If you ever watched Peggy Ollerenshaw in Joe Maplin's Hawaiian bar sipping an exotic cocktail with slices of tropical fruit adorned with a sprig of mint, she was drinking the common (wo)man's equivalent of Feils. But with Florian Lauer as the bartender it's all done in a far more sophisticated way. Exhilarating acidity and a sprinkling of stone dust to the cool mint and candied orange flavour. (MS)
