One name that kept cropping up when speaking to winemakers about wine and cheese pairing was Bernard Antony, a man who now supplies 20 of the world’s 3* Michelin chefs as well as working alongside many of the world’s top winemakers matching cheese and wine at events for Guigal, Angelus, Humbrecht and many more.   We caught up with Jean Francois Antony (Bernard's son and protege) to find out more about Affinage (the ageing of cheese) and their perfect cheese and wine pairings. 45 years at the service of taste Bernard Antony is one of the world’s great cheese makers. Strictly speaking, his mastery
is in affinage, that is finishing and ageing cheeses. From humble beginnings working as a travelling grocer in Alsace, in 45 years he has gone on to become one of the most recognised men in the world of fine cheese.  Bernard Antony was the protegé of the late great Maitre Pierre Androucet – known as “the Pope of Cheese”. Bernard says of Pierre: "To me, he was like a father. He was the man who created me, who taught us everything, to my wife and me. He didn't like me to say it because he wanted to give me all the credit for my success”.  Following on from Androucet’s advice and support, Bernard set up his own cheese ageing cellars in the early eighties in the southern Alsace village of Vieux-Ferrette. The ageing cellars are made up of seven different chambers all at different humidity and temperature levels – ideal for raising and ageing various different styles of cheese. Only when the cheeses are deemed ready and at perfect ripening are they released to the markets and delivered to restaurants. Ageing of cheeses can range from just a few months for the fresher goat’s cheeses to several years for some hard cheeses. Speaking with Jean Francois Antony, Bernard’s son, who works alongside his father, running the day-to-day operations of the cellars, he identifies that the skills in good affinage revolve around a number of key elements. First of all, “raw (unpasteurized milk) is essential if one is to speak of cheese with authenticity…taking into account the breed of animal, the animal's diet, the talent of the cheesemaker and then of course the controlled process of ripening are also key”. The cheeses arrive at the cellars already halfway through ripening and their ageing cellars go into action to give them the final touch. They provide the perfect environment and temperature for ageing as well as the most important element in the Bernard Antony cheese cellars, the natural yeasts that live there helping the cheese mature distinctly and in the best way possible. website. They often pair the cheeses with fine wine so we thought who better to ask for advice on the ultimate cheese and wine pairings than the man himself.  Below is the Bernard and Jean Francois Antony’s essential guide to food and wine matching, split up between the different styles of cheese, with additional advice passed down from Pierre Androucet.  The Floury crust family of cheeses Camembert        Brie de Meux (un peu sale)         St Marcellin and St Marcellin (runny)     Petit Mosellan         Coulommiers         Chaource
 The classic pairing would be Champagne (Blanc de Blancs, Aged and even Rose Champagne) however Bernard Antony advises that you remove the crust as it can make the wine appear more harsh. The bubbles work brilliantly in refreshing the palate from these rich cheeses and the yeast flavours from the Champagne also work really well. Avoid tannic reds with these cheeses. One of Bernard's favourite matches include a Gevrey Chambertin 2012 from Domaine Denis Mortet with the St Marcellin. He states a white wine with both gentle oxidation and good acidity works particularly well with Petit Mosella (Saint Peray from
Domaine Tunnel or Alain Voge) or a fruity red wine with well-coated tannins such as a Beaujolais Cru wines with the Chaource and Colombier fermier. The Washed Crust family of cheeses Epoisses       Langres         Livarot     Munster  Maroilles    Vacherin         Pont-l’Eveque According to Androuet: robust and virile wines, with sap and generous bouquet work best with these potent washed crust cheeses. They require “solar wines“ which can harness the power of washed crusts. Gewurtztraminer Grand Cru from Albert Mann, Chambolle Musigny from Liger Belair would both work well. Pinot Noir from Zind Humbrecht, Bollinger 2008 Grande Annee also a particular favourites with Bernard Antony. The pressed crust family of cheeses Comte     Emmenthal        Beaufort         Gruyere Suisse According to Androuet the matches depend on the evolution of the cheese. Dry white or red wines with bouquet work well, red wine brings a balancing touch of bitterness. These cheeses flatter any red wine by erasing astringency and promoting fruit therefore making White or Red Burgundy a good match. With more ageing of the cheese, wines from the greater South-West, the Rhône Valley and Languedoc Roussillon become better matches. Other personal
favourites from Bernard Antony include Vernaccia di San Gimignano (Italy) White
wines from Valais (Switzerland), and Savignin wines from the Jura. The pressed (uncooked) crust family of cheeses Morbier   Tomme de Savoie fermiere       Mimolette demi étuvé         Salers     Roblochon  Sainte Nectaire Pairing again depends on the maturity of the cheese. The older the cheese the richer the wine. Chateau Latour 2001 is Bernard’s match with Morbier. Saint Joseph Pierre Gonon 2013 works well with Reblochon and Chateau Canon La Gaffeliere Grand Cru Classe St Emilion 2008 works well with Saint Nectaire. The family of blue cheeses Bleu d’Auvergne     Roquefort        Fourme d’Ambert      Blue de Gex          Stilton    Gorgonzola These are best paired with sweeter fruited wine or sweet wines. Avoid red wines as the mould changes the structure, the aromas and brings out the bitterness. Top picks are Rivesaltes Vins Doux Naturels, Pacharenc du Vic Bilh or aged Sauternes even red Vins Doux Naturels such as Maury, Banyuls work well with blue cheeses. The family of Goat and sheep cheeses Ossau-iraty         Brebis cremeux et parfume Brebis Corse     Chevre Frais    Chevre Moelleux et onctueux   Chevre Affiné. Vieux et sec   St Maure de Touraine Banon de Provence Chevrotin des Aravis With this family of cheeses the wine must tame the acidity of milk. The wine must work with the texture of the fat and complexity of the flavours. Androuet confirms the well-known phrase – match local wines with cheese of the same origin, particularly very dry and fruity whites. Dry white wines from the Loire – include the smoky Pouilly Fume, Sancerre, Menetou-Salon, Quincy and Reuilly work well with the goats cheeses from the region. From Burgundy, try the lighter Aligoté, Saint-Véran, Macon villages and from the Alpine pastures the white wines of Savoie or lighter reds of the Loire – Bourgueil and Chinon. Bernard Antony’s particular favourites with these cheeses include wines closer to home including Riesling Vendange Tardive 2007 from Barmes Buecher, 2002 Brundlmayer Gruner Veltliner Kaferberg 2002 and Pinot Gris Grand Cru Osterberg 2016, Domaine Agape. In the conversation about terroir in spirits, rum arguably has a stronger position than most. There are numerous cane-to-bottle rums and many more with a credible claim to the dictionary definition of the term typically associated with wine. However, as is often true in the rum world, this isn’t an open and shut case. “Wherever unique spirits are found I think there is an opportunity to discuss the influence of terroir on the liquid,” Mitch Wilson, Black Tot Global Brand Ambassador, says. “How people interpret terroir in wine versus spirits is often different – wine terroir focuses on transmission of flavour from the land and the region into the final product. Spirits can be a much broader interpretation of terroir – here we often look at local ‘method’ and ’savoir-faire’ or know-how – how the local traditions together with production choices of the distiller and blender help to create a sense of identity in the final spirit.” Foursquare Master Distiller Richard Seale picks up the point: “Terroir is an interesting question in rum and you will get a different answer in different rum producing countries.” At the Barbados distillery, Seale ferments with added cultured yeasts in one section and pure cane juice natural fermentations in another. When it comes to the latter, Seale says “terroir in the traditional sense of the word is everything”. “The rum depends on the year of harvest, the time of harvest and the field from where it is harvested. It is 100% natural input. [There’s] not even a cultured yeast to give us some consistency or predictability,” he adds. Daniele Bondi, Export Manager at Hampden Estate's global distributor La Maison & Velier, is a staunch believer that terroir exists in rum and is perplexed by any arguments to the contrary. “I never understand when people think that spirits don’t preserve the characteristics of the fermented wash,” Bondi says. “Obviously, the terroir is respected and expressed only if the whole process of production is carefully preserved.” Wilson says sugarcane juice-based rums are undoubtedly the best examples of terroir in its “classical interpretation”. “Their flavour is almost entirely dependent on the local raw material used, and helps illustrate the vast array of differences between different genus of sugarcanes,” he explains. “Sugarcane juice is not easily transportable – when cane is crushed, the natural yeast on the outside of the cane is immediately brought into contact with the fermentable sugars in the juice, meaning fermentation happens spontaneously within a short period of time. This tends to encourage much more local distillation, often on the same estate where the cane is produced, allowing us to more easily focus on environmental terroir in these specific regions.” He says the fact rhum agricole, as well as their sugarcane-spirit cousins clairin and cachaça, are often found unaged means they are excellent examples of terroir. The purity of the raw material is preserved all the way through to distillation and ultimately glass. The climate of ageing has an enormous impact on terroir, according to Seale. He points to the fact a rum will age very differently in Martinique, which is approximately 140 miles away from his distillery in Barbados. Bondi says this crucial stage can negate terroir entirely. “If a product is aged far from the rest of the production, terroir doesn’t exist anymore.” This is something Dictador has played with in its 2 Masters series. Creative Director Ken Grier says rum, arguably, has a more diverse terroir influence than any other spirit category and this is about the influence of culture rather than soil. “Simplistically, the role of the original colonists has the biggest influence on rum production,” he explains. “The rhum agricole style found in ex-French colonies is derived from the juice of the sugarcane. In former British colonies like Jamaica the predominant style has been pot still, drawn from molasses. Ex-Spanish colonies have been more about column stills and finally Cuba is a tapestry of styles. Of any spirit, rum really reflects the history of the place where it is produced.” Sugarcane honey is used as the spirit base for Dictador. A blend of column and pot still rums are matured in oak casks on the coast by the Caribbean Sea. Grier says these factors all contribute to a particularly elegant, well-aged and complex rum. For the 2 Masters series, Dictador laid down between 10 and 20 casks with prestigious partners from the spirits and wine world. The rum was transported for maturation in the partners’ warehouses to benefit from their terroir, according to Grier. From there, the partners have the creative freedom to choose, in conversation with Dictador Master Blender Hernan Parra, which age and style of rum to use and what to do with it. These partners have included the likes of Glenfarclas, Royal Tokaji and Niepoort. The Royal Tokaji project, for example, took a 1977 rum and matured it in 12-year-old 300-litre Zemplen barrels for seven months in Hungary. These barrels had previously been used to age the producer’s 2016 Tokaji Aszu 6 Puttonyos.
 While there is a general consensus about ageing and sugarcane-juice rums, there is less accord when it comes to the role of molasses in the terroir conversation. “Molasses tends to be a fairly homogenous product,” Seale explains. “When discussing the contrasting styles of molasses rum from Barbados and Jamaica, the terroir element is more about the process and the know-how and less about the agricultural input. Much like a lot of Scotch whisky in that sense,” he explains. The decline of sugar production in many regions has understandably presented a problem when it comes to supply and demand. For this reason, many distilleries have resorted to importing their molasses. The same is true of grain in Scotch whisky production, which is often where the wheels come off in the debate around terroir in whisky. “It might be tempting to consider molasses-based rums as lacking a sense terroir (certainly in the wine sense), but this would be unfair,” Wilson says. “I’d be tempted to bet that given the opportunity to taste a line-up of single origin molasses from around the world that there would be enough variety to contribute to the idea of local terroir.” Ultimately, he says, it’s down to the producer at each stage of the production process to decide to what extent to allow the terroir to influence the final liquid. Rum: the raw deal

William Kelley, Wine Advocate First out of the gate is William Kelley, who has taken over covering Bordeaux from Lisa Perrotti-Brown MW at Wine Advocate. He was keen to emphasise his methodology – having spent three weeks visiting over 250 châteaux throughout Bordeaux, tasting many of the wines on multiple occasions.  Kelley acknowledges the many challenges the vignerons faced in 2021 and while he admits 2021 is not a great vintage overall for the reds, it has “produced several genuinely great wines, as well as many good to excellent wines that will deliver immense pleasure”. He compares the lower levels of alcohol and concentration to vintages from the 1990s, while at the same time noting how the wines have greatly benefited from today’s “agronomic progress and technical savoir faire”: “Were the 2021s transposed to the decade of the 1990s,” he says, “they would be considered the product of a superb vintage.” The cooler growing season produced “a great vintage for whites” that he believes are the finest set of dry whites since 2017. Kelley’s highlights: Haut-Brion, Margaux, Ausone, Lafleur, Cheval Blanc, Lafite-Rothschild, Latour, Léoville Las Cases, Les Carmes Haut-Brion, Laroque, Domaine de Chevalier Blanc and Palmer Read William Kelley’s full report on the vintage on the Wine Advocate Antonio Galloni, Vinous First up from team Vinous is Antonio Galloni who clearly loved the best wines of 2021, which he declares “a striking combination of old-school classicism and modern-day precision”. “The top properties turned out gorgeous, classically built wines that will absolutely thrill readers who appreciate freshness and energy,” he says. Of course, he cautions that quality isn’t consistent and selection is essential in the vintage.  He notes that it was those who could afford the significant labour required who excelled, while producers also benefitted from the experience of 2017 (for frost) and 2018 (for mildew), and better equipment and know-how in the winery is also a factor. He highlights that élevage will be key for the wines. Galloni feels it’s neither firmly a Left or Right Bank vintage, although finds a little more consistency on the Left, but perhaps greater highs on the Right. He’s one of several to note that the best white wines are “absolutely riveting” – combining the richness of a warm vintage with the freshness of a cooler year, with tiny yields of “compelling” sweets as well.  Galloni’s highlights: Beau-Séjour Bécot, Calon Ségur, Cheval Blanc, La Conseillante, L’Extravagant de Doisy-Daëne, Ducru-Beaucaillou, La Gaffelière, Les Carmes Haut-Brion, Les Perrières, Pichon Comtesse, Smith Haut Lafitte Blanc, Vieux Château Certan, Phélan Ségur, Léoville-Poyferré and Palmer Read Antonio Galloni’s full report on Vinous Jane Anson, Inside Bordeaux This is the first vintage for ex-Decanter critic and Bordeaux resident Jane Anson publishing on her own site, Inside Bordeaux. She highlights the variable success overall of the 2021 vintage, but notes that there remain a good number of estates that have produced excellent wines. From an appellation point of view, she feels Saint-Estèphe was “a high point”, noting the drier August helped with the “natural concentration” found in the wines there. She also notes that Saint-Emilion made “some of the best wines of the vintage”, with the clay limestone soils found in certain spots “probably the most well-placed terroir overall to resist the challenges of the year”. Her top wines however spread across all regions of Bordeaux. Ch. Haut-Brion Blanc garnered the highest score of 98 points, while Ch. La Mission Haut-Brion from Pessac-Léognan, Figeac from Saint-Emilion, Lafleur from Pomerol and Lafite from Pauillac all scored 97 points along with Ch. Margaux’s Pavillon Blanc. Anson has given earlier drinking windows than a normal year because, despite the high levels of tannins, she notes “the structure is delicate”, advising that “you need to start drinking these while the fruits are at their best”. Anson’s highlights: Haut-Brion Blanc, La Mission Haut-Brion, Pavillon Blanc du Ch. Margaux, Lafleur, Lafite-Rothschild, Latour, Figeac Read Jane Anson’s full report on Inside Bordeaux Neal Martin, Vinous In his detailed report, Neal Martin runs through a “complex and turbulent growing season” before laying out the consequences in the winery. He emphasises how stressful the season was for the region’s vignerons. Overall he feels it’s “a welcome return to a classic style of Bordeaux” – with lower alcohol and ripeness levels, with the finest wines that “transcend expectations”.  That said he notes that they are a result of their challenging growing season, and it’s not a year that will “rank with the greats”; he didn’t find perfection. He did, however, find wines that are “remarkable” given the year – “testament to the effort and skill of winemakers and vineyard teams”. He highlights “a bevy of outstanding dry whites” and that quality amongst the reds varies significantly between estates. While not declaring a drinking window firmly, he suggests the best “may well reward patience” – and will be “fascinating to watch evolve in bottle”. In distinct contrast to the warm years that preceded it, 2021 is, he says, “bejewelled with wines that will offer immense pleasure”. Martin’s highlights: Lafleur, Haut-Brion Blanc, Domaine de Chevalier Blanc, Cheval Blanc, La Mission Haut-Brion Blanc, Lafaurie-Peyraguey, De Fargues, Lafite-Rothschild, Pétrus, Calon-Ségur, Haut-Brion, Vieux Château Certan, La Conseillante, Figeac Read Neal Martin’s full report on Vinous James Suckling After tasting the last 39 vintages in Bordeaux, James Suckling struggles to find comparable year to 2021, such are the anomalies of the vintage. He is struck by the “bright and fresh acidity and relatively low alcohol of the wines”, making them easy to read, while also having an “immediate drinkability”. While he notes 2021 is a very heterogeneous vintage – and has produced significantly less structured wines than 2018, 2109 and 2020 – there are some “delicious”, “acid-driven” reds. He has found more consistency in the whites and proposes, “the sweet wines of Bordeaux may be the miracle of the harvest”. Made in miniscule quantities, what little there is is sure to outlive the dry wines that he proposes will drink well young. His top-rated pick is the Sauternes estate of Ch. Lafaurie-Peyraguey, awarding the only potential 100-point score of the vintage. His other top wines all come from Pomerol and are the blue-chip stalwarts of Pétrus, Le Pin and Lafleur, all scoring 98-99 points. The only other wine awarded 98-99 is Domaine de Chevalier’s white. Suckling’s highlights: Lafleur, Le Pin, Pétrus, Laufaurie-Peyraguey, Domaine de Chevalier Blanc Read James Suckling’s full report on the vintage on his website Lisa Perrotti-Brown MW, The Wine Independent Lisa Perrotti-Brown MW's 2021 Bordeaux report is the first for her new publication, The Wine Independent, launched earlier this year. Overall, she is more scathing than other critics, with some noticeably low scores across a much larger range (something that is intended to be a point of difference for The Wine Independent).She found the 2021 wines to be “variable”, with “dilution” and “under-ripeness omnipresent” but at their best are “refreshing, elegant, savory wines with lower alcohol and light to medium-bodied" with "well-sustained mid-palates and finishes”. She notes that it's a significant shift from recent vintages, which “may well be just what you are seeking. Or not.” She suggests drinkers who prefer lower-alcohol wines of vintages past may enjoy the lighter style of the vintage. Most notably, she believes the wines’ ability to age is lower than recent vintages and that most wines will reach their peak within 10 years. Where quality is at its highest, she believes low yields played a big factor in 2021. When drawing comparisons to similarly styled vintages, she likens the 2021 wines to 2013.  Looking at her top-rated wines, there seems to be a preference to the Right Bank with Ch. Ausone, Ch. Cheval Blanc and Ch. Lafleur all in her top band of scores (95-97 points). The white wines of Ch. Smith Haut Lafitte, Ch. Haut-Brion and Domaine de Chevalier also score highly, although she remarks that there were only a handful of whites in 2021 that really wowed her. Ch. Margaux is the highest scoring Left Bank red wine (also awarded 95-97 points). Perrotti-Brown’s highlights: Ausone, Cheval Blanc, Haut Brion Blanc, Smith Haut Lafitte Blanc, Margaux, Lafleur Read Lisa Perrotti-Brown MW's full report on The Wine Independent Georgie Hindle, Decanter This is Georgie Hindle’s first vintage as Decanter’s official Bordeaux correspondent, after Jane Anson vacated the role last year. Overall, Hindle classified 2021 as a 3.5/5 vintage for the red wines and 4.5/5 for the dry whites and sweets. The challenging growing season, she notes, produced red wines of variable, uneven quality, while the whites and sweet wines were better suited to the cooler conditions. Having said that, she notes there were some “incredible wines produced in 2021”. Her favourite wine from the Médoc was Ch. Lafite-Rothschild. She also praised Ch. Haut-Brion from Pessac-Léognan, Ch. Figeac from Saint-Emilion and Ch. Lafleur from Pomerol. Hindle awarded her highest scores of the vintage (97 points) to the white wines of Ch. Haut-Brion and Ch. Margaux’s Pavillon Blanc. She notes that the top red wines offer a “cool classicism” and are “refined, elegant and low alcohol”. While very different in character to recent modern vintages, she says the best red wines are “supremely balanced and pleasurable”. She adds that they are “characterful with crisp red fruits, refreshing acidities and silky, well-integrated tannins as well as expressive of terroir”. Georgie Hindle’s highlights: Ch. Haut-Brion, Ch. Lafleur, Ch. Lafite-Rothschild, Ch. Haut-Brion Blanc, and Pavillon Blanc du Ch. Margaux Read Georgie Hindle’s full report on Decanter's website Jeb Dunnuck Jeb Dunnuck’s 2021 Bordeaux en primeur report remains upbeat for the top wines of the vintage – declaring it a “challenging but good” vintage, although (besides 2013) he feels it “checks in substantially behind recent vintages”.  For Dunnuck, the top wines are elegant and “shine for their purity and finesse more than their power and richness”. He notes that the 2021s are “incredibly transparent and convey their terroir and winemaking clearly” – for better or worse. For Dunnuck, the Graves reds have a better mid-palate and a touch more density than other appellations, although he doesn’t feel one region outshone another. While he heard many winemakers compare the vintage to classic cooler vintages of the 1980s and ’90s, he finds these comparisons unhelpful, considering the changes in viticulture and winemaking over the last 20 years. While he struggles to find any modern comparison for the reds, he believes the vintage has similar weight and concentration to the likes of 2004, 2007, 2014 and 2017. Dunnuck declares it an excellent vintage for white and sweet wines and his top-rated wines include Smith Haut Lafitte Blanc,Domaine de Chevalier Blancand Pavillon Blanc du Ch. Margaux. Dunnuck’s highlights: Haut-Brion, Pavie, Margaux, Lafleur, Latour, Ducru Beaucaillou, Figeac, Domaine de Chevalier Blanc, Pavillon Blanc du Ch. Margaux and Les Champs Libres Read Jeb Dunnuck’s full report on the vintage Jeff Leve, The Wine Cellar Inside Jeff Leve’s Bordeaux report for The Wine Cellar Insider is largely positive – with the caveat that it is not a vintage for everyone. Lovers of classic Bordeaux (“classic in a good way”), he believes however, will find plenty to enjoy in the wines. He found many of the red wines to exude “freshness, salinity, crisp red fruits, refreshing acidities, and low alcohol levels”. While he found some of the wines “trail off in the middle” and had “dusty tannins”, the wines generally had great attack, and were not underripe but “crisp, fresh and often savoury”. He found 2021 to be a special vintage for white wines, describing them as “extraordinary”, with a “gorgeous sense of purity as well as crisp, biting acidities”. His top four wines were all whites, with Haut-Brion Blanc receiving his only 100-point score. Ch. Smith Haut Lafitte Blanc, Domaine de Chevalier Blanc and la Mission Haut-Brion Blanc were awarded 98 points. His top reds were Ch. Ausone, Lafite, Lafleur, Latour, Cheval Blanc and Margaux, all receiving 97 points. Yet the region’s rise to international fame as Italy’s finest wine was intrinsically linked to the political role that the Piedmont Kingdom played in the unification of Italy. Nebbiolo as Italy’s first single-varietal wine The decision to move away from the generic field blends more typical of wine production in Italy at the time, to a single varietal Nebbiolo, was the first step towards Barolo gaining prominence. This decision also came about through aristocratic influence by the Piedmont nobility at the height of its power, prior to the unification of Italy in 1861. In the 1830s the Marchesi de Barolo married a French aristocrat who as part of her entourage brought with her a talented French oenologist, who after experimenting with many French varietals in the region quickly identified the potential of the indigenous Nebbiolo as a potential single varietal superstar! This French oenologist started to produce single-varietal Nebbiolo on the Marchesi de Barolo’s vineyards and it wasn’t long before the wines gained a reputation amongst the aristocratic classes. The King of Piedmont contacted the Marchesi requesting to taste this wine made from just Nebbiolo that everyone was talking about. The King became a huge fan of the wines and it wasn’t long before the Marchesi was sending 365 barrels of Nebbiolo
to the King for him and his courts to enjoy throughout the year. From then on Nebbiolo as a single varietal had begun to secure its place in fine wine history. The establishment of Barolo It wasn’t long before the King purchased his own wine estate in Barolo, which now exists under the ownership of Frescabaldi. The Piedmont kingdom was the conquering force in the unification of Italy along with the help of the French army that finally conquered the Spanish rule of Sicily and southern Italy and eventually Rome leaving just the Vatican and the Pope isolated from the rest of the newly
declared unified state of Italy in 1861. Amazingly there was no diplomatic relationship between the Vatican State and the Italian government until Mussolini reached out to them in 1932. The power of the Piedmont kingdom and its role in the unification of Italy meant that Barolo retained its status with the aristocratic elites of Italy and beyond and became known as the premium wine-producing region of the newly declared country. Its prominence and reputation remained ever since. The Barolo region became renowned throughout the country and Nebbiolo took its crown as the king of Italian wine. Barolo following the unification became more and more established with merchants moving in to seize the opportunity of this prestigious and unique Italian wine. At this time, apart from the noble families (Marchesi Di Barolo, Rinaldi, Bourgogno) all the
rest of the Barolo wines were bottled in Alba under merchant’s labels. Alba, much like Bordeaux, became a thriving merchants hub and the wine began to be exported overseas. Barbaresco: the unfortunate struggling sibling to Barolo History is full of cruel twists and the development of Barbaresco for much of the 19th and 20th centuries was a struggle for survival, unlike their more established neighbour Barolo - with its royal seal of approval. Today Barbaresco is being seen very much as Barolo’s equal but its survival is in no doubt down to two central figures of the region Gaja and the Produttori Di Barbaresco. 
The history of Gaja of Barbaresco The history of Gaja is extraordinary and singular in its rise to fame in the region and is a testament to the foresight of Giovanni Gaja and his son and French wife Clothide Rey. The Gaja family were not nobility but farmers, yet they became the first to bottle their own wine in Barbaresco in 1859. This became possible because the family owned a small tavern in the town which catered for the merchants that passed through Barbaresco as it was an active Port, distributing goods. At the tavern, the Gaja family used to make their wine and serve them from jars at the restaurant. At that time all other growers would sell their grapes to merchants in Alba to make wine.  Buoyed by the income of selling their own wines at their tavern Giovanni Gaja in 1859 then decided to bottle his best barrels in bottle (at this time this was often a blend of vintages). But these became the first Barbarescos ever to be bottled as Barbaresco. The family became further governed by quality when Angelo Gaja and his wife Clothide Rey took over from
his father. Their qualitative approach philosophy in a region that at the time was so underdeveloped is extraordinary. The family’s motto – fair, savoir faire, savoir faire faire et faire saviour (Work, knowledge, motivating others to work and passing on knowledge) has not faltered right up until today.  1958 was an important date for the Gaja family because this was recognised in Barolo as a fantastic vintage and it became the first vintage of Barolo to sell for over a 1,000 lira a bottle. The average price at the time for the best producers (such as Renato Ratti) was closer to 300 lira. This 1,000 lira price tag therefore became a big deal and was the beginning of Barolo
becoming recognised internationally as one of the world’s finest and most expensive wines. Yet despite this high price tag of Barolo, Giovanni Gaja was selling his current Barbaresco release at this time for 1,200 lira! This just showed the Barbaresco from Gaja even in those early days was outpricing the best wines of Barolo. The history of the Produttori del Barberesco The history of Barbaresco outside of the extraordinary success of Gaja was a lot less smooth. Through this period the region remained largely unknown for wine production despite successfully growing Nebbiolo like its neighbour Barolo and being home to the region’s best producer Gaja. However, there is another unique and profound development that took place in Barbaresco that also has shaped the region as one of Italy’s finest wine-producing regions for single varietal Nebbiolo that unlike Barolo did not rely on the aristocratic influence for its rise to fame. If anything, Barbaresco’s rise to fame, including Gaja’s development was the success of the
workers of the land rather than nobility. This came in the form of the socialist collective that started to bottle its own wine in Barbaresco under the Produttori Di Barberesco label.  Speaking with Aldo Vacca, today’s chief winemaker at the co-op it was a man called Dominizio Cavazza who was become known as the Father of Barbaresco. He moved to the region when he got a job working as the Director of the Wine School of Alba in 1890.  He immediately saw the potential of Barbaresco as a fine wine region and whilst he had no land, he knew if he could persuade the small landowners to compile their crops, he could make a fine wine that they could bottle and sell themselves rather than selling their crop to
the Alba merchants. By 1894 he had managed to persuade five farmers and two
landowners to contribute the crop and the cooperative was formed. At this time socialism was taking hold in many parts of Europe enabling small landowners to work together to enable them to manage their own produce without relying on the aristocratic landowners. Prior to the Bolshevik revolution in Russia in 1917, these socialist projects in Western Europe were seen as a very positive social development and was transforming the social structure across the region. Initially Cavazza believed that Barbaresco should be incorporated as part of the Barolo District but as Barolo by this time was already well established, thanks to its aristocratic ties, the Barolo producers had no interest in extending their boundaries. This decision in itself was to have a devastating impact on Barbaresco for the next 50 years. Whilst the cooperative became very successful in the early years, the First World War followed by economic hardship and the rise of fascism in Italy which actively shut down cooperatives in Europe, saw the Produttori cease to exist.  It wasn’t until 1954 that the co-operative project was reborn by the local priest – Don Fiorino, who on moving to the region heard about the early success of Cavazza and wanted to rekindle this success. For the priest the cooperative was essential in the survival of the local community that unlike Barolo was decimated by poverty and hardship through the first half of the 20th century. The 1950s saw the industrial boom in Italian cities which saw huge swathes of the countryside deserted as young men and women flocked to the cities for better wages in the automobile and other industries. To encourage people to stay in Barbaresco, Don Fiorino reopened the cooperative promising any landowners who joined him that they would be given fair and
reliable income if they stayed and worked the land. Dom Fiorino’s foresight was to be commended as ever since it opened the co-op has gone from strength to strength. Similar to Gaja, it is due to a strict qualitative approach that has meant this co-op is today producing arguably the world’s finished wines from a cooperative. These days, thanks to Gaja and Produttori, Barbaresco is producing some of Italy’s finest wines. Explore more Editorial

The historic rise of Nebbiolo

It’s often noted that Burgundians know nothing about Bordeaux and its wines – and vice versa. This is an exaggeration, though it retains a nugget of truth. These two great French wine regions are poles apart culturally. This is not a novel observation. Indeed, Jean-Robert Pitte, a professor at the Sorbonne, wrote an entire book, Bordeaux Bourgogne: Histoire d’une rivalité (2016), on this very theme. Just a couple of examples. In Bordeaux you will encounter people with names such as Basile, Vanessa, Diana or Jennifer – that would be inconceivable in Burgundy. This may be to do with the fact that Aquitaine was English-owned for centuries, or it may be that some Bordelais believe that an English name confers a certain cachet. At celebrations organized by the Chevaliers du Tastevin at Clos de Vougeot, and just about anywhere where Burgundy’s wines are praised and consumed, the ban bourguignon is an unavoidable part of the proceedings. It entails raising both arms in the air and twisting them in time to a raucous ditty with the words ‘Lala, lala, lalalala layla, lala, lala, la, la, la’. Can you imagine such a thing at Haut-Brion? Another striking difference is that Burgundy excludes, while Bordeaux includes, at least in terms of embracing those it considers helpful to its promotion, such as merchants, auctioneers and journalists. I have visited Burgundy and its growers every year for over three decades and can count on the fingers of two hands the number of times I have been invited to stay for lunch, let alone dinner. Without fail, a 10.30am appointment will come to an end at noon, and the visitor will be politely shown the door. Hungry after a morning of tastings? That’s your problem, monsieur. I used to find this irksome but soon came to understand that for the Burgundian, noon is the time when family members return to the homestead from pruning or tractoring or delivering bottles. It’s the sacred lunch hour, and outsiders have no place. You can taste from every barrel in the cellar, but that hospitality doesn’t extend to the dining room. It’s the exact opposite in Bordeaux, where it’s assumed that a visitor with a late-morning appointment will stay for lunch. Indeed, when researching one of my books in Saint-Emilion, I was amazed to find that my programme, organised with enthusiasm by the local syndicat, included lunch and dinner every day, weekends included. The Bordeaux proprietor will usually use the occasion not just to offer a fine meal, but to open some older vintages for the delectation of the visitor. The Burgundian really couldn’t care less. On one occasion, a grower with whom I spent a morning to research a profile for a magazine, had suggested, when I made the appointment, that I might like to stay for lunch. With pleasure, I responded, hoping that a mature Richebourg might be brought up from the cellar for my appreciation. But sur place, when I had completed my interview, it was clear that the owner had completely forgotten his offer. (However, after an embarrassing few minutes all around, his wife did rustle up a rather good meal.) Born to be hospitable Burgundy’s wine culture is about the nuances of terroir; Bordeaux is about selling wine that’s produced in far larger quantities than from patchwork Burgundy, and all those who can serve that purpose are corralled into a network of hospitality. A lunch will always take the same form. Coats and bags are deposited in the hallway of the château and one is led into a salon, where a small table supports a bottle of Champagne (often Pol Roger, sometimes Bollinger) and some glasses.  In comes the butler or maid (often on hire from the local traiteur, or caterer) with a plate of gougères or roundels of toast with foie gras to stimulate the appetite. Then the host rises to his (and occasionally her) feet and leads the way into the dining room. Lunch is invariably a butler-service event, so guests must calculate how much meat or veg to convey onto one’s plate without either appearing greedy or depriving others of their fair share. The dishes are always replenished, however, so seconds are in order. No need to panic. If the aim is to impress, it usually succeeds. In contrast, the Burgundians en fête are after a good time. Other than the rather forced jollity of the Chevaliers du Tastevin dinners, usually accompanied by indifferent wines, the highlight of the Burgundian wine calendar is the Paulée de Meursault (other paulées are available, but all agree that Meursault does it best). This is in effect a giant bottle party. Each producer, who may be accompanied by family or guests, will bring a basket stacked with a few bottles or magnums of a venerable or prized vintage. These will be poured and later circulated in the course of a five-hour lunch. Those lucky enough to attend can often taste spectacular rarities. This is not the Bordeaux way. At a formal dinner, for example during the en primeur tastings or Vinexpo, invited merchants or journalists will find themselves at a large round table in the company of two or three château owners or winemakers. They will have brought bottles – often very fine bottles – that will, in due course, be delivered to your table. There’s a certain amount of swapping with other tables to provide more variety, and certain journalists, towards the end of the evening, will be seen roving the room in search of wines to try on distant tables. (I plead guilty.) Here again, the aim is to impress. Brigades of waiters and waitresses, quite often students from a local catering college, will swoop in from the kitchen with such efficiency that a few hundred guests can be served almost simultaneously. Moreover, the food will usually be excellent, provided by one of the many highly professional traiteurs who flourish in Bordeaux. Access is the name of the game. The privileged guest, sipping Champagne or Sauternes during the prolonged apéritif hour before a grand Bordeaux dinner, will be in the company of dozens of château owners. Reach out a hand, even to someone you’ve never seen before but vaguely recognize, and it will instantly be shaken: ‘Bonsoir, monsieur.’ Everyone present is within the magic circle. You have been appointed, like it or not, as an ambassador for Bordeaux. Over 20 years ago I was present, along with 400 other guests, at the Fête des Vendanges, a great feast organized each year before the harvest by a leading château. I could see from the menu that 1985 Haut-Brion was to be the final wine of the evening, but what I hadn’t anticipated was that it was to be served in magnums only. Moreover, on a very warm evening each magnum had been lightly chilled before serving to ensure that it would retain
its freshness and digestibility in the glass. Other blandishments include guests of honour who are often prima donnas or celebrated actresses. Who wouldn’t want to be around when, as once happened, Gina Lollobrigida was escorted between the tables by the château owner? These feats of generosity, glamour and service are to be observed at all such events in Bordeaux. If you’re lucky enough to be present, it’s hard not to experience a wave of self-satisfaction. This warm embrace of the wine trade is not extended to mere consumers, of course. Although châteaux are more open to visitors than they were in the past, most wine tourists making their way up the roads that connect Margaux to Saint-Julien and Pauillac are confronted by closed gates or notices that read ‘by appointment only’. Some 25 years ago a delegation of Bordeaux worthies came to London to ask friendly journalists (over a good lunch, of course) what they could do improve the image of their region. ‘Try opening your gates,’ was my suggestion, and it did not go down particularly well. Fees, factotums and fixers Oeno-tourism has been slow to come to Bordeaux. Showcase châteaux such as Pavie, Smith Haut Lafitte or Lynch-Bages have become adept at offering tours and tastings, though at a price. A fee is understandable, as the cost of staffing the tours and the wines to be poured needs to be recouped. Napa does it differently. Visitors are courted, and the customary tasting fee will be refunded if you buy a bottle or two. In Australia, the ‘cellar door’ is always open for visitors to enjoy the wines and other merchandising. However, in Bordeaux, most prestigious châteaux make little effort to welcome visitors.  In Burgundy, top growers sell to a band of importers and perhaps a few private customers and restaurants. In Bordeaux, châteaux sell to négociants, who distribute their wines worldwide. Châteaux have no direct influence over who sells or buys their wines. That’s why it’s important to have influential writers and critics on their side. A high score from a wine guru may just persuade a group of merchants or consumers to buy Château X in preference to Château Y. And the other way around the following year. No wonder top châteaux treat the media with affection and respect. Consultants, too, form part of the hype machine. They are rarely present in Burgundy, where savoir-faire is passed down (not always successfully) from one generation to the next. But in regions such as Tuscany or Bordeaux, where estate owners are often rich and enthusiastic but short on expertise, the consultant is an essential member of the team. Nothing wrong with hiring good advice, of course. But choosing the right consultant also adds lustre to the estate. In Italy, take on Carlo Ferrini or Riccardo Cotarella and you can be certain, at the very least, of media attention. In Bordeaux, the consultant is more than an adviser on viticulture or vinification, suggesting how high your canopy should be or which coopers are best suited to your style of wine. They have influence too. Michel Rolland, notoriously, had the ear of Robert Parker for many years. This was perfectly understandable because, broadly speaking, they liked the same style of wine. I once asked a château owner with a group of properties why he had chosen a particular consultant rather than another of similar renown. ‘He’s good at what he does,’ was the reply, ‘but he also has a track record of getting his clients’ wines onto airline lists.’ Many of the older generation of consultants were invisible. In decades of visits to Bordeaux, I never encountered Jacques Boissenot, who advised most of the top estates of the Médoc, or Gilles Pauquet in Saint-Emilion. Others, such as Stéphane Derenoncourt, court importers and the press assiduously, with regular tastings that provide a showcase for all their clients. Wine writers like, for sound reasons, to be on close terms with consultants such as Derenoncourt, as they can be invaluable sources of information. Save time and score it? Admission to the magic circle of Bordeaux carries its own risks. I doubt there is much corruption as such – no wine writer of any importance would, I assume, be foolish enough to accept backhanders in exchange for favourable ratings – but what has happened is that independent assessment has been almost abandoned. And there are stories of bribes, often in the form of a few cases of wine, being offered. Newly minted bloggers would be particularly susceptible to a helping hand. Back in the 1980s or even 1990s revered critics such as Robert Parker would not hesitate to give a poor score to a wine he considered below standard. These days a poor score has become close to inconceivable. A score below 90 has become the equivalent of a smack in the face. In an article some years ago I predicted the scores that the major critics would give the 2014 vintage when, a few months later, the wines became available for tasting En Primeur.  My educated guesses, made without tasting a single wine, were alarmingly accurate. That, simply put, is because critics now score the brand and not the wine. No one is going to rate a first growth or scarce Pomerol at below 96; likewise, no obscure fifth growth or Côte de Bordeaux red, however fine, will ever be scored at 93 or higher. Bordeaux has succeeded in imposing its own self-valuations on its critics. Price has become equated with quality, as has been the case since the 18th century. This is why new owners of certain properties relentlessly push up their prices, because this is the best way to confer prestige on the wines. For Bordeaux as a whole, it may be a costly business organizing lavish dinners with superlative vintages, but it has paid off in establishing a group of wines as safely within the band of the world’s most appreciated and sought-after. For the wine critic, it’s a tricky balance. Without access, an article or vintage assessment becomes impossible. I am not immune. To research my own publications on Bordeaux, I have accepted offers to stay at comfortable châteaux for extended periods. I do my best not to let my judgment be swayed by this quid pro quo (which I disclose), but one can never be certain. Schmooze or you lose? It’s not only the wine press that is courted and pampered. Top châteaux will lay on lavish feasts for négociants and brokers too. Corinne Mentzelopoulos of Château Margaux once described such events as a way of thanking the Bordeaux wine trade for their success in selling her wines (not an arduous task, I would have thought). She intimated that it was also a way of keeping the trade on her side. Selling top claret in a great vintage is a doddle (except when grotesquely overpriced); selling the same label in a mediocre year such as 2013 is another matter. Maintaining brand loyalty – to Brand Bordeaux and individual châteaux – is crucial. By 2020 the region was having to face the threat of USA tariffs, the cold shoulder from China, the uncertainties of Brexit for the important British market, not to mention the growing climatic vagaries bringing drought, frost and hail in their wake.  Other challenges are stylistic rather than economic. A colleague who is involved in assessing the wine lists of top restaurants worldwide notes that there are a growing number of such lists that ostentatiously scorn Bordeaux in favour of, usually, ‘natural’ or other styles considered trendy. This is sommelier-driven, and Bordeaux producers and merchants are not always aware of how old-fashioned and stuffy their offerings appear to sommeliers (and their clients) in search of novelty rather than reliability. It’s hard for individual châteaux to promote their wines worldwide since they don’t know precisely who is buying their superb wines. In contrast, their Napa Valley equivalents stage auctions and other events targeted very precisely at super-rich clients and social media. Australia has its highly regarded agricultural shows, awarding medals that confer more prestige than most medals from wine competitions.  Bordeaux doesn’t have such marketing opportunities at its disposal, which is why generic marketing campaigns, prestigious tasting events, and the assiduous wooing of the media are such necessary tools. Whether they will continue to be effective as they have been in the past is undoubtedly open to question. Louis XIII has been adored by dignitaries, royalty and the glitterati throughout its near 150-year history. Everything about it, from the grapes to the glass, is of the highest quality. It has been present at some of the most momentous occasions in modern history – served at European royal courts, poured on the maiden voyage of the SS Normandie and Concorde, and quaffed by Agatha Christie on the Orient Express. It has been a favourite of Prime Ministers and dabbed on the wrists of fashion icon Coco Chanel. So what is it about this Cognac that has captured the hearts and minds of so many influential people throughout history? Working from the outside in, Louis XIII is housed in an instantly recognisable Baccarat crystal decanter. Each one is crafted by hand and no two are the same. It comes in a number of formats, from the miniature 5cl to the six-litre Mathusalem. Few bottles look as exquisite or capture the light like the spiked vessel that wouldn’t look out of place in a gallery. The decanter is fashioned after a carafe that was unearthed on a 16th century battleground. Rémy Martin founder Paul-Emile Rémy Martin decided to model his Cognac bottle on the one that was exhumed because he was so taken with the design. This was quite a radical move at the time as Cognac was historically sold by the barrel. The decision paid off as the decanter has since become an international standard for quality and many have attempted to mimic its design. There are numerous nods to history and Louis XIII’s royal namesake on the handblown decanter, including the 20-carat gold neck and handmade fleur-de-lis stopper. It takes a minimum two weeks’ craftmanship to produce a single decanter. This, however, is a mere fraction of the time it takes to produce the remarkable liquid within. Only the finest grapes from the Grande Champagne region are selected to one day become Louis XIII. Each decanter contains approximately 1,200 eaux de vie, distilled on lees, and aged for up to 100 years in traditional Limousin oak casks called tierçons that are over one century old. It’s no exaggeration to say Louis XIII is the work of a Cellar Master’s lifetime. Baptiste Loiseau became only the seventh person to hold the role – and the youngest in the Cognac house’s history – when he took up the mantle in 2014, at just 34 years of age. Despite all the advancements that have occurred throughout Rémy Martin’s history, it is no easier today than it was all those centuries ago for the Cellar Master to know if the decisions he or she makes will affect Louis XIII’s end taste profile. It is Loiseau’s role to ensure these aromas are the same in a century’s time – something that is becoming ever-more difficult in a changing climate with tools that are disappearing before his very eyes. The tierçons, named as such because Rémy Martin’s Cognac used to be transported in barrels of three on a horse-drawn carriage, are crucial to the history and taste profile of Louis XIII. There are tierçons in the depths of the Rémy Martin cellar that date back to 1744 – 20 years after Martin started producing Cognac under his own name. For a long time, the art of coopering these 550-litre tierçons was lost to the ages, as none was produced after 1917. This has become increasingly problematic over the past 20 years as the number of tierçons started to dwindle as one is sacrificed when another needs repairing. In 2012, then Cellar Master Pierrette Trichet made the bold decision to start this age-old tierçon coopering practice again, for fear there might not be any left for generations to come. This project to resurrect the art and safeguard the future of Louis XIII took years to master. The Rémy Martin team enlisted the help of various experts in their field to recreate a tierçon that was faithful to the ones produced in the 18th century. A tierçon must be made from a Limousin oak tree that is up to 180 years old. Once felled, the oak needs to be split and air-dried for a minimum of three years. The new tierçon is then filled with new eaux de vie to mature before it is ready to be filled with the eaux de vie that is one day destined to become Louis XIII. Even after creating countless prototypes, it’s impossible to know exactly how the resulting liquid will taste when it’s ready to bottle in almost a century’s time. From the grapes, to the maturation vessels, and decanter, everything about Louis XIII is rich in history and savoir faire. The world around might change, but there is some comfort in knowing that the "king of Cognacs" in your decanter – or better yet, rocks glass – is as fine as the liquid dabbed on the wrists of Coco Chanel and imbibed by the statesmen and dignitaries of their respective times. Louis XIII: the making of an icon

I was hesitant about meeting Ivan Massonnat. The man who created Domaine Belargus seemed to fill easy stereotypes. A background in private equity. Lived in Paris. A passion for wine – and a dream to make it himself. Big scores and some pretty punchy prices for a brand-new estate from the Loire. Reading between the lines, I feared there was a lot of cash and possibly too much polish. Thankfully, I was wrong.  Created in 2018 and based in Anjou, Domaine Belargus has rapidly become one of fine wine’s hottest new names. The first wines were released in 2021, in the midst of the global pandemic, but had already earned serious acclaim. Yohan Castaing wrote in Decanter, “Remember this name, as its production should meet with resounding critical success in the coming years.” The wines received glowing reviews in Wine Spectator and the Wine Advocate – where Stephan Reinhardt declared it “one of the most spectacular new entries in the history of [the publication]”, granting a coveted 100-point score for its 2018 Quarts de Chaume Ultra. But that was just the beginning. Ivan Massonnat is a man with big plans – both for his own wines, and the region as a whole.  Wine was a part of life for Massonnat from a young age – with his grandfather farming a small vineyard in their village in the Savoie. But, despite helping at harvest time each year, he didn’t end up drinking wine until he was 20, when he was “instantly hooked”, he says. He fell in love with Burgundy and the concept of “vin de lieu” – wine of place.  Massonnat made his money in private equity, based in Paris but travelling the world, where fine dining – and fine wine lists – only fed his terroir obsession. Two decades ago he was looking for a country house for his family, and – not having a car – settled on the Loire. “The more I was spending time there, the more I realised that the region was totally misunderstood,” he says. Prior to the upheaval of the French Revolution and the subsequent arrival of mildew and phylloxera, the Loire was one of France’s most prestigious wine regions – home to the nation’s kings, the fruit of its vines were the royal court’s natural choice. Post-phylloxera, however, quality was scrapped in favour of quantity. “Its image started to blur,” says Massonnat.  Combine the region’s history with its two great, native varieties – Chenin Blanc and Cabernet Franc – and Massonnat saw “an incredible diamond in the rough”. Wine had become an increasingly large part of his life – tasting widely and visiting producers as much as possible, especially in Burgundy where vignerons such as Philippe Pacalet and Thibault Liger-Belair friends and mentors. But it wasn’t just a hobby – Massonnat was starting to think this could be more, the adventure that lay beyond the world of finance.  As the adage goes, the world of wine is a brilliant way to make a small fortune – provided you start out with a large one. Massonnat, however, didn’t underestimate the challenges and set about getting to grips with the mechanics of the business. “It started really to become a project 10 years ago,” he says – talking to importers, consultants, journalists and merchants. And, perhaps unsurprisingly given his successful career, Massonnat wasn’t looking to make any wine – he was determined to create something exceptional.  After a failed attempt to buy a Chinon estate in 2015, he turned his attention to great Chenin Blanc sites in Anjou Noir, between the Layon and Loire rivers – low-yielding hillsides where producers were struggling to make money and consequently there was land to buy. More than just availability, it was here that Massonnat saw great potential. The area’s dark, schist soils (cause for the “noir” in the region’s name) were littered with tiny appellations, echoing those of Burgundy, with a much hillier landscape, and the only Premier and Grand Cru vineyards in the region.  Between 2016 and 2018, Massonnat started visiting every vineyard he could find – looking for the exceptional. Then the local winemaker Patrick Baudouin introduced him to Jo Pithon – a legend of the Loire. Pithon had been making wine since 1978, a pioneer of organic farming, crafting fine dry and sweet wines – but the talented vigneron was by no means a businessman. By the early 2000s, his lack of commercial knowhow lost him the rights to his name, along with the majority of his vineyards – all but one plot, the Coteau des Treilles.  Massonnat met Pithon at the Angers wine fair in 2018; they got on well enough and he arranged to see Pithon’s vineyards the following day. The next morning, it was snowing and he regretted his decision . But then, at 8.32am on 6th February 2018, “It’s as if I was struck by lightning,” Massonnat says. Pithon had brought him to Coteau des Treilles. Long farmed organically, it has slopes at a gradient of 70%, embedded in a natural reserve, with a Mediterranean microclimate – and Massonnat knew instantly it was what he had been looking for. He bought the Pithon-Paillé operation that Jo Pithon had created a decade earlier.  Luck continued to be on Massonnat’s side – and he bought two other vineyards over the next six months, adding to his collection of prime sites. He managed to buy a quarter of the Quarts de Chaume appellation – the only Grand Cru vineyards in the region – which amazingly had been on the market for 10 years. “Nobody wanted to buy it… They were looking at it as a sweet wine terroir. But actually, a great terroir is a great terroir… you will do dry wines that are quite exceptional,” Massonnat explains. Then he snapped up a parcel in Savennières – the only plot to have been sold in the last seven years.  He hired a young team and Pithon stayed on to consult – and the real work began. “Belargus is a 100-year project. Everything we do, we have that horizon,” Massonnat says. The vines are all organically certified, but they’re now working towards biodynamic accreditation. Yields are low, and they’re trying gradually to increase them to around 35hl/ha in a good vintage (currently the highest they’ve managed is 29hl/ha). “Our obsession is to have the right maturity,” Massonnat explains. To battle Chenin Blanc’s natural heterogeneity, they pick in multiple passes, minimum two or three but up to six, depending on the year – and that is just for the dry wines. The general approach is minimalist – with stainless steel and mainly larger, old oak, indigenous yeast, letting malolactic fermentation happen (or not), keeping wines on the lees and using only essential levels of sulphur. A new winery is being planned to take things to the next level, with, for example, a Coquard press (allowing especially gentle pressing, commonly used in Champagne).  The project is about expressing the different terroirs of this corner of Anjou Noir. The first release (which sold almost instantly given the hype from the critics, with 80% exported) consisted of 14 cuvées – nine dry wines and five sweet, focusing on nine specific plots across the estate’s vineyards. The dry wines are powerful, tightly wound and intense – as Massonnat says, “It’s not wine for every day,” comparing them to white Hermitage or Corton-Charlemagne, wines that need food and time. Although 90% of production is dry, Massonnat confesses, “We are obsessed with sweet wines.” These, he feels, are what will really set Anjou Noir on the world stage – if, perhaps, what he calls “the sugar pandemic” ever stops.   With Massonnat’s finance background comes a flexibility that few others have. He hopes to hold all the wines back four years eventually, but for now it is between three and four – and he was able to release the 2020s before the exceptional 2019s. It also allowed him to set prices unusually high compared to his neighbours. “I had the luxury to make that choice for the region,” he explains. “I wanted to break the glass ceiling.” And although he thought it would take time – his first release proved that there were plenty of people ready to snap up the value that these wines offered, including many of those now priced out of Burgundy.  And this is his real dream – for the Loire to be recognised as Burgundy is, as “a tier-one region which any collector needs to have in its cellar, that needs to be understood”. It’s easy to imagine other producers might have bristled at an outsider’s arrival, pitching their very first wines at unheard-of prices; but Massonnat is intent on leading the crusade for the entire region, not just Domaine Belargus. He volunteered to run the Paulée d’Anjou – a celebration of the region’s wines – in 2019, and made it bigger and better. In 2021, he became co-president of the Quarts de Chaume appellation, alongside Marie Guégniard from Domaine de la Bergerie. Together they are fighting for the appellation to permit both dry and sweet wines, as Savennières technically can, and Quarts de Chaume could until 1996. “Anjou was a dirty word. And look at the revolution now,” he says.  Like the precious blue butterfly that gives its name to the Belargus estate, Massonnat isn’t happy sitting still – and he’s already got another project – having had the chance to buy the Chinon estate he’d originally had his eye on in 2015. The best wine he ever tasted was a Chinon, a 1989 from Charles Joguet. “There was a whole civilisation in this wine,” he told me, trying to explain how moving the experience had been. Serge Valentin has been one of the few truly independent voices in the Scotch whisky world since the early 2000s. For two decades and counting, the Alsace-native has published his tasting notes and scores to an astoundingly large and loyal audience with his characteristically good humour and impartiality in what can be a deafening echo chamber.   Despite being one of the most well-respected authorities in the industry, Valentin has always written about whisky in his spare time, very much considering it a pastime that he dabbles in for fun. This is somewhat of a surprise, given the many people who part with thousands of pounds based on his views alone.  “Contrary to what many believe, I’ve never been a pro and have never actually worked in whisky,” the jaunty Valentin is quick to tell me. “It is all a kind of super-hobby to me and if you ever see me doing gigs, for example at whisky festivals, it is always for free, for fun and for friends.”   Valentin’s “proper work”, as he calls it, is in advertising and marketing, where he owns two agencies which employ around 2,000 people. These agencies, he says glibly, are “supposed to pay for my whiskies…luckily, they do”. It was a very different landscape when Valentin started writing about Scotch in 2002. Single malts had been marketed for 30-plus years but there wasn’t the seemingly insatiable demand and record-breaking prices that are commonplace today. It all began when Valentin, armed with bottles of his favourite Old Clynelish and Brora, sat down and shared his musings on his aptly named website WhiskyFun. This wasn’t a vanity project or a vehicle for freebies, this was a man writing about the whiskies he loved, just because he wanted to. From humble beginnings, WhiskyFun has become one of the most well-respected hubs for commentary on Scotch. Valentin follows a 100-point scoring system, like some of the great critics in the world of wine. For Valentin, however, 80/100 is a good score. His methodology is largely unchanged. He will spend an average of 30 minutes tasting a whisky (he does, on occasion, score rums and other spirits) – this can increase up to an hour if it’s a “good one” and take nearer 10 minutes if it is a “bad one”. He always compares several similar spirits, almost always from the same distillery, and never scores “out of the blue”. He tastes “alone, using the same parameters” (place, time of day, glassware, water etc.) and always writes as he tries, and then publishes once a day.  His write-ups are always short, honest, and unmistakably him. After all these years, it’s dumbfounding that he has the time or inclination to produce the near-constant stream of reviews that appear on his website.    It’s fascinating to see which liquids he scores – and, sometimes more intriguingly, the ones he doesn’t. “The choices rather depend on what I get and what I source, but my sample library is much larger than my tasting capacity,” he explains.   This all started as a passion project for Valentin and it’s abundantly clear that that fire burns just as bright today. He never takes himself too seriously and is evidently ill at ease with any comparison between himself and the greatly respected critics in the world of wine.    This is, in part, because the role of a critic in spirits is nowhere near as established as it is in wine. There are leading voices in the Scotch whisky world who undoubtedly carry considerable clout, but they aren’t critics in the traditional sense. While they might be prolific in their output and have seemingly healthy book retainers, they rarely score spirits and if they do, their tasting notes will be almost entirely positive (often because they are in a producer’s employ). The closest the spirits world has to a Robert Parker or Jancis Robinson MW is probably Valentin – although, he wouldn’t agree.   “I would say the roles are more and more the same in wine and spirits,” Valentin says, “even if there are fewer actual ‘critics’ in spirits. But it is coming in whisky.”  Valentin does feel there is a need for scores in collectable spirits, as – like wine – there isn’t always the opportunity for people to try before they buy. But the issue is not black and white, as is true of many things Valentin and I discuss.   “I see that scores [in whisky] become more like stock market recommendations these days,” he says.“I’m not too happy about that but that wouldn’t be the case if spirits, especially whisky, had remained a reasonably priced commodity,” he says, before adding: “But the cardinal sins are what they are.” It’s clear whisky drinkers respect Valentin’s voice, as they flock to his site in droves. What’s less clear, however – as an outsider looking in – is how producers feel about Valentin’s refusal to kowtow and sugar-coat his reviews.  “Producers have never quite known how to deal with independent voices,” he explains. “In general, they prefer influencers that they can pay and control, even if their audiences are smaller and less ‘on target’,” he adds, “for which I can’t blame them. Fortunately,” he continues, “not all distillers are the same. Some corporations are smarter than others and that often depends on the people within.”   When asked why he thinks people return to his site, which doesn’t have any of the bells and whistles you might expect from an ad man and is as no-frills today as it was two decades ago, Valentin says, as self-deprecatingly as ever: “I’m not really aware of everything that’s happening in the reviewing landscape, I have to say. If indeed people keep coming back to my assessment, that’s partly, I believe, because I started early and simply because they trust me. Trust is number one.”   In many ways, Valentin’s website is a collection. It’s a receptacle for his innermost thoughts and feelings about the things that matter most to him. Valentin has always been collector at heart. With an interest in stamps from childhood, he then graduated onto watches, wine and then whisky. The father of three has a broad and eclectic range of interests, including music (“all kinds”), advertising, motorcycling, wine, watches, food and travel which he has nurtured and indulged. Throughout the years, Valentin has had a front-row seat to the evolutions within these industries and the so-called art of collecting.   “Old-school collectors used to buy what they liked, never what was meant to see its value rise,” he says. “In the old days, you had to travel, to make phone calls, to go to festivals etc. Today,” he says somewhat ruefully, “you can buy anything, as long as you’ve got the money.” Valentin was ahead of the curve when he made the choice many years ago to buy as many different Old Clynelish and Brora single malts as he could, simply because they were his favourites. At the time, and up until 2005 to 2010, all whiskies – even the rarest – remained relatively cheap. After 2010, it was silly season and whiskies you could previously source were nigh on impossible to find or prohibitively expensive for some.  Valentin’s favourite whiskies have become some of the most desirable on the secondary market. Old Clynelish, produced before the distillery was rechristened Brora, have gained a huge following globally as people were charmed by the story and the characterful liquid the two distilleries produced. Now Brora is set to be re-opened, these single malts will only become more valuable. While his collection is no-doubt impressive – exact bottlings are not disclosed – there are some unicorns which still elude Valentin.   “Rather bizarrely and inexplicably, I prefer fatter spirits and fresher wines,” Valentin says, “in both cases with as little straight oak influence as possible. So, fat distillates, such as some coastal malts, some Jamaican rums etc. In wine, that would be the bright whites, Jura, Savoie, Rueda, Pacherenc, Irouleguy, Alsace, Wachau and Andalusia.”    “I know oak is crucial,” he adds, “you just shouldn’t feel it as such, according to my personal taste. But I insist, that’s personal.” Oak is a topic Valentin returns to several times. He feels it is the low-hanging fruit when it comes to innovation in the Scotch whisky industry.   “Sure, there are a few innovations around the casks,” he says, “but all makers use more or less the same.” The woods used are usually more active, which allows producers to sell much younger whisky for a good price while widening the ranges at the same time, he says.   “I’m not saying that’s bad,” he quickly adds, “but not many people are talking about the distilling regimes, the stills and so on, which was the number one topic 20 years ago.” He continues: “It is now all about wood. But, when we talk about wood that includes their flavouring with other spirits, wines, or even whiskies from other distilleries such as some peated ones, which is the latest trend, to peat single malts by doing some in-cask blending rather than bother with brewing and distilling some peated malt. “So, cutting corners for sure but on the other hand, I believe the average quality has risen pretty sharply. So, all remains good and well…”  This seems to be Valentin’s baseline. The whisky world might have changed but he believes it is the same at its core. There is an increase in branding and marketing (which is likely a source of joy and consternation for an ad man), there are more malts, and for the past five or six years, more distilleries from almost all countries.   “I’m not bored yet,” he says in his frank way, “and in general, whisky has got better on average, even if there are fewer utter glories and fewer total duds.”  If a man with Valentin’s reputation of no-holds-barred honesty is broadly happy, then we probably all should be too.   Browse all Scotch whisky  or  read more Editorial
