Dopo un inverno mite, senza gelate né grandine, da marzo a giugno è arrivata la pioggia. Peronospora e colatura sono comparse presto e non sono mai scomparse del tutto. Alcuni viticoltori hanno raddoppiato i trattamenti, poiché le tempeste hanno ripetutamente spazzato via la protezione. Alla fine della stagione, le precipitazioni si sono attestate intorno ai 1.200 millimetri, quasi il quaranta percento in più del normale. Il prezzo da pagare per le rese è stato pesante. Molti domaine hanno perso tra un quarto e il quaranta percento dei loro bianchi e, in alcuni casi, fino al settanta percento dei loro rossi. Da luglio in poi è tornato il sole, portando un ritmo più costante e uve sane per ciò che è rimasto. La maggior parte è stata vendemmiata tra la seconda e la terza settimana di settembre, con un'attenta selezione sia in vigna che in cantina. Ciò che è emerso è un'espressione più fresca, più fine e più tradizionale della Borgogna. Charles van Canneyt lo ha espresso al meglio: "Non è perché abbiamo avuto maltempo che abbiamo prodotto un vino cattivo". Le nostre prime degustazioni sottolineano questo punto. Da Paul Pernot i bianchi mostrano una freschezza vibrante e una profonda acidità, con il Puligny-Montrachet Les Folatières che si distingue per la sua tensione e grazia. Da Alvina Pernot, i 2024 portano la freschezza del 2017 e l'accessibilità del 2021, ma con maggiore profondità e compostezza. Come il Borgogna En Primeur nascerà in questo contesto è incerto e certamente diverso dal Bordeaux En Primeur. Il crescente predominio del Borgogna bianco e la combinazione di rarità, qualità, desiderabilità e, in alcuni casi, valore ancora reale, segnano un'emergere che sembra al di sopra delle denominazioni e delle tendenze. Il Borgogna continua a evolversi secondo i propri ritmi, plasmato più dalle decisioni dei singoli viticoltori che dal ritmo collettivo. Quanto lontano arriverà questo ritmo dipenderà dalla rilevanza in un mercato in cui persino Michelin mette in discussione il suo marchio di punta, Robert Parker, e dove voci indipendenti come Jamie Goode, spinte da una curiosità sconfinata e libere da vincoli editoriali, continuano a mettere alla prova ogni ipotesi. Con Borgogna 2024, la scarsità definirà la campagna, ma lo sarà anche l'autenticità. I ​​vini sono plasmati dalle avversità, ma portano grazia e purezza. Quest'anno ci ricorda perché la Borgogna rimane la più umana tra le regioni vinicole pregiate. Borgogna 2024: prime impressioni

This year Michael Silacci is celebrating 21 years at Opus One. Taking over as winemaker for Napa’s first cult estate and arguably the region’s most famous property (a joint venture between Ch. Mouton Rothchild and Robert Mondavi) was no small task. But Silacci’s experience was almost unparalleled; he’d worked in the valley for 40 years, under some of the most iconic producers in the region’s history. In the 1980s, Silacci was mentored by America’s most influential post-Prohibition winemaker, André Tchelistcheff at Beaulieu Vineyard. In the 1990s, he became the right-hand man of Napa legend Warren Winiarski at Stag’s Leap Wine Cellars. When he took the role at Opus One in 2001, he was making wine alongside Mouton’s winemaker Patrick Léon and Robert Mondavi’s son Tim Mondavi. Of all the many things he learnt from these mentors, it was their belief in him that really empowered him – and it was this that would shape his work ethic at Opus. Silacci understood the power of responsibility from a very young age. Working in his grandfather’s dairy farm at the age of 10, he was an essential cog in the operation. “He was a very practical man,” says Silacci of his grandfather, “and would allow me to get on with my work, without ever looking over my shoulder.” Silacci quickly learnt what was expected of him. Silacci found himself in a similar position in his first winemaking job. He had just finished his studies at the University of Bordeaux. While he had worked in wineries and vineyards before, up until that point he had never really been given any responsibility or allowed to make decisions. In a subsequent internship, he found himself under the mentorship of Bordeaux wine legend, Denis Dubourdieu (Ch. Doisy-Daëne), who turned to Silacci and said, “You have taken all the classes, so make the wine!” Dubourdieu instantly put his faith in Silacci’s abilities, which was hugely inspiring for the young winemaker.   It wasn’t long before Silacci was drawn back to the US and Napa where things were really starting to develop; first working at Beaulieu Vineyard, then at Stag’s Leap Wine Cellars. In the 1990s, Silacci witnessed a lot of change in the valley as phylloxera ravaged the region. “First, there was denial, then there was anger and finally we learnt from it,” he says. “If Napa was to survive as a wine-producing region, people had to work together to solve its problems.” The group effort that followed – experimenting with rootstocks and clones, and most importantly sharing their discoveries, seeking the right combination to sustain the region’s future –was inspirational. This was a problem that couldn’t be solved by the individual.  When the opportunity arose to join Opus One in 2001, Silacci leapt at the opportunity – but it wasn’t an easy start. Silacci was used to a hands-on role, working in the vineyard and winery. At Beaulieu Vineyard, he oversaw 28,000 acres, five vineyard management teams, five winemakers and 85 grape growers. Under Tchelistcheff and Winiarski, he had learnt how to read the valley – noting how fruit in the same vineyard changed where the soils did, that different parts of the same vineyard would ripen at different times. It was this understanding of Napa’s terroir that he wanted to bring to Opus. His first week, however, consisted of back-to-back office meetings. “Don’t ever schedule a week for me like that again,” he told his PA.  Silacci arrived at Opus One with his eyes wide open and mouth shut, wanting to observe how the operation was working – and where potential problems lay. While everyone knew what they were doing, h felt that a sense of collective responsibility – and the passion that comes with that sense of ownership – was missing.  In such a big organisation – operating as part of the Mondavi stable in Napa – he wasn’t going to be able to change things overnight, but Silacci didn’t waste any time in the vineyard. When he arrived, the viticultural teams worked across the brands. One week they would be pruning To Kalon (Napa’s prized vineyard, of which 100 acres goes into Opus One), and the next week they would be pruning vines for a $25 bottle of Chardonnay in Carneros. For Silacci, this didn’t make any sense, and the vines needed to be treated differently. He knew from experience that a permanent viticultural team taking ownership of the vines they cared for would improve the quality of the fruit. Within four weeks, he had two teams dedicated solely to the Opus One vineyards. Changing attitudes in the cellar was not so easy. “It was very difficult to integrate with the team,” admits Silacci. “They were very set in their ways and were not really interested in doing things differently.” Silacci identified that it wasn’t what they were doing, but their attitude towards doing it that he felt was wrong. “The cellar crew only did one thing at a time,” says Silacci. “That was their reason for doing something well.” But Silacci, true to form, took a different approach. “Any living thing, human or plant, has to have a sense of urgency,” he says. “If you give people too little work to do and vines too much water, they develop a sense of leisure, they get distracted and miss opportunities… But if you give people too much to do and the plant too little water, they develop a sense of anxiety. They are stressed, which is not healthy and they make mistakes.” Silacci’s goal was to find a middle path. More than that, like his mentors before him, he wanted them to take responsibility in what they did and, with that, instil more passion in the team. “I knew they understood the mechanisms of winemaking,” says Silacci, “but I didn’t know if they felt it. I don’t know if they are passionate about what they do.” He decided to split the cellar team into two teams of three. Each was given 22 rows of the top vineyard. “Between them they had to make all the decisions on pruning, suckering, fruit drop, harvest decisions – everything.” Each team would then make around 1,000 bottles each at the end of the year.  Projects like this, Silacci believes, not only gave his team a sense of autonomy and responsibility, but it helped build passion for what they were doing. “You create a sense of urgency, and you get back a sense of focus,” he says.  Silacci believes that a consensus among the team is key – but only if everyone is equally invested in the final product. Today he has a permanent team of five, who together create the final blend. They are also joined at the later stages by Mouton’s Jean-Emmanuel Danjoy and another of the Mondavi team. Typically, they produce over 50 blends each year before making their decision. And it’s the most important decision of the year. “Blending really is at the heart of Opus One,” Silacci says.  The idea is that everyone in the team has a voice – and everyone is listened to equally. He feels it took 10-15 years for the team to completely understand this consensus-driven approach.  While the theory may not always work, admits Silacci (“Ultimately it is my head on the chopping block”), his aim is to empower his team with responsibility. Like his mentors before him, he loves to give them autonomy in their role, allowing them to figure it out on their own – meaning they’re more invested in what they do. “We all have a blind spot,” he says, “But if you have people standing with you, looking out, they mask your and other people’s weaknesses and you build a circle of people each with their strengths,” he says. For Silacci, the collective – like a blend – is stronger than the individual. “The very best teams,” he says in a calming, zen-like tone, “are not circles, but spheres.” And that perfect sphere is what he continues to strive for at Opus. Ispirata in parte all’Hospices de Beaune, Premiere Napa Valley (PNV) è un’asta di vini che si svolge ogni febbraio a Napa. La settimana dell’asta è ricca di degustazioni ed eventi dedicati a PNV. L’asta è riservata esclusivamente ai professionisti del settore, principalmente commercianti e ristoratori, che poi venderanno i vini in esclusiva ai propri clienti. Tutti i lotti sono creati appositamente per l’asta: vini unici che non esisterebbero altrimenti. Solo i membri dei Napa Valley Vintners possono produrre vini per l’asta, e talvolta più produttori collaborano su un lotto. Ogni lotto include solitamente 240, 120 o 60 bottiglie, provenienti da diverse AVA della regione. Queste edizioni limitate possono essere varietà o vigneti non normalmente imbottigliati separatamente, oppure blend o collaborazioni speciali.  When the UK entered the first coronavirus lockdown in March 2020, there was a sense that the end of long, thoughtful, funny and serious conversations was dangerously close. Over a Zoom call, sat at our respective kitchen tables, F+R’s Patrick O’Connor, creative director Alan Aboud and myself, a journalist and editor, started to wonder if we could work together in some way to explore topics usually explored at the communal tables that were sadly empty.  The first project we worked on together marked the 90th birthday of iconic Lebanese winemaker Chateau Musar and the simultaneous publishing of a book celebrating the winery by Académie du Vin Library. Working together with music consultant Leo Walton, we conceived a package of content for FINE+RARE’s website to coincide with F+R’s exclusive release of various mixed cases of Chateau Musar vintages going back to the 1960s.  As part of the content package, I wrote three articles for the F+R website, and worked with Leo to create four Spotify playlists featuring Lebanese music from the relevant decades of the Musar vintages being released: the 1960s, 1970s, 2000s and 2010s. Leo and I also suggested the potential to add more cultural context to both the wine and our selection of music by producing a podcast in which we interviewed a Lebanese musician about musical culture and heritage in the region. We explored various ideas before interviewing two members of the Beirut Groove Collective – a group of DJs with a reputation for unearthing records from the 1960s, 70s and 80s and giving them a new audience. We asked the DJs to give us the low down on their legendary all-night vinyl-only parties in Lebanon’s capital, and about Beirut’s surprisingly vibrant music scene throughout the Civil War (1975-1990). We also asked Ernesto about his new reissue project with BBE Records and the first release in the series: Ihsan Al-Munzer’s 1979 synth-led Belly Dance Disco album.  This idea – of creating original editorial content that proactively ventured into topics in and adjacent to the worlds of fine wine and spirits in order to enrich the FINE+RARE experience – immediately appealed to all involved. Between us, we started to flesh out the idea for a new content platform that could explore and commission stories that took advantage of our combined knowledge, skillsets and networks, plus FINE+RARE’s access to the best producers and most interesting personalities driving quality in the worlds of fine wine and exceptional spirits.  While the concept was always for FONDATA to be a multi-media platform whereby we would produce content in whatever medium seemed most relevant to a given subject matter – podcast, video, blog or print – we focused our initial efforts on producing a large-format, print journal. It would provide a brilliant canvas for us to commission the best writers, photographers and illustrators, and it would also be the perfect format to function as a physical mission statement, something we could send to F+R customers. Doing this in 2020, when we were in lockdown, seemed like a great way to maintain connection and morale in an unprecedented moment in living memory. We formed a small ‘bubble’ to sit, appropriately distanced, in Patrick’s back garden in Hackney to brainstorm the idea and start mapping out what stories we could potentially commission for our first FONDATA journal. For the inaugural issue, one story in particular was pivotal to realising our ambition: commissioning American essayist, author and regular contributor to The New Yorker, Adam Gopnik to write a piece for us. In his book, Paris to the Moon (Quercus, 2000), Gopnik likens Jean-Philippe Derenne’s L’Amateur de Cuisine book (Éditions Stock, 1996) to “a medieval almanac, offering a timeless, secure, benevolent universe of food.” In our initial conversations, we’d identified Wine Grapes, A complete guide to 1,368 vine varieties, including their origins and flavours (Allen Lane, 2012) – the weighty 1,240-page tome authored by Jancis Robinson MW, Julia Harding MW and Dr José Vouillamoz – as a book we’d love to celebrate in some way. We wondered if Gopnik would be as enamoured with the book as much as Derenne’s and if he’d write something for us about it and its value to wine lovers and gastronomes alike. We duly sent him a copy of Wine Grapes (clothbound and slipcased) and a note introducing ourselves and outlining FONDATA’s ambition. He loved the book and the idea for the piece, so we contacted Jancis to ask if she would be happy to be interviewed by Adam. It turned out they were both fans of each other’s work. Our first feature was underway. But how would we present the piece? What would FONDATA look like? Alan asked Jancis if she would agree to be our cover star for our first issue. When she agreed, we had to work out how to bring the inaugural cover to life. “Gavin Bond popped into my head,” Alan, recalls, of the task at hand, “as he has become the ‘go-to’ photographer for celebrity portraits, especially in the film and fashion business. I felt Jancis deserved that status and reverence. Of course, the wine world reveres her, but no wine journal seems to be able to look beyond a shoot involving wine bottles and grapes.”   With Gavin Bond on board, the next step was to think about the shoot itself. “We enlisted the help of a wonderful floral design company, Studio Lupine,” Alan explains of his art direction. “We briefed Raggie Furuseth, the designer, to create a wildly original space in which Jancis could be photographed. The resulting portrait is a stunning and sensitive study of one of the world’s most learned and charming wine writers in her prime.” Another crucial part of our first issue planning was around design concepting and setting out our production values. As a kind of guiding light, Alan and I had adopted a mantra: “This isn’t a magazine”, as FONDATA would have none of the concerns of a regular magazine. We didn’t want to print on flimsy paper. We didn’t want to create something predictable or ephemeral, but rather an object that felt it had more permanence, more lasting value. FONDATA, we were all very clear, would strive from the outset to be a joyous, opulent celebration of cerebral, long-form editorial content.  Alan began working with his studio designer, Haley Austin, exploring different oversized formats, experimenting with page layouts and type treatments to realise his vision for how FONDATA would look. At the same time, he commissioned Rick Banks of Foundry 37 to create a bespoke logotype for FONDATA’s masthead based on his F37 Caslon typeface. We also adopted F37 as our core typeface for body copy, and to use at large scale for feature headlines and beautiful, full-page pull quotes.  In terms of our editorial direction, we were keen from the offset to commission editorial that explored evergreen (and ever-fascinating) topics. What does it mean to collect? How has the pandemic affected our lifestyles, and how much of that is positive? How do ideas germinate, and how does genius emerge? How important is history and tradition to innovation and revolution? What are the most significant drivers and the biggest hurdles for excellence? Once the Gopnik feature was in the proverbial bag, we set to work commissioning an issue full of features that we hoped would appeal to a wine-loving audience but not feel like we were trying to sell them something.  We approached Jancis Robinson’s co-authors of Wine Grapes, Julia Harding MW and Dr José Vouillamoz, to call out five relatively obscure grape varieties from around the world to champion them and the producers making remarkable wines with them. We also commissioned botanical artist Sarah Jane Humphrey to illustrate each variety.  We asked the former director of London’s Design Museum, Deyan Sudjic OBE, to contemplate the history of social spaces. To accompany his feature, we asked him to approach a number of highly regarded architects and interior designers to illustrate their visions of social spaces of the near future. As a result, we soon added John Pawson, AB Rogers, Paloma Strelitz, and Jon Marshall to our list of contributors. We tasked journalist and author Dylan Jones OBE with critiquing wine’s critical landscape, connecting him with some of the world’s leading wine writers and critics to discover how the pandemic had reshaped their work lives and lifestyles.  Author and historian (and one of the most elegantly dressed gentlemen about town) Nicholas Foulkes very literally wrote the book on cigars. His son, Max, is a Master of Havana and works at Davidoff in Mayfair. And it was Nicholas’ father-in-law who first introduced him to the pleasures of cigar smoking. Especially for our first issue, Nicholas pondered the joy of his relationship with his sons and the idea of passing cultural knowledge and enthusiasms from one generation to the next. We commissioned Julian Broad to shoot a portrait of Nicholas with his sons.  I spent time talking with restaurateur-turned winegrower Alex Xu and wrote a piece about how he’d come to completely reshape his future by planting three hectares of Pinot Noir and Chardonnay vines in the foothills of the Jade Dragon Snow Mountain in China’s most idyllic province. I also interviewed Waterford distillery owner Mark Reynier to find out how (and why) he’s bringing notions of terroir, traceability and transparency to the fore in the world of single malt whisky.   Meanwhile, British chef and food writer Thom Eagle contemplated the value of spending more, rather than less, time in the kitchen, and artist Stewart Walton illustrated the piece.  We commissioned educator and business guru Germana Di Falco to interview fashion designer Brunello Cucinelli about his philosophy to business and life itself, and we engaged British-born, LA-based writer and critic Geoff Dyer to chart the slow journey towards appreciation of and reverence for well-chosen wine. The issue signs off with a Letter from California penned by winemaker Maya Dalla Valle, who reflects on her 11-year journey to become the winemaker at her family’s celebrated vineyard in Napa. The resulting inaugural issue is everything we hoped it would be. As Patrick says in his publisher’s letter on its very first page, it is a celebration. One that delivers rich, engaging editorial content in a format that feels lavish and collectable in and of itself. “It is also a collective,” he continues. “The best minds brought together to tackle the subjects that captivate, so arresting in their absence – experience, space, people and family. [This issue] became a journey into the sound of the things that matter to the soul of the collector, the reasons things exist, the FONDATA.”

FONDATA: The genesis story

The history of Piedmont as a fine wine region and the establishment of Nebbiolo as a single-varietal wine predates the unification of Italy. Yet the region’s rise to international fame as Italy’s finest wine was intrinsically linked to the political role that the Piedmont Kingdom played in the unification of Italy. Nebbiolo as Italy’s first single-varietal wine The decision to move away from the generic field blends more typical of wine production in Italy at the time, to a single varietal Nebbiolo, was the first step towards Barolo gaining prominence. This decision also came about through aristocratic influence by the Piedmont nobility at the height of its power, prior to the unification of Italy in 1861. In the 1830s the Marchesi de Barolo married a French aristocrat who as part of her entourage brought with her a talented French oenologist, who after experimenting with many French varietals in the region quickly identified the potential of the indigenous Nebbiolo as a potential single varietal superstar! This French oenologist started to produce single-varietal Nebbiolo on the Marchesi de Barolo’s vineyards and it wasn’t long before the wines gained a reputation amongst the aristocratic classes. The King of Piedmont contacted the Marchesi requesting to taste this wine made from just Nebbiolo that everyone was talking about. The King became a huge fan of the wines and it wasn’t long before the Marchesi was sending 365 barrels of Nebbiolo
to the King for him and his courts to enjoy throughout the year. From then on Nebbiolo as a single varietal had begun to secure its place in fine wine history. The establishment of Barolo It wasn’t long before the King purchased his own wine estate in Barolo, which now exists under the ownership of Frescabaldi. The Piedmont kingdom was the conquering force in the unification of Italy along with the help of the French army that finally conquered the Spanish rule of Sicily and southern Italy and eventually Rome leaving just the Vatican and the Pope isolated from the rest of the newly
declared unified state of Italy in 1861. Amazingly there was no diplomatic relationship between the Vatican State and the Italian government until Mussolini reached out to them in 1932. The power of the Piedmont kingdom and its role in the unification of Italy meant that Barolo retained its status with the aristocratic elites of Italy and beyond and became known as the premium wine-producing region of the newly declared country. Its prominence and reputation remained ever since. The Barolo region became renowned throughout the country and Nebbiolo took its crown as the king of Italian wine. Barolo following the unification became more and more established with merchants moving in to seize the opportunity of this prestigious and unique Italian wine. At this time, apart from the noble families (Marchesi Di Barolo, Rinaldi, Bourgogno) all the
rest of the Barolo wines were bottled in Alba under merchant’s labels. Alba, much like Bordeaux, became a thriving merchants hub and the wine began to be exported overseas. Barbaresco: the unfortunate struggling sibling to Barolo History is full of cruel twists and the development of Barbaresco for much of the 19th and 20th centuries was a struggle for survival, unlike their more established neighbour Barolo - with its royal seal of approval. Today Barbaresco is being seen very much as Barolo’s equal but its survival is in no doubt down to two central figures of the region Gaja and the Produttori Di Barbaresco. 
The history of Gaja of Barbaresco The history of Gaja is extraordinary and singular in its rise to fame in the region and is a testament to the foresight of Giovanni Gaja and his son and French wife Clothide Rey. The Gaja family were not nobility but farmers, yet they became the first to bottle their own wine in Barbaresco in 1859. This became possible because the family owned a small tavern in the town which catered for the merchants that passed through Barbaresco as it was an active Port, distributing goods. At the tavern, the Gaja family used to make their wine and serve them from jars at the restaurant. At that time all other growers would sell their grapes to merchants in Alba to make wine.  Buoyed by the income of selling their own wines at their tavern Giovanni Gaja in 1859 then decided to bottle his best barrels in bottle (at this time this was often a blend of vintages). But these became the first Barbarescos ever to be bottled as Barbaresco. The family became further governed by quality when Angelo Gaja and his wife Clothide Rey took over from
his father. Their qualitative approach philosophy in a region that at the time was so underdeveloped is extraordinary. The family’s motto – fair, savoir faire, savoir faire faire et faire saviour (Work, knowledge, motivating others to work and passing on knowledge) has not faltered right up until today.  1958 was an important date for the Gaja family because this was recognised in Barolo as a fantastic vintage and it became the first vintage of Barolo to sell for over a 1,000 lira a bottle. The average price at the time for the best producers (such as Renato Ratti) was closer to 300 lira. This 1,000 lira price tag therefore became a big deal and was the beginning of Barolo
becoming recognised internationally as one of the world’s finest and most expensive wines. Yet despite this high price tag of Barolo, Giovanni Gaja was selling his current Barbaresco release at this time for 1,200 lira! This just showed the Barbaresco from Gaja even in those early days was outpricing the best wines of Barolo. The history of the Produttori del Barberesco The history of Barbaresco outside of the extraordinary success of Gaja was a lot less smooth. Through this period the region remained largely unknown for wine production despite successfully growing Nebbiolo like its neighbour Barolo and being home to the region’s best producer Gaja. However, there is another unique and profound development that took place in Barbaresco that also has shaped the region as one of Italy’s finest wine-producing regions for single varietal Nebbiolo that unlike Barolo did not rely on the aristocratic influence for its rise to fame. If anything, Barbaresco’s rise to fame, including Gaja’s development was the success of the
workers of the land rather than nobility. This came in the form of the socialist collective that started to bottle its own wine in Barbaresco under the Produttori Di Barberesco label.  Speaking with Aldo Vacca, today’s chief winemaker at the co-op it was a man called Dominizio Cavazza who was become known as the Father of Barbaresco. He moved to the region when he got a job working as the Director of the Wine School of Alba in 1890.  He immediately saw the potential of Barbaresco as a fine wine region and whilst he had no land, he knew if he could persuade the small landowners to compile their crops, he could make a fine wine that they could bottle and sell themselves rather than selling their crop to
the Alba merchants. By 1894 he had managed to persuade five farmers and two
landowners to contribute the crop and the cooperative was formed. At this time socialism was taking hold in many parts of Europe enabling small landowners to work together to enable them to manage their own produce without relying on the aristocratic landowners. Prior to the Bolshevik revolution in Russia in 1917, these socialist projects in Western Europe were seen as a very positive social development and was transforming the social structure across the region. Initially Cavazza believed that Barbaresco should be incorporated as part of the Barolo District but as Barolo by this time was already well established, thanks to its aristocratic ties, the Barolo producers had no interest in extending their boundaries. This decision in itself was to have a devastating impact on Barbaresco for the next 50 years. Whilst the cooperative became very successful in the early years, the First World War followed by economic hardship and the rise of fascism in Italy which actively shut down cooperatives in Europe, saw the Produttori cease to exist.  It wasn’t until 1954 that the co-operative project was reborn by the local priest – Don Fiorino, who on moving to the region heard about the early success of Cavazza and wanted to rekindle this success. For the priest the cooperative was essential in the survival of the local community that unlike Barolo was decimated by poverty and hardship through the first half of the 20th century. The 1950s saw the industrial boom in Italian cities which saw huge swathes of the countryside deserted as young men and women flocked to the cities for better wages in the automobile and other industries. To encourage people to stay in Barbaresco, Don Fiorino reopened the cooperative promising any landowners who joined him that they would be given fair and
reliable income if they stayed and worked the land. Dom Fiorino’s foresight was to be commended as ever since it opened the co-op has gone from strength to strength. Similar to Gaja, it is due to a strict qualitative approach that has meant this co-op is today producing arguably the world’s finished wines from a cooperative. These days, thanks to Gaja and Produttori, Barbaresco is producing some of Italy’s finest wines. Explore more Editorial

The historic rise of Nebbiolo

BURGUNDY 2021: THE GROWING SEASON After three warm years, 2021 marked a return to the sort of weather traditionally associated with Burgundy – and all its challenges.  The winter was warm and wet – “too warm”, Frédéric Weber at Bouchard told us. He remembers finishing pruning in just a t-shirt in March. The vines started growing enthusiastically, with early budbreak, only to be struck by a cold spell at the beginning of April – as frost struck the whole of France. The nights of 6th, 7th and 8th April were devastating, especially 7th. Temperatures dropped to -8˚C in places – temperatures at which candles, helicopters and wine machines could offer little help.  
Images of the Côte de Beaune littered with a milky way of candles filled social media, and vignerons could do little but pray. For the early-budding Chardonnay, 80% losses were normal, with some producers in Chablis losing everything. The humid conditions, with snow falling, made matters worse – unusually this combination means that lower-lying village sites were less impacted than the Grands Crus (higher up-slope, where more snow fell). Indeed, if producers had lit candles (or “bougies”), the warmth melted the snow, which then froze and the buds were burnt by the morning sun – cruel retribution for trying to protect their livelihood. This severe, black frost (“le gel advectif”, as Florence Heresztyn explained) was savage – caused by a mass of cold air from Siberia. Chardonnay (and therefore especially the Côte de Beaune) was impacted more, as were any earlier-ripening Pinot Noir sites, such as Cazetiers or Combe au Moine. Candles can normally only increase the temperature by 2˚C, however some producers noted how a collective effort could make a difference – with a high-density of candles concentrated on an area. Erwan Faiveley had installed electric wires in their Bâtard-Montrachet and Bienvenue-Bâtard-Montrachet, as used previously in Chablis, which saved their crop in these plots, but other parcels were devastated. As Thibault Gagey of Louis Jadot noted, late pruning could help; one of their long-term growers in Bâtard-Montrachet pruned late and got a better crop, but the damage was still significant. David Duband reported how he also had issues in April with caterpillars which munched on the nascent buds. He had to hire five additional workers for a week to battle their hungry attack. The cold weather continued, with May cold and cloudy. Flowering at Bouchard began on 16th June, in wet and mild conditions that were perfect for oidium (powdery mildew) and downy mildew. Because the weather was so wet, mud prevented tractor access and at Bouchard they hired more people to spray by hand – a luxury not everyone could afford. Producers across the region spent their weekends during the summer spraying their vines when they could, with the disease pressure a particular challenge to anyone working organically or biodynamically. Edouard Confuron estimated he had sprayed four or five times more than in a normal year. There was some localised hail, with a storm in June causing damage in the north of Gevrey-Chambertin, especially in Les Champeaux, said Pierre Duroché and Olivier Bernstein.  
With the wet and cooler conditions, deleafing was important to open up the canopy, reducing disease pressure and exposing the fruit to much-needed sunshine. At Olivier Bernstein, Richard Séguin explained how they deleafed the fruiting zone and kept just one or two bunches per vine, removing any green bunches that remained at mid-véraison.  September saved the vintage, with warm, sunny and mostly dry conditions. With the tiny volumes, this was enough to ripen the fruit – Jacques Devauges at Domaine des Lambrays described it as Mother Nature evening the score, making up for what she’d taken in April.  Harvest dates varied quite significantly – starting from 10th September through to early October. Rain fell on 19th and 20th September, and producers were often divided between picking before and after this date. Generally producers started with Pinot Noir, then moved onto the Chardonnay, and dates were around a month later than in 2020. Jean-Marie Fourrier felt it was important to wait for phenolic maturity – which only arrived after the rain, and Erwan Faiveley argued that it was essential to wait for the dilution from the rain to pass before picking. Given the low yields, the harvest was often shorter – simply because there wasn’t much fruit.  Selection was essential – making a small crop even smaller – but there was some beautiful fruit of both colours. Yields varied, with losses between 50 and 80% – and some parcels (especially of Chardonnay) were blended together due to the tiny volumes at play. BURGUNDY 2021: THE WHITE WINES 
There’s no doubt amongst producers – or tasters – that this is an excellent vintage for Chardonnay. Production levels are laughable – with often the lowest yields they’ve ever seen, at a mere 20% of their normal crop – but the quality goes some small way to making up for the loss. The small crop (reduced by the harsh April frost) had a long season to slowly ripen, developing intense levels of concentration, yet – with cooler conditions than 2018, 2019 or 2020 – retaining amazing freshness and acidity. With the wet summer, disease was an issue: Erwan Faiveley described oidium as “exploding” on the Chardonnay (with levels not seen since 2004). Extensive sorting was essential. He also felt it was necessary to fine with bentonite after pressing to ensure the must was clean; similarly at Bouchard, Frédéric Weber didn’t use the very first free-run and inoculated fermentations this year to ensure they ran smoothly. Others, such as Philippe Abadie at Alvina Pernot and Paul Pernot, emphasised how important it was not to over-press. Most wines were chaptalised this year, often just to bring up 0.5%, with the final alcohol levels sitting between 12.5 and 13.5%.  Guillaume Boillot at Henri Boillot – who has produced a stunning range of wines – describes the whites as “salin”, having “belle matière”. Vibrant and pure, these are tightly wound with cool, white-fleshed fruit character, sometimes with tropical richness, often a mineral, saline thread and piercing acidity.  Due to the tiny volumes produced, oak usage varies this year. Boillot used none, but others have slightly more in the blend – feeling it didn’t need the freshness added by components aged in stainless steel. For Jadot, it was the first year that they used exclusively foudres, the larger barrels reducing the flavour impact of oak on the wine. Erwan Faiveley believes that tasting the whites, you can feel “the struggle in them”, that the vines suffered. Tasting through the exceptional Grands Crus he’s produced, however, it’s hard to see this – and perhaps he’s biased by the challenges of working the vines and crafting the wines in 2021. Comparisons are hard for such a unique year, but 2014 and 2017 were common themes, largely due to the high acidity, quality and ageing potential. Philippe Abadie and Alvina Pernot described it as “classic bourguignon”, while Thibault Gagey at Louis Jadot compared the year to 2011 or 2013, although feels the wines are better than those of the latter vintage. Faiveley points to 2007 – a vintage that has never shut down or, for him, disappointed; for Boillot they’re closest to 2016, but more precise. At Bouchard, Weber is so excited by their potential that he plans to keep them in barrel longer – possibly bottling in July 2023. These are really exciting wines – with a vibrancy and energy that is compelling. The cool and mineral classicism here, with great fruit concentration and balance, should age beautifully.

 BURGUNDY 2021: THE RED WINES 
While there is a clear consensus on the 2021 whites, the reds are more varied in the vintage – but much better than we initially thought. The wines have clearly benefited from additional time in barrel, and most addresses have crafted a flight of elegant, pale-coloured and light-bodied Pinot Noirs. Although there are a few, rare examples of dilute or overly lean wines, this is in the main a return to “old school” Burgundy, with wines of perfume rather than power. The volumes are more generous than for the Chardonnay, but still measly, mostly sitting between 30 and 50% of a normal year’s yield. 
Frédéric Weber at Bouchard felt there were two styles of Pinot Noir in 2021: those from plots not damaged by frost, with normal yields but grapes with thin, fragile skins, prone to grey rot. The fruit from frost-hit sites, meanwhile, came with lower yields, thicker skins and less disease – for the latter he preferred to harvest later, with their higher tannin levels.  
Jean-Marie Fourrier noted that the picking date for Pinot Noir was key, worrying that anyone harvesting before the rain on 19th/20th was playing a risky game when it came to phenolic maturity and might have unripe tannins and vegetal notes.  
In general, Florence Heresztyn of Heresztyn-Mazzini felt it was a vintage, like 2012 or 2013, where producers needed to be attentive and precise at every stage – from the vineyard to winery. Sorting was essential and almost every producer chaptalised – largely used to prolong the alcohol fermentation rather than with the sole purpose of increasing the alcohol level. 

 Beyond this, tactics in the winery were varied – with vignerons often taking opposite approaches. Some producers, such as Bouchard, opted for more whole-bunch fermentation. Winemaker Frédéric Weber explained that the stems were so beautiful that he was happy to include 30-50% on average; the potassium also helped reduce the acidity of the wines, giving – he felt – a better expression of the year. 
The opposite was true of many, including Benoît Stehly at Georges Lignier and Hugues Pavelot. At Olivier Bernstein, the team used 30-40%, much less than in a warmer vintage, as they didn’t feel additional freshness was required, nor were the stems sufficiently lignified; similarly Heresztyn-Mazzini used 30-60% rather than 50-100% to avoid any greenness. While Jean-Marie Fourrier de-stems everything, in 2019 and 2020 he added the stems back into ferments for freshness, but didn’t feel it was necessary in 2021. 
When it came to extraction, the approach was similarly broad. Some felt it was a year to be more delicate, others thought it was a year that required more work to extract the colour and tannin that was in the grapes.  
Maxime Cheurlin at Domaine Georges Noëllat used a warmer – and therefore shorter – fermentation (sustaining 33-34˚C, versus 31˚C normally) to build the mid-palate of the wines. Charles van Canneyt had to buy smaller tanks for the miniscule yields, but the tiny tanks therefore fermented more quickly and he was careful to keep maceration short to avoid risking over-extraction. Similarly, Olivier Bernstein was keen to keep the fermentation short, with a five-day cold soak to extract colour and aromatics, then just 13 additional days on skins before the must was pressed – the fermentation finishing off the skins. 
By contrast, Fourrier opted for more extraction to get everything possible from the fruit. Guillaume Boillot echoed this view, with an additional week of skin contact. He used just pumping over rather than punching down to focus on fruit and aromatics rather than tannin; but at Faiveley, Erwan used more punching down than pumping over. 
Some producers highlighted that the grapes had high levels of malic acid (which has been notably low in recent, solar vintages), meaning that malolactic fermentation had a significant impact on the wines. Both Benoît Stehly and Charles van Canneyt noted how they were verging on severe at first, but after malolactic were open and fruity – totally changing in style. On paper, the pH is quite high for some wines (up to 3.7) – yet there is plenty of freshness, the lighter body and lower alcohol (mostly 13-13.5%) perhaps balancing it out.  
For élevage, some winemakers feel the wines need longer or shorter élevage, or different types of oak, with more or less new or different toasting. Nicolas Potel at Domaine and Maison Roche de Bellene feels that the crunchy character of the Pinot Noir will only be enhanced by a longer maturation in barrel (planning for 24 months versus the normal 12). Boillot opted for no new oak (as for his whites), feeling it would mark the fruit too much; while Maxime Cheurlin used less new oak but higher toast levels to add further complexity – and plans to bottle the wines earlier.  For Domaine Joblot, they felt that more new oak helped round out the lighter wines, using 50% new. At Domaine des Lambrays, Jacques Devauges favoured a slow, gentle toast – a "chauffe blonde" that gives the scent of freshly baked bread. Indeed, Devauges feels the wines have been improving significantly in barrel, offering more concentration and aromatics with each month that passes – something that reminds him of the 2010 vintage. 




Frédéric Weber at Bouchard describes 2021 as “charming”, comparing the wines to those of 2017, with good terroir definition and balance at 13-13.5% – more in line with what used to be “normal” for the region.  Thibault Gagey at Jadot pointed to 2004, 2013 or 2017 as possible similar vintages, but finds it hard to compare – it’s old school but approachable. Marion Raphet added 2014 into the mix, and although the wines are incredibly open now, wonders if they might shut down in bottle. For her, however, it is a year where, “On retrouve la typicité” (they rediscovered Burgundy’s typicity). The team at Tortochot pointed to 2011 or 2001, while Erwan Faiveley looked to 2007 and Florence Heresztyn noted the growing season was reminiscent of 2016.  
Maxime Chuerlin looks further back, feeling it has a similar equilibrium, colour and density to the outstanding 1991 vintage – in no doubt that the balance of the wines will allow them to age. While it’s easy to assume that these paler Burgundies might not be the longest-lived, almost every producer anticipates that 2021 will surprise everyone with its ageability – especially for the top wines. 
Almost every single grower we spoke to used a different approach for the 2021 vintage – but almost all have succeeded, producing vibrant, open and pretty Pinot Noir. It is a year in which careful vignerons could craft exceptional wines that were both light-bodied, yet persistent – with a purity and intensity that is surprising, along with captivating aromatics. As Nicole Lamarche said, “You can have both lightness and concentration.” It is, overall, a year that has surpassed expectations – one that was transformed by producers’ dedication, work in the vineyard, and modern technology and know-how in the winery.

Burgundy 2021: a wine-grower’s vintage

Credit: Classic Images (Alamy Stock Photo). It took a shock to the system on the scale of the Covid-19 pandemic to demonstrate how much our lives can be reshaped by the humblest of objects. When restaurants, hotels, cafés and night clubs have all been closed for months on end – and when we are excluded even from each other’s homes – then park benches and patio heaters become stand-ins for the more elaborate architecture of everyday life that usually enable the interactions we depend on to function as social beings. For much of 2020, only the most rudimentary tools for conviviality were left to us. This works better at some times, than others. On a warm sunny day, all it takes to create an instant convivial space is a bench. This simple structure is the means for people to meet, share a view, a conversation, and perhaps a picnic. Add a back, arms, and a USB charger plus a Wi-Fi connection to the bench, and the proposition grows layers of complexity. It has become a people-attractor and a conversation starter too. This last year has helped us to understand better how to appreciate, through their absence, the things that make us the most human: being together, sharing food, drink and conversation, and marking the key moments in life. While we were forced into isolation, our attempts to replicate some of these experiences, with the use of a screen and a fitful broadband connection, showed us how inadequate they inevitably are. The experience suggests that social change, when it comes, is about an acceleration of what already exists – more than it is about a complete reinvention. Buying more online than we ever did in department stores is going to be a permanent shift. Some of us are less likely to fly to Australia for 24 hours for a business meeting than we were in 2019. But there are other things that will not change. We will still want to celebrate birthdays and weddings in the company of others. We will always want to meet our friends and look for chances to make new ones. And we enjoy doing all those things in the kind of spaces and places that make the most of the moment, which can make the seemingly routine into an occasion. Even at the basic level of the park bench, there are nuances to deal with. Chatting side by side is not the same experience as a face-to-face conversation. However, for some people, direct eye contact is as aggressive as an all-caps text message. It is why a walk in the park can be the best way to share a secret, and why Sigmund Freud conducted his consultations from behind the back of his couch. What we sit on is as significant as how we sit. In the average western living room in the 1960s, the armchair was the seat of power, occupied by family patriarchs. The matriarch, if she was lucky, got a slightly smaller version to herself. The sofa was designed in the same style, just large enough for two, and was for the use of supplicant sons-in-law. As the domestic world has expanded, so the sofa has taken on the dominant role over every other piece of domestic furniture. Sofas have been getting bigger for some time and are now reaching the size of lifeboats. They’re expected to cope with everything from conversation to work, assuming multiple roles as stand-in dining table, desk and bed. Social spaces, from the most intimate scale to the grandest, form an essential part of both our personal domestic worlds – in which we share our privacy with a selected group of friends and family – and the public one that we all share. It is a scaled sequence that runs all the way from a candlelit interior with a couple of chairs, a plain wooden table with two wine glasses, to the Galleria Vittorio Emanuele II in Milan, which, with its heroic iron-roofed arcade, has a strong claim to be regarded as the mother of all shopping malls. When it opened in 1877, the newly empowered bourgeoisie (in their straw boaters and stiff detachable collars) took to it as the setting for their daily promenades on the way to and from the Duomo, Milan’s cathedral, where they celebrated Mass, or en route to a performance of a Verdi opera at La Scala. Stopping to take coffee and pastries, they would meet each other for an aperitif at Biffi or dinner at Savini, and explore the exotic wares that the shops in the Galleria had to offer. As futurist artist Umberto Boccioni demonstrated in his painting from 1910, Riot in the Galleria, there was a darker side to such spaces. He portrayed the agitated response of a turbulent crowd of well-dressed spectators to the sudden violence of a fight between two women – sex workers perhaps. The disturbing scene, depicted in pointilliste style (and based on an incident that actually took place), is bathed in lurid electric light, evoking the frenzied atmosphere of this giant outdoor room and its extraordinary impact on the behaviour of a mass society. An unintended consequence of the lockdown has been the enforcement of the monogamy-based model of the nuclear family. It made the year particularly difficult for all those who don’t subscribe to it. We will need places we can dress up for again, places we can show off in, even places in which we can behave badly. The painting is, in some senses, a reminder that urban life is essentially about tolerance. Complex spaces have always been a vital part of urban life. Almost 2,000 years ago, the Romans built the Baths of Caracalla on a lavish scale, with three separate pools, libraries and gymnasia – and gardens large enough to accommodate 1,600 people at a time in comfort. Its mosaic and marble floors, its frescoes and sculptures made it one of Rome’s essential landmarks, not only as a monument to the glory of the emperor who built it – though it certainly was that – but also as a place to be used by people, day and night. Its magnificence, and the sense of the joy of a great shared civic space, inspired the American architect Charles McKim when he designed New York’s Pennsylvania Station, one the most sublime railway stations ever built. The central waiting room, barbarously destroyed 50 years after it opened, was a convincing recreation of the baths of Caracalla that lifted the spirits of anyone who passed through it. The months of isolation have taught us how important shared spaces of all kinds are to the way that we live. They are the places in which we meet each other to celebrate the important rituals of life, as well as to pursue the seemingly trivial (actually essential) compulsion to gossip about one another. As an essentially self-conscious species, we need alibis to give ourselves permission to be convivial. We construct reasons to meet each other, like the 19th century clubs of Pall Mall, or their democratic paraphrase – with its provision of gender segregation, and games room, and its mix of intimacy and ceremony – the Victorian pub full of mirrors and cut glass. Or in today’s context, a bowling alley configured to allow players and their friends to sit at a table, order food and drinks, and watch each other play, and to hear each other converse. Some public spaces do better at conviviality than others. The Las Vegas casino, for example, is designed to be the opposite of convivial. Slot machines on an industrial scale obviate the need for any form of human interaction. With its glass dome, and 25 miles of bookshelves, the old round reading room at the British Museum is certainly a very special space, although it has now lost its intellectual raison d’être and has become a dead monument. In its day, a reader’s ticket conferred membership of an exclusive club that included Oscar Wilde, Vladimir Ilyich Lenin, and George Orwell. But as the museum’s insistence on silence suggests – beyond unspoken flirtation over the book stacks – it was not a place that was fundamentally about conviviality. The Berghain Club, the raw, concrete world capital of techno music based in a redundant power station in Friedrichshain, in what was once East Berlin, is another very different kind of public space, and – in its own way – an equally spectacular social space. It has a pickier door policy than the British Museum but a similarly committed membership. In this case, the limit on conviviality is not silence, but the sheer volume of sound that makes the 18-metre-high main spaces vibrate, and which makes conversation inconceivable. A truly convivial space needs to work on multiple levels, to offer a variety of zones, some of which can encourage concentration, and others that can be distracting. Some may be more intimate than others. It’s a drive that is leading to an interesting range of cross-fertilisation. Cinemas that serve food more ambitious than popcorn and hot dogs are being equipped with sofas instead of tip-up seats. Health spas come with restaurants. However, not all convivial spaces encourage multiple uses. Orchestration and control are part of the experience at those English clubs that frown on members showing any signs of working, to the extent of asking them to put away notebook and pencil – never mind laptops – over lunch. Some aspects of what we have learned from the last year will colour life well into the future. The private dining room is a long-standing restaurant tradition, which has been given a new lease of life. We can also expect to see signs of change in the workplace. The Silicon Valley model has aspired to look as domestic as possible, furnished with sofas and kitchen tables, surrounded by vintage and deliberately non-matching chairs. A year of working at home is likely to encourage a more formal environment. But while we continually try to find new tools to make conviviality possible, the objectives remain the same. In a year in which all our assumptions about how we live together have been turned upside down, the world’s designers and architects have had to face the challenge of how to deal with the impact of the pandemic on our homes and our cities. As city centres empty out, and people avoid crowds, how can we find ways to socialise?

John Pawson Architect John Pawson has always focused on the idea of designing the architecture of conviviality. In his recently released Home Farm Cooking book, produced with his wife Catherine and published by Phaidon, we see what matters most. Every Pawson interior is designed with how it will feel to use it in mind – is it to be enjoyed by somebody on their own, or with others? He takes away the distractions and lets us focus on how we use and feel in a room. He makes some spaces in which to read and to concentrate, others in which to share the preparation of a meal, and yet another to enjoy the result in company. Intrinsic in his philosophy is the importance of creating a setting where one can appreciate light at different times of the day – whether it is the shades of white as revealed by degrees of sunlight or the warming effect of firelight by night. johnpawson.com AB Rogers Ab Rogers was inspired by the spontaneous street life of the neighbourhood in 
East London in which he lives and works to come up with a range of furniturelike structures to give social spontaneity a helping hand. “Whether it’s planned 
or serendipitous, we wanted to design a set of colourful pieces that could help 
to turn a momentary catch-up on the street into an impromptu drinks party, 
anchored by a tuned-up bollard. Or make a surprise anniversary dinner possible 
under a street lamp … or make a breath of fresh air turn into a long lunch with 
new friends at a long table under the trees.”  abrogers.com Paloma Strelitz Paloma Strelitz, an architect, and co-founder of the Turner Prize winning 
collective Assemble, took an overview of how shopping streets might recover 
from lockdown, to generate new life: “convivial, accessible, sustainable and 
enjoyable for all”. The experience of negotiating streets in which precautions 
against the pandemic had caused restaurants and food shops to migrate to 
the pavement, made her think about ways to make this a permanent quality.
“It’s an opportunity to empower local business. Shops could open their 
facades to the street, creating an expanded space of public interaction, and 
daily theatre.” She would keep the car in its place, with priority for pedestrians and bikes, 
and banned altogether at weekends. What were once parking places would 
become green borders, combining play space, raised planters, flower beds 
and trees, allowing the street to become a promenade. Meanwhile the street 
would be animated not just by cafés, but studios and workshops putting the 
making process on show. Oh, and a mobile bar too.  assemblestudio.co.uk Jon Marshall  Jon Marshall, an industrial design partner at Pentagram in London, found himself 
thinking about ways to bring together two very different kinds of object: a hamper, 
designed to carry utensils food and drink securely, and a shooting stick. “They 
aren’t really about shooting,” he explains. “The shooting stick is actually a very 
convenient way of carrying the means to sit anywhere with you.”  The hamper allows for the sense of anticipation that comes from preparing for 
a pleasurable occasion. The two objects have very different aesthetics – one is 
vaguely mechanical, the other has a kind and rustic quality. For Marshall, the idea 
of the shared walk – with the chance of stopping for a picnic – is the very essence
