Very expressive and fragrant. Honey, ripe peach and red apples. Much more restrained fruit on the palate and a bit balsamic and earthy, more in line with the low-intervention style of Sal da Terra. (FG)

The 2021 Albariño El Palomar is sourced from a 100-year-old pergola planted in Salnes, Rías Baixas. It undergoes fermentation and aging in one foudre on fine lees for three months, completing full malolactic fermentation. Golden in hue, it presents complex aromas of vanilla and bitter orange, accompanied by herbs and lactic cedar notes. Rich and fairly velvety, its saline and refreshing mouthfeel fuels a highly intense and flavorful palate. This heightened white is full of nuance.

The 2021 El Palomar always has a more classical malolactic sensation with a faint lactic feeling to it. It has notes of yellow fruit, and it's quite expressive, with very tasty flavors and a spicy twist. It spent a long time with lees in oak, without racking or added sulfur, which also gives it a certain creaminess. I like this very much; it really shows the cold year. 2,200 bottles and 150 magnums were produced. It was bottled in July 2022.
