1988 Dom Pérignon P3

Magnum of a Plénitude launched in 2015. Very pale tomatoey pink and very gentle mousse. Thoroughly evolved, mature nose of great complexity and some umami quality. Super-clean and almost soft in texture. A great partner for food – turbot with broad beans and girlies. Very long. Difficult to give the right drinking window for this! My dates are for the wine throughout its life. (JR)
