The 2006 Brut Blanc de Blancs Cuvée Louis Salmon, disgorged in April 2018 with a dosage of eight grams per liter, hails from a warm vintage and soars from the glass with aromas of orange oil, brioche, dried flowers and spice. On the palate, it is medium- to full-bodied and fleshy, its muscular core of fruit framed by tangy acidity and enlivened by a pinpoint mousse. The wine deftly unites richness and freshness, the latter conferred by vinification in stainless steel and the largely blocked malolactic fermentation.

New name. Four grands crus. Lots of it in UK. Dosage 6 g/l. Disgorged April 2018. Greenish gold. High toned. Quite rich palate entry, then tightens up. Racy and lively. Quite firm, this positively reverberates. Polished texture. Richer than the 2007. (JR)
100% Chardonnay (grand cru vineyards from Côte des Blancs). 10 years lees ageing. Used to be called just Blanc de Blancs. From defined parcels in Chouilly, Mesnil, Avize and Cramant. Quite a dark straw. Much less piercing than the Billecart 2008 vintage wine. Almost toasty with a hint of sweet toasted nuts. Lots of impact. Big and bold. Not that obviously Chardonnay. Rather opulent. Mathieu Billecart argues that it’s burgundian but I’d say more like old-fashioned Meursault rather than current Côte d’Or. Marvellous with turbot and beurre blanc, we’re told. Pretty long. Substantial wine. Just slightly bitter on the end. (JR)
From grand crus Avize (Les Pierres Vaudon), Chouilly (Mont Aigu), Mesnil-sur-Oger (Les Coullements) and Cramant. Fermentation in tank and barrique. Disgorged 2015. Dosage 7 g/l. Pale straw. Very well integrated and a good combination of age and refreshment. Excellent texture – lots of little introvert bubbles but nothing frothy. Lots of interest here. Neat and long. (JR)
