“We’re just sort of making it up as we go along,” Andy Erickson says to me on our transatlantic Zoom call, shrugging and smiling as we talk about his and his wife’s project, Favia. It’s not necessarily what you’d expect this star consultant winemaker to say – having helped craft the likes of Screaming Eagle, Harlan, Dalla Valle, Staglin, Mayacamas and more. It’s hard to believe that anything this man does is a fluke of fate. And yet this self-effacing tone is a thread that runs throughout my conversation with Erickson and his wife Annie Favia.  Favia brings her own, similarly enviable resume, having worked at Kongsgaard, Corison and for many years alongside cult viticulturist David Abreu, giving her unparalleled experience of Napa’s finest vineyards. She and Erickson met at a dinner party almost 30 years ago, instantly hit it off, and within six months were making their first barrel of wine together, tucked in the corner of their garage. That first experimental barrel of 1996 Russian River Pinot Noir (of which they still have a few bottles) was the start of something that grew as they and their family did, and the Favia label was born in 2001, although it was a couple of years before there was more than a barrel or two to sell.   The concept behind the brand is simple: “It’s our expression of what we think Napa Valley wine should be,” explains Erickson. But Favia has also been a project where they could experiment, push the envelope and play with the “pioneering freedom” (in Erickson’s words) that Napa offers. The flexibility to purchase grapes from different areas, pick and choose varietals, and work with no constraints in the winery is something they clearly savour.  The project focuses on Cabernet Sauvignon and Cabernet Franc – the latter in particular a grape they both love. Inspired by the likes of Ausone, Cheval Blanc, the reds of the Loire and Dalla Valle’s Maya (a wine that Erickson now makes), they were keen to play with the varietal, crafting two Cabernet Franc blends – Cerro Sur and La Magdalena. As Annie Favia explains, “[Cabernet Franc] allows you to make one kind of wine if you pick it at one time, and then a completely different wine if you pick it at another time.”  More than anything, however, Favia is about expressing a sense of place and connection to the land. “When I was growing up, my mom was an avid gardener and I spent a lot of time with her in the garden,” says Annie. “So it's always been really kind of home to me.” It’s unsurprising perhaps that their Coombsville property is far from just a vineyard and winery, but a homestead of sorts. “We really love to grow all kinds of things,” Annie says eagerly. While vines are the main crop, Annie also farms a range of other plants – largely for her loose-leaf tea company, ERDA, but also fruit and vegetables for the family table. “Growing different crops allows you to look at grapevines in a different way,” she explains.   For the Favia label, they work exclusively with fruit from Oakville and Coombsville, and while Oakville is arguably one of the most prestigious appellations in Napa, Coombsville is less well known. Fruit from the AVA has often been blended away into regional wines, but with its volcanic soils and proximity to the San Pablo Bay bringing cooling influences, they love its concentrated power, naturally fresh acidity and savoury quality, and more forward-focused tannins versus the broader profile of Oakville.   Although Erickson is increasingly focused on Favia, he still consults for a handful of carefully selected estates – something he can’t see giving up. “It’s a great outlet,” he tells me, explaining how different it is to channel a client’s vision for a project, versus craft your own wine exactly the way you want. Much like the various crops they farm, it’s another way for them to learn, experiment and develop. And yet, “Presenting something that you’ve made to people and getting a response…” Erickson says. “I love that part of what we do.”  Two decades after Favia was born, they’ve received significant investment from the Huneeus family (which owns Quintessa), along with a new 86-acre property in Oakville, where they’ll soon be starting work on a new winery, taking the project to the next level. “We’re going to be doing exactly what we’ve done for 20-plus years, but now have an even bigger farm and more fruit trees and more gardens and more wine to share with people. And it’s just really fun,” says Annie, the excitement clear in her expression. They’ll be bringing back Sauvignon Blanc, which they’ve made in the past, and are making their first wine with a tiny plot of Malbec they planted – a variety they’re considering with climate change.  On paper, Favia and Erickson are a formidable duo – with CVs that offer a roll-call of Napa icons – and yet they are entirely unassuming. Their absolute passion for the vine, for farming, the region and their craft shines through; and while they might be as down-to-earth as they come, it’s already clear that Favia is destined to reach great heights.  The latest releases of Favia are available now

Growing up: Favia

Come abbiamo commentato nel nostro rapporto del 2022, le annate a Napa sembrano essere sempre più definite da condizioni estreme. La vendemmia 2023, tuttavia, è stata – come l’ha descritta Neil Bernardi MW, COO di Colgin – “notevolmente non notevole”.
 “È stata un’annata calma e controllata”, ha detto la produttrice Cathy Corison, che vinifica con la sua etichetta eponima dal 1987. “Non c’è stato nulla che ti costringesse a intervenire. Non faceva né troppo freddo, né troppo caldo, né pioveva. Abbiamo avuto il lusso del tempo.” Per la Corison, è stata un’annata esemplare, facilmente una delle sue preferite – anche se non è ancora pronta a dichiararla la migliore della sua carriera (almeno per ora). Il clima dell’anno è stato insolitamente fresco a tratti, ma nel complesso senza eventi significativi. Guardando ai mesi precedenti la stagione vegetativa, tuttavia, la California settentrionale ha ricevuto livelli di pioggia storici. Con un clima mediterraneo classico, le regioni vinicole della California vivono estati calde e secche, e la maggior parte delle piogge cade tra ottobre e aprile. Negli anni di siccità del 2020 e 2021, Napa ha ricevuto appena 8 e 10 pollici di pioggia rispettivamente. L’annata 2022 ha portato un sollievo tanto atteso, con 26 pollici di pioggia misurati a Oakville – praticamente nella media rispetto agli ultimi 10 anni. I record sono stati però infranti nel 2023, con un incredibile totale di 58 pollici di pioggia registrati tra la fine del 2022 e l’inizio della vendemmia 2023. I bacini locali si sono riempiti fino a traboccare e molti vigneti nelle aree più basse sono rimasti sott’acqua durante l’inverno. Le piogge sono proseguite fino a maggio, intervallate da fitte nebbie e, con i suoli saturi e cieli coperti, il germogliamento è stato ritardato di circa due settimane. Sebbene la maggior parte dei produttori sul fondovalle abbia riportato un’ottima allegagione e carichi d’uva superiori alla media, non è stato così ovunque. Sulla Spring Mountain, presso la Philip Togni Vineyard, la vinificatrice Lisa Togni ha spiegato che le tempeste arrivano prima in questa zona, dove le nubi si soffermano più a lungo. Umidità e vento possono ostacolare l’impollinazione, riducendo il numero di acini per grappolo. Le rese, pur non essendo storicamente basse, sono state comunque inferiori alla media nel 2023. Al contrario, Sam Kaplan, enologo di Arkenstone e Memento Mori, ha riferito di aver dovuto diradare “in modo aggressivo” durante la stagione di crescita, a causa di rese potenziali più alte del normale e grappoli grandi e perfettamente formati. Le temperature primaverili sono state più fresche della media, una tendenza che è proseguita per tutta l’estate. A giugno e luglio, le temperature non hanno mai superato i 32°C – fatto altamente insolito rispetto a ogni annata dell’ultimo decennio. Ad agosto le temperature sono salite leggermente, ma senza eventi di caldo estremo. “Le cose peggiori possono accadere nella prima settimana di settembre”, ha osservato l’enologo e viticoltore Steve Matthiasson. La maggior parte dei produttori di Napa trattiene il respiro durante il weekend del Labor Day, ormai tristemente noto per ondate di calore e incendi. Nel 2023, però, il maltempo non si è manifestato. Temperature moderate, leggermente inferiori alla media, sono persistite per tutto settembre, e le uve sono rimaste a lungo sulla vite, accumulando lentamente zuccheri e aromi. Per molti produttori, la sfida più grande del 2023 è stata la pazienza. Dopo gli improvvisi picchi di calore degli ultimi anni, la Togni era pronta per la vendemmia già il 15 agosto. Due volte ha fissato le date di raccolta, solo per annullarle all’ultimo momento, quando nuove analisi mostravano che la maturazione non era ancora ideale. La vendemmia è infine iniziata alla Philip Togni Vineyard il 2 ottobre – una grande differenza rispetto al 2022, quando era cominciata il 23 agosto. Con il progredire della stagione di raccolta e le temperature ancora stabili, la possibilità di pioggia diventava una preoccupazione, dato che l’uva sarebbe rimasta a maturare fino a metà ottobre o oltre, a seconda del sito. Anche questa volta, però, la pioggia non è arrivata. “È stato tutto perfetto”, ha dichiarato Mike Smith, enologo di Myriad, notando che, sebbene le condizioni del 2023 fossero insolite rispetto alla storia recente, in molti modi rappresentavano un ritorno a una normalità più antica. “Nessuno sotto i quarant’anni ha probabilmente mai visto un’annata così,” ha detto. “Sono più abituati a caldo e siccità.” Smith ha iniziato la raccolta per Myriad il 5 ottobre, circa tre settimane più tardi rispetto alle annate recenti. Si chiede, tuttavia, se altri produttori non abbiano iniziato troppo presto – un dubbio condiviso da Kaplan, che ha notato una mancanza di densità al centro del palato in alcuni vini, forse frutto di decisioni prese seguendo troppo il calendario, viste le tendenze recenti. In alcune tenute la raccolta era ancora in corso ai primi di novembre. Da Colgin, Bernardi ha dichiarato che la loro pazienza è stata premiata: “Quando abbiamo vendemmiato, sentivamo che ogni vite era al massimo di ciò che poteva dare. L’allineamento tra zuccheri e composti fenolici era fenomenale.” Ha aggiunto che, dopo la raccolta, le foglie sono subito ingiallite, segno che la vite aveva completato il ciclo vegetativo. Non ci sono state preoccupazioni per le rese – l’abbondante acqua e la stagione fresca non le hanno ridotte, e la maggior parte dei produttori ha riportato quantità superiori alla media, soprattutto sul fondovalle. La qualità dell’uva è stata uniformemente eccellente, con acidità naturali e tannini abbondanti. Smith ha elogiato il colore e la densità dei 2023, sottolineando che l’estrazione è stata rapida e la fermentazione regolare. Kaplan ha invece dovuto prestare attenzione a mantenere corpo e struttura nei vini, gestendo le fermentazioni per bilanciare frutto e tannino. Molti produttori hanno anche lodato il profilo aromatico dei 2023. In annate più calde, come la 2022, molte note delicate tendono a svanire, ha spiegato Tony Biagi, enologo di Patria e Hourglass. Nel 2023, la combinazione di frutti rossi e neri, insieme a note floreali, ha dato vita a vini altamente profumati. Secondo Biagi, i 2023 offrono “potenza e finezza spettacolari”, con tutto ciò che serve per essere “un’annata superlativa” – vini capaci di invecchiare per almeno 30 anni. Ciò che potrebbe distinguere i vini del 2023 è l’alto livello di “finesse ed eleganza”, come ha descritto Andy Erickson di Favia. Pur ritenendo che il 2023 non sia la più “californiana” delle annate – almeno secondo gli standard moderni – i vini mostrano una qualità snella e aggraziata al palato, bilanciando potenza e grazia. Bernardi ha elogiato la “sensazione di leggerezza” dei vini di Colgin, qualcosa che, secondo lui, solo le annate più grandi riescono a esprimere. Confrontare il 2023 con altre annate risulta difficile. Più di uno, tra cui Matthiasson, ha detto che la stagione di crescita ricordava quella del 2011 – ma senza le piogge di ottobre che complicarono la raccolta di quell’anno. Lisa Togni ritiene che il 2023 sia un’annata classica di Napa, con condizioni moderate, che sembrano fresche solo in confronto alle annate torride più recenti. Kaplan paragona la purezza del frutto del 2023 a quella del 2018, ma ancora più evidente. “I vini saltano fuori dal bicchiere,” ha detto, “sono così profumati e aromatici.” Per Corison, l’altissimo livello qualitativo del 2023 ricorda il 2001, un’altra annata elegante che continua a evolversi con grazia. Ma il 2023 è davvero “l’annata del secolo”, come si mormora? Nel complesso, la qualità è molto alta. Dopo aver degustato decine di campioni da botte, è chiaro che nel 2023 era probabilmente più difficile fare un vino cattivo che uno buono.
 Anche se l’attenzione è già rivolta al 2023, diversi produttori hanno espresso dispiacere per la rapida svalutazione di altre annate, spesso trascurate per eccesso di semplificazione. La Wineburg di Quintessa ritiene che il 2023 sia senza dubbio un’ottima annata, ma che anche il 2022 lo fosse – ciascun anno ha la propria personalità e potrà attrarre palati diversi. Per Erickson, i vini nascenti del 2024 (un’annata che lo entusiasma particolarmente) saranno più tipicamente californiani, densi e potenti, mentre il 2023 sarà ricordato per la sua finezza e compostezza. Il 2023 è un’annata eccezionale – e i vini conquisteranno soprattutto chi ama uno stile classico. Grazie alla stagione lunga e fresca, molti – se non la maggior parte – dei vini mostrano una qualità bordolese, unendo il frutto puro californiano a freschezza, acidità e un corpo elegante e agile, con “una sensazione di leggerezza” come ha detto Bernardi. I tannini sembrano destinati a integrarsi perfettamente, e c’è una certa sobrietà nei vini che ricorda la Napa di un tempo. Napa 2023: resoconto dell'annata  

It’s easy to sneer at Sauvignon Blanc. Its success has been its downfall. It’s one of the most popular varieties planted around the world – coming in just behind Airén (grown widely for distillation, rather than wine) and Chardonnay. In New Zealand alone – a nation that has fully tied its cart to Sauvignon Blanc – 26,559 of its 41,603 hectares of vines are dedicated to the grape (for context, the entirety of Burgundy represents a little over 28,000 hectares). It accounts for over 86% of the nation’s wine exports (the next most exported variety is Pinot Noir, at less than 4%). And yet, wine cognoscenti are inclined to dismiss it.  The variety’s historic heartland is the Loire, where it was first recorded in the 16th century, but has since spread rampantly around the globe, finding its way into almost every corner. Indeed, there’s even a remote stretch of Burgundy dedicated to the grape (Saint-Bris). It also gave us Cabernet Sauvignon, of which it is a parent, along with Cabernet Franc – which is some legacy.  In her benchmark Vines, Grapes & Wines, Jancis Robinson MW describes Sauvignon Blanc as “aggressively recognisable”. With descriptors such as cat’s pee, gooseberry, passionfruit, capsicum, grapefruit and cut-grass stereotypical, it’s hard to disagree – but there’s much more to the grape. Today, the distinctive variety is responsible for the flinty styles of Sancerre and Pouilly-Fumé, more waxy, textured Bordeaux Blanc (where it is most often – but not always – blended with Semillon and aged in oak), the exuberantly pungent styles of Marlborough, richer, weightier northern Italian examples (not to mention many with extended skin contact) – and everything in between.  Ch. Margaux’s Pavillon Blanc is one of the most famous examples of Sauvignon Blanc – and rare in Bordeaux (at the top end of the category, at least) for not including any Semillon, which has never been planted on the site. Their archive has records back to the 18th century of a “vin de sauvignon” from the property. Tasting the wine, it’s always hard to believe it hasn’t been rounded out by its local partner – and this, Aurélien Valance, says is all to do with achieving the perfect level of ripeness.  “When [people] think Sauvignon Blanc, they think about unripe Sauvignon Blanc. When it is ripe, it can have very complex and floral perfume – but the problem is that it is very difficult to get it ripe and keep enough acidity,” the Deputy Managing Director explains. Working with old vines (around 50 years old), low yields and strict selection allows Ch. Margaux, however, to produce an exceptional, age-worthy white – one that “smells of Sauvignon Blanc – but not the Sauvignon Blanc that people are used to”. For Christian Patat – the winemaker behind L’Età Più Bella and Ronco del Gnemiz, who also worked at Miani – the perfect harvest date is key to giving Sauvignon “verticality”, especially in Friuli where the wines are naturally bigger and richer than those from the Loire. If you pick too late, it becomes all about the variety – rather than the site. For him, Sauvignon Blanc is an “amplifier of different soils”, which is why he has ended up making six different single-site expressions with his wife at Ronco del Gnemiz, all made the same way so that the terroir shines through in each. Omri Ram – of Société Civile du Ch. Lafleur – echoes this idea, feeling there’s a particularly narrow window for picking Sauvignon Blanc, before the variety becomes a caricature of itself. He argues there is a “valley between two aromatic peaks” in which Sauvignon Blanc must be harvested, a window that lasts maximum three days, but as little as 20 hours in a hot vintage – so it’s essential to watch your fruit carefully, and make sure it’s on the right soils (with clay to help retain freshness and avoid hydric stress).   Patat – like the team at Ch. Margaux – is fortunate to farm old Sauvignon vines, between 40 and 50 years in age. This is ancient for the variety, which is naturally vigorous and very susceptible to Eutypa and Esca (grapevine trunk diseases which slowly kill the vine), meaning finding vines above the age of 30 is increasingly rare. Marco Simonit – the man behind the Simonit & Sirch method and master pruner to the world’s leading producers – feels that vine age, however, is key to making a “vin de lieu” (a wine of place) – and therefore combatting the onset of disease is essential for crafting great Sauvignon Blanc. He notes how it’s not just that Sauvignon (referenced affectionately as “this guy” during our conversation) seems to be more inclined to develop Eutypa/Esca, but it suffers more when diseased – showing its symptoms much more than other vines, as is most clearly seen in Bordeaux where it is farmed side-by-side with Semillon.  “I think we need to reconsider the spacing and architecture of the vines,” Simonit says. He feels that these older vineyards have survived thanks to their wider spacing, allowing each vine more room to sprawl naturally. Robert Mondavi’s I Block is a prime example – the plot of Sauvignon Blanc in To Kalon planted in the mid-1940s. These untrellised, freestanding tree-like plants stand proud and sparse, producing wine that – in Mark de Vere MW’s words – offer “a different type of complexity, elegance”, yielding just half a ton an acre. Simonit is convinced that the increased vine density of the last 30 years has contributed to the higher incidence of grapevine trunk diseases, and this type of “dynamic” architecture, exemplified by the unfashionable California sprawl, may be the solution to Sauvignon Blanc’s short life-span, helping minimise pruning cuts and giving it the space it needs – but does need to be adapted to the individual site and climate.   Andy Erickson – winemaker at Favia and star consultant – now makes wine in To Kalon (under the To Kalon Vineyard Company label) – but has fond memories of I Block, as he would trespass to taste the Sauvignon Blanc at harvest time – loving the flavour of the grape just on the cusp of harvest. He was the one who suggested planting Sauvignon Blanc at Screaming Eagle – which produces a tiny amount (30-50 cases only) of incredibly sought-after Sauvignon. There was a tiny corner of the vineyard with more alluvial, clay soils – a site that wouldn’t produce a Screaming-Eagle-grade red, so he suggested it be used for Sauvignon Blanc and Musqué (an aromatic clone of the variety, also planted at Eisele Vineyard – where it represents 80% of the vineyard). “The challenge with Sauvignon Blanc is you really need to plant it on Cabernet Sauvignon ground to make the best wines, and so it takes someone who’s really passionate – or maybe a little crazy to do that,” Erickson says.  While the Loire’s top wines have always been accepted as fine wine, as with top white Bordeaux, Sauvignon Blanc under its own name didn’t make it big until the late 20th century. Robert Mondavi shifted perceptions in California – but only by rebranding the variety. In the late 1960s, at a time when most Sauvignon Blanc in America was low quality and sweet, he created Fumé Blanc – legally registering the term as a synonym for Sauvignon Blanc with the TTB (Alcohol and Tobacco Tax and Trade Bureau). With its European feel (inspired of course by Pouilly-Fumé), he made dry, serious Sauvignon Blanc – and, at the top end, fermented the wine in oak. At the time, it was radical – and soon the wines earned international acclaim.  Meanwhile, something was going on Down Under. David Hohnen – who had just won a Jimmy Watson trophy for his Cabernet Sauvignon at Cape Mentelle, Margaret River – was visited by a handful of travelling Kiwi winemakers. They left him with a bottle of something new, a Sauvignon Blanc (which had only been planted for the first time in New Zealand in 1973). “He hadn’t tasted anything like it before,” Jim White, Cloudy Bay’s Technical Director, tells me. Hohnen happened to have a Kiwi cellar hand at the time, and asked him to bring back more Sauvignon when he went home for Christmas. In 1984, Hohnen went to New Zealand. He persuaded Kevin Judd – then winemaker at Selaks – to come make wine for him. They couldn’t find Sauvignon Blanc at first, so the first vintage in 1984 was a Marlborough Semillon. The following vintage, they bought a truckload of Sauvignon Blanc from Marlborough, and ferried it all the way up to Gisborne to make the wine.  With such a small population, machine harvesting was the only option in New Zealand – and this, combined with the additional skin contact from the fruit’s minimum 12-hour journey to Gisborne, extracted more tannin than they’d wanted, but also thiol precursors – the compounds responsible for Sauvignon’s pungent aromas. Hohnen didn’t put “New Zealand” on the front label, feeling people wouldn’t take it seriously. By 1986, they had built their own winery (having persuaded an angling-loving Scot to stump up a million dollars to fund the project, on the basis that he’d have access to the best trout fishing in the world). The vineyards needed work – and Hohnen’s experience was key, bringing knowledge of canopy management, reducing water and nitrogen and reducing yields. The wines took off, and Cloudy Bay was born.  For White, vineyard location is the foundation of top Sauvignon Blanc – needing stony, free-draining soils to contain the variety’s natural vigour, hence why they prefer the heart of the Wairau Valley. Combine this with enough leaf plucking to allow for sufficient airflow, but avoid over-exposing the fruit, and this allows them to harvest ripe fruit that still has beautiful acidity – echoing Valance’s views at Ch. Margaux. The important thing for them is to avoid the “big green monster” – ensuring they have no methoxypyrazines (green compounds), which happen to be some of the most stable compounds during maturation, and don’t disappear with time in bottle.  In New Zealand, the variety has been a victim of its own success – shoehorned as crisp, fresh and nothing more. And while that style brings undeniable joy, there are an increasing number of wines being made with wild yeast and oak to produce a less exuberant and primary style – such as Dog Point’s Section 94 and Greywacke’s Wild Sauvignon. In the Loire, it seems to be increasingly common to see oak, while in Bordeaux, there’s a shift away from, or toward reducing the use of, wood. As Pierre-Olivier Clouet of Cheval Blanc told me, in the past white Bordeaux was “too green, too excessive, too much, too oaky, too fat… too boring” – he feels that the answer isn’t necessarily to reduce the proportion of new oak, but to increase the size of barrels and age the wine longer, so that the oak adds a silkiness, density and bitterness to the finish – but not to the aromatics.   A common accusation of Sauvignon Blanc is that it doesn’t age – something many feel is a prerequisite for “fine” wine. But that simply isn’t true. If you’ve never tasted old Marlborough Sauvignon, you’re missing out. I had a bottle of 1999 Cloudy Bay a few years ago – and it was extraordinary. White, who has tasted many more mature vintages from the iconic estate than me, describes it as a little like old Semillon or Loire Chenin – developing toasty, honeyed notes, yet it retains the overt freshness and expressiveness of the distinctive style. Ch. Margaux was recently reconditioning their stocks of Pavillon Blanc, and Valance had the opportunity to taste vintages back to 1926 – almost all of which he says were fabulous. He feels it ages at least 20-30 years, and more in top years.  Today, things have come full circle – Sauvignon Blanc is a brand of its own, and Robert Mondavi is even dropping the “Fumé Blanc” phrasing from its more entry-level bottlings of the variety. But, despite this and the undeniable quality of the wines, Sauvignon Blanc never quite seems to steal the limelight. “There’s a glass ceiling for Sauvignon Blanc,” White says. “It’s about 93 points.” The Cloudy Bay team was delighted when their oaked, limited-edition Te Koko cuvée earned 95 points in Decanter last year – but it’s the exception, rather than the rule. And even though they’ve had wines score higher than Pavillon Blanc, they’ll rarely be considered in the same category as either those, or the likes of the Loire’s Dagueneau and Vatan. “It’s too easy for people to understand, it makes it too enjoyable – and therefore it’s no longer the coveted thing that you have to have years of education to appreciate,” White says.  In an age of unicorn-hunting, “popular” can be the ultimate insult. And yet there’s a reason that so many people have fallen for the charms of Sauvignon Blanc. After the stresses of 2020 – with severe drought, heat and widespread wildfires, the 2021 vintage provided much-needed relief for Napa’s wine producers. Not only was the growing season reassuringly uneventful, but the resulting wines are fantastic. Concentrated, pure with vibrant acidity, this is a vintage that sits alongside 2013, 2018 and 2019 – the best in recent years. “I’m very happy to move on from talking about 2020! It was stressful to go through and stressful to relive,” said Maya Dalla Valle, winemaker at the eponymous estate founded her parents. Most winemakers and vineyard managers held their breath as the 2021 season progressed, anxious about the potential return of hazardous wildfires that increasingly seem to be the new normal in Northern California, but the danger never materialised.   The most significant factor influencing the 2021 harvest was instead drought, which unfortunately entered a second year. Conditions were exceedingly dry – historically so, says Chris Phelps of Ad Vivum, who noted that it was one of the driest years he can remember. Napa’s Mediterranean climate dictates that nearly all precipitation falls during the months of October-March, and the rains generally begin in the weeks following the close of each harvest, but this didn’t happen in 2020. While early winter was quite cold, helping to push the vines into dormancy, but rain didn’t arrive until January, February and March 2021. With around seven inches measured in Oakville, this was significantly lower than normal and far less than the total amount needed to reinvigorate the roots and replenish the water table.  Access to water, either from precision irrigation, or the benefit of a location with good water supply, therefore, was critical to shoot growth and canopy development. Sleeping Lady Vineyard in southern Yountville – the fruit from which Ad Vivum is crafted – backs up against the Mayacamas Mountains that form the western edge of Napa Valley. Here, natural springs funnel moisture down to the vineyard. In other locations, such as the eastern hillsides of the valley, long sunlight hours and faster-draining soils presented a greater challenge. The solution at Dalla Valle was to begin irrigation much earlier than normal, and at a greater volume, in order to mimic the rainfall that didn’t happen naturally. Although 2021’s growing season was quite warm, it was cooler than 2020 and, importantly, there were very few heat waves – and those that did take place were mercifully short. The first of these spikes, where the daily temperature reached over 37˚ Celsius, occurred in mid-June, a point early enough in the growing season where its impact was negligible. The remainder of the summer was consistently warm, with little variation, up until late August and early September, when the valley saw two minor heat spikes. The diurnal swing that Napa is known for, with nights quickly cooling down after sunset, was also in full effect in 2021, helping to preserve the grapes’ natural acidity. Given the steady weather and lack of wildfire risk, winemakers had the luxury of time when deciding to pick. For most, harvest began in the first two weeks of September – slightly earlier than average, but not drastically so. The year’s dry conditions reduced yields, which was not surprising, though “sometimes harrowing” as Andy Erickson (of Favia, and star consultant winemaker) described. The resulting clusters were lighter than normal, comprised of small berries with thick skins. While Phelps reported that the yields at Ad Vivum were down by 15%, he emphasised the positives that have emerged from these small, compact clusters: “The colour is extraordinary, with higher than normal levels of anthocyanins due to the long, slow ripening.” Others reported an even more drastic reduction in yield – up to 30% in some locations – though variation depends on not just access to water, but also soil type and depth. Vine age can also help mitigate drought conditions. Lisa Togni of Philip Togni Vineyard, perched at nearly 2,000 feet at the top of Spring Mountain, said that her yields were more or less normal, something she credits to the 32-year average age of her vines, which, remarkably, have never been irrigated. She feels that her vines’ well-established roots are able to reach deeper and access more water than younger vines. The low yields also sparked some wineries to change course in the vineyard prior to harvest, in regard to both shoot thinning and dropping fruit. Opus One made the decision to halt their green harvest. This process – during which a certain number of clusters per vine are removed, lowers yield and increases the intensity of the remaining fruit while also eliminating any slightly under- or over-ripe clusters – was always standard for Opus One, as it is for many wineries in Napa. This decision to change course was an easy one to make in a year like 2021, winemaker Michael Silacci said, and he is thrilled with the results, describing “more of a range of ripeness, with more layers and texture, and more vineyard character” in the final wine.  In the winery, tannin management was crucial. With a reduced skin-to-juice ratio, it was important to handle the fruit gently. For Tony Biagi, winemaker at several Napa Valley wineries, including Hourglass, Amici, The Vineyardist and To Kalon Vineyard Co, the main puzzle was how to coax colour from the fruit, while avoiding over-extraction of the tannins. “We were meticulous in how we macerated; we shortened the window,” he explained. Biagi said that the firm tannins are reminiscent of 2013, though perhaps not quite as muscular, as the more stable weather of 2021 allowed “more time to buff the edges”. At Dalla Valle, the decision was made to leave the wines in barrel for an additional two months because they displayed so much power and concentration. Despite the smaller berries and low yields, the condition of the fruit was described as nearly perfect by everyone. Low disease pressure and the lack of heat spikes produced uniformly healthy, good-looking clusters. Silacci recalls perhaps the most worrying moment of the 2021 harvest at Opus One, when their optical sorter broke down just as the fruit began arriving at the winery. Fortunately, however, the quality of the fruit made a stressful moment less so: “If ever there was a vintage we didn’t need a sorter it was 2021!” Early impressions of the final wines are uniformly positive – glowing with praise, even – and not simply because the year was a welcome relief following the trials of 2020. As we found in our tastings, the wines offer concentration and intensity with real purity of fruit, all balanced by refreshing and somewhat surprising acidity – allowing them to age beautifully. Phelps noted that the 2021s remind him of 2016, 2018 and 2019, all vintages with “great concentration, tension and generosity”. For Biagi, the vintage instead portends a new direction for the region, while referencing other hallmark great vintages of the past. “For me, the 2021s are classically Napa Valley. They are not crazy ripe, and you get a sense of the new style Napa is moving towards, with both power and freshness,” he opined. Napa 2021: rich, fresh and a relief

In Sicily, for the feast day of San Giuseppe, they make a soup, a very plain soup of 
chickpeas, fava beans and wheat grains, all soaked and cooked separately before 
being combined with bitter wild greens and perhaps some broken pasta. It is a 
celebration not of poverty but in poverty. The richness of the meal comes from the 
time it takes, the hours of soaking and boiling, of picking leaves in muddy fields. 
The feast day of the patron saint of workers (and the stepfather of God) falls on 
the 19th March, full spring in the Sicilian countryside with the almond trees in 
blossom. San Giuseppe’s soup marks the last use of the previous year’s harvest, 
the last pulses and grains to be taken from the store which the summer’s baking 
heat and the rains of autumn had provided for the coming winter. It is both a soup 
and a celebration, but it is also a sacrifice – a sacrifice of time against an uncertain 
future, time given freely as a kind of guarantee. Cooking of any kind – but especially the lengthy processes of preserving, drying, 
pickling and curing – is really an act of optimism, an assertion that there will be a 
future in which to eat. And the more time and care you put into such a process, the 
more value you get out. For example, the longer a cure or a pickle takes, the longer, 
in general, it will last. In providing food for the future, this sacrifice also makes 
it much more likely that the future it was made for will indeed occur. A practical 
optimism, you could say. A spending of time, not just because you have little else 
to spend, but because it is prudent to do so. For much of the world now, of course, the situation is reversed: we can buy almost 
anything we want at any time we please and have it delivered almost immediately. 
And we seem to be encouraged to spend less time doing things like cooking. 
Time is a commodity, and rather than sacrifice our time, we’re encouraged to 
sacrifice time itself, to take shortcuts. Time is listed in any given recipe, along 
with the rest of the ingredients and equipment: two onions, one stick of celery, 
one carrot, 15 minutes preparation and two hours cooking time, but it is almost 
always consequently manipulated. Everybody knows – once they have followed 
a few recipes – that enough time is never given to cook an onion. ‘Sauté until soft 
and golden, about two minutes,’ writes the chef (or the editor insists so the recipe can fall into the category of ‘quick and easy weeknight suppers’ or ‘fifteen-minute 
meals’ or whatever it is they are currently trying to sell). The fact that nobody ever
sautéed an onion until soft and golden in less than 10 minutes is elided, sacrificed 
to the promise that this dish, now, will not cost too much of your time. Even recipes 
which can never be made quickly – soups, stews, cures – are touted as demanding 
just a little of your time and even less of your attention, your active time. The slow 
braise allows the cook to focus not on cooking, but on other things. To me, this 
is a lost opportunity. Yes, it is nice to know that dinner is safely squared away, 
puttering merrily to itself in a low oven. It is exciting to think that a jar of cabbage 
is slowly transforming into sauerkraut at the back of a dark cupboard. But if all we 
see is the prepared ingredients and the end result, how much do we miss of the 
metamorphosis in-between? Convenience is desirable, but over the last year, time has – for most of us – come at 
less of a premium. Even before that, though, I have always found a certain satisfaction 
in giving my complete attention to whatever I am cooking. This goes without saying for 
the quick and fast – for the doneness of a steak, or pasta, for deep-frying, or grilling 
delicate fish. However, it is also rewarding for the slower processes, for observing the 
slow changing of textures as liquids bubble and reduce.  If, for example, you are making marmalade, you could work out the setting 
temperature and, once the final boil has begun, insert a probe thermometer with 
an alarm set to sound when it reaches the precise temperature: all well and good. 
If, however, there isn’t a thermometer to hand – or, as is often the case, you only 
have one that is in sore need of calibration and therefore useless – you can fall 
back on the finger test your mother may or may not have taught you. Placing a 
stack of saucers in the fridge and – when you think the marmalade is nearly ready 
– spooning a little out onto a cold saucer, you prod the result with your finger to 
see if it wrinkles. What, then, if you don’t have a stack or even a single perfectly 
chilled saucer to hand? Then you have to watch the bubbles rise. 
The point of making marmalade or jam is not simply that you are cooking a liquid 
until it reaches approximately 105˚C, but rather that you are cooking a liquid until 
it becomes capable (as water is not) of reaching that temperature – which means it 
has to become thicker, stronger. The bubbles it creates, at first double the liquid in 
volume (bringing the inevitable worry that your pan is too small) before settling and 
lowering into a dense boil that threatens to catch on the bottom. Once you’ve seen 
it, that transformation is unmistakable, and if you had just stuck a thermometer 
in the pan and got on with something else, you would never have noticed. This 
(admittedly useful and in a working kitchen, essential) piece of technology would 
have removed you from the process, from the facts of cooking. This is true of any kind of technology – it is, by and large, its purpose. I am not necessarily suggesting 
that you replace your oven with a wood-fired stove and monitor the temperature 
with a questing hand (if you can’t hold it in there, it’s hot enough) – although that 
would, I think, be fun. Certainly, anything which makes our lives easier is not to be 
dismissed out of hand, but isn’t it always worth wondering what, at any moment, 
you can afford to lose? 
The point with cooking is that the time put in is not simply lost but rather spent 
or, invested – although sometimes you might not think it – wisely. A six-hour 
braise consumed in less than 30 minutes can seem hardly worth the effort, but 
only if you see the eating of food as the sole reason to cook it. When I think of 
meals I have cooked for other people, for birthdays or holidays or simply for 
the pleasure of company, it is rarely the eating of them – the few minutes of 
attacking a chicken or slurping up pasta or licking grease off fingers – which 
comes immediately to mind but rather their slow build-up. It’s the digging of the 
pit to build the fire that has to die before I bury the lamb, wrapped carefully in 
foil and sackcloth; the careful attendance to a boiling pan of stock, its bubbles 
changing in size and consistency as it gradually reduces into gravy; the oil 
slowly spitting out of a pot of ragù, its surface barely moving as it stews. These 
are the things I remember fondly, the nurturing process of bringing a meal 
together. And these moments aren’t solitary meditations – with any meal there 
is more to be done than just cooking something. There are salads to be made 
and dressings to be whipped, pasta to be rolled, tables to be set, cocktails to be 
mixed, and wine to be poured. The making of a meal is only a chore if you begin 
to do it wishing it were already over. If instead you begin to do it because you 
want to do it, with the end result of ‘something to eat’ as almost a by-product 
of a rewarding activity, then the pleasure you find in it changes. 
Although for most of us, it’s no longer – as it was for the Sicilians celebrating 
San Giuseppe – a matter of life or death. This choice to involve yourself 
purposefully in the everyday act of cooking, and otherwise preparing food, still 
has an air of sacrifice, of time exchanged in the promise of something greater. 
It is, I suppose, literally a sacrifice, as the time you allot to cooking is time 
you could have made available for emails, or exercise, or simply to idly scroll 
through Netflix adding films you will probably never watch to your list. But, as 
is the way of all such propitiatory acts, it is a sacrifice which contains the seeds 
of its desired outcome. What you put in determines what you get out, in the 
straightforward terms of a meal you can eat – but it is also its own reward. You 
know, as you reverently chop, or soak, or simmer, that you are investing your 
time to create something better than good. That whatever you are making will
