The 2021 Chablis Mont de Milieu 1er Cru has a touch of reduction on the nose, but I find this composed with satisfying delineation and sapidity—hints of apple blossom emerging with time in the glass. The palate is well balanced with an oily texture, perhaps a bit more solids in this Chablis that lend complexity. It does not quite deliver the mineralité and nervosité on the finish, however. The 2021 Chablis Mont de Milieu 1er Cru, which sees nine months in barrel like Pinson's other Premier Crus, has a nicely focused nose with orchard fruit, dewy meadow and light crushed stone aromas. The palate is well-balanced with a sapid entry, more malic in style than its peers, with pear and fish scale notes towards the finish. I like how this gets the saliva flowing, though I might keep it in the cellar for 12 to 18 months.
Lifted nose with powerful acidity underneath and a certain creaminess of texture. More winning than the Montmains at present. (JR)
