What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

Taking root: the rise of biodynamic winemaking in Bordeaux

Oak barrels have been used in winemaking for thousands of years. While initially their purpose was simply as a holding vessel, today it is much more than this. As we have learnt about wine production at a molecular level, we have discovered the unique interaction between oak and wine – adding flavour, textural complexity and increased ageing potential. These intrinsic qualities have seen oak at the forefront of fine wine’s greatest success stories – but also some of its greatest failures. The use of oak to improve a wine requires great skill and finding that balance has shaped the modern history of fine wine.  What is rather beautiful about winemaking, particularly in fine wine circles, is that despite the input from developments in science and technology, production remains an artisan craft, relying both on tradition and technology. The barrel-maker is a perfect example of this partnership and no one understands this better than François Frères. This lauded Burgundy cooper’s ties to the world’s greatest wines make it one of a very small number that have lived through the development and fashions within fine wine.  Today, business has never been better for François Frères; they produce 30,000 barrels a year and export to every major wine region in the world. The secret to the François Frères barrels historically, Gigandet believes, is their consistency, while the all-important signature toasting is paramount. To keep up with the ever-growing world of fine wine, François Frères produces tailor-made barrels that fit the varying climates and varying styles of each winemaker, meeting the standards set by today’s precision-led winemaking. Despite the growth of the business in recent years, François Frères still remains intrinsically linked to its homeland in Burgundy and the specific microclimate of Saint-Romain that is so important for the seasoning of their oak – another key factor behind the company’s success. “The microclimate of Saint-Romain, in a windy and pollution-free environment is ideal for the seasoning and drying of the oak. This oxidation of phenolic compounds under the influence of fungi, releases enzymes that hydrolyse the phenolic compounds, reducing the wood’s astringency, producing oak of the finest quality for wine production,” Gigandet tells me. The art of the cooper is much more than just sawing and toasting – it’s about sourcing, traceability, control of drying time and heating, hygiene, temperature control, sorting and more. With increased knowledge, the quality of the barrels, like that of the wines, has greatly improved. Even just a few years ago, Gigandet admits that in colder Burgundy vintages, sometimes their barrels jarred with the wine – they “brought too much tension and could sometimes seem too austere”. But now they have a better understanding of the qualities their barrels can bring to Burgundy: “François Frères barrels remain attractive to winemakers because they are great at retaining freshness and minerality.” Perhaps most importantly, François Frères wants its barrels to amplify a wine’s intrinsic qualities. “It wants to accentuate the beautiful tannic structure of a wine, contribute to its flavour but without excess of sweetness from the toasting, as well as amplifying the wine's tension and minerality, helping retain its freshness and its fruit,” Gigandet says. As technology has developed, so has François Frères. It is what Gigandet aptly calls “the evolution of taste” – “the cask has evolved considerably over the last few decades along with the quality of the wines. Today, the barrel is much more specific, manufacturing almost tailor-made barrels for each customer’s needs.” The business was founded by Joseph François in the early 1900s, never imagining that being a cooper would become a full-time job. Back then, Gigandet reminds us, “It took several trades to live.” But the next generation, Robert and Henri François, saw the demand for oak casks rise, at that time mainly used to transport wines. They took the operation full-time, creating the François Frères brand in 1942. In those days, as Gigandet points out, “The tradition of maturing wines in barrels was reserved only for the very top red and white wines of Burgundy and the great Bordeaux châeaux.” Even within these regions, barrels were a luxury, re-used year after year given their expense, therefore keeping the demand for new barrels low. By the 1960s the brothers were met by the development of stainless steel and plastic containers. The barrel quickly lost it supremacy as the preferred vessel for transportation and demand plummeted. It was only the top producers that helped keep the cooperage going. By the 1970s François Frères was producing barrels for one of the world’s most famous estates, Domaine de la Romanée-Conti – a partnership that would be instrumental in the continuation of the business through a difficult period. The next generation – Robert's son, Jean – was confronted by the economic downturn of the early 1970s and turned to export to save the family business. Fortuitously at this time, oenologists in the United States started to highlight how ageing wines in new oak barrels brought complementary flavours and complexity to the wines. In the 1980s, the French market caught onto the idea and both export and domestic markets grew. The oak barrel was entering an era where it would become the star of the show – and a must for all top producers. François Frères’s reputation for working with the best saw it perfectly placed to capitalise on this new-found love for the barrel. But according to Gigandet, it wasn’t just the fashion of using new oak in the 1980s and ’90s that saw such a huge increase in demand. This trend emerged just as wine exports exploded. What he calls “the democratisation of wine” saw the world of wine suddenly open up to the middle classes – and this increase in sales saw an ever-increasing need to maintain quality and improve consistency. Such demand prompted and funded a better scientific and technological understanding of wine production. More importantly for François Frères, it fuelled the need for a better understanding of what barrel-ageing does to wine – and why. It was already clear that contact with new oak changed wine profoundly. Most obviously the aromas and flavours of the wine develop, becoming more complex. These aromas and flavours are formed during the toasting of the barrels. “It is this toasting of the barrel that remains the signature of the cooper,” explains Gigandet. But the oak didn’t just impact the flavour, they came to understand that, being porous, oak allowed the wine to undergo “controlled oxygenation”. The exchange of air through the oak staves, in particular for red wines, helps stabilise the colour and polymerise the tannins. This polymerisation not only softens the wine, but brings a textural complexity, a millefeuille layering of mouth-feel brought about by the linking of long tannin chains, encouraged by the micro-oxygenation process that the wine goes through when aged in oak barrel. “François Frères barrels are ageing tools, which contribute to the textural improvement of wines, when used wisely,” Gigandet explains. As the wine world’s love of oak grew, François Frères’ main export customers went from little-known names to pioneers in their respective regions – with Robert Mondavi in the US, Angelo Gaja in Italy, Nicolas Catena in Argentina and Australia’s Rosemount winery. Each of these producers further cemented the cooper’s reputation, representing the very pinnacle of oak barrel production. Of course, like all fashions, the oak craze of the ’90s saw some extreme uses – 200% new oak ageing or an over-reliance on oak to provide flavour to wines that lacked the natural concentration to carry it. This saw many producers and consumers react strongly against its presence in wine at all. Even Gigandet admits that there are wines with “excess woodiness” to their detriment. Today, the barrel also has to compete with new trends in wine maturation – concrete eggs and clay amphorae, for instance. But while these new vessels have captured the imagination of the world’s top winemakers, it is not necessarily at the expense of the barrel. “The barrel has an important oenological role in the development of wines from certain grape varieties,” states Gigandet – notably Cabernet Sauvignon, Merlot, Syrah and Pinot Noir. But he also outlines how different ageing vessels combined can also benefit a wine’s potential for complexity. This is certainly the case amongst some leading producers in Bordeaux and Burgundy that are using both oak barrels and alternative ageing vessels. Coopers like François Frères have weathered the changing relationship wine has had with the barrel; with shifting views of critics and drinkers over the last century. Fortunately for fine wine lovers, there’s little sign of oak fading into the background. Oak remains a vital ingredient in many of the world’s greatest wines, adding to its flavour, textural complexity and – of course – ageing potential. Today oak has never been so deftly handled, bringing so much to a wine, while retaining the grapes’ natural expression. The art of the cooper lives on. Read more Editorial

Quando Alain Hudelot si ritirò nel 2008, fu suo nipote a prendere le redini della tenuta di famiglia, il Domaine Hudelot-Noëllat. Charles van Canneyt – allora appena ventenne e fresco di studi enologici – si ritrovò improvvisamente a gestire 10 ettari di vigneti e un’intera cantina. Ma non era un ventenne qualunque. Gradualmente modernizzando le attrezzature della tenuta e perfezionando la vinificazione (in particolare moderando l’estrazione), trasformò la reputazione del domaine. In breve tempo divenne noto come una delle stelle emergenti della Borgogna, con Domaine Hudelot-Noëllat presto tra i nomi più rispettati della regione. Probabilmente non conoscerete il nome di questa tenuta di Gevrey-Chambertin, ma quasi certamente ne conoscerete i vigneti. La storia del Domaine des Chézeaux Il Domaine des Chézeaux fu creato da François Mercier nel 1982, anche se la famiglia possedeva vigneti a Gevrey-Chambertin dal 1928. Il nome della tenuta deriva dal Clos des Chézeaux, il vigneto recintato accanto al domaine. La famiglia era proprietaria terriera più che vinicola, quindi tutti i vigneti erano affittati – en métayage – ad altri produttori. Questa pratica è comune in Borgogna: i vignaioli che affittano i vigneti li gestiscono tutto l’anno e producono il vino, cedendo una parte della produzione (spesso circa un terzo) al proprietario come affitto. La storica tenuta crebbe dai possedimenti originari e, dal 1994, contava circa quattro ettari. I vigneti erano divisi tra tre produttori: Domaine Ponsot (poi Laurent Ponsot), René Leclerc e Domaine Berthaut (poi Domaine Berthaut-Gerbet). Ponsot affittava il lotto originale di 0,89 ettari di Griotte-Chambertin, così come i parcelle di Clos Saint-Denis*, Chambertin e Chambolle-Musigny Premier Cru Les Charmes. Domaine Berthaut affittava due Premier Cru di Gevrey-Chambertin (Les Cazetiers e Lavaux-Saint-Jacques) e i parcelle del villaggio, incluso il Clos des Chézeaux. Pur essendo tecnicamente un monopole, Berthaut non possedendo il terreno non poteva rivendicarne tale status. Prima della vendemmia 1994, la famiglia Mercier acquistò un altro lotto di Griotte-Chambertin, 0,68 ettari appartenuti a Suzanne Thomas di Thomas Bassot, ottenendo il maggior possedimento di questo Grand Cru. La famiglia Esmonin coltivava già le vigne, vendendo parte dei frutti a Jadot; i Mercier affittarono poi il lotto a René Leclerc (pur continuando la vinificazione di alcune bottiglie da parte della famiglia Esmonin fino al 1999). Una parte dei vini finiti era imbottigliata con l’etichetta Domaine des Chézeaux, ma identica a quella dei produttori Ponsot, Leclerc o Berthaut, spesso a un prezzo inferiore. Domaine des Chézeaux oggi Nel 2021 Charles van Canneyt riuscì ad acquistare la tenuta e i suoi prestigiosi vigneti. Con tutti i vigneti sotto contratto en métayage, la sfida successiva fu riottenerli – negoziando con ciascun produttore. Nel 2022 ottenne il monopole Clos des Chézeaux e Premier Cru Les Cazetiers, ma vendette i frutti. Nel 2023, recuperato un lotto di Griotte-Chambertin, realizzò i primi vini dalla proprietà. Nel 2024 riuscì a recuperare tutti i vigneti – aggiungendo Chambertin, Clos Saint-Denis e Chambolle-Musigny Premier Cru Les Charmes. Come parte delle negoziazioni, furono venduti i parcelle Lavaux-Saint-Jacques, alcune vigne di Gevrey-Chambertin village e due piccoli lotti di Griotte-Chambertin. I vigneti sono generalmente vecchi in tutta la tenuta, e coltivazione e vinificazione seguono gli stessi metodi di Hudelot-Noëllat: frutti totalmente diraspati e estrazione molto delicata. Le prime annate furono vinificate a Domaine Hudelot-Noëllat (ma affinano nelle cantine del Domaine des Chézeaux) e è iniziata la costruzione di una nuova cantina, prevista per la fine del 2025. Van Canneyt ha già notato una maturazione diversa delle uve a Chézeaux, con cantine fresche e umide che rallentano l’élevage e richiedono meno rabbocco. Prevede quindi di affinare i vini più a lungo rispetto a Hudelot-Noëllat. La tenuta mantiene il nome storico, ma con nuove etichette – per differenziare le bottiglie precedenti all’arrivo di Van Canneyt. Il nome ha la stessa origine di Echezeaux: chesaux – plurale di chesal (dal latino casellum o casalis) – che significa casa o edificio in pietra. I vigneti del Domaine des Chézeaux Oggi la tenuta conta circa tre ettari di vigneti, di cui oltre la metà Grand Cru, distribuiti su sei appellations: Gevrey-Chambertin Clos des Chézeaux: monopole di 0,5 ettari, alcune vigne quasi centenarie (piantate nel 1929), su pendio medio esposto sud-est, su suoli profondi argillosi e ghiaiosi. Gevrey-Chambertin Premier Cru Les Cazetiers: 0,216 ettari in due parcelle, nord 0,1615 e sud 0,045 ha. Chambolle-Musigny Premier Cru Les Charmes: circa 0,6 ha, con ulteriore parcella a Domaine Hudelot-Noëllat. Clos Saint-Denis Grand Cru: 0,3776 ha, comparirà nel 2024 con un solo barile, ora reimpiantato fino al 2029. Chambertin Grand Cru: 0,143 ha nel cuore del Grand Cru. Griotte-Chambertin Grand Cru: 1,264 ha, il lotto più grande del piccolo Grand Cru, cuore dell’appellation. Focus su Griotte-Chambertin Griotte-Chambertin, o En Griotte, è il più piccolo dei Chambertin Grands Crus (2,69 ha) e tra i più piccoli della Côte d’Or, insieme a La Romanée, La Romanée-Conti e La Grande Rue. Situato sotto Clos de Bèze, con esposizione nord-est, permette maturazioni lente, vini delicati, aromatici e profumati, meno muscolosi rispetto al tipico Gevrey-Chambertin. Suoli ghiaiosi e calcarei con argilla a pendio. Domaine des Chézeaux è il maggiore proprietario (1,246 ha, quasi metà del vigneto). Altri proprietari: Joseph Drouhin, Fourrier, Claude Dugat, Marchand Frères, Joseph Roty, Duroché, Laurent Ponsot e un investitore che affitta il lotto a Cécile Tremblay. L’origine del nome è dibattuta: “griotte” (ciliegia amarena) o “criotte” (piccola pietra calcarea nei suoli). Storia delle etichette Griotte-Chambertin Le bottiglie storiche sono state un segreto per gli insiders, spesso Ponsot o René Leclerc sotto altre etichette. 1982–1993: unico lotto di Griotte-Chambertin, affittato a Ponsot. 1994: prima annata con secondo lotto, affittato a René Leclerc, blendato con il primo. 1995–2001: due imbottigliamenti identici senza indicazione del produttore. Dal 2002: produttore indicato sulle etichette. Fino al 2004 due bottiglie, dal 2005 René Leclerc solo occasionalmente. Il futuro del Domaine des Chézeaux Nonostante la lunga storia per una tenuta moderna, è solo l’inizio. Con un vignaiolo talentuoso come Charles van Canneyt e vigneti così prestigiosi, la qualità è destinata a crescere e i vini diventeranno presto ambiti quanto quelli di Hudelot-Noëllat. Annate 2023 del Domaine des Chézeaux 2023 Gevrey-Chambertin Clos des Chézeaux: 0,5 ha, vigne quasi centenarie, frutto rosso intenso, fiori di iris e violetta, tannini fini e salinità nel finale lungo. 2023 Gevrey-Chambertin Premier Cru Les Cazetiers: vigne vecchie, vino delicato, minerale e floreale, frutti trasparenti e tannini minerali equilibrati. Cinque barili prodotti. 2023 Griotte-Chambertin Grand Cru: lotto più grande del Grand Cru, aromatico ed elegante, frutti rossi succosi, spezie dolci e leggeri toni tostati, struttura che richiede tempo. Beauséjour   “Ludovic Hauller is a long-standing friend I met during my studies in Burgundy. I appreciate the precision that his family channels into the wines, and this cuvée showcases great finesse, with freshness and elegance, mirroring the granite terroir in which the vines grow. I remember we had the chance to buy a few magnums a long time ago as they were precisely the birth years of our children (1997, 1999 and 2002). Then I guess I will spoil everyone at home with a beautiful Barolo Giuseppe Mascarello Villero 2017 and Colle Vota Montepulciano d’Abruzzo 2018 from my dear friend Cristiana Tiberio. She makes very few bottles of this very elegant and vibrant wine, which is among my favourite reds.”  2021 La Morandina Moscato d’Asti – chosen by Donald Edwards, Head Sommelier at La Trompette, London  “Beyond the best white Burgundy I can lay my grubby mits on, I’ll be cracking the second bottle on a case of La Morandina’s 2021 Moscato d’Asti – part of a new festive tradition. Back when my wine appreciation was still protean, I heard a rumour that Moscato d’Asti – the sweet fizzy floral stuff that we sold in my Glasgow Oddbins – ages magnificently. Twenty or so years later, I’m the Head Sommelier at La Trompette, hosting a big Piedmont-themed wine lunch. Barolos and Barbarescos aplenty litter the room, but the wine that stops me in my tracks? A 2013 Moscato d’Asti from Giuseppe Vajra. It was phenomenal, still gleefully tasty, but now with a touch of extra weight, more waxy lime skin and late-evening summer flowers, heady in its bouquet. Here she was, my white whale, and, boy, she didn’t disappoint.  “Last December, visiting La Morandina in Asti, I asked whether they had anything with a bit of age and lo! a 15-year-old magnum appeared. My stars had aligned for a second time – the wine equally lovely, offering a bit more exotic spice, cardamom and coriander seed along with the sweet creamy lime zest. Crucially, this time I could see the germ of a plan. Each year, I would buy a cast of Moscato d’Asti, building a reserve of Moscato to steadily enjoy over the coming years. I’ll be the Christmas king of deliciously sweet floral fizz. So, on the morning of 25th, I’ll be twisting the top off the second bottle from last year’s case and smugly enjoying my Moscato and crumpet as I let my mind wander over the riches I’m preparing for the coming years.”  François Cotat Sancerre Le Mont Damné and Massican Gemina – chosen by Alex Sarovich, Founder and CEO of Own Rooted Hospitality  "As the oldest of five in a large Italian family, I've learned that selecting the perfect wine is an art form that requires careful consideration of both the food and the audience. We also really like the new style introduced by Raphaël since he took over this magnificent estate. Then Trévallon: my grandfather Georges from the south of France was an unconditional fan of the estate, and during my childhood there was always a bottle on festive tables (for birthdays, Christmas, New Year, etc) – so this will be a little wink to him. Then last, a bottle of Côte-Rôtie La Landonne by Jean-Michel Gérin. È una mattina umida e nebbiosa quando arrivo ancora una volta nelle strade molto tranquille di Auxey-Duresses per il mio pellegrinaggio annuale a degustare la nuova Collezione Maison Leroy. Lo scorso anno Madame Lalou Bize-Leroy era a Monaco, quindi non vedo l’ora di rivederla e degustare insieme – proprio nel giorno del compleanno di sua figlia. Due cani corrono fuori per salutarmi con entusiasmo: il barboncino nero Nine di 13 anni e la Grand Basset Griffon Vendéen Olga di cinque anni, entrambi rapidamente tranquilli una volta consolati con qualche carezza gentile. Madame, nel frattempo, si trova dietro di loro, elegante e discreta come sempre. Parlando brevemente dello stato del mercato, ripete quanto la cosa più importante sia la felicità dei nostri clienti. Era al centro dei suoi pensieri quando ha deciso i vini per la collezione di quest’anno, dominata dalle annate 2017 e 2018, con il vino più vecchio del 2011. È bene variare un po’, mi dice. Dopo il rilascio estensivo della biblioteca dello scorso anno, con un turbinio di annate passate, quest’anno voleva dare ai più giovani la possibilità di brillare. Descrive il 2018 come un’annata più completa: c’è più vino, più materia rispetto al 2017; eppure il 2017 è più raffinato e delicato, in qualche modo più accessibile. Parliamo di cosa rende un vino un “grand vin” e lei dice: “La qualité, c’est les rendements.” (“La qualità, sono le rese.”) Prendendo l’Aligoté come esempio, spiega che raramente produrrà più di 20 hl/ha per l’Aligoté del Domaine Leroy e del Domaine d’Auvenay – e per lei questo è il limite per ottenere un vino di alta qualità. È impossibile fare un buon Aligoté a 40 hl/ha, sostiene – come sa bene degustando quei vini acquosi e diluiti. “Preferirei bere acqua,” confessa. Non è un segreto che il suo Aligoté sia speciale: e Gilles Desprez (braccio destro di Bize-Leroy) ricorda di essere rimasto una volta sbalordito da una bottiglia di 1999 D’Auvenay Aligoté servita in cieco – un vino che tutti intorno al tavolo avevano scambiato per un bianco Grand Cru. Non c’è miglior giudice di un vino della degustazione alla cieca – come ben sa Bize-Leroy. Ancora oggi, degusta tutto ciò che viene imbottigliato sotto l’etichetta Maison Leroy alla cieca. Recentemente stava assaggiando alcuni 2024 per la gamma e nota come sia facile trovare un eccellente Nuits-Saint-Georges o Gevrey-Chambertin, ma troppo spesso rimane delusa dai Vosne-Romanée e Chambolle-Musigny – faticando a scoprire vini in questi villaggi degni del sigillo di approvazione Leroy. La nostra degustazione inizia quest’anno con i rossi, partendo da una serie di 2018, assaggiati da sud a nord, “dans le sens de la Côte” (lungo la Côte), prima di passare ai 2017, poi a un 2016, un 2015, un 2012 e, infine, il vino più vecchio della collezione di quest’anno, un Nuits-Saint-Georges 2011. I bianchi includono un’appellation che degusta raramente e una che quasi mai entra nella gamma: Savigny-lès-Beaune Blanc. Il 2018 della collezione di quest’anno, tuttavia, è speciale – un vino che non saresti pazzo a chiamare Corton-Charlemagne alla cieca, mi dice. E (ovviamente) Bize-Leroy ha ragione: è sontuoso, con un livello di ricchezza e densità che supera di gran lunga quello di un semplice “village”. Con l’aria, si sviluppa ulteriormente, offrendo una complessità impressionante. Madame guarda Gilles: “Peccato che non abbiamo alcun Corton qui per fare un confronto,” dice. Gilles conferma che non ce n’è nessuno a portata di mano mentre lei considera il vino davanti a sé, prima di insistere – “Sei sicuro che non ne abbiamo qui?” Il messaggio è chiaro: Gilles dice che potrebbe essercene in un altro edificio e parte alla sua ricerca. Continuiamo a chiacchierare, degustando l’Auxey-Duresses 2018, un po’ timido dopo il Bourgogne Blanc 2018 (nelle sue parole: “il miglior Bourgogne Blanc che abbiamo mai avuto”) e lo splendido Savigny. Chiedo se ci sono vini che compra ogni anno – un’idea che rifiuta subito: non ha alcun contratto, ogni vino è selezionato esclusivamente per la sua qualità in quella specifica annata. Chiarisco che intendevo se ci fossero vigneti specifici che le piacciono particolarmente e che acquista anno dopo anno – e dice che sia Meursault Gouttes d’Or che Chassagne-Montrachet Morgeot sono certamente tra i preferiti, anche se tutto dipende da come hanno gusto. Gilles torna con una bottiglia senza etichetta, immediatamente riconoscibile dalla forma come Domaine Leroy. È senza fiato (merita qualche presa in giro, ma ha anche corso su e giù per 200 scalini per recuperare la bottiglia in questione). Il vino – un Corton-Charlemagne 2018 della proprietà – viene rapidamente aperto e servito. È tipicamente Leroy: il naso è leggermente smorzato, con un po’ di riduzione e le note di popcorn che spesso si trovano nei bianchi di Bize-Leroy. Al palato, questo è ciò che si definisce concentrato: raramente ho trovato tale concentrazione in un Corton-Charlemagne, anche nelle annate mature della Maison Leroy. Madame afferma che molti lo chiamerebbero rosso se servito totalmente alla cieca, data la sua “matière”. “Questo è un grand vin,” dice. Spiega quanto sia speciale il cru, in cima alla collina, sopra il suo Corton Renardes: “C’est un terroir à rouge.” (“È un terroir da rosso.”) Tornare al Savigny-lès-Beaune Blanc sembra un esercizio inutile dopo il Corton-Charlemagne – ma lo è lontano dal vero. Il Savigny ha beneficiato di essere stato ossigenato e lasciato aprirsi per un’ora. In effetti, non è affatto ridicolo paragonarlo al suo fratello maggiore. Anzi, Madame Bize-Leroy si sofferma su di esso, dicendo che trova il Savigny più equilibrato – il vino appare splendidamente stratificato, senza essere pesante o denso. È di gran lunga il miglior Savigny-lès-Beaune Blanc che abbia avuto la possibilità di assaggiare e – come dimostrato da questo confronto – potrebbe competere con molti Corton-Charlemagne. Naturalmente, il Corton-Charlemagne Domaine Leroy 2018 è ancora un bambino – un vino costruito per l’invecchiamento che avrà bisogno di anni prima di essere accessibile, e la stessa Bize-Leroy conferma che non sarà rilasciato a breve. Ha tutto per diventare un vino eccezionale in futuro, ma il Savigny è quello da bere ora. Questo è il mio decimo anno a FINE+RARE e sono relazioni come questa a definire la nostra attività: avere la possibilità di condividere un momento con una delle leggendarie produttrici di Borgogna, parlando apertamente e onestamente di due dei suoi vini, è davvero speciale. Alcuni sono veloci a liquidare Maison Leroy come “solo” l’etichetta négociant di Bize-Leroy, forse per ignoranza o per mancanza di esposizione alla gamma. Non posso fingere che questi vini siano economici, ma non posso nemmeno fingere che Madame Leroy sia come gli altri produttori. Il suo naso è straordinario, il suo accesso vastissimo, e i vini risultanti unici. Posso solo ammirare questa donna di 93 anni, il modo in cui descrive i suoi vini, la sua umiltà, per non parlare dei vini che portano il suo nome. Degustazione della Collezione Maison Leroy 2025 2018 Bourgogne Blanc: Il Bourgogne Blanc 2018 della Maison Leroy è estremamente espressivo. Quasi esuberante al naso, mostra concentrazione, mandorle tostate, succosa arancia sanguinella e verbena. Il palato è altrettanto impressionante – e sarebbe facile confonderlo alla cieca con un Meursault molto buono. Analogamente al suo corrispettivo rosso, il vino ha guadagnato profondità al palato rispetto all’ultima degustazione. È vivace ed espressivo, pur conservando quella caratteristica pienezza così piacevole. Madame Lalou Bize-Leroy mi dice che raramente, se non mai, ha avuto un Bourgogne Blanc di questo calibro – e a questo punto possiamo solo concordare! Bere 2025-2031. 2018 Meursault: Il Meursault 2018 della Maison Leroy è meno immediatamente espressivo del Bourgogne Blanc, degustato poco prima – ma non lasciatevi ingannare. Si percepisce la tensione e la serietà di questo vino, con accenni di mineralità affilata al naso. Al palato è concentrato e raffinato, ben bilanciato e sfaccettato, con una complessità cremosa. Rispetto al Bourgogne Blanc, questo è chiaramente di un altro calibro – un vino più aristocratico con maggiore densità. Pur essendo già accessibile, trarrà beneficio da altri tre-cinque anni in cantina per esprimere il suo pieno potenziale. Bere 2027-2035. 2018 Savigny-lès-Beaune Blanc: Il Savigny-lès-Beaune Blanc 2018 della Maison Leroy è ricco al naso. Deliziose note di brioche sono accompagnate da mela leggermente ammaccata e frutti agrumati più luminosi, con tocchi delicati di fior di limone. Man mano che il vino si ossigena, continua a guadagnare densità, strato dopo strato – creando un vino succoso e invitante. Al palato, il vino è immediatamente ricco e profondo – impossibile da confondere alla cieca con un semplice village. Ha la ricchezza tipica di un Corton-Charlemagne, perfettamente bilanciato tra potenza e tensione. È di gran lunga il miglior Savigny-lès-Beaune Blanc che abbia mai assaggiato e surclasserebbe molti Corton-Charlemagne presenti sul mercato. È già godibile ora, ma ha tutto per invecchiare senza sforzo. Bere 2025-2040. 2018 Auxey-Duresses: Proveniente da un terroir che a volte può essere un po’ troppo flamboyant o invasivo, l’Auxey-Duresses 2018 della Maison Leroy appare molto discreto dopo il Savigny-lès-Beaune. Con note di mandorle fresche e un accenno di riduzione al naso, è leggermente smorzato. Al palato, il vino mostra chiaramente la concentrazione dell’annata, pur rimanendo elegante e contenuto, con un accenno di pepe bianco. Bere 2028-2035. 2018 Bourgogne Rouge: Degustato l’ultima volta a febbraio 2022, il Bourgogne Rouge 2018 di Leroy mostra ancora un naso molto affascinante e delicatamente profumato, oscillante tra petali di rosa secchi e piccole bacche rosse, ma sembra aver guadagnato peso e densità. Mantiene una splendida acidità che bilancia la concentrazione dell’annata, il finale è pulito e vibrante. Una delle nostre versioni preferite della cuvée negli ultimi anni, giovane e già godibile, continuerà a evolversi positivamente per altri sette-dieci anni. Bere 2025-2035. 2018 Monthélie: Al naso, il Monthélie 2018 della Maison Leroy mostra bellissime note di viole avvolte in un mix di bacche rosse e nere, soprattutto ribes nero. Quegli aromi floreali puri e delicati si ritrovano anche al palato, accompagnati da tannini molto sottili, quasi con un accenno di dolcezza che fa venire l’acquolina. Un vino molto completo che eccelle in questa annata più calda: una splendida espressione di questo terroir che, per me, mostra l’eleganza di Volnay con una sensazione in bocca leggera. Bere 2027-2037. 2018 Volnay: Servito subito dopo il Monthélie 2018, il Volnay 2018 della Maison Leroy ha un naso leggermente più discreto. Profumato e tutto dedicato alla finezza, ma un po’ timido a questo stadio. Al palato c’è buona concentrazione e precisione, ma manca la freschezza e il mordente che ci si aspetterebbe a questo punto. Sicuramente elegante e raffinato, ma senza quel piccolo “twist” che arriverà con qualche anno in più in cantina. Bere 2028-2040. 2018 Savigny-lès-Beaune: Come il suo corrispettivo bianco, il Savigny-lès-Beaune 2018 della Maison Leroy potrebbe essere scambiato per un Corton alla cieca. Ha un naso concentrato e solare con profilo di frutta più scura. Anche al palato mostra densità: il vino è succoso e ricco, ma non pesante. È ben bilanciato, con tannini delicati e una finezza precisa. È succoso quanto accessibile. Bere 2027-2037. 2017 Gevrey-Chambertin: Uno dei punti salienti della Collezione Maison Leroy 2022 al momento del rilascio. Il vino ha mantenuto tutta la sua profondità, complessità e potenza, ma si è leggermente chiuso. È ricco di ciliegie scure dense, accenni di spezie dolci e sottobosco. Al palato offre una struttura generosa e equilibrata, avvolgente, anche se leggermente smorzata rispetto a tre anni fa. Offre comunque un finale molto lungo con note fresche persistenti. Un grand village Gevrey che avrà bisogno di qualche anno di cantina! Bere 2030-2040. 2017 Pommard: Il Pommard 2017 della Maison Leroy esprime il terroir, combinando more mature e profonde con accenni di ribes nero e un tocco di rusticità, bilanciato dalla freschezza e precisione dell’annata. Al palato ha struttura ferma ma delicata con tannini morbidi, muscolosi e vellutati. Degustato subito dopo i 2018, appare più accessibile (come spesso accade con i 2017). L’acidità guida il cuore del vino, conferendo sapidità e lungo finale. Bere 2025-2035. 2016 Santenay, Premier Cru, La Comme: Immediatamente espressivo, il Santenay Premier Cru La Comme 2016 della Maison Leroy proviene da un terroir sottovalutato, al confine meridionale di Chassagne-Montrachet. Il naso affascinante e sfaccettato oscilla tra lampone e ciliegia succosa con un accenno di liquirizia. Il vino avvolge la bocca; si percepisce la sostanza, con una texture delicata e raffinata. Mostra chiaramente la concentrazione dell’annata e le rese minuscole, ma tutto è avvolto in una bocca elegante – creando un vino di grande equilibrio. Bere 2025-2035. 2015 Chorey-lès-Beaune: Ricco al naso, il Chorey-lès-Beaune 2015 della Maison Leroy appare inizialmente timido, ma con un po’ di ossigenazione si nota quanto sia denso e saturo, con aromi di mirtilli maturi, more e un accenno di spezia (forse cannella). Al palato è concentrato con tannini avvolgenti e strati di frutti di bosco – lampone, fragola e mirtillo. Ha molto da dire e offrire, con un finale sorprendentemente persistente, ma beneficerà di qualche anno in più in cantina per esprimere tutto il suo potenziale. Bere 2028-2040. 2012 Côte de Nuits Villages: Realizzato con frutta proveniente da Nuits-Saint-Georges e Corgoloin, il Côte de Nuits Villages 2012 di Leroy è sempre un po’ chiuso al naso e leggermente austero. Ma è anche elegante e delicato, con note floreali che si combinano con aromi terziari. Al palato appare in una fase leggermente imbarazzante, molto denso con tannini morbidi e integrati, ma in qualche modo disgiunto tra frutti scuri e carattere terziario. Lo lascerei riposare qualche anno prima di ritornarci. Bere 2030-2040. 2011 Nuits-Saint-Georges: Finemente profumato, il Nuits-Saint-Georges 2011 di Leroy offre un naso delicato di frutti rossi misti sostenuti da note terrose, un po’ di pot-pourri e un accenno di spezie. Al palato è concentrato e affascinante, ma con l’aria si apre ulteriormente mostrando densità, ancora giovane per un village di 14 anni. Verso il finale si percepisce un accenno di rusticità che stimola l’acquolina. È lontano dalle aspettative austere che si potrebbero avere da questa combinazione di annata e appellation. Non ha ancora raggiunto il suo plateau di bevibilità, ma è perfettamente accessibile ora. Bere 2025-2040. Lalou Bize-Leroy: a living legend – Burgundy’s matriarch 

Lalou Bize-Leroy: una leggenda vivente

Few people have been lucky enough to be as immersed in Burgundy’s finest wines as Martin Donatsch. His father bought a pallet of top Burgundy, including those of Domaine de la Romanée Conti (DRC) and Armand Rousseau, every year from the early 1970s onwards. Martin’s birth in 1978 – a fantastic vintage in Burgundy – only encouraged his father to buy more, and Martin, now in his early 40s, has been enjoying wines from the family collection ever since. Just last week, he uncorked a 1978 DRC Echézeaux. This immersion has provided him with an extraordinary understanding of Chardonnay and Pinot Noir – something that has doubtless helped him become one of the world’s great emerging winemaking talents. Donatsch is one of a small number of producers growing Pinot Noir, Chardonnay and the native Completer grape in Bündner Herrschaft in Switzerland. This tiny Swiss valley, for the time being, remains largely unknown – but, as Donatsch certainly believes, it may just be one of the world’s last great regions for fine wine production.The altitude (500 to 700 metres above sea-level) sees the vines flower a week later than is typical in Burgundy, yet picking dates are three to four weeks later. This provides a much longer growing season, allowing for complex flavours and aromas to develop in the grapes. Despite the altitude, the grapes reach good levels of ripeness thanks to the warm, dry wind – known locally as a “foehn”, that sweeps through the valley. Unlike Burgundy, autumns here are dry, so there is rarely pressure to pick before rain arrives, allowing for additional hang-time. The altitude keeps the acidity high, offsetting the naturally slightly higher alcohol (typically around 14%), meaning the wines never feel overly alcoholic. While Bündner Herrschaft has been home to Pinot Noir since the 15th century, Donatsch – now in the hands of the fifth generation – has pioneered the quality revolution in the region. Martin’s father Thomas Donatsch was not only the first to – then illegally – plant Chardonnay in 1975, but also the first to introduce French barriques to Switzerland, influenced by his vigneron friend André Noblet, the winemaker at Domaine de la Romanée-Conti from 1945 to 1986. In the early 1970s, Thomas – a young 20-year-old about to take on the family winery – set off to learn from the best. Obsessed with Burgundy from a young age, he knocked on the door unannounced at Domaine de la Romanée-Conti. In a fortuitous set of circumstances, Noblet had just returned from his first ever holiday (in Gran Canaria) and the first extended time away from his beloved wines. He had missed his wine cellar so much during the trip, he couldn’t wait to return. Finding the young Donatsch sitting by the door and desperate to reacquaint himself with his wines, Noblet invited Thomas to spend the afternoon with him tasting the different cuvées from barrel. Martin believes his dad gained Noblet’s trust by initially criticising DRC’s Montrachet 1968. Tasting the wine Donatsch reportedly said, “There is no way this wine could come from the great Montrachet!” A little precocious, perhaps: fortunately Noblet agreed it wasn’t his finest vintage, but the result of experiments in the winery. It was the beginning of a lifelong friendship, with Donatsch returning to the DRC cellars every year. On each visit, Noblet would always pour him a glass of Montrachet 1968 and ask his opinion before tasting any of the other wines. It wasn’t long before Donatsch was buying a pallet of Grand Cru Burgundy every year (at that time a bottle of La Tâche was just over £35 a bottle). Noblet also started to help Donatsch improve his Pinot Noir – first by giving Thomas his first three French barriques. These weren’t just any old barrels though, they had previously held La Tâche and were made by François Frères – who at the time had just two customers, Domaine de la Romanée-Conti and Henri Boillot. Donatsch took the barrels back to Switzerland, and the winery has been using François Frères barriques ever since. I asked Martin why the introduction of French barriques in Switzerland was such a revolution for the region. At the time, he says, the Swiss wine schools were obsessed with cleanliness – teaching the importance of filtering wines, using protective winemaking methods and using stainless steel tanks even for the red wines. The use of barrels was the opposite; it meant no additional filtering and a more oxidative environment. Donatsch believes the introduction of barriques around the world revolutionised fine wine. Angelo Gaja was the first to do it in Italy; Torres the first in Spain; Mondavi in the US; and Keller in Germany. But Thomas Donatsch was doing this 10 years before any of them, thanks to the influence of André Noblet, as well as Jean-Bernard Delmas – the winemaker at Château Haut-Brion, another of Thomas Donatsch’s influential friends.  Speaking with Martin Donatsch, you can’t help but feel he has got all his priorities in order. The small size of his winery means he can control every aspect of production, while benefitting from the variety that a life in wine can offer. Producing just 35,000 bottles a year means that when he is not in the vineyard tending his crop, he is in the winery, or fulfilling orders and redesigning his website (graphic design is another passion of his). Being one of the country’s most prestigious winemakers he sells his wine into the country’s top restaurants and luxury hotels, who can’t get enough of his wine. Donatsch’s annual release of wines sells out in just hours. While this is a great sign of his talents, it is also why many people outside of Switzerland have never heard of, let alone experienced, the world-class Pinot Noir and Chardonnay from the winery. Despite the demand for the Donatsch wines, there are no plans to expand: firstly because the authorities won’t allow it, but second because Martin loves the “human” size of the business and doesn’t want to lose that. Martin is, however, keen for more people outside of Switzerland to taste them. Beyond the tiny volumes that make it as far as export, to source these extraordinary wines you’ll have to (when one can) visit the winery yourself. The high life: Martin Donatsch

South America’s finest Argentina and Chile have rapidly become hotspots for fine wine. Offering high-altitude sites with glorious sunshine, and varied soils, it’s no surprise that some of Bordeaux’s top estates have ventured into the two nations. Cheval Blanc's Argentinian collaboration with Terrazas de los Andes, Cheval des Andes, is unsurprisingly impressive. The estate works with high-altitude sites to produce a Malbec-based blend. The 2018 that is set to be released this year has already been rated highly by James Suckling (98 points), who wrote, “This will be a great wine indeed.” First Growth Ch. Mouton Rothschild works with Concha y Toro in Chile’s Maipo Valley to produce Almaviva – a wine that has, in Suckling’s words, become “a benchmark for the reds of the Andes”. He awarded 97 points to the 2019 and describes it as “extremely perfumed… vertical and integrated”. Bodega Catena Zapata – one of Mendoza’s leading names – will release the 2018 vintage of its top wines, Nicolás Catena Zapata and Adrianna Vineyard Mundus Bacillus Terrae. The latter is a Malbec from a 1.4-hectare plot which sits at almost 5,000 feet, while Nicolás Catena Zapata is the estate’s flagship wine – and Argentina’s first “Grand Vin”, made with the finest fruit from ungrafted vines on the family’s high-altitude sites. Both have earned high praise with the Wine Advocate’s Luis Gutiérrez describing the 2018 as “among the finest vintages for the Mundus Bacillus Terrae” (98 points). The Chadwick family – who own Errázuriz – will also release the 2019 vintages of their top cuvées, Seña and Viñedo Chadwick. Made by Francisco Baettig, these are incredible wines – earning 98 and 99 points from James Suckling, respectively. Last but not least is Clos Apalta, the Chilean estate that produces the finest expression of Carménère in the world. The 2018 is another excellent release, with 98 points from James Suckling. Super Tuscan stars The 2018 vintage in Tuscany was stunning – producing wines of elegance and freshness. While some of the Super Tuscans have already been released, a handful will be available via La Place this month. Masseto – the cult Ornellaia breakout star, described as the “Pétrus of Italy” – and the third vintage of its second wine, Massetino, will be released. Produced in tiny volumes, these extraordinary expressions of Merlot will be in unsurprisingly high demand. Solaia – Tignanello’s sibling from the Antinori stable – is set to be similarly popular, as ever. Giving it 98 points, Antonio Galloni of Vinous wrote, “I can't remember ever tasting a young Solaia with this much sheer appeal and balance in the early going.” The month will also see the latest releases from Bibi Graetz. The artist-turned-winemaker works with old vines and indigenous varieties to produce elegant expressions of Chianti. The 2019 Colore received 99 points from James Suckling who described it as “old-vine magic”, finding the 2019 Testamatta serious and structured (97 points). Cult California September sees a flurry of the Golden State’s most illustrious names hit the market. Opus One – the joint venture between Mondavi and Ch. Mouton Rothschild – is consistently in demand, and no more so for the 2018, with 98 points from Wine Advocate’s Lisa Perrotti-Brown MW and 99 points from Suckling. Having tasted it ourselves – we can vouch for the elegance of the vintage. It’s also worth paying attention to the new release of Overture (also based in the 2018 vintage), which is undoubtedly the best to date. Keep an eye out for the top-scoring 2018s from Vérité (100 points for La Muse, 98 points for La Joie and 97+ for Le Désir from Wine Advocate); the latest release of Joseph Phelps’ Insignia, the original Napa Valley proprietary red (2018 – with 97+ points from Wine Advocate); the 2019s from L’Aventure – the Pasa Robles estate run by Bordelais expat Stephan Asseo; and the 2017 vintage of Dominus (97+ points from Wine Advocate) – the cult wine from Christian Moueix of Pétrus. The new vintage from Maya Dalla Valle – who trained at Pétrus, Latour, Masseto and more, and is now heading up the family estate, Dalla Valle – is guaranteed to fly. The 2018 Maya has already got a smattering of top scores, with 100 points from Wine Advocate’s Lisa Perrotti-Brown MW, who wrote, “As cerebral as it is downright hedonic, this Maya is simply jaw-dropping.” This year will also see the latest vintage of Beaulieu Vineyard’s Georges de Latour Private Reserve – Napa’s first cult wine, and only its second release via La Place. The 2018 has 98 points from both Vinous and Suckling, with Antonio Galloni describing it as “sensational”. Ex-château classics The September Series isn’t limited to the New World – with a handful of estates in Bordeaux and the Rhône joining in, including the annual release of a ready-to-drink vintage of Ch. Latour, after the First Growth left the en primeur system. This year sees a star-studded vintage, 2005, emerge from the cellars. A vintage that needs little introduction, this wine has unsurprisingly high scores; tasting it earlier this year, Antonio Galloni gave it a perfect 100 points, describing it as “life affirming”. Ch. Palmer will also release 2011; while a less illustrious vintage, Robert Parker described it as the wine of the vintage in Margaux. Cheval Blanc, meanwhile, will release the 2019 vintage of Le Petit Cheval Blanc, the property’s highly desirable white. While normally Ch. d’Yquem would also release a vintage of their sweet wine, they are holding back the 2019, so this year sees only the 2020 vintage of Y d’Yquem (the estate’s dry white) released. Looking across to the Rhône, Ch. de Beaucastel will release the 2019 vintage of their Hommage à Jacques Perrin. This cuvée comes from ancient Mourvèdre vines and is made in tiny volumes. Alistair Cooper MW of jancisrobinson.com describes it as “a powerful thoroughbred”. Top wines from further afield A handful of wines from South Africa and Australia have also made their way onto La Place. The 2018 vintage of Klein Constantia’s Vin de Constance – the iconic sweet wine with a long and fabled history – will be released this year, perhaps a comfort to sweet wine fans who won’t be getting their fix with Yquem. Only scored so far by James Suckling (98-99 points), he rightly acknowledges it as a “unique wine”. Two names from Down Under get their second release via La Place this year. The 2017 vintage of Jim Barry’s The Armagh Shiraz – a Clare Valley legend – will be joined by 2018 Wynns John Riddoch Cabernet Sauvignon, a standard-bearer for Coonawarra. New this year This year sees several new names join the September Series. First up is Peter Michael Winery: founded by Sir Peter Michael CBE in the 1980s, this estate has been championing single-site, elegant wines from its corner of the Knights Valley, on the border of Napa and Sonoma, ever since. The 2018 vintage of the property’s Cabernet blends Les Pavots (from a single plot on the original Knights Valley estate, 97 points from Jeb Dunnuck) and Au Paradis (from a site in Oakville, purchased in 2009, 98 points from Jeb Dunnuck). While Robert Parker has spent much of his time rating wine, he also invested in a property in Oregon with his brother-in-law Michael Etzel. The result is Beaux Frères, now part of the Henriot stable, in Ribbon Vale, which produces world-class Pinot Noir. The 2019 vintage of the two top cuvées – from the Beaux Frères Vineyard and Upper Terrace Vineyard – will hit La Place this year. For the first time, Australia’s most famous estate, Penfolds, will release one of its wines, Bin 169 Coonawarra Cabernet Sauvignon. A classic expression of this grape on the region’s terra rossa soils, the 2018 is described as “impressive” by Suckling (97 points). Recently announced is the first vintage of Yjar – a new ultra-premium Rioja from Telmo Rodríguez. It’s described as an “outstanding first bottling” (James Suckling, 97 points) and “a wine that transcends the vintage” (Luis Gutiérrez from Wine Advocate, 96 points). September Series: the 2021 edition unpacked

Entrare nella bottai­a della Ch. Smith Haut Lafitte è come fare un salto nel passato, pieno dell’odore del legno stagionato, di un fuoco aperto e degli stessi attrezzi che i bottai usano da secoli. Poche tenute hanno il lusso di un bottaio interno. Sebbene i produttori lavorino inevitabilmente a stretto contatto con le tonnellerie (aziende produttrici di botti, come François Frères, Stockinger e altre), avere un artigiano in loco, che lavora fianco a fianco con il team di cantina per creare botti esclusivamente per il proprio terroir è un’altra cosa. “È molto importante per la precisione del vino”, spiega il Cellar Master Yann Laudeho. 
 Florence e Daniel Cathiard, proprietari della tenuta di Pessac-Léognan, hanno costruito una bottaia in loco quasi 30 anni fa, nel 1995, e l’attuale bottaio, Yann Dez, lavora qui dal 2021. Il padre del nativo di Bordeaux era un metalmeccanico, e Dez è entrato nel mondo della fabbricazione delle botti del tutto per caso – aveva un amico tonnelier e si è aperta un’opportunità di lavoro al momento giusto. Prima che se ne rendesse conto, Dez aveva imparato il mestiere da alcuni dei migliori bottai del paese (incluso uno che ora realizza le botti a Ch. Margaux), passando 15 anni a lavorare sotto Didier Fesil. Fesil fu il primo bottaio della famiglia Cathiard nel 1995, poi fondò una piccola tonnellerie propria (Tonnellerie Bordelaise) ed è stato nominato il miglior “Maestro Bottaio” della nazione – due volte. In effetti, Fesil è ancora molto coinvolto nella tenuta, aiutando a scegliere il legno per le botti e consigliando su tutto ciò che riguarda la quercia; ed è stato Fesil a proporre Dez per il ruolo a Smith Haut Lafitte. “Non ci sono libri,” dice Dez, quando chiedo dell’arte della costruzione delle botti. “Si tramanda da tonnelier a tonnelier." Le prime testimonianze della bottaia come mestiere risalgono al 900 a.C. – con l’arte tramandata di generazione in generazione da allora. “Io continuo la tradizione,” dice Dez, chiaramente con un senso d’orgoglio per questa antica abilità artigianale. Ma con la polvere, il rumore e il lavoro fisico coinvolti, le scuole di tonnellerie, mi racconta Dez, faticano a reclutare giovani. È comune che i bottai abbiano problemi alle spalle e alle orecchie (a causa del martellare continuo) – e lo stesso Dez si è rotto un gomito. 
 In teoria, il processo può essere meccanizzato – ma Dez è chiaro su quanto sia importante lavorare a mano, e non solo per preservare quest’arte antica. “Sento col naso, percepisco la resistenza,” dice. Ogni botte, spiega, è diversa – con un numero di doghe leggermente diverso e una forma leggermente diversa, tutto adattato in base al legno con cui sta lavorando. Selezionare il legno giusto è fondamentale – “leggerlo”, spiega, osservando la grana per vedere dove ci sono potenziali punti deboli, capire dove si eserciterà la maggior pressione e collocare ogni doga di conseguenza, assicurandosi che nemmeno una goccia possa filtrare dalla botte finita. “È un lavoro che è sia fisico, sia al tempo stesso richiede pensiero,” dice Dez – e questa combinazione è gran parte del suo fascino per lui. È affascinante sentire come Dez parla delle botti; per lui, ognuna ha una personalità unica. Quando gli chiedo come sa di aver fatto una botte davvero buona, alza le spalle: “On le sent.” (“Lo senti.”) Mentre si tosta una botte, mi racconta, il profumo del fumo cambia, rilasciando aromi diversi – cosa che sento mentre lavora davanti a me. Sapere quando ha passato il tempo perfetto sul fuoco è il segreto – e riguarda più del semplice odore, è un istinto viscerale che non riesce del tutto a spiegare. 
 Smith Haut Lafitte approvvigiona quercia da una gamma di foreste, e prova continuamente legni di diverse foreste, tostature e fa degustazioni alla cieca, anche se – dopo oltre 25 anni – sanno cosa funziona per il loro vino e il loro terroir. Il Cellar Master Laudeho spiega che, per lui, Tronçais e Jupilles sono i migliori – “diamanti” che completano alla perfezione il loro sito. E l’equilibrio è la chiave; il legno lavora per il vino, non il contrario. 
 Sembra un lavoro solitario, commento, a martellare nella sua torre – ma non è qualcosa che lo disturbi. “Sono un po’ perfezionista,” mi dice. Avere solo se stesso su cui contare, e sapere di poter garantire che ogni botte soddisfi i suoi standard rigorosi, gli si addice. In effetti, non si accontenta nemmeno degli strumenti standard – la maggior parte se li costruisce da solo, progettati su misura per adattarsi al suo modo di lavorare. Mi descrive un martello specifico che ha realizzato, e come gli consente di lavorare meglio e con maggiore precisione, il manico in legno quasi setoso per le ore di utilizzo, modellato sulla sua mano.
