Completely destemmed, fermented in stainless-steel tank. 12 months in 100% French oak. Carboard cartridge filter. 18,000 bottles produced. Deep garnet with bricky rim. Marked eucalyptus note, violets, too. On the palate, the tannins are smooth but still very thickly textured, as if they are frozen in time, rather dominating the wine. I am not sure this is going to improve. (JH)

Vivid ruby. An intensely perfumed bouquet evokes cherry-cola, cassis, dark chocolate and black tea. Firm, structured and linear, with deeply concentrated dark berry flavors and notes of bitter chocolate and licorice. Dusty tannins add shape and grip to the very long, spicy finish. This wine will age well but I suspect that its evolution will be slow, so patience will be required.
Very deep purple-black in color, the 2009 Georgia's Paddock Shiraz gives expressive gamey / savory notes, revealing aromas of peppered pigeon breast, coffee beans, smoky bacon, black truffles and black olives over creme de cassis and loam. Medium-full bodied, it is tautly structured with high acid and firm, chewy tannins, possessing muscular flesh and a long earthy finish. Give it another 2 years in bottle and drink it 2013 to 2023+.
