A cult address for many Italian fine wine lovers, Cerbaiona is one of Montalcino’s top estates. The site has long been identified as special, but it was Diego Molinari who established its reputation. Today, Matthew Fioretti is at the helm, bringing the estate into the modern era.

Cerbaiona is widely recognised as one of the top estates in Montalcino, but has been a little elusive of late. Under Diego Molinari’s stewardship, the winery achieved cult status, but the property was sold in 2015, and hasn’t released any Brunello since. The new owner Matthew Fioretti has added to the radio silence, requesting critics not to score the wines, believing “a softer and more inquisitive form of journalism and criticism might be better than the score bazooka”.  Production is so small that Fioretti doesn’t need to rely on critics to promote the wines, but Cerbaiona has been noticeably absent from recent rave reports on the 2016 vintage from the likes of the Wine Advocate and Vinous. Our woman on the ground in Italy, Annalisa Florian, is one of the few people to have tasted the about-to-be-released 2016 Brunello, the first under Fioretti. Fioretti and his team have overhauled the estate. It’s a brave decision to make such a clear break from the past with a winery of such repute, and testament to their commitment to quality. Due to massive restructuring, Fioretti decided to declassify all the wine made in 2014 and 2015 to Rosso di Montalcino. As he points out, “Several aspects of this wine had formed before taking over the business.” Despite the obvious success of the 2015 vintage, Fioretti commendably didn’t want to rest on Cerbaiona’s reputation. All the vineyards are located on the Cerbaiona hill, just northeast of the town of Montalcino, and neighbouring another Brunello icon, Salvioni. The success of Sangiovese grown on this specific site long predates the Brunello appellation, with vineyards located here for hundreds of years and the wine historically produced known simply as Cerbaiona. The soil is a distinct limestone shale infused with sand and, according to Fioretti, “Almost by doing nothing, you can make an exceptional wine at Cerbaiona. Its vineyard location is that special and unique.” Fioretti, however, wasn’t happy with doing “nothing”. While praising Molinari’s legacy, he felt the estate desperately needed modernising – with serious work to be done in the vineyard and winery. He is very much inspired by what he calls a “tectonic shift” in winemaking in Italy (and elsewhere) over the last 30 years, with a move towards precision viticulture and a more hygienic approach to winemaking. Fioretti sees this as a shift from winemaking as an “art form” to winemaking as “craftmanship”.  In his mind, it was the pioneering efforts of producers like Romano dal Forno in Valpolicella and Luciano Sandrone in Barolo who have shown what can be achieved in Italy with such an approach. Just after taking over Cerbaiona, Romano dal Forno commented to Fioretti, “I’ll tell you what I told Molinari: you can’t make great wine in a barn.” Until recently, the sacristy of the small chapel was the fermentation cellar. The chapel itself was used for wine storage, while the granary and old animal stables acted as barrel cellars. “Hardly a precision and hygienic environment for winemaking,” Fioretti quips. As for the vineyards, “The rootstocks and clones of all the plantings at Cerbaiona were not selection massale nor specially selected material.  It was simply what the nurseries were selling at the time,” says Fioretti. “By 2010, the knowledge that had been gathered around Sangiovese was incomparable to what was understood in the 1970s and '80s.” Fioretti knew they needed replanting with better clones and rootstocks.  He retained and harvested the oldest vineyards for four harvests, working with top agronomists. “We made many attempts to overcome the shortcomings of these rootstocks and clones (which tended to produce enormous bunches, especially in wet years). But we all agreed: the sooner we replanted, the better off Cerbaiona would be.” As such, they’ve embarked on a six-year replanting program, making significant changes. The original three hectares (of which one hectare was dedicated to Bordeaux varieties) have been completely replanted to Sangiovese. An additional hectare of olive groves located on the steepest slope (and Fioretti believes the finest of the estate) has also been replaced with vines. Where possible, vines have been planted at a higher density and Fioretti has also converted the property to organic viticulture. Finally, with the release of the 2016, we find ourselves on the eve of the first Brunello release from Cerbaiona since the 2013 vintage. Fioretti believes 2016 to have been the “perfect” growing season. “The Sangiovese produced is captivating and sumptuous,” he tells me – the latter something he feels isn’t common for the variety. The moderate summer temperatures, the correctly timed rain and dry harvest conditions saw the Sangiovese thrive. The result, says Fioretti, is “a wine with fragrant aromas and a strong acidic shoulder – a guarantee of ageing”. It was in fact the latest harvest in the last five years at Cerbaiona. In Fioretti’s opinion, the 2016 is “not very far from” the 2010 – a vintage he feels is definitive for Montalcino – and comparable to other top modern Brunello vintages such as 2006 and 2007. There is tremendous excitement about the 2016 vintage, as well as the long-awaited return of this much-loved Montalcino estate. The 2016 Cerbaiona will no doubt be constantly compared to the wines made under Molinari, and it will be a fascinating comparison considering the effects of vine material, age of vines, viticultural techniques and winemaking practices versus overriding terroir.  What is clear is that Fioretti has no interest in resting on the laurels of this cult estate, nor simply following the footsteps of his predecessor. From what we’ve heard, it sounds like his labour-intensive approach both in the vineyards and winery is having the desired effect, and Cerbaiona’s legacy is safe. Cerbaiona: a new era

Brunello di Montalcino is so well-established in today’s world of wine that it is hard to believe how relatively young its international reputation is. This pure expression of Sangiovese, from the vineyards around the hilltop town of Montalcino in Tuscany, was first produced in the 1860s, named by Ferruccio Biondi-Santi (of Biondi-Santi). The name Brunello di Montalcino comes from the supposedly superior clone of Sangiovese identified by Ferruccio’s father, Clemente Santi – known as Sangiovese Grosso or Brunello. Prior to 1968 (when Montalcino was first awarded DOC status), however, there were just 11 producers operating in the region, working around 60 hectares of vines. It was these pioneering wine-growers who went on to set up the Brunello Consorzio (consortium), determined to promote and protect the region’s vinous heritage. By 1980, when Montalcino was granted DOCG status, that number had grown to 53. Today there are over 250 producers, with more than 2,000 hectares under vine, and Brunello di Montalcino is one of Italy’s most famous appellations. As the vineyards have expanded, so has the range of styles, showcasing the varied terroir and distinct characteristics of single vineyards or Crus. Made exclusively with Sangiovese, Brunello di Montalcino is released a minimum five years after the vintage, spending at least two of those in oak. Riserva wines are aged an additional year prior to release. Producers generally also make a Rosso di Montalcino, with an additional 500 hectares classified for Rosso di Montalcino production. These wines can be released after just one year, with any vessel permitted – producing a softer, earlier-drinking style of Sangiovese. The famous Brunello clone long thought to define the wines is a myth, and various clones are planted in the region today. Subzones or crus? Despite the climatic differences in Montalcino, the concept of subzones within the region is still in its infancy and not without controversy. Some producers are reluctant to endorse a terroir-specific identity to Montalcino because many have vineyards throughout the region. They use this to their advantage, identifying how certain sites perform better than others in different vintages, allowing them to play around with their blends when designating what becomes their Brunello and what is relegated to their earlier-released Rosso di Montalcino. Another reason for their reluctance is that there is plenty of variation even within these subzones – with microclimates varying dramatically, most notably in altitude. It is the altitude of the site that, for many Brunello producers, is the central factor in determining the style and in many cases the quality of the wine. If this is the case, high-altitude vineyards could have more in common with each other than neighbouring vineyards lower down the slope that sit within the same subzone. For this reason, single vineyards or Crus could be a more accurate way to divide and break down Montalcino’s terroir. Subzones may not tell the whole story, but it is easy to understand why producers with vineyards located in a specific subzone with a distinct identity are keen to highlight this area – a village, so to speak, rather than single vineyard or Cru. The north-south divide The Montalcino vineyards are positioned in a circle around the eponymous hilltop town. At the simplest level, the sub-zones to the north of the town are cooler than those to the south. Producers in the northern regions of Montosoli and Canalicchio tend to pick their grapes later than those in the south. In the 2016 vintage, for instance, lower sites in the south were picked three to four weeks earlier than those in the north. However, altitude and prevailing winds also play an important role in the microclimate of a site. The vineyards in the hottest region of Montalcino in Castelnuovo dell’Abate are also some of the closest vineyards to Mount Amiata, which – at 1,740 metres’ altitude – is large enough to create its own weather patterns. This is hugely beneficial, creating a larger diurnal shift in temperature. While each of the sub-zones (particularly Montosoli) has a distinct flavour profile, the important factors of altitude, picking dates and winemaking techniques all play a role in influencing the region’s rich and varied tapestry of wine styles. The North Montosoli Directly to the north of Montalcino sits the Montosoli hill, perhaps the most distinct terroir in the region and certainly the sub-region that most strongly champions the sub-zoning of the appellation. Montosoli is distinct not just because of the cooler climate but also because of its soil, a distinct calcareous galestro. Wines from Montosoli have a finesse to the tannins as well as heightened aromatic capacity. The galestro rock brings a sapidity and mineral salinity to the wines. Despite the notable elegance, the wines also match the power and intensity of some of the other great sites within Montalcino. Altesino was the first producer in the region to produce a separate exclusive Montosoli cuvée in 1978. Baricci (one of the founding fathers of Brunello), however, has only ever had vineyards in Montosoli and has long been aware of the qualities of the subregion, claiming that it has been legendary for wine production for hundreds of years. Key producers: Altesino, Baricci, Caparzo, Livio Sassetti, Canalicchio di Sopra, Valdicava Other wineries based in the north of Montalcino, outside Montosoli, make some of the region’s best single-vineyard Crus, including Il Marroneto’s Madonna delle Grazie and Castiglion del Bosco’s Campo del Drago. Torrenieri To the far northeast lies Torrenieri; here the compact clay soils create more tannic, burly examples of Montalcino. Key producers: Sasso di Sole, Citille di Sopra Central + The South Tavernelle Tavernelle is home to some of the most famous producers in Italy. Soldera’s Case Basse vineyard is situated here, alongside neighbouring Pieve Santa Restituta, the Brunello estate owned by the Gaja family. For Gaja, Tavernelle is in a particularly privileged position, facing south and southwest with an altitude ranging from 320 to 350 metres, characterised by an extremely windy, dry, and bright microclimate. The wind protects the vineyard from damp, alleviating disease pressure, while the altitude slows ripening, allowing the grapes to gain flavour complexity but retain freshness. Poggio Antico is also based in Tavernelle and has some of the highest vineyards in the whole of Montalcino, with an average elevation of 480 metres. At this height, the soils are rockier and more calcareous, providing good drainage for the vines while the vineyards are exposed to sea breezes coming from the Tyrrhenian Sea, extending the ripening period and creating more flavour complexity in the grapes. Key producers: Soldera, Pieve Santa Restituta, Poggio Antico Sant’Angelo in Colle To the southeast of Tavernelle, these south-facing vineyards feel the full effect of the localised weather patterns caused by Mount Amiata. Here lies an historic part of the Montalcino appellation with many of the original founders of the consorzio based here, including Lisini, Il Poggione, Talenti, Argiano and Col d’Orcia. This region is known for producing the most muscular and powerful styles of Brunello. Key producers: Lisini, Giodo, Talenti, Il Poggione, Argiano, Col d’Orcia
 Castelnuovo dell’Abate Castelnuovo dell’Abate – the warmest subzone in the appellation – expanded considerably in the 1980s and 1990s. Here the wines – such as those of Poggio di Sotto and Mastrojanni – are known for their balance between elegance and power. Alongside its two vineyards in Central Montalcino, Le Ragnaie also has a vineyard in the region. The slopes are south-facing, however their warmth is moderated by the cooling winds of Mount Amiata, which are particularly noticeable at night. This diurnal shift slows ripening, retains acidity and allows for more complex aromatic and flavour components to develop in the grapes. The mountain also acts as a protector, helpfully diverting storms from the region and protecting it from hail. The varied altitudes within the subzone can produce contrasting styles of Brunello: Poggio di Sotto, for instance, will harvest its vineyards on lower slopes four to five weeks before their higher vineyards. Key producers: Poggio di Sotto, Le Ripi, Mastrojanni, Le Ragnaie Central Montalcino + Le Croce The central vineyards, located directly to the southeast of the town of Montalcino, are home to some of the most traditional styles of Brunello, known for their ageing potential. Both Fuligni and Salvioni have southeast-facing vineyards that sit between 380 and 450 metres above sea-level on soils of chalk, schist and stony marl – and Salvioni in particular argues that this altitude is key to producing the best Brunello. Further south in the Croce subzone, Cerbaiona has become a cult name in Montalcino, offering a unique expression of the appellation largely due to its distinct patch of terroir. The vineyards of Cerbaiona are located on limestone shale and sandy soils, which – combined with a gentle touch in the winery – produces a particularly elegant style of Brunello. Of course, Le Croce is also home to Biondi-Santi – the estate that started it all. The original Il Greppo property is situated at 480 metres above sea-level and, despite the high altitude, the estate likes to pick early, opting for a distinctly fresher, structured Brunello that is austere in youth but built to age for decades. Your guide to Brunello di Montalcino

Matthew Fioretti non è esattamente il tipo che piace a tutti. L’uomo al timone di Cerbaiona non usa mezzi termini – e ha opinioni ben definite su, beh, praticamente tutto, sospetto. Ma è anche incrollabilmente onesto, con un approccio schietto che risulta piacevolmente rinfrescante – e piuttosto insolito nel mondo del vino di pregio. Ha una visione e una storia da raccontare, ma non è una narrazione costruita da un’agenzia di PR; è la sua. 
 Fioretti è da tempo coinvolto nel mondo del vino, avendo gestito un’attività d’importazione negli Stati Uniti (Summa Vitis), focalizzata principalmente sui vini italiani. Si è trasferito in Italia nel 2004 e ha chiuso l’operazione Summa Vitis nel 2009, puntando a produrre vino in prima persona. Dopo alcuni tentativi infruttuosi, ha saputo che Diego Molinari – storico proprietario di Cerbaiona – stava cercando di ritirarsi. Insieme a un gruppo di investitori (il più importante dei quali è il collezionista americano Gary Rieschel), Fioretti ha acquistato la proprietà nel 2015, per una cifra che si dice si aggiri intorno ai 5,8 milioni di euro. 
 Molinari era ormai negli ottant’anni e, sebbene il sito fosse eccezionale, la proprietà era in cattive condizioni e necessitava di interventi. Come riportato qualche anno fa, Fioretti ha intrapreso subito un progetto radicale di restauro della tenuta e ha inaspettatamente deciso di declassare le annate 2014 e 2015 a Rosso di Montalcino, rilasciando solo nel 2021 il primo Brunello dell’era Fioretti, con l’annata 2016 – la prima interamente realizzata dal nuovo team. Ora, quasi un decennio dopo, Fioretti sta iniziando a realizzare la sua visione per la tenuta – come abbiamo scoperto durante una visita all’inizio di quest’anno, affrontando problemi che “non sono facili da risolvere”. La sfida, spiega, è stata quella di evolversi da “artigiano” a “atelier”. Sotto Molinari, la proprietà aveva acquisito una reputazione leggendaria, ma l’operazione era rudimentale – una tradizionale impresa familiare che faceva le cose come si erano sempre fatte. Fioretti vuole portare la tenuta nell’era moderna, elevando il terroir con precisione tecnica per creare vini che continuino l’eredità di Cerbaiona. È, dice, “una transizione che non mi aspettavo di fare”, ma che considera essenziale per salvaguardare il futuro di Cerbaiona. 
 La distinzione tra artigiano e atelier è sottile – ma si riduce a un’enfasi sull’artigianato più che sull’arte, con un impegno verso la coerenza, per cui precisione e igiene in cantina sono fondamentali, così come un elevato livello di conoscenza tecnica. Ammette di aver immaginato un approccio più “hands-off” in cantina, dopo aver importato molti vini naturali nella sua precedente carriera, ma ha rapidamente capito che la vinificazione di alto livello è piena di “compromessi necessari” (scendendo in dettagli come il problema della quercetina). Come mestiere, la vinificazione non può essere soggetta ai “capricci del produttore”, come suggerisce sia tipico dell’approccio artigianale. “Preferisco lavorare in modo più meticoloso,” spiega. 
 L’americano parla a ritmo serrato, passando da TS Eliot e il concetto di “critico puro” ad Albertolli e al neoclassicismo, in mezzo a dettagli tecnici su chiarifiche e filtrazioni. La tenuta è chiusa ai visitatori, deliberatamente, per evitare distrazioni da ciò su cui Fioretti vuole concentrarsi – fare vino. Mentre ci guida rapidamente attraverso la cantina, con la testa che ci gira cercando di assorbire ogni dettaglio, ci illustra esattamente come sta portando una nuova esattezza all’operazione. I vigneti sono stati tutti ripiantati e un oliveto in forte pendenza è stato sostituito da viti, con portinnesti e cloni selezionati provenienti dal vivaio Guillaume in Francia, per garantire la migliore materia prima possibile. Un tempo considerato troppo impegnativo da coltivare, Fioretti è convinto che l’ex oliveto possa essere il miglior sito della proprietà. Le vecchie stalle e il granaio che fungevano da cantina e deposito sono stati accuratamente ristrutturati, con l’installazione di impianti idrici e di drenaggio in tutto l’edificio, e l’aggiornamento di tutte le attrezzature. Elemento importante, Fioretti ha aggiunto un laboratorio interno completo – qualcosa di estremamente raro per una tenuta di queste dimensioni, tanto più in Italia, dove l’approccio high-tech non è affatto la norma. 
 L’uva ora viene tutta raffreddata dopo la vendemmia, diraspata e sottoposta a macerazione a freddo, utilizzando gas inerte per proteggere il mosto. Sebbene per le sue prime cinque annate Fioretti avesse utilizzato tini di legno verticali per la fermentazione, è passato all’acciaio inox per una migliore igiene e controllo della temperatura (preferendo un massimo di 26°C), oltre a poter programmare automaticamente rimontaggi e follature. Ha iniziato a co-inoculare per la fermentazione primaria e malolattica, così che i vini vadano in botte molto puliti – e possano essere solforati immediatamente. 
 Si tratta di aggiustamenti, modernizzazioni minori, ma uno dei cambiamenti più significativi che Fioretti sta apportando riguarda il tempo che il vino trascorre nel legno. Mentre Molinari prediligeva oltre quattro anni in tonneaux da 500 litri, Fioretti ha iniziato gradualmente a imbottigliare prima e utilizza una combinazione di barrique da 350 litri e botti da 15 ettolitri. “Anche due anni [il minimo imposto dal disciplinare] nel legno sono troppi,” afferma – prima di riconoscere subito che questa opinione è tutt’altro che accettata, e che legalmente non può ridurla ulteriormente. I vari consorzi forse non la apprezzano, ma è una visione sempre più comune tra i giovani produttori in Italia, frustrati dai requisiti minimi di affinamento in rovere e dal loro contrasto con i vini che i consumatori di oggi vogliono bere. Come dice Fioretti, tuttavia, “La nozione di legno è molto delicata.” E anche se preferirebbe poter affinare il vino in altri contenitori durante i primi due anni di vita, riconosce che l’élevage in rovere ha un impatto benefico sulla chimica del vino – aiutando la stabilità. Con un vino così amato, potrebbe sembrare controverso cambiare qualsiasi cosa – specialmente il modo in cui viene prodotto, ma questo non ha fermato Fioretti. Guardando alle vecchie annate della tenuta, persino alla leggendaria 2010 da 100 punti, talvolta rimane deluso, ritenendo che il potenziale sia molto più alto. Parte del suo piano per riflettere quel potenziale è imbottigliare prima, permettendo al frutto di emergere e dare al vino un miglior equilibrio – qualcosa che ritiene fondamentale per il potenziale di invecchiamento. È anche attento a mantenere il grado alcolico moderato, con un massimo di 14 o 14,2%, anche negli anni più caldi. E, cosa più importante, dice, un buon vino deve essere delizioso. Dopo aver assaggiato le annate 2019 e 2021 con Fioretti – i risultati, finora, lo sono davvero. C’è una vivacità e una purezza che li rendono irresistibili, senza sacrificare la struttura che permetterà a questi vini di durare nel tempo. 
 Accanto a Cerbaiona, Fioretti ha anche creato l’etichetta M.L. Fioretti, che descrive come “parte garagiste, parte petit château”. Era desideroso di esplorare vitigni autoctoni, che “fanno parte della famiglia – ma non sono tutti purosangue”, così come parcelle di varietà bordolesi (uve di pedigree indiscutibile) – purché piantate nel posto giusto. Il Casaglia Colorino è brillante e speziato, mentre il San Vito (purtroppo l’ultima annata è la 2021) è un Merlot meravigliosamente ricco e vibrante. Sono vini affascinanti che permettono a Fioretti di sperimentare di più – al di fuori dei vincoli della denominazione Brunello di Montalcino. 
 In modo controverso, Fioretti ha dichiarato Cerbaiona una “No Scores Zone”, riecheggiando il sentimento di Teobaldo Cappellano secondo cui i punteggi numerici sono divisivi, nella migliore delle ipotesi – e non rendono giustizia all’arte della vinificazione. Nelle sue note sull’annata 2018, Fioretti ha scritto: “Questa è un’altra annata per il conoscitore, il vero amante del vino e della vite. Pazienza se il ‘collezionista’ ne resterà privo.” Parole che potrebbero far storcere il naso a qualcuno, ma la motivazione è chiara: una passione sincera per il vino. È qualcosa che traspare chiaramente nella nostra conversazione – e nei vini che sta producendo. Non troverete valutazioni online per le nuove annate di Cerbaiona, ma una cosa è certa: li vorrete nella vostra cantina.

Old, low-yielding vines. I’ve written that phrase more times than I’d like to confess. But how much does it really mean when it comes to the quality of the wine in your glass? The 2023 vintage in Burgundy (read our full vintage report here) produced generous yields. In farming terms, that’s a good thing: a plentiful crop that restocks the cellars (and coffers). But the sheer volume of fruit (“a wall of grapes”, as Bouchard’s winemaker Frédéric Weber told us) posed its own challenge – and much of our time in the region’s cellars this year was spent diving into how they managed, or controlled, the yield. It seemed fitting, therefore, to address the topic in greater detail.  In the Old World, appellation rules will limit yields, with the yield generally decreasing as you move up the appellation system (see below a table detailing the maximum yields for Burgundy, for example). Of course, this indicates a relationship between yield and quality, implying less is better – and there is no doubt that excessive yields don’t produce fine wine. But how low is too low? There is a fashion for prizing vines that barely manage to ripen a bunch or two, but do they really make better wine than those producing a decent crop? Beyond our obsession with rarity, what are the consequences of less fruit per vine – and therefore, what does more entail? A note on measuring yield Before we get into the weeds of the matter, let’s address how we talk about yield. In the Old World, the most common measurement of yield is hectolitres per hectare (hl/ha), measuring the volume of juice or wine per hectare of vineyard area. In Champagne the standard measure is kilos per hectare and in Italy you may see reference to quintales per hectare (qt/ha or q/ha, with one quintal translating to 100kg), while in the US, producers are more likely to use tons per acre. We’ll dive further into the many variables here, but it’s worth highlighting that vine density isn’t taken into account by any of these measurements. Although a higher number of vines per hectare will generally mean a higher yield across the vineyard, the increased competition will also likely reduce the yield per vine. For this article, we have spoken to producers from a range of regions, but do note that yields are not comparable between varieties or region. Climate – with heat, sunlight and water availability, as well as the varying size of berries and clusters of any given variety, mean that there is no number that can be deemed a global average when it comes to yield. (Do look at this table compiled by the Wine Advocate’s William Kelley, comparing vine density, cluster weight and juice yields for various classic fine wine regions, to give you an idea of the differences between regions.) Given this, “high” and “low” yields aren’t equated to specific numbers here, but the concept discussed more broadly – and arguably more relevantly for those of us drinking wine rather than making it. Bearing all of this in mind, extremely approximate conversions can be made as follows: one tonne per hectare is approximately 7hl/ha, while one ton per acre is around 17.5hl/ha (Oxford Companion to Wine). Yields: how low is too low? “It’s not extreme mythology: low yields produce better quality,” Cerbaiona’s Matthew Fioretti tells me; for him, high yields risk dilution and sanitary problems – and at excessive levels, that is certainly true. But, as Myriad’s Mike Smith told me, the relationship is “not linear”. Mike Dunn (Dunn Vineyards) generally has low yields, but that’s not necessarily about concentration, he explains: it’s simply about how much they can ripen before winter hits. Up on Napa’s Howell Mountain, their poor soils and farming (avoiding irrigation and fertilisation where they can) naturally produce lower yields. He recently changed some of their Cabernet Sauvignon to cane (rather than cordon) pruning and, although they’re getting more fruit off the same vines, there’s been no loss in quality. “It’s all relative,” says Ivan Massonnat at Belargus in Anjou. He points to Saumur with its limestone soils, where producers can crop 45-50hl/ha without a problem, but on the schist soils that lie beneath his vineyards: “Forget about doing much more than 30-35hl/ha,” he says. And even that has proven challenging for him. In the seven vintages he’s produced at the estate, only two have come close to 30hl/ha, with the average around 15hl/ha, simply due to the challenges of each vintage. He’d have loved to crop more – but nature had other ideas, and vignerons have to adapt to the vintage. Massonnat explains how if you farm to produce yields that are overly low, you can end up with fruit that has high technical, or sugar, maturity, but isn’t yet phenolically ripe – leading to unbalanced wines. Smith echoes this, talking specifically about Beckstoffer Dr Crane, one of Napa’s legendary vineyards, which he finds likes to produce more – around five tons an acre (versus four in most of the vineyards he works with). He sees producers cropping to just three tons per acre there, and in warm vintages the fruit ripens too quickly for the phenolics to catch up. Philippe Bascaules – who was first appointed Estate Director at Ch. Margaux in 1990 – offers an interesting perspective, arguing that there’s no direct relationship between yield and quality. In Bordeaux in the 1970s, he tells me, yields were consistently low – 25-30hl/ha, with wines that were inconsistent. As the wines became more popular, with demand from the US in particular for the 1982 vintage, producers started aiming for significantly higher yields and chaptalizing much more. Soon, average yields had doubled to 50-60hl/ha – a level that was unsustainable, especially in challenging vintages such as 1992, ’93 and ’94. Gradually they implemented changes, introducing green-harvesting (in 1986 at Ch. Margaux) and reducing fertilisation levels in the 1990s. Today, he and his team aim for around 45hl/ha, “a good production” in his mind – but a level which also offers insurance against inclement conditions. Lowering yields is something that, for him, has brought greater consistency to both the estate and region across vintages – ensuring they can ripen the crop each year. Deliberately reducing the yield beyond this, however, wouldn’t offer any serious benefit, he says. Similarly, across the Durantou family’s estates on the Right Bank, including Ch. l’Eglise-Clinet, Noëmie Durantou Reilhac targets a yield of circa 42hl/ha. “The vine wants to produce fruit,” she says, “so if the yield is really, really low, something went wrong.” For her, it’s the balance that matters most. With very high yields, the resulting wines will lack concentration (“You cannot make in tanks what nature hasn’t done before,” she says), but equally if the berries are so small that there is barely any juice, you’ll have little but tannins left to work with. And, while hail or frost will reduce your yield, they won’t result in greater concentration. “I think it just comes down to stress,” Dunn tells me. And that’s a common thread for several producers, arguing that vines need to struggle to produce quality. As Sébastien le Golvet – of Champagne Henri Giraud, who works with the poor soils of Aÿ – says, “genii are born of suffering”. Suffering doesn’t always mean lower yields, however: arguably, Dunn says, in high-vigour sites, keeping higher yields will help increase stress, pushing the vine to work harder – and therefore produce higher quality. Elements impacting yield While it’s impossible for us to address every factor that influences yield, it’s worth – relatively briefly – highlighting a few additional influences beyond site (with poorer or richer soils), variety and vintage: Trellising: Trellising – the shape in which a vine is trained – can be used to control yield. At Cerbaiona, Fioretti emphasises how using alberello or bush vines is key to helping contain Sangiovese’s natural vigour. At Tiberio, Cristiana Tiberio’s oldest vines are pergola-trained, with a traditional Abruzzese system that encourages competition but also increases the canopy to aid photosynthesis and ripening. Vine material/rootstock: The material used in a vineyard is integral (as with Quinta do Noval’s Nacional vineyard, see below). Mike Dunn, for example, mentioned how one of his older vineyards was planted on St George rootstock, known for shatter and therefore limiting yields even further. Jean-Marie Fourrier (Domaine Fourrier) argues that the use of selected clones, rather than massal selection, has resulted in higher yields and the need to green harvest, something that he never does – aided further by the age of his vines (see below for more on this). Vine age: There’s no doubt that the element of vine age is conflated with yields and quality, with older vines often producing better fruit – but less of it. As Mike Dunn told me, the wines from his oldest vines are “more intriguing”, but at some point economics comes into play, and the level of production is financially unsustainable. It’s another non-linear relationship, however, as Durantou Reilhac explains: “Some 70-year-old grandmas can run and dance, and others are weaker.” Although most old vines will produce less fruit, she finds it’s far from uniform in her vineyards – and sometimes there will be young vines that produce less. Virus and millerandage: Virused vines will produce lower yields, and as with old vines, will reach a point where they are unsustainable. While on the surface virus is negative, certain producers do value the reduction in yield or slower ripening that is a result of disease – South Africa’s Hamilton Russell being one (with leafroll virus). Quinta do Noval persists with its own-rooted Nacional vineyard, suffering from phylloxera, with the vines slowly dying and yielding tiny volumes, to produce a particularly special and rare Vintage Port. Similarly, millerandage is a condition most commonly a consequence of poor weather at fruit-set, producing grape clusters with unevenly sized grapes, combining larger and smaller (or shot) berries – sometimes referenced as hen-and-chick. While this reduces yield, the phenomenon is sometimes valued for giving increased concentration to wine. Indeed, some particular clones – such as the Mendoza, Wente or Gingin clones of Chardonnay – are valued for their bunches with hen-and-chicks, and Bret Brothers, for example, even makes a special Cuvée Millerandée – with millerandée Chardonnay – from Les Quarts (a Pouilly-Vinzelles site recently awarded Premier Cru status). Cover crops: At Henri Giraud, Sébastien le Golvet feels that cover crops are essential to the quality of their fruit – and the yield. Sewn just before harvest, the cover crops provide competition up until flowering when they roll the grass mix, creating a bed that holds water and offers nitrogen to the soils, acting as a natural fertiliser – in a way both moderating then fuelling the vines’ growth. This is one hint at the extent to which the type of soils and level of organic matter, not to mention water availability, dictated by site and the farming methods, are all key. The previous vintage: There are two theories at play here. Firstly, conditions during what is known as the initiation phase of the vine cycle, which takes place alongside flowering, will dictate the yield of the following vintage. In 2023 in Burgundy for example, one of the factors in yield was that the spring of 2022 offered perfect conditions, laying the groundwork for 2023’s plentiful crop. As Sébastien le Golvet also explained, however, a large crop in one vintage can tire the vines, meaning they have less to give the following year. How wine producers manage yield The vine naturally wants to reproduce, to grow, ripen fruit and spread its seeds. Vignerons are tasked with taming the plant to focus its energies to develop fruit of concentration and complexity that will make fine wine. This is done in many ways, some of which include: Pruning: The first stage to set up the yield in an existing vineyard is pruning, leaving the appropriate number of buds per vine for the season ahead. The timing of this varies according to the producer, from December through to March, with later pruning helping delay the vine cycle, which is sometimes desirable. Alvina Pernot, for example, specifically pruned her vines shortly (ie to offer a lower crop) in 2023 to help the vines recover from the relatively high-yielding 2022 vintage. Lalou Bize-Leroy famously works with very low yields, and emphasises how important pruning is in this (Domaine Leroy harvested just under 30hl/ha in 2023, its highest ever yield – a number which would still be low by many producers’ standards). De-budding or suckering: In spring, producers will de-bud or sucker the vines, removing lateral shoots and providing further control of the potential yield, as well as the spacing and position of the crop. In 2023 in Burgundy, many producers emphasised how important this was. Hugues Pavelot described it as “drastic”, while Philippe Jouan passed through his vines twice. At Bouchard, Frédéric Weber explained how some of the buds produced two or three bunches in 2023 (rather than the normal one), meaning that even with extensive de-budding yields were very high. Green harvesting: Green-harvesting is the most discussed method of yield control, and one that divides producers. We spoke to several Burgundian vignerons who avoid it (Dominique Lafon, Jacques Devauges at Domaine des Lambrays, Philippe Jouan and Jean-Marie Fourrier, to name a few) – some of whom felt that they had no choice but to use the method in 2023, despite their best efforts. The reason against green-harvesting is that the vine will try to compensate, and that it can be avoided with managing the vineyard in other ways. That said, there are many top-tier producers that green-harvest, and feel it is key to the quality they produce (Ch. Margaux, Eglise-Clinet, Georges Noëllat and Olivier Bernstein, to name a few). And it’s not a decision that any take lightly, well aware that they are literally throwing away potential income. At Cerbaiona, Fioretti compares the vines to runners or cyclists – needing to carry as little weight as possible to get over the finish line. With Sangiovese, he finds it’s unavoidable, especially with the presence of “wings” or “shoulders” (smaller separate clusters that sit on the shoulder of the main bunch). The timing is key, and many producers emphasise the importance of green-harvesting early in the season. For Noëmie Durantou Reilhac, she aims to have this done prior to véraison to avoid twisting the stems (which would impact sap flow) and damaging the skins of the remaining bunches. She’ll do a final pass through her vineyards just before harvest, but this is a method of sorting rather than impacting the ripeness of the grapes on the vine. “There’s a certain point where you can reduce fruit, say a month away from picking, but it won’t do anything,” says Myriad’s Mike Smith. Like many producers, he favours green-harvesting mid-véraison to drop anything that is behind, helping even the ripeness of the crop – as Bascaules does at Ch. Margaux. In 2023, several Burgundy producers highlighted having to do multiple passes to reduce the crop – doing what was sometimes referred to as a “pink” or “blue” harvest on top of a green harvest. Canopy management: A vine’s leaves are its engine – responsible for photosynthesis. The larger the canopy, the larger the engine, therefore trimming the vine’s canopy can help lower its vigour, while keeping a larger leaf area can help encourage vigour. This needs to be considered alongside airflow (to avoid disease pressure) and shading of the bunches (which could delay ripening). If the canopy isn’t balanced with the volume of fruit, it can also negatively impact fruit composition – especially the acid make-up and development of colour and phenolics. Ivan Massonnat (Belargus) explained that in 2022 and 2023, for example, he used a high trellis, allowing a larger leaf area, to capture maximum light and photosynthesis to fuel the vines; but in 2022 he did the opposite, wanting to reduce the size of the “sugar machine”. It has, he notes, become common for large canopies to be used alongside low yields, especially by producers in Burgundy, something he feels has gone too far at certain addresses: “You can kill a wine with concentration,” he says. Some argue that trimming the canopy can encourage it to grow further, while others want to retain a large canopy to encourage root growth (Olivier Lamy feels that the vine has the same amount of growth above and below ground, therefore wanting to retain his canopy to the roots to drive deep into the soil). Lamy is one of a cohort of producers using “tressage”, or braiding, to tame the canopy – a technique pioneered by Lalou Bize-Leroy. For her the aim is to avoid cutting the apex (or growing tip) which would otherwise encourage the growth of lateral shoots. Producers such as Charles Lachaux have taken this even further, training vines to a single stake (more common on the steep slopes of Priorat, Côte-Rôtie or the Mosel) and weaving the shoots into distinctive arches.  The relationship between yield and quality is undoubtedly a tricky one – and one that every producer I spoke to feels is deeply complex. We couldn’t touch on everything here (the tiny yields for botrytised sweet wines, for example, or typically higher yields used for sparkling wine), but there’s plenty to consider. While it remains clear that excessive yields can produce dilute wines, with so many variables play, it’s also clear that less isn’t always better. Read more Editorial

Yield and quality: is less really more?

Dopo l’eleganza del 2018 e la potenza del 2019, l’annata 2020 a Montalcino aveva molto da dimostrare.
 Come mi ha detto Matthew Fioretti di Cerbaiona, “Sulla carta, sembra un’ottima annata.” Statisticamente parlando, la temperatura media era ideale, le piogge abbondanti ma non eccessive – tutto perfetto. Ma l’anno è stato più complesso di quanto i numeri suggeriscano, mettendo alla prova i produttori. Per Cecilia Leoneschi di Castiglion del Bosco, è stata la prima annata in cui ha percepito chiaramente gli effetti del cambiamento climatico a Montalcino – con 64 giorni d’estate senza una goccia d’acqua, qualcosa che non aveva mai visto. È stata, ha sottolineato, un’annata molto variabile nella denominazione – soprattutto tra altitudini basse e alte – come confermato anche dalle altre testimonianze. Nicola Vaglini (Pieve Santa Restituta) ha sottolineato l’importanza delle piogge invernali, che hanno ricaricato le riserve idriche, poi integrate da ulteriori piogge primaverili. La stagione è iniziata con germogliamento regolare e temperature miti. Una gelata a fine marzo ha colpito soprattutto il nord della zona (Vaglini ha riportato perdite del 15% in alcuni vigneti), anche se la maggior parte è rimasta indenne. La stagione è proseguita senza eventi rilevanti fino a luglio, quando il clima è cambiato. Le temperature sono salite, con picchi di 38-40°C. Durante queste ondate di calore, le viti si sono bloccate e la maturazione si è fermata. Fioretti ha notato la caduta delle foglie basali, lasciando i grappoli esposti al sole. Nonostante ciò, Leonardo Berti di Poggio di Sotto ha commentato con sollievo che le temperature non hanno superato i 41°C, come ormai avviene spesso a Castelnuovo dell’Abate – segno del clima mutato. Tra un’ondata di calore e l’altra, si sono verificati rovesci improvvisi – fino a 100mm in tre ore – troppo violenti perché i terreni potessero assorbirli, causando allagamenti (a Cerbaiona, si sono trovati 20cm d’acqua in una cantina). Fioretti sottolinea che questo rende fuorvianti i dati annuali: anche se le piogge totali sono risultate nella media, per le vigne è stato, di fatto, un anno di siccità. Leoneschi ha spiegato che a Castiglion del Bosco utilizzano sempre più colture di copertura per trattenere l’acqua nel suolo. Pur ricevendo meno pioggia – protetti dal Monte Amiata e dai venti costieri – non hanno riscontrato gravi stress idrici nel 2020. A Poggio di Sotto, Berti ha commentato che il 2020 ha portato la giusta quantità e qualità di pioggia, senza ostacolare il lavoro in vigna. Il clima si è rinfrescato a fine agosto, con piogge a fine mese. A Poggio di Sotto, dove da anni usano zeolite (argilla nebulizzata) per proteggere le foglie dalla pioggia prima della vendemmia, Berti ha trovato questa pratica particolarmente utile nel 2020. Le zone più basse hanno ricevuto più pioggia rispetto ai vigneti d’altura. Leoneschi ha spiegato che l’escursione termica nella fase finale della maturazione è stata determinante, permettendo un’ottima maturazione dell’uva. A metà settembre, nuove piogge hanno diviso le scelte di vendemmia: alcuni hanno raccolto prima, altri dopo. A Poggio di Sotto, dove la vendemmia inizia sempre presto, la raccolta è partita il 4 settembre – insolitamente tardi, poiché l’agosto fresco aveva rallentato la maturazione. Vaglini ha segnalato un’ondata di caldo tra il 5 e il 15 settembre, con rapido accumulo di zuccheri, iniziando la raccolta il 15. A Cerbaiona e Castiglion del Bosco la vendemmia è cominciata il 20 settembre, mentre altri – come Casanova di Neri – hanno atteso ancora. Fioretti ha sottolineato l’importanza del controllo delle rese nel 2020: troppo facile produrre troppo e ritrovarsi con tannini verdi. Molti produttori hanno fatto più passaggi di raccolta. A Castiglion del Bosco, Leoneschi ha raccontato che anche nello stesso appezzamento le viti sono state vendemmiate fino a 12 giorni di distanza, segno dello stress stagionale. Entro inizio ottobre tutta l’uva era in cantina, e quasi tutti hanno ritenuto fondamentale la cernita – manuale o meccanica – per eliminare gli acini bruciati o disidratati. Il rischio era ottenere vini con alcol elevato e tannini duri, data la calura. In cantina, l’attenzione si è concentrata sull’estrazione, evitando di stressare il mosto. A Cerbaiona, Fioretti ha effettuato una macerazione a freddo di tre giorni per esaltare “l’esuberanza del frutto”, mantenendo la fermentazione a un massimo di 26°C e svinando dopo 7-10 giorni. Al contrario, Berti ha scelto un’estrazione lunga ma delicata – 50-55 giorni sulle bucce, bagnando il cappello solo quando necessario; un approccio opposto al 2019, anno di piena maturità fenolica. A Castiglion del Bosco, Leoneschi ha utilizzato bâtonnage dopo la malolattica per aumentare la complessità e l’eleganza, ma non la struttura. Per Poggio di Sotto, Berti ha mantenuto il Brunello 2020 in botte per tre anni (loro standard, due è il minimo legale), mentre il 2019 ha passato dieci mesi in più. Molti hanno preferito i 24 mesi minimi per preservare la freschezza del frutto. Alcuni ritengono persino questo periodo eccessivo – un dibattito ormai comune anche in zone come Barolo, dove i minimi legali non riflettono più il clima attuale. Nonostante il caldo, i 2020 hanno sorpreso per la freschezza. I migliori sono vini aperti, fruttati e piacevoli, sebbene non omogenei in tutta la regione. Per Fioretti, il 2020 non raggiunge la grandezza assoluta – i fenoli lo limitano, mancando la finezza delle migliori annate. Tuttavia, il vino è già pronto, con frutto generoso e tannini dolci e moderati: “pronto da bere”, come dice lui, con modestia. Berti descrive il 2020 come “un compromesso tra l’eleganza del 2018 e la potenza del 2019” – e più accessibile di entrambi. Lo paragona al leggendario 2016, meno strutturato ma più immediato ed elegante. Vaglini e Giacomo Neri (Casanova di Neri) vedono un mix di 2015 e 2016: finezza, eleganza, bouquet espressivi e buona acidità. Leoneschi conferma, parlando di precisione aromatica e densità, ma aggiunge che il 2020 è un anno fortemente legato al terroir – dove il sito parla più del produttore. L’annata 2020 non raggiunge le vette del 2016, e serve selezione. Ma i migliori vini hanno un fascino e un’eleganza immediata che – come dice Fioretti – non vanno sottovalutati. Sono vini importanti. Brunello di Montalcino 2020: panoramica sull'annata

The headline for the latest Brunello vintage is that it was a challenging year. But don’t write it off. The vintage was an opportunity for the most sensitive and gifted vignerons to prove their mettle, producing a number of excellent wines that should not be missed. It is never easy for producers, or wine merchants for that matter, to promote the vintage following a classic. The 2016 vintage was a touchstone year for the region with a vast array of spectacular wines produced throughout the rich and varied appellation. The 2016 Riservas (also released this year) remind us again just how good the vintage was, and how it allowed both the character of the different terroirs and the style of each vigneron to strut their stuff. In comparison, 2017 was a lot less straightforward and Mother Nature threw a lot more curve balls. The beginning of the season saw some erratic temperature changes and the threat of frost on some early-budding vines.  There was drama in the town when Pietro Buffi (of Baricci) decided to lay damp hay bales around the perimeter of his vineyard; by setting fire to them, he created a smoke screen limiting the impact of the frost. The local fire brigade were called and there was much confusion, but no flames. It proved incredibly successful for him, at least. Unlike most producers, whose yields were drastically cut by the frost, Baricci lost just 10% of his normal crop. Yields for most producers are very low, not only due to the spring frost, but also the irregular weather at flowering, and the long drought and heatwave that marked the summer. For Matthew Fioretti at Cerbaiona, the elevation and exposure of his northeast-facing vineyards helped temper the hot conditions.  Even so, he admits that the 2017 Brunello was made almost entirely with his oldest vines, whose deep roots had better access to the limited water resources available. The clay-rich soils at Canalicchio di Sopra to the north eased the lack of rainfall, but no vigneron was immune to the vines shutting down at the height of summer. The concern was whether the grapes could reach full phenolic maturity by harvest. The cellars at Poggio di Sotto All the vignerons were in agreement that the arrival of rain in early September was a godsend. The rain brought the vines back to life and then it was a waiting game as the grapes pushed through to full phenolic maturity. Francesco Ripaccioli (Canalicchio di Sopra) is a strong believer that the last 20 days prior to harvest are the most crucial in determining the success or failure of a vintage.  In 2017, these last 20 days were, in his view, those of “a great vintage”, with mild temperatures during the day and substantial drops in temperature during the night, preserving acidity and aromatic complexity of the grapes. Favourable days were interrupted with a bit of rain, that was immediately dried up by the wind. Many producers we spoke to agreed – the final weeks in September brought plenty of character to the final wines. Thick skins and a nicely toasted fruit profile were, for many, positive attributes. The 2017 growing season remains fresh in the memory of Montalcino’s growers partly because the 2021 vintage was almost a carbon copy. Both vintages saw widespread frost followed by a hot and dry summer. In 2017, the drought meant that the berries were very small with high skin-to-pulp ratios, meaning lots of tannin.  The poorer examples are therefore quite dry as opposed to heavy. It is only where the grapes were resuscitated enough by rain to push through full phenolic maturity that producers could make balanced wines. For Fioretti, there were two options: either pick early and retain a bigger crop before more of the grapes’ juice evaporated, or hold out and see if the grapes took on more complexity left on the vine. He chose the latter starting on 19th September and finishing on 24th. Fioretti notes that while the fruit hadn’t reached full phenolic maturity, he was very satisfied with their ripeness in tank. With such huge variation in altitude across Poggio di Sotto’s different vineyards, the team spread their harvest over nearly a month, picking the warmer sites as early as 29th August and ending on 27th September. Although 2017 was one of the hottest and driest years ever, at Poggio di Sotto the wines have maintained excellent richness of fruit and acidity, due to rigorous selection and an elongated harvest. Based in the cooler northern district of Montalcino, Canalicchio di Sopra, another real success in 2017, picked even later, starting 25th September and finishing 6th October. It was the southern sections of Montalcino, however, that suffered the worst from the drought. The north received 300mm of rain between March and November, while the south saw just 160mm. Sangiovese is so sensitive to drought and the conditions were so drastic that parts of the south were even allowed to irrigate. The Montosoli vineyards at Canalicchio di Sopra Despite the challenges, a handful of top producers produced outstanding wine in 2017. The best examples have fully ripe tannins, a lovely crunch to the fruit and vibrant acidity. While not as fleshy as the 2016 Riservas tasted alongside, the top examples are not at all mean or lacking in concentration. Whereas in poorer examples the fruit aromas can be a little candied and sometimes a little meaty (suggesting possible issues with fermentation), others have a pleasing roasted fruit character, rather than raisined ripeness. At worst, the tannins can feel a little abrupt and hard-edged. Top producers, such as Casanova di Neri, Canalicchio di Sopra, Poggio di Sotto and Talenti have made great wines in the toughest of vintages, and their 2017s are no exception – they really are special. Wines selected wisely will give great short to mid-term drinking pleasure and should not be missed.
