. Hong Kong rimane il mercato in più rapida crescita per i vini bianchi, con un entusiasmo costante per lo Chardonnay pregiato e lo Champagne maturo.
 
Come il Borgogna En Primeur nascerà in questo contesto è incerto e certamente diverso dal Bordeaux En Primeur. Il crescente predominio del Borgogna bianco e la combinazione di rarità, qualità, desiderabilità e, in alcuni casi, valore ancora reale, segnano un'emergere che sembra al di sopra delle denominazioni e delle tendenze. Il Borgogna continua a evolversi secondo i propri ritmi, plasmato più dalle decisioni dei singoli viticoltori che dal ritmo collettivo. Quanto lontano arriverà questo ritmo dipenderà dalla rilevanza in un mercato in cui persino Michelin mette in discussione il suo marchio di punta, Robert Parker, e dove voci indipendenti come Jamie Goode, spinte da una curiosità sconfinata e libere da vincoli editoriali, continuano a mettere alla prova ogni ipotesi. Con Borgogna 2024, la scarsità definirà la campagna, ma lo sarà anche l'autenticità. I ​​vini sono plasmati dalle avversità, ma portano grazia e purezza. Quest'anno ci ricorda perché la Borgogna rimane la più umana tra le regioni vinicole pregiate. Borgogna 2024: prime impressioni

I vini Reynaud sono leggendari. Pronuncia "Rayas" a una certa gente e ne svengono. Lo stile unico di questa iconica tenuta di Châteauneuf-du-Pape – pallido, inquietantemente aromatico, dalla consistenza quasi borgognona e incredibilmente longevo – ha un seguito fervente, una cerchia di appassionati di Reynaud desiderosi di scoprire tutto ciò che Emmanuel Reynaud tocca. 
Il fascino rustico della proprietà – ben lontano dai grandiosi edifici di molte tenute famose – unito alla tendenza della famiglia a rifuggire la fama, preferendo dedicarsi alla coltivazione silenziosa delle proprie vigne, ha solo alimentato il fuoco. Nascosti nella parte settentrionale di Châteauneuf-du-Pape, Ch. Rayas e i suoi proprietari sono sfuggenti, il che li rende ancora più ricercati. 
Non mancano gli elogi per questi vini rari e speciali, il cui fascino, dato l'approccio di Reynaud basato sul minimo intervento, sfiora il mondo del vino pregiato e naturale. William Kelley è un fedele sostenitore ed è uno dei tanti a sottolineare l'eccellente performance della proprietà nelle "off-millesimate", dove il profilo distintivo della proprietà traspare, al di là dell'annata e della regione, rivelando il loro "profumo accattivante, le texture sensuali e l'eterna giovinezza". Robert Parker ha descritto il Rayas del 1990 come "uno dei migliori vini rossi giovani che abbia mai assaggiato". Per Nicolas Grainacher (Vinous), "La sostanza, la finezza e l'intensità racchiuse in questi vini rendono difficile non innamorarsene". Neal Martin (Vinous) forse lo ha espresso in modo più conciso: "Dio ha inventato il vino per bere vini come questo". 
La storia dell'impero Reynaud 
Nel 1880, Albert Reynaud, notaio di Avignone, perse l'udito a soli 45 anni. Non più in grado di esercitare la professione di avvocato, acquistò una tenuta a Châteauneuf-du-Pape, in una zona chiamata Rayas, dove trascorse i suoi giorni coltivando viti, albicocche e ulivi. Nel 1910, suo figlio Louis Reynaud assunse la gestione della tenuta. Louis aveva studiato agraria ad Angers ed era particolarmente interessato alla viticoltura. Sradicò alberi per piantare nuovi vigneti e imbottigliò il primo vino della proprietà nel 1920, usando il nome "Rayas", il nome della foresta presente sul loro appezzamento di terreno. Fu l'inizio del Rayas come lo conosciamo oggi. 
Louis aggiunse notoriamente la dicitura "Premier Grand Cru" alle etichette del Rayas, una classificazione autoproclamata del vino, sfidando notoriamente le regole della denominazione (introdotte nel 1936). Conquistando la reputazione e le vendite della proprietà, iniziò a espandere l'attività. Tra il 1935 e il 1938 acquistò Ch. des Tours a Vacqueyras, affidando al figlio Bertrand la proprietà più ampia di 58 ettari a nord-est di Châteauneuf-du-Pape, non lontano dalla città di Orange. Più o meno nello stesso periodo, costruì una nuova cantina e una nuova cantina a Rayas, portando gli edifici entro i confini della denominazione. Dopo la Seconda Guerra Mondiale, nel 1945, Louis acquistò Ch. de Fonsalette, una tenuta più a nord di Orange, a Lagarde-Paréol, e con essa l'intera gamma di proprietà Reynaud era già disponibile. 
Quando Louis morì nel 1978, i vini Reynaud erano tra i più famosi del Rodano. Dopo la sua morte, il figlio minore Jacques rilevò Rayas e Fonsalette, mentre Bertrand continuò a gestire Ch. des Tours. Con il cambio di proprietà a Rayas e Fonsalette, la qualità diminuì leggermente, ma presto Jacques iniziò a produrre vini all'altezza del nome Reynaud. 
Le vecchie vigne di Rayas, piantate su terreni sabbiosi, esposte a nord/nord-est, circondate da una pineta, producono vini di eccezionale eleganza e finezza aromatica, vini dal profumo ammaliante, dal colore pallido e dalla delicatezza quasi da Pinot, ma con una persistenza e una longevità fenomenali. 
Jacques era noto per la sua eccentricità. Recluso, felice tra le vigne e mai incline ad accogliere visitatori, si diceva che a volte si nascondesse in un fosso per evitare giornalisti o altri addetti ai lavori. La sua avversione per la ribalta non fece che accrescere il fascino dei vini. Morì piuttosto improvvisamente nel 1997, mentre faceva shopping di scarpe a Courthézon. Non avendo figli, suo nipote Emmanuel, figlio di Bertrand, che fino a quel momento aveva gestito Ch. des Tours dal 1989, ereditò sia Rayas che Fonsalette, prendendo le redini di tutte e tre le proprietà. 
La transizione tra Jacques ed Emmanuel non fu graduale, poiché Emmanuel ristrutturò la tenuta e ripiantò parti del sito, ma all'inizio degli anni 2000 la qualità era di nuovo all'altezza del nome Reynaud. Lo stile è cambiato tra le generazioni e, mentre i vini di Jacques erano più strutturati e solidi, Emmanuel predilige espressioni più sensuali e profumate. Negli ultimi due decenni, poco è cambiato nelle proprietà Reynaud: lo status mitico dei vini si è confermato solo con ogni nuova uscita. La nuova generazione, i figli di Emmanuel, Louis Damien e Benoît, è già coinvolta, pronta a continuare l'eredità di famiglia. La filosofia Reynaud 
L'approccio di Reynaud è vecchio stile: qui regna la tradizione. La monocoltura moderna non è il metodo – con varie colture in tutto il tenute e biodiversità alimentata da ampie fasce boschive. Le viti – tutte ad alberello, molte con un'età significativa – sono coltivate esattamente come sono sempre state, biologicamente con input minimi, arate a cavallo. 
L'uva è tutta raccolta a mano, i grappoli interi fermentano con lieviti indigeni in vasche di cemento. Da quando Emmanuel ha preso in mano la situazione, le parcelle sono state vinificate separatamente. Le macerazioni sono delicate, generalmente inferiori alle due settimane con un singolo rimontaggio al giorno. L'invecchiamento avviene in grandi botti di rovere vecchio, senza l'utilizzo di legno nuovo in nessuna delle proprietà – anzi, il demi-muid o foudre più giovane della tenuta potrebbe avere ben 30 anni. Le aggiunte di solforosa sono minime, con solo una piccola quantità durante la fermentazione e un'aggiunta finale all'imbottigliamento, con i vini imbottigliati senza chiarifica e senza filtrazione. Il metodo è la massima semplicità, incentrato sull'espressione di ogni sito – e i risultati parlano da soli. Le cantine sono rustici edifici agricoli, che offrono solo i requisiti di base, senza l'impiego di tecnologie moderne e, visti i vini prodotti, non necessarie. 
Il Grenache è il cuore di tutti i vini Reynaud: l'uva che prospera nel loro terroir ed è la magia del Rayas. Oltre al Rayas, il Cinsault viene utilizzato per conferire eleganza e morbidezza, mentre il Syrah è stato a lungo evitato, utilizzato solo a Ch. de Fonsalette. Louis Reynaud credeva che la varietà fosse originaria del Rodano settentrionale e, a parte la piccola porzione che arrivava nelle Côtes du Rhône, il resto del Syrah veniva venduto in grandi quantità sotto il suo regno (spesso ai ristoranti locali, che lo usavano nelle loro salse). La cuvée Côtes du Rhône Syrah fu introdotta solo sotto la guida di Jacques Reynaud, inizialmente venduta ai ristoranti che ne avevano apprezzato la qualità nelle loro salse. Non c'è Mourvèdre in nessuna delle tenute, con Emmanuel Reynaud che ritiene che i loro terreni siano troppo asciutti per l'uva. I vini e le tenute Reynaud 
La famiglia Reynaud comprende tre tenute distinte: Rayas, Fonsalette e Ch. des Tours, sebbene Fonsalette non abbia una propria cantina. 
Ch. Rayas 
Rayas è la tenuta originale dei Reynaud, acquistata nel 1880, e prende il nome dal clima. Nella parte settentrionale di Châteauneuf-du-Pape si trovano i 12 ettari di vigneti, circondati da 11 ettari di foresta. Dimenticate i tipici galets roulés o pudding stones della regione, noti per la loro capacità di trattenere il calore: Rayas sorge su terreni rossi, ricchi di ferro e sabbiosi, su terreni argillosi più ricchi. I terreni sono poveri e le viti ad alberello sono piantate a bassa densità, con appena 2.500 ceppi per ettaro, con una resa di appena 10-20 hl/ha. Negli anni '80 sono stati effettuati significativi reimpianti, il che significa che le viti hanno ora un'età media di 40 anni, sebbene vi siano ancora alcuni esemplari sopravvissuti dagli anni '40. 
L'esposizione a nord del sito si combina con l'influenza delle aree boschive, offrendo ombra e umidità, prolungando la stagione vegetativa e preservando la freschezza dei vini. I Reynaud sono tra gli ultimi a vendemmiare, spesso solo a ottobre/novembre, fino a due mesi dopo i loro vicini. I vini che ne derivano, tuttavia, non sono caratterizzati da una maturazione intensa, ma da eleganza e finezza. 
Mentre Châteauneuf consente 13 varietà rosse, a Rayas troverete solo Grenache Noir, con due ettari dedicati alle uve bianche: Grenache Blanc e Clairette. I vigneti di Grenache possono essere suddivisi in tre sezioni: Le Levant, Le Coeur e Le Couchant, ciascuna delle quali prende il nome dalla sua esposizione al sole, rispettivamente all'alba, al culmine e al tramonto. Scrivendo per The World of Fine Wine, William Kelley descrive così le tre componenti del vigneto: "Le Levant è il più floreale ed etereo, e contribuisce alla spina dorsale del vino; Le Coeur è il più completo, e contribuisce allo scheletro del Rayas; e Le Couchant, con i suoi toni fruttati più ricchi e simili a una composta, apporta la parte grassa". 
Tutta la raccolta avviene a mano. Il Grenache viene mantenuto sui raspi, i grappoli interi vengono pigiati prima di una delicata macerazione per un massimo di due settimane (un rimontaggio al giorno) e della fermentazione con lieviti indigeni. Il vino viene pressato e invecchiato in vecchie botti di rovere per poco meno di due anni.
La delicatezza e la finezza del vino che ne deriva ricordano la Borgogna più pregiata. Di colore pallido, il Rayas è profondamente aromatico, con incantevoli note floreali e una consistenza eterea e setosa che bilancia l'intensità terrosa e sapida del vino. Ogni anno vengono prodotte tra le 1.200 e le 1.500 casse del fiore all'occhiello Châteauneuf-du-Pape. I vini invecchiano magnificamente e lo stesso Emmanuel consiglia di attendere 20-25 anni prima di aprire una bottiglia di Rayas per apprezzarne appieno l'evoluzione. 
Le uve bianche sono piantate in tre parcelle a Le Levant, che comprendono due ettari. Il Grenache Blanc è stato piantato negli anni '40, '50 e '95, mentre il Clairette è stato piantato nel 1986. Fermentato in vecchi foudre (da 80 a 100 anni), acquistati di seconda mano da Louis Reynaud (nonno di Emmanuel), il Rayas Blanc è un blend 50:50 di Grenache Blanc e Clairette, invecchiato in vecchie botti di rovere per circa 11 mesi. Il vino è prodotto in volumi estremamente limitati, con solo circa 400 casse prodotte per ogni annata. Ricco ma equilibrato, questo raro bianco è immensamente profumato con note di mandorla e fiori bianchi, intensamente minerale e strutturato, e può invecchiare per almeno un decennio. 
Il Pignan è talvolta considerato un "secondo vino" a Rayas, ma in realtà proviene da un sito specifico della tenuta, un unico appezzamento di due ettari circondato da pini sul confine settentrionale della proprietà con terreni meno sabbiosi. Anche il Grenache in purezza, prodotto esattamente allo stesso modo a Rayas, offre un'espressione più immediata e accessibile dello stile Rayas, pur mantenendo profumi, purezza e struttura simili, ed è comunque in grado di invecchiare a lungo. Può, a volte, e soprattutto nelle annate più fresche, rivaleggiare con il suo fratello maggiore, Rayas. Ogni anno vengono prodotte circa 650 casse. 
I vini Rayas vengono tutti commercializzati solo al momento del loro ingresso nella finestra di consumo, mentre i rossi spesso escono dalla tenuta solo oltre un decennio dopo la vendemmia. 
Ch. de Fonsalette 
L'"ultima" aggiunta alla galassia Reynaud, Ch. de Fonsalette fu acquistata da Louis Reynaud nel 1945. La proprietà è ampia, con una superficie totale di 120 ettari, ma con 12 ettari di vigneti tra boschi, terreni agricoli e uliveti, a nord di Orange, a Lagarde-Paréol. Oggi rientra in gran parte nella denominazione Côtes du Rhône Villages Massif d'Uchaux (istituita nel 2005), tuttavia i vini sono tutti etichettati come Côtes du Rhône. Più a nord, il microclima è più fresco rispetto a Rayas e, stilisticamente, i vini sono più sobri di quelli di Ch. des Tours, ad esempio, ma non così eterei come quelli di Rayas. 
I terreni qui sono molto diversi da quelli di Rayas, con ghiaia, sabbia e puddinga rossa. I vigneti sono coltivati ​​a Grenache, Cinsault e Syrah per i rossi, e a Grenache Blanc, Clairette e Marsanne per i bianchi. Le viti sono generalmente vecchie, con la più vecchia piantata nel 1929. 
La filosofia in vigna e in cantina è esattamente la stessa di Rayas e, poiché la proprietà non dispone di una cantina propria, anche i vini vengono prodotti a Rayas. I rossi sono fermentati a grappolo intero, con una macerazione massima di due settimane e un rimontaggio al giorno. I vini vengono affinati in una combinazione di vasche smaltate e grandi botti di rovere vecchio, per poi essere imbottigliati circa un anno dopo. 
La gamma di Ch. de Fonsalette comprende tre vini. Il Côtes du Rhône Rouge è un blend di 50% Grenache, 35% Cinsault e 15% Syrah, la cui elevata percentuale di Cinsault conferisce al vino una particolare intensità e finezza aromatica: un vino che sussurra e cattura. Esiste un secondo rosso, un Côtes du Rhône Syrah, 100% Syrah, un vino strutturato, dai profumi fruttati scuri, che offre una potenza contenuta e una profondità discreta. Sotto la direzione di Louis Reynaud, questo vino veniva venduto sfuso, imbottigliato solo per la prima volta sotto la direzione di Jacques Reynaud (a partire dal 1978) e venduto localmente, principalmente ai ristoranti, prima di essere offerto più ampiamente sotto la direzione di Emmanuel. Il Côtes du Rhône Blanc è un blend di 80% Grenache Blanc, 10% Clairette e 10% Marsanne, che produce un bianco strutturato e complesso, con note di frutta a nocciolo ed erbe aromatiche e un retrogusto salino. 
La Pialade 
Questo vino rappresenta una piccola anomalia nella gamma Reynaud. Prodotto solo in alcune annate, La Pialade Côtes du Rhône è vinificato e invecchiato a Rayas, con parcelle declassate provenienti da Rayas o Ch. de Fonsalette. L'assemblaggio è tipicamente composto da 85% Grenache, 15% Cinsault e 5% Syrah. Prodotto in piccole quantità, e ancora più raro dato che non viene prodotto ogni anno, è spesso descritto come un "Rayas quotidiano" – più aperto nello stile, ma può eguagliare il Rayas per sottigliezza e delicatezza, anche se non ha la stessa profondità. 
Ch. des Tours 
Acquistato da Louis Reynaud alla fine degli anni '30, Ch. Château des Tours è la tenuta di origine di Emmanuel Reynaud, che ne ha preso in carico la gestione dal padre Bertrand nel 1989. Affidata a Bertrand fin dall'inizio e mai gestita da Jacques Reynaud, la tenuta si è sempre distinta da Château Rayas e Château de Fonsalette, sebbene tutti e tre siano sotto la guida di Emmanuel dal 1997. I Thienpont regnano sulla Rive Droite di Bordeaux. A Vieux Château Certan, Alexandre Thienpont – quasi sempre vestito con il suo Barbour – comanda, producendo Pomerol di immacolata genealogia, come la sua famiglia fa ormai da oltre un secolo. Poco distante, il cugino Jacques Thienpont tiene corte a Le Pin, il primo indirizzo cult di Pomerol. Nicolas Thienpont è un altro cugino il cui dominio si estende da Saint-Emilion – da Pavie Macquin e Larcis Ducasse fino a diverse tenute nella Côte des Francs. E la dinastia continua a crescere, mentre ogni ramo di questa complessa famiglia trova un nuovo angolo della regione da padroneggiare. 
 La famiglia fiamminga ha una lunga storia nel mondo del vino, commerciando vino francese (soprattutto Bordeaux) dal 1842. Georges Thienpont – nonno di Jacques, Alexandre e Nicolas) fu il primo a passare alla produzione, acquistando Ch. Troplong Mondot nel 1921, poi Vieux Château Certan nel 1924. Tuttavia, non passò molto tempo prima che arrivasse la Grande Depressione, e Georges Thienpont fu costretto a vendere Troplong Mondot nel 1934. A quanto pare, l’unico motivo per cui mantenne Vieux Château Certan fu che nessuno voleva comprarlo – con le vigne che all’epoca esercitavano scarso fascino. Fu il château stesso a Troplong Mondot, posizionato nel punto più alto della regione e con vista sul villaggio di Saint-Emilion, a permettergli di vendere la tenuta di Saint-Emilion. Il sito aveva prodotto Pomerol generico, ma Jacques iniziò a realizzare minuscoli volumi di vino dallo stile opulento, chiamandolo come il pino solitario (“le pin”) che si ergeva sulla proprietà. L’annata 1982 fu determinante, ricevendo notevoli consensi dalla critica – soprattutto da Robert Parker – e presto Le Pin divenne uno dei vini più desiderati al mondo. 
 Poco più di 30 anni dopo quel primo acquisto di vigneto, parve destino quando Jacques andò a vedere una parcella di terreno a Saint-Emilion proprio accanto a Troplong Mondot. Precedentemente conosciuta come Ch. Haut-Plantey, il potenziale del sito era chiaro a Jacques e la simmetria dei Thienpont che tornavano dove era iniziata l’eredità vinicola della loro famiglia sembrava appropriata. Acquistò la proprietà nel 2010 e mise Cyrille Thienpont (suo cugino di primo grado una volta rimosso) a capo della gestione quotidiana. In linea con il tema arboreo, chiamò l’impresa di Saint-Emilion L’If (il tasso). 
 Il primo progetto intrapreso dal team fu una mappa dettagliata dei suoli per comprendere a fondo il sito. La cantina si trova a Saint-Laurent-des-Combes, appena a est di Troplong Mondot, con cinque ettari di vigneto intorno e altri due ettari di vigne esposte a ovest vicino a Saint-Hippolyte. Le parcelle più basse sono più erose e sabbiose, ma gran parte del vigneto poggia su puro calcare e argilla. Si misero a ristrutturare il vigneto – eliminando il 5% di Cabernet Sauvignon e aumentando la quota di Cabernet Franc, con circa il 25% sull’intera proprietà oggi (qualsiasi nuovo impianto è stato fatto con una selezione massale da Pavie Macquin). 
 Nel 2013, Jacques acquistò un altro ettaro circa di vigne a Saint-Etienne-de-Lisse, proprio accanto a Ch. Puy-Blanquet. Nonostante la qualità dei suoli, Jacques era esitante a comprare una parcella così “lontana”, ben tre chilometri in linea d’aria – o circa 10 minuti di auto. Estirparono le viti e reimpiantarono questa parcella aggiuntiva, raccogliendo i primi frutti nel 2018. Nonostante la sua giovane età, l’uva della parcella è entrata nel blend finale di ogni annata di L’If dal 2020 (“Ne è valsa la pena del viaggio,” scherza Cyrille). Anche con il significativo reimpianto e questa nuova parcella, l’età media delle vigne dell’azienda è di circa 40 anni – con le più vecchie oltre i 60 anni. 
 I lavori per una nuova cantina sono terminati appena in tempo per la vendemmia 2023, consentendo maggiore precisione e flessibilità – con più spazio di manovra (e 16 tini in cemento per i loro otto ettari di vigne). Ci si potrebbe aspettare un edificio appariscente, magari firmato da un architetto famoso – ma non è nello stile dei Thienpont. La discrezione è tutto per questa famiglia – e la cantina è una replica quasi esatta di ciò che c’era prima, semplicemente con più spazio all’interno, progettata per una funzionalità semplice. In un angolo si trova un serbatoio in acciaio inox altrimenti anonimo – il primo che Jacques acquistò per Le Pin nel 1979. Era forse inevitabile che L’If stesse all’ombra di Le Pin. Ma ora, 15 anni dopo l’acquisto della tenuta da parte di Jacques Thienpont, con una nuova cantina e il significativo lavoro nei vigneti completato, L’If sta costruendo una propria reputazione. 
 Sebbene lo stesso team sia in gran parte coinvolto in entrambe le tenute, L’If è un sito e un vino totalmente diversi. I suoli freschi hanno una migliore capacità di ritenzione idrica e il germogliamento avviene circa 10 giorni più tardi che a Le Pin, con le sue ghiaie calde e ben drenanti – un divario che spesso si amplia con l’avanzare della stagione vegetativa, il che significa che qui la vendemmia è significativamente più tardiva. Diana Berrouet Garcia – che funge da Direttrice Generale per i Domaines Jacques Thienpont, inclusi sia Le Pin che L’If – osserva come a L’If il terroir sembri parlare più forte dell’annata e riesca ad adattarsi meglio a condizioni più impegnative, mentre a Le Pin le viti possono faticare – soprattutto negli anni caldi e siccitosi. Dove Le Pin è rotondo, suadente ed esotico, L’If è lineare, teso e minerale; uno sensuale e sferico, l’altro appena dal lato giusto del severo, con una qualità cristallina. Anche negli ultimi anni, è sorprendente come il vino stia evolvendo – tallonando Le Pin in termini di qualità. Riassaggiando il 2019, è sorprendentemente accessibile, con un naso profumato e un frutto succoso e puro che completa la tensione naturale del vino. 
 Sono ancora giorni relativamente iniziali per L’If – e il team ha investito in modo significativo, concentrandosi sul modellare il vigneto e sull’assicurarsi di avere in cantina gli strumenti per tradurre il lavoro in vigna. Per ora, oltre metà del vigneto viene utilizzata per il second vin, Les Collines d’If – qualcosa che cambierà col tempo, man mano che continuano a reimpiantare parcelle. A quanto pare, i tassi crescono incredibilmente lentamente – ma sono anche tra gli alberi più longevi (il Perthshire in Scozia ospita il tasso di Fortingall, che si pensa abbia 2.000–3.000 anni ed è uno degli alberi più antichi d’Europa). La famiglia Theinpont si sta appena insediando a L’If, ma mentre mette radici, il potenziale è chiaro.

Wine journalists are jaded folk – spoilt by too many impressive tastings, lunches and dinners. But when Champagne Louis Roederer invites you to an event celebrating 50 years of Cristal Rosé, few refuse. Cristal Rosé is, as Chef de Cave Jean-Baptiste Lécaillon told us, still “a hidden gem” and the rarest cuvée Roederer produces. It’s not often shown, and even visitors to the estate don’t get to taste the wine.  While Cristal – Champagne’s first prestige cuvée – was created in 1876, its pink sibling was born almost a century later. It was Jean-Claude Rouzaud, current CEO Frédéric Rouzaud’s father, who created the wine, aged 32. He had been managing the company’s vineyards and took over the winemaking in 1974.  “His great vision was to put the vines back in the centre of the creative process,” explains seventh-generation Frédéric Rouzaud. For Roederer, site and farming have long been key to what they do (long operating both as a grower and négociant), but Jean-Claude’s move from vineyard to cellar pushed this further, allowing for – as Lécaillon put it – “a creative and constant dialogue between the vineyard and cellar”.  The same year that he started leading the cellar team, Jean-Claude decided to make a rosé version of Cristal. Almost all rosé Champagne was – and is – made by blending a still red wine in with the base white wines. Jean-Claude, however, wanted to use co-fermentation to keep the wine in the style of Cristal, a decision that Lécaillon says was key, making the wine more ethereal, precise and “Pinot-y”, with a juicier texture.  The wine was built around parcels of Pinot Noir in the Bonottes area of Aÿ, which Lécaillon describes as the “Musigny” of Champagne. In his mind, the Pinot Noir from these plots offers a “special tannic complexity” – tannins that are more saline, integrated and aromatic; the Pinot Noir here is, he says, “effortlessly perfect” and the heart of Cristal Rosé. These three vineyards (Bonotte Pierre Robert, Gargeotte and Côte du Moulin) had been used for Cristal since the 1870s, and more recently became the source for Pinot Noir material for their vine nursery – with 150 different massal selections taken from the plots – long recognised for their quality.  The three original Pinot Noir plots are now being replanted and – while the vines mature – another site in Aÿ, La Villers, a mid-slope parcel at higher altitude, is currently being used in the blend (from the 2018 vintage). It is set to form part of the wine long-term, its cooler position thought to be of particular benefit with climate change. Complementing the 55% Pinot Noir is Chardonnay from two sites – Pierre Vaudon in Avize (bringing more power and richness) and Montmartin in Le Mesnil (lending length, salinity and a chalky minerality).  The first two vintages (1974 and 1975) were more experimental, as Jean-Claude figured the wine and style out, but the third attempt in 1976 produced something special – with sufficient phenolic ripeness to produce a rosé truly worthy of the Cristal name. Even now, 48 years later, that wine is singing – combining savoury rye and brown miso notes with pear tarte tatin and an earthy power. While it had a flurry of three vintages at the start of its life, just 25 vintages of Cristal Rosé have been produced to date. The wine needs a year where not only the quality of fruit is outstanding, but the Pinot Noir and Chardonnay ripen at the same time – allowing for their co-fermentation – something that is relatively rare.  Only made with vines that are minimum 20 years old, yields are low for Champagne (at 35-40hl/ha).  The Pinot Noir is destemmed, crushed and left to macerate. Earlier vintages saw this happen over two to four days and at warmer temperatures, but the winemaking has evolved over the years, with a pivotal shift from the 2008 vintage. From 2008. Lécaillon started chilling the Pinot Noir down to -4̊C overnight, prior to de-stemming and crushing the fruit – something which he believes avoids extracting any green character.   The must is then left to cold-soak for between seven and 10 days, with no punch-downs or pump-overs – a true “infusion” (to avoid any microbial spoilage, they cover it with dry ice for the first four days, then use nitrogen). The must isn’t chilled during this time, and the temperature gradually rises to a maximum 8-9̊C. Moving to a cold-soak was inspired by an accident. In the warm 1989 vintage, Lécaillon’s first year at Roederer, they didn’t have a cooling system in the cellar, and the Pinot Noir was left in a reefer – undergoing an inadvertent cold-soak. The resulting wine was so good that it inspired Lécaillon.  Just as the fermentation starts, the must is racked off and blended with the Chardonnay which has been whole-bunch pressed pneumatically (Lécaillon argues the grape’s reductive nature needs a little skin contact to avoid being overly thiol-driven and Sauvignon-esque). Around 20% of the base wine sees oak. After secondary fermentation (under crown cap, something with Lécaillon argues helps preserve precision and terroir versus cork), the wine spends eight years on its lees, developing immense complexity.  “Since 1974, it has been our laboratory of farming, of winemaking,” says Jean-Baptise Lécaillon of the wine. Cristal Rosé was in fact the House’s first cuvée to be farmed biodynamically, and the first biodynamic prestige cuvée in Champagne, from the 2007 vintage. He explains that he is looking for phenolic ripeness, integrated with the salinity of Champagne, seamlessly combining the tannins and acidity; a wine complemented – but not dominated – by bubbles of salt.  The wine is undeniably remarkable. Tasting through a range of vintages from 1976 to the present day, all in magnum (find full tasting notes below), the vibrancy, purity and moreish, saline, minerality of these wines left me speechless. Their ability to age is effortless, with the 1989, for example, still tasting incredibly youthful. Talking about Cristal Rosé’s evolution, Lécaillon explains that he finds the first decade is all about fruit, but then the wines return to their site and soil, becoming wines of place. Conversation strays into weather Champagne today, with global warming, can still make wines that will age as beautifully.  “Champagne is not just about acid; it’s about freshness,” says Lécaillon. He points to the 1976 and 1989 vintages – both incredibly hot years, with the fruit picked at almost 12% potential alcohol and modest acidity levels – and yet the wines are full of freshness. Back then, producers were on holiday throughout August, and the fruit was picked in September (1st for the 1976 and from 5th for the 1989), but with such conditions today they would have harvested in mid-August. It is perhaps, he suggests, a lesson that the region is overreacting to warm conditions – with too many producers chasing acidity, rather than phenolic ripeness. For the skins are, he argues, the key to this sense of freshness, the dry extract that allows the wine to age.   The House has introduced a Cristal Rosé Vinothèque, or late release. To date, there have only been a handful of vintages – the 1995, 1996, 1999 and 2002. The maturation for this wine isn’t set and varies according to the vintage, normally spending longer on its lees, both sur latte (lying down) and sur pointe (upside down), the idea being to build umami complexity in the wine. The sur pointe ageing is unusual, something Lécaillon favours for its more reductive nature, keeping the wine aromatically fresh (the wine is still riddled four times a year in the same position, to agitate the lees and absorb any oxygen). Generally these releases are offered around 15-17 years after the vintage. The dosage is often lower than the original bottling, with the longer lees ageing lending balance without a higher sugar addition. Tasting the 2002 Vinothèque (a wine that feels infantile), Lécaillon says: “Is it better? I don’t know, but it’s another expression.”  I’ve written before about Lécaillon’s tireless approach to wine-growing – constantly looking to learn and evolve, and the week after our dive into Cristal Rosé he was flying to Japan to visit the Fukuoka farm (founded by Masanobu Fukuoka, the author of The One-Straw Revolution and a pioneer of permaculture or “natural” farming). His fight against the “banalisation” of taste continues, as he looks for ever-more ways to enrich the world of Louis Roederer. If the next 50 years of Cristal Rosé is nearly as good as the first, we’ve all got a lot to look forward to.  Five decades of Cristal Rosé: the tasting  2013 Cristal Rosé: A beautiful, late-ripening growing season that provided the last October harvest to date. A wine Chef de Cave Jean-Baptise Lécaillon describes as having “eternal youth” – something that is hard to disagree with after tasting the wine. This is a baby, the nose enticing with delicate floral aromas and bright citrus, not giving too much away. The palate is long and saline, tightly wound, but bursting with bright fruit on the mouthwatering finish, combining lush redcurrant and lemon. Gorgeous. Dosage 7g/l, tasted from magnum.  2012 Cristal Rosé: Lécaillon notes how 2012 was seen as an “easy” vintage on release, riper and richer with a little more Pinot Noir in the blend, but is now entering its second life, with reductive, chalky notes that bring it back to its soils. The wine is beautifully earthy and drastically different to the 2013, with power and intensity. It’s very savoury, a wine that is all about breadth and structure, with wild strawberry and raspberry notes mingling alongside a sea-spray freshness, driving on to a long, mineral finish. Dosage 8g/l, tasted from magnum.  2008 Cristal Rosé: This was the first fully organic vintage for the entire Roederer estate, and marks the start of a new era for Cristal Rosé with its cool “infusion” technique for the Pinot Noir. Paired with the 1995 vintage, the two wines are windows into two completely different worlds of Cristal. With the copper tone of a sunset, it’s a wine of muscle. It’s almost haughty, with length, power and elegance – showing off its flawless structure, with a zesty citrus drive complementing its austerity. The finish is long and saline. It will be incredible to taste this in 20 years’ time. Dosage 8g/l, tasted from magnum.  1995 Cristal Rosé: This vintage was one of the last to see the Pinot Noir soaked at 20-24̊C. It is, in Lécaillon’s mind, the “same terroir, but a different story” versus more modern iterations of the wine. The wine glows golden in the glass – the colour of the sun just as it breaks the horizon. It’s incredibly open, the aromatics constantly shifting to reveal new layers. There’s a touch of mushroom or truffle, but with layers of rich, almost tropical, fruit behind – think peach, mango, peach tea and the bite of pomegranate, with caramel sweetness, but still a saline twist to the finish. A wine of weight and depth. Dosage 12g/l, tasted from magnum.  1989 Cristal Rosé: This was a very warm vintage, harvested from 5th September, and the wine technically doesn’t have high acidity – yet is a wine of impressive freshness. Grilled hazelnuts edge a nose of candied orange peel and pomegranate, and a coffee note that emerges with air. There’s a liveliness to the palate here, even over three decades on, with a gorgeous freshness and creaminess to the mousse. The fruit on the palate is lush, with generous mouth-watering peach and a taut, mineral backbone. It’s amazing how young this tastes still. Dosage 12g/l, tasted from magnum.  1976 Cristal Rosé: Despite coming from another warm vintage (with a very hot, dry August – and harvested from 1st September), Jean-Baptiste Lécaillon notes the freshness on the 1976 vintage, and how it seems to have never become too evolved. It’s much more savoury than the 1976, with rye bread and brown miso sitting alongside caramelised pears, tarte tatin and a hint of Oloroso Sherry. The palate is a rush of fine bubbles, fresh and with a citrus bite but a savoury framework behind. A remarkable wine. Dosage 10g/l, tasted from magnum.  2002 Cristal Rosé Vinothèque: This was disgorged in 2019, spending 11 years on lees sur latte, and then another five sur pointe, followed by an additional four years’ post-disgorgement ageing prior to release. This wine is so tightly coiled, a wine not yet revealing everything it has to offer – although you can see the incredible structure. It’s so vibrant, with energy and a lushness as it drives toward a seemingly never-ending finish. It’s gorgeous, layered with mandarin, grapefruit pith, chalky minerality and smoked salt, lingering on the soft, saline tail of the mouthwatering finish. Lisa Perrotti-Brown MW has caused quite the stir. In her Bordeaux 2021 en primeur report, her first for her new publication The Wine Independent, she scored some wines below 80 points – and just 20% made it above the 90-point mark. She’s a woman on a mission, determined to bring honour and integrity back to wine criticism. The Master of Wine and Robert Parker protégée stepped down as Editor-in-Chief of the Wine Advocate – the leading fine wine publication – last year. She was tired of what had become a corporate life. Michelin took over in 2019 and her time was increasingly spent in meetings, doing reporting, looking at corporate responsibility as well as managing her team and making sure everything was going to plan – a plan, she emphasises, that was not set by her. Most importantly, her senior position took her further away from what she really loved doing – writing about wine. “I love to sit down with winemakers and capture that story that is not on their website, that is not in their marketing material. Something that is real and raw. There is not enough of that,” she tells me. Her view is that it’s the story that makes wine “more than just a drink” – and that’s why people spend hundreds of pounds on a bottle. This storytelling is what she’s looking to do with her new, small outfit, The Wine Independent. Importantly she’s partnered with Johan Berglund – a professional photographer (whose beautiful images we've used here) – to bring those stories to life, with a modern platform that is a world away from most other critics’ sites (often “a wall of words”, she says). As the name of the new publication suggests, Perrotti-Brown is making a stand against publications that she feels no longer put the consumer first. Her inspiration is Robert Parker’s original operation – the Wine Advocate started as a small newsletter shared with friends. “Essentially a mom-and-pop shop”, she explains, getting back to basics, with minimal staff and no fancy office with big overheads. For her, the goal is simple: to publish timely – and honest – reports, allowing readers to search for wines easily and helping them to discover something new. She doesn’t hold back voicing her concerns about the state of wine criticism today. She’s damning, believing there’s a trend not just to overscore, but that it’s a strategy to gain influence, helping critics be quoted by retailers and wineries – and therefore benefitting from “free marketing”. “When you see people coming in one or two points above everyone else and they hang on and wait until other people’s reviews have come out… I mean, come on, it’s definitely happening,” she says. The compaction of scores, however, is what really riles her. Everything sits between 95 and 99 these days, she suggests. “Nobody dares to go to 100 and nobody dares to go below 90.” Perrotti-Brown is outspoken about critics for whom the tiny number of 100-point scores they hand out is a point of pride. “There are a lot of critics who are just too chicken-s**t to give 100 points,” she says. “If you know a wine is 100 points, it takes a lot of bravery to put it out there.” Some critics – such as James Molesworth of Wine Spectator – don’t believe that a perfect wine exists, and therefore never give 100 points. “Which is ridiculous!” says Perrotti-Brown. “Why use a 100-point scale, if you are not going to use the top?” Her fear is that scores will lose all relevance and meaning. Indeed, she notes that retailers don’t even reference who gave the score they quote. “You go into a shop these days and look at the shelf-toppers and it doesn’t even say whose score it is – it just says 97 points. Every wine is 97 points!”  Critics should be fighting for consumers, she argues, rather than ingratiating themselves with wineries. “I know it is difficult, because we are sat there right in front of the winemaker, listening to their stories and I think the impetus is to really feel for that person, but you can’t. You always have to see it from the consumer’s perspective – it’s what Bob [Robert Parker] always told me. You are working for them.”  Hence, therefore, the broad range of scores that she felt was inevitable for a vintage like 2021. It was, she admits, a difficult vintage to assess in the evolution of Bordeaux. She’s adamant that she hasn’t changed the way she scores: “It just happens to be the worst vintage Bordeaux has had for a very long time,” she explains. Perrotti-Brown refers back to Robert Parker’s original benchmark for 90 points – an “outstanding” wine, a wine that is complex and age-worthy. For her – tasting very widely across the region – the majority of 2021s don’t meet those criteria, but she’s quick to emphasise that wines scored in the upper 80s are very good wines. “I think there has become some stigma over the wines scoring in the 80s and I don’t know why,” she says. Again returning to Robert Parker’s original scoring crib-sheet, these are “good to very good” wines and that is where, she feels, the bulk of Bordeaux 2021 wines fall.  Looking back at Robert Parker’s own en primeur scores in trickier vintages (2007, 2013, 1996), he too was awarding many wines eighty-something points, sometimes less. While Perrotti-Brown accepts the technological advances in viticulture and vinification mean you would rarely see Classed Growth wines receiving less than 80 points today, it only emphasises just how challenging the 2021 vintage was in Bordeaux. Of course, the vintage also produced some surprises. Despite everything that happened climate-wise, there were a number of wineries that produced outstanding wines, even by Perrotti-Brown’s assessment. “Some wines were absolute trainwrecks and there are other wines that are wow… you can tell these people worked their tails off,” she says.  The critic was certainly surprised and disappointed by other reports on the vintage, particularly given she’d worked and trained some of the people behind them. “When I am looking at other peoples’ scores [for Bordeaux 2021], 60% or more of the wines scored 90 points and above and that is astonishing to me,” she says, both confused and outraged. “Some of these wines, they are giving the same score ranges as the 2018 and the 2019s – I mean how is that possible?” Her report is a statement of intent. Lower scores may mean The Wine Independent isn’t as widely quoted by the trade, but what matters to Perrotti-Brown is whether consumers trust the publication. It’s a long-term game. “Eventually I hope consumers will look at all these other scores and say, ‘But what did The Wine Independent say?’” Perrotti-Brown took a huge risk stepping down from what is undeniably the wine world’s most influential publication – but she is confident she’s made the right choice. Her need for autonomy was the impetus for her to set up on her own, and she’s found freedom on her own terms. It is still early days for The Wine Independent and, for now, Perrotti-Brown is their only reviewer – although she confirms an additional critic will be announced in the coming weeks. Competing against more established publications with an extensive database of tasting notes and scores isn’t easy – but Perrotti-Brown has established herself as a disruptor in the field. She’s lain down the gauntlet – daring her peers to put the consumer back at the heart of what they do. Read more Editorial

What defines a fine wine? For many, it is a bottle’s ability to improve with age. A wine’s longevity is even seen, by some, as the ultimate measure of its quality. It’s true that aged wine can be some of the most memorable – capturing an essence of time that’s impossible to recreate. The ageing process can be central to a wine’s (or, for that matter, whisky’s) progression to another, unparalleled level of complexity. Yet how a wine ages remains something of a mystery to both winemakers and collectors. There is still a great deal of conjecture about how a wine will develop, why it does so, and whether it is even worth the wait. Unlike whisky, wine is much less stable on its journey into maturity. As Christian Moueix puts it, “Wine is a complex matrix of thousands of compounds suspended in a delicate equilibrium.” This equilibrium is fragile, age a potential threat and a wine’s trajectory therefore incredibly difficult to predict. There was a time when wine drinkers dismissed the New World. Today, fortunately, that’s not the case – and it’s rightfully acknowledged for producing fine wine. However, some snobbery remains. Drinkers tend – beyond a handful of the very top names – to drink New World wines much younger than their Old World counterparts. Ask any oenophile about the oldest bottle they’ve drunk, and we’d put money on it being from Europe – Bordeaux, Burgundy, the Mosel, Alsace or Douro. Of course, one element is undoubtedly availability. The traditions of drinking Bordeaux (even from modest châteaux), for example, at full maturity – 20 or 30 years down the line – is not uncommon, and these wines continue to be regularly traded among collectors. New World wines at full maturity are much more of a rarity. Many of the younger regions in the New World still haven’t had the chance to build up such an extensive back catalogue, yet the wines have everything they need to comfortably age as long as their counterparts. Burgundy maestro Jean-Marie Fourrier, who now also manages Mornington Peninsula winery Bass Phillip in Australia, is an advocate for New World wines’ ageability, with Bass Phillip’s Pinot Noirs a case in point. But he believes the reputation for a shorter drinking window is partly due to practical, economic necessity. “When you start making wine at a young winery, you need a quick turn over, a quick return on investment,” he says. Therefore, producers craft wines that can be drunk younger. It is only once a winery, or a region, is established that winemakers can afford to have a longer-term approach and deliberately make wines to age or hold back stock. In this respect, the established classical regions of Europe have hundreds of years of history to fall back on. Napa has long since proved its mettle producing wines that can age. But just what it is that allows a wine to improve with age has been a hot topic of conversation in the region for decades. Tor Kenward – of Tor Wines – recollects a conversation between himself, Robert Mondavi and another legendary Napa winemaker, André Tchelistcheff over 40 years ago. Sitting around a table, they were trying to determine the key factor that makes great wine age. Was it the winemaking? The quality or concentration of the grapes? Or was it all about harvesting at the right time? Tchelistcheff – who trained in Europe and, by this time, had been making wine in Napa for over four decades – contemplated the suggestions. High acid levels (low pH), high concentration of tannins and oxygen management were all tabled and, while he accepted all were important, for him, a great wine for ageing needed “flesh”. By this, recalls Kenward, he meant the grapes needed a certain type of ripeness – not over, not under, but perfect physiological ripeness. Forty years on and Kenward still believes Tchelistcheff was right, yet it is an aspect often forgotten in the discussion of a wine’s ability to age. Finding this perfect window of physiological ripeness can be a challenge in warmer regions, and a warming climate, and therefore remains an obstacle for much of the New World. These regions tend to be warmer than historically marginal wine-growing regions of Europe, and therefore grapes can ripen quickly, but with this fast ripening comes a risk of reaching sugar ripeness before the skins have had the necessary time to reach maturity. Christian Moueix is one of the world’s most experienced winemakers, having managed both Pétrus, Trotanoy and other top Pomerol estates, as well as Napa’s Dominus. He agrees with Tchelistcheff that picking the grapes at optimum ripeness is a hugely important factor when producing wines that can age. “If harvested too early, grapes have a smaller quantity of extractible phenolic compounds and […] may not have formed the longer chains and bonds that make them stable.” On the other hand, when overripe, “These phenolic compounds are degraded through oxidation.” For Moueix, the temperate climates in Europe are ideal for “developing and maintaining a high ratio of phenolic compounds”, whereas in many New World regions, there is a propensity for excessive heat, over-ripeness and therefore oxidative winemaking which he feels is, “likely to contribute to wines that age prematurely”. In warmer climates, Moueix believes, “extreme heat, enzymatic and physiochemical reactions degrade anthocyanins within the berry, lowering the concentration of total phenolic compounds and subsequently, the wine’s capacity to resist oxidation, leading to premature aging”. For Moueix, then, a temperate climate (whether in the New or Old World) is key to producing wines that can age. It is, he believes, the reason why Dominus ages so well. This corner of the southern Napa Valley is relatively mild, thanks to the San Pablo Bay’s cooling influence. This slows sugar accumulation and gives the berries time for the tannins to ripen. They also don’t use irrigation, putting the vines under more stress, producing small berries with high phenolic concentration. Like Moueix and Tchelistcheff, Fourrier believes picking dates and high concentration of tannins is important – but he ties this to vine age, rather than the microclimate. “As vines get older, the size of the berries gets smaller,” explains Fourrier. It is this that gives a high skin-to-juice ratio and natural concentration. For Fourrier, this natural concentration is what gives ageing potential – rather than any actions in the winery. All are in agreement that the ageing ability of red wines comes down to the quality of the berries, rich in anthocyanins (ideally then from older vines) and picked at the right time in order to extract them at their optimal level of ripeness. But these factors affect Old World producers as much as those in the New World. Paul Roberts – Master Sommelier and COO of Colgin in Napa – makes a compelling point that New World regions in the right climate regularly produce higher concentrations of tannins than the Old World’s cooler climates. In fact, they have to pay close attention to extract less tannin during the winemaking, not more, to maintain the balance in the wine for it to age. Colgin’s mountainside IX Estate vineyard on Pritchard Hill produces berries that are, on average, 30% smaller than those grown in Pauillac. Often, Roberts notes, Napa Cabernets have higher skin-to-juice ratios than the Bordeaux First Growths – and therefore much more “anti-oxidant” tannins than their Bordeaux counterparts. According to Moueix’s belief that it is the concentration of tannins and phenolics found in the skins that protects wine from oxidation and degradation, this should mean that top Napa wines have the potential to outlive Bordeaux wines at the top level. Andy Smith, winemaker at the Russian River’s DuMOL estate, makes some of the region’s top Pinot Noir and, like Colgin, has no shortage of tannins in his grapes. Compared to Burgundy, his Pinot Noir has smaller berries, “with uncommonly thick skins that create huge natural power if you choose to extract fully”. For Smith, “this leads to a potential for powerful, deep wines with high structure for aging, and high natural acidity”. Like Colgin, it is an overabundance of tannins that is more of a concern at DuMOL. “The key is balancing the extraction,” says Smith, “to take the positive and leave behind the excessive elements from the skins.” For leading Chilean winemaker Francisco Baettig (Errazuriz, Seña and Chadwick) it is an excess of tannin, and an excess of extraction in some more ambitious wines, in the New World that has tainted its reputation for producing wines with long ageing ability. “There was an obsession for creating monster wines, with lots of extraction, trying to extract as much tannin as possible,” Baettig notes, looking back 10-15 years. Many producers in Bordeaux were doing the same at the time, but the different climates – the same elements highlighted by Roberts and Moueix for leading to higher concentrations of tannin – influence the tannin and extraction. “In Chile with higher intensity and higher levels of ripeness, the extraction happens much quicker,” he explains. This resulted in over-extraction – “wines that were rough, too tannic and did not age well”. For New World producers, better tannin management is clearly key to producing wines that can age. Producers like Tor, Colgin, DuMOL and Baettig all believe gentle extraction of tannin and reducing the wines’ contact with oxygen is fundamental for ageing. In cooler, less sunny European climates, it could be argued that in the past, due to the less easily extracted tannins, producers could get a way with being a lot less precise in their tannin management. With this in mind, Baettig notes the Old World might need to learn from the New World, how best to adapt their winemaking to the effects of climate change – and, in many ways, they already are. Vignerons are already looking back at sunny vintages such as 2005 and 2010 (with high levels of extractable tannins) and questioned some producers’ apparent over-extraction of tannins, adapting accordingly in years like 2019 and ’20. The transformation of grapes into wine is magical; the secondary transformation that can take place with maturity is possibly even more extraordinary. However, a wine with so much promise can disappoint if left too long – a frail, bitter example of its former self. It is no surprise that many drinkers choose to avoid such risks and savour wines in their more muscular youth. There is a cultural change too. DuMOL’s Smith notes that the average US consumer is not particularly interested in ageing their Pinot Noir and questions whether ageing wine is an outdated notion. In a society that favours immediate gratification, modern consumers are impatient and few have cellars in their homes. And the savoury flavours that come with maturity aren’t to everyone’s tastes. “There’s a big difference between positive evolution, plateau-ing and the gradual downward slope of oxidation,” he says. “All wine ultimately wants to become vinegar!” Because of this, some winemakers are deliberately pulling back from making wines that peak at 20 years, instead looking to produce wines that will appeal in youth and peak closer to 10 years, since that’s what their customers want. Even the most tannic red wines from the more traditional regions are these days much more approachable in their youth, something that just wasn’t possible just a few years ago (as noted by Lisa Perrotti-Brown MW). Making fine wine is an art – and especially so when it comes to building a wine for the future. Choosing the perfect moment to pick in the given climate, as well as the right style and level of extraction in the winery will determine a wine’s ageability – but only if the underlying quality of fruit is sufficiently high. With better winemaking equipment, we no longer need to wait for tannins to soften to enjoy even the best Bordeaux or Napa. Does that mean you can’t age it for a half-century? Or that it won’t improve over that period? Absolutely not. How to make wine for the ages

Anyone who’s had the misfortune of tasting a de-alcoholised version knows that alcohol is key to wine. Take it away and it leaves a gaping void in the glass – stripping the liquid of body and flavour. Those attempting to craft alcohol-free alternatives look to make up for its absence with sugar or flavourings, but the results don’t come close to the real thing. And of course the very fermentation process is key to complexity – there’s a reason we aren’t collecting single-site examples of even the finest raw grape juice. But alcohol’s a hot topic – and not just because of any health considerations. Trends and shifts in climate have seen the average ABV (alcohol by volume) inch upwards. Indeed, a report last year from Liv-ex suggested the average alcohol level has leapt almost an entire 1% for both California and Bordeaux since the 1990s. While once 14 or 14.5% might have been the purview only of the New World, it’s rapidly become the norm in Bordeaux. Rising temperatures are one element, as indeed is technology and know-how – harvesting cleaner, riper fruit and more efficient winemaking. Then, of course, there’s the fashion factor – the pendulum swing, arguably driven by Robert Parker, for bold, ripe, sweet and inevitably high-alcohol wines. “He loved that weight, that impression of sweetness,” Paul Hobbs tells me. “We jumped on the wagon – but we didn’t know what we were jumping on.” A cult name, Hobbs crafts some of Napa’s highest-scoring and most expensive Cabernets; indeed, Parker named him his Wine Personality of the Year twice. Born in New York State, the Davis-trained winemaker founded his namesake estate in 1991. He’d started his career at Robert Mondavi (arriving in 1977), working at Opus One and Simi before setting up on his own, with a flurry of personal projects and list of consultancies that has grown ever since. He openly admits that he got caught up in “Parkerisation”, crafting big, bold wines – no great surprise given the scores, and sales, that followed for those who did. But he’s been pulling back in recent years, and has never quite fit the cookie-cutout for the cult Cabernet crew. Ever since he first started making his own wines in the 1990s, he’s championed native yeasts (relatively radical at the time), and no fining or filtering. While he embraces oak, he’s always been aware that it’s the quality of fruit in the vineyard, preserved by operating a flawlessly clean winery, that is key to producing fine wine. Make no mistake that Hobbs makes rich, plush wines – and the alcohol levels certainly don’t sit at 12.5% – but for him there is much more to alcohol than one number. “I didn’t give much thought to it in the beginning,” Hobbs says. “And there wasn’t really much reason to.” When he was at Mondavi, the wines tended to sit at 13.5% – but then they started to go up. “There was a time when 16% was normal,” he confesses with some amazement. “Some of these wines were difficult. They didn’t age. They would get tired,” Hobbs says. “But all that took us time to learn – no one had ever been in that domain before.” He notes that there was “a backlash” in the British press against wines that didn’t please the palates of “the Hugh Johnsons, the Jancis Robinsons and Anthony Roses”; a response he clearly feels was a little unjust. “It’s far more complex than a simple number,” he says. “15 isn’t always 15.” And it’s true – alcohol doesn’t feel the same. How many times have you looked at the label of a wine and been surprised – either for better or worse? Alcohol is one element working in tandem with a wine’s body, concentration and flavour complexity – and there’s no easy figure to tell you how it integrates with these other components. But there’s another key reason why the same alcohol level can seem so different: the nature of the alcohol. The main alcohol in wine is ethanol (a molecule with two carbons), however fermentation produces other types of alcohols – specifically superior or higher alcohols. Often known as fusel oils – from a German term “Fusel” which is colloquial for low-quality booze – these alcohols have three to six carbons in their molecular form and are significantly more viscous (hence “oils”).  While ethanol is pure and relatively neutral, these heavier superior alcohols can – in low volumes – bring flavour, texture and interest. “It’s what makes something more than vodka,” Hobbs explains. Hexanols can add herbaceous aromas; 2-phenylethanol gives a rose-like scent. But they’re also associated with headaches and hangovers. In the world of spirits, these fusel oils are what runs out of the still last – forming the “tails” of distillation, which are used to varying degrees depending on the type of spirit being produced. “Alcohol is alcohol? Well, yes and no,” says Hobbs. It's high numbers of these superior alcohols, he believes, that can make one 15% wine feel clumsy and lumbering, while another – with lower fusel oil levels – can carry the same ABV with ease. The production of these superior alcohols depends on many things – yeast strain, temperature, oxygen availability and acidity. In general, red grapes produce more of the compounds (which is partly why spirits tend to use white grapes as their base). But Hobbs thinks it ultimately comes back to the vineyard: he’s started noticing that if berries are heat-damaged, they produce more superior alcohols. “Our goal is to keep these superior alcohols as low as possible – and that’s just about harvesting not sun-damaged fruit,” Hobbs explains. Under the warmth of the Californian sun, it’s common to get sun damage early in the season, but shrivelled berries tend to fall off nascent clusters of their own accord; more concerning is fruit that can be damaged internally and then won’t go through véraison, which needs to be sorted out. Late in the season, Hobbs and his team look to walk through the vines and cut off any “shoulders” (the side cluster at the very top of a bunch of grapes) that have been exposed. With global warming, this is an increasing threat – and an element of climate change that is only now being considered. If grapes are sunburnt or shrivelled, they tend to struggle with fermentation, and the stressed yeasts produce more of the superior alcohols. “The wine is going to be fat and heavy on the palate,” says Hobbs. “You can lower the alcohol by adding water – but it doesn’t change its personality.” If the fruit is in good shape – he says – you simply don’t have that issue, even at 15.5%. And those wines, provided they’ve got the requisite balance, age amazingly. Rajat Parr (star sommelier turned winemaker) and Jasmine Hirsch (of Hirsch Vineyards) founded In Pursuit of Balance (IPOB) in 2011 to champion lighter wines that they felt “weren’t chasing after ratings from wine critics”. These “new California” wines (Jon Bonné published his book The New California Wine in 2013) tended to have lower alcohols and less oak – following the swing of the pendulum back the other way; an anti-Parker effort in many ways. I attended the last London IPOB tasting in 2016, catching the crest of the wave as the movement called it quits – feeling they’d achieved their aim of building the reputation of an alternative California. Paul Hobbs arguably sits at the opposite end of the California wine spectrum (“Should all wines be 13.5%?” he says to me, “Why is that the magic number?”) – but philosophically, they’re surprisingly aligned. It’s not about the number, it’s about the balance – and Hobbs, like any posterchild of the new California movement, will tell you that the secret lies in the vineyard. The challenge is to farm and pick the perfect fruit – to find the sweet spot between flavour, sugar and phenolic ripeness. As Hobbs says to me, “That’s the dance between man and nature.” Forget the maths; this is farming. A note on the numbers Strictly speaking, the alcohol level on any label isn’t exactly what’s in the bottle. For wines sold in the EU and UK (both those made here and imported), producers are given 0.5% leeway – meaning that what’s on the bottle is generally reflective of its contents. In the US and Australia, however, wines sold domestically can differ by as much as 1.5% from the label – meaning a wine labelled as 14% could be anything from 12.5 to 15.5%.
