What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

Taking root: the rise of biodynamic winemaking in Bordeaux

After the difficult conditions of 2024, Bordeaux has delivered a vintage that has surprised almost everyone. The 2025 growing season was among the hottest and driest of recent decades, with yields collapsing across much of the region. Yet rather than producing another 2022-style vintage of power and opulence, the wines have emerged with freshness, moderate alcohols and remarkable aromatic precision. Almost every major critic references the same paradox: a year that looked destined to produce massive wines instead yielded bottles of energy, balance and finesse. There is less agreement on where 2025 ultimately sits among Bordeaux's recent great vintages. Some critics compare it to 2016, others to 2019, 2020 or even 1961. What they largely agree on, however, is that the best wines are outstanding – and that this is a vintage where terroir, vineyard management and winemaking decisions matter enormously. William Kelley – Wine Advocate William Kelley sees 2025 as a vintage that reveals rather than conceals. He describes it as a "clarifier" rather than an amplifier, arguing that the wines expose differences in terroir, viticulture and winemaking with unusual transparency. Although the growing season was dominated by heat and drought, Kelley believes the resulting wines are fundamentally different from 2022. Cooler nights, lower alcohols and timely late-season rain produced wines that combine concentration, ripeness and freshness in a way that feels distinctive. He repeatedly returns to the notion that the best 2025s are classically proportioned despite their intensity. Unlike some critics, Kelley is reluctant to identify a single winning appellation. Instead, he sees success as highly estate-specific, with the finest wines distinguished by balance, precision and restraint rather than sheer power. Jane Anson – Inside Bordeaux For Jane Anson, 2025 is "the paradox vintage". The best wines are immensely impressive, but she cautions strongly against broad-brush conclusions. Anson places the vintage comfortably ahead of 2017, 2021 and 2024, and broadly alongside 2015 and 2019 in terms of potential. Yet she repeatedly notes that this is not a year where collectors can buy indiscriminately. Low pH levels, high acidity and significant tannic structure mean some wines will require patience, while others may never fully resolve. She sees the strongest performances coming from Bordeaux's great water-regulating terroirs, particularly the limestone and clay soils of Saint-Émilion and the best parts of the Left Bank. Pomerol is more variable, with dramatic differences depending on soil type and water retention. Anson's wine of the vintage is Beauséjour Duffau-Lagarrosse, while Canon, Petrus, Cheval Blanc and Château Margaux all feature prominently among her highest-rated wines. Anson's highlights: Ch. Haut Bailly, Mouton Rothschild, Margaux, Smith Haut Lafitte, Leoville Las Cases, Petrus, Beauséjour, Vieux Château Certan, Lafleur,  Tertre Roteboeuf, Haut-Brion Blanc, Les Champs Libres, Doisy-Daëne,  Aile d'Argent Blanc, Pavillon Blanc Read Jane Anson’s report on the Left Bank, Right Bank and white wine on Inside Bordeaux (subscribers only). Antonio Galloni – Vinous Antonio Galloni is one of the most enthusiastic commentators on the vintage, describing the finest wines as "nothing short of thrilling". What impresses him most is the combination of concentration and freshness. The summer heat delivered tiny berries and naturally low yields, yet many wines finished with surprisingly moderate alcohol levels and striking aromatic lift. Galloni believes modern viticulture played a critical role, allowing producers to navigate extreme conditions more successfully than would have been possible a generation ago. He identifies Margaux as the appellation of the vintage and describes Pauillac as "jam-packed with great wines". Saint-Émilion's clay-limestone plateau also impressed him enormously. Pomerol, meanwhile, is the region he found most inconsistent. Galloni also highlights several lesser-known estates that he believes overperformed in 2025, noting that some of the vintage's most exciting discoveries may come outside Bordeaux's traditional elite. Galloni's highlights: Beau-Séjour Bécot, Canon, La Gaffelière, Troplong Mondot, La Mission Haut-Brion, L'If, Margaux, Lafite Rothschild Explore Antonio Galloni's full report, notes and scores on Vinous (subscribers only). Neal Martin – Vinous Neal Martin describes 2025 as a vintage that constantly defies expectations. He argues that the late-August rain fundamentally changed the trajectory of the year, turning what appeared destined to become another 2022 into something altogether more nuanced. Martin calls it "a dialled-down and more precise 2010", a comparison that appears repeatedly throughout his report. He finds concentration and structure, but also freshness, restraint and remarkable aromatic detail. Like Galloni, he is highly enthusiastic about the Left Bank, particularly Pauillac, Saint-Julien and Saint-Estèphe. He also believes several of the greatest successes come from Saint-Émilion's limestone soils, while Pomerol shows more variation than many neighbouring appellations. Perhaps most notably, Martin sees 2025 as one of the strongest recent vintages for Sauternes, praising the purity and freshness of the best sweet wines. Martin's highlights: Montrose, Haut-Brion, Lafite Rothschild, Lafleur, Petrus, Latour Explore Neal Martin's full report, notes and scores on Vinous (subscribers only). James Suckling James Suckling describes 2025 as one of the most exciting Bordeaux vintages he has encountered in more than forty years of tasting barrel samples. He repeatedly returns to the contrast between expectation and reality. On paper, the growing season suggested another powerful, solar vintage. Instead, he found wines with what he calls "unique purity and tension", combining moderate alcohol, vibrant acidity and impressive concentration. For Suckling, 2025 is above all "a great vintage for great terroir". He argues that the region's finest vineyards adapted brilliantly to the challenges of the year, producing wines that are both intensely expressive and remarkably balanced. Although he acknowledges inconsistency across the region, he believes the best wines can stand alongside Bordeaux's leading modern vintages. Georgie Hindle – Decanter Georgie Hindle describes 2025 as both "paradoxical" and "miraculous", two words that neatly capture the mood of many critics tasting the vintage. She notes that almost everything about the growing season pointed towards a rich, powerful vintage. Yet the wines themselves display freshness, poise and balance rather than opulence. The crucial turning point, in her view, was the late-August rain that arrived after months of drought and completely reshaped the vintage's trajectory. Hindle argues that terroir and winemaking decisions were decisive. Producers who adapted extraction techniques and handled the naturally high tannin levels carefully were rewarded with wines of precision and elegance. Others were less successful. While she believes the best wines are exceptional, she is clear that 2025 lacks the broad consistency of 2022 and should be approached selectively. Hindle's highlights: Beauséjour, Cheval Blanc, Haut-Bailly, Haut-Brion, Margaux, Mouton Rothschild, Petrus, Vieux Château Certan Explore Georgie Hindle's coverage on Decanter (subscribers only). Jeb Dunnuck Jeb Dunnuck compares 2025 to a modern-day version of 1961, citing tiny yields, drought conditions and extraordinary concentration. Yet unlike the blockbuster vintages often associated with hot years, Dunnuck finds the wines surprisingly fresh and elegant. He repeatedly highlights the role of cooler nights and late-season rainfall in preserving balance and preventing overripeness. He sees Saint-Émilion as one of the stars of the vintage, while also praising the best wines of Pauillac, Saint-Julien and Pomerol. Like several critics, he believes value-conscious collectors should look closely at Castillon and Fronsac, where some producers delivered outstanding quality relative to price. Dunnuck's highlights: Margaux, Haut-Brion, Léoville Las Cases, Montrose, Le Pin, Ducru-Beaucaillou, Mouton Rothschild, Petrus, Figeac, Beauséjour Explore Jeb Dunnuck's full report, notes and scores on JebDunnuck.com (subscribers only). James Lawther MW – Jancis Robinson James Lawther sees 2025 as one of Bordeaux's most pleasant surprises. He notes that despite being one of the hottest vintages of the last thirty years, the wines possess freshness, moderate alcohol levels and considerable charm. The defining feature for Lawther is the combination of power and approachability — wines that have both concentration and an almost unexpected amiability. Cabernet Sauvignon particularly impressed him, especially in Pauillac and Saint-Estèphe, while Saint-Émilion's limestone-rich soils again proved highly resilient in drought conditions. Pomerol was less straightforward, producing some brilliant wines alongside more uneven results. Lawther is also highly positive about Sauternes, which he considers one of the vintage's major success stories. There are times when you put a question to a winemaker and he puffs out his cheeks and rubs his chin and you know he’s thinking, ‘Journalists.’ When I ask Promontory’s David Cilli what exactly is meant by ‘interpretation of terroir’, he courteously describes the process of trying to get the wine to reflect the character of the land. But he gives the impression my question was like quizzing Monet on how he got his effects. If you don’t get it, you probably won’t. The character of Promontory, on the day I visit, is quite something. It’s early May and the rain, which has been falling steadily all night, has turned to a lashing downpour that has raindrops bouncing six inches off the windscreen. We’re in a jeep piloted by winegrowing director Cory Empting and since turning off the main road we’ve been climbing steadily through dripping stands of oak with pocket-handkerchief vineyards between them. ‘Shall we stay in the car?’ asks Empting. ‘If we could,’ Will Harlan suggests from the back seat. I’m here with Empting, Cilli and Harlan. Bill Harlan has appeared briefly but I don’t see him again until we sit down to taste. He formally handed over control of Harlan Estate, Promontory, Bond and The Mascot in 2021, appointing 37-year-old Will managing director. Cilli (44) arrived in 2012 and is in charge of vineyard and winemaking at Promontory. Promontory is an 840-acre fastness, a deep valley folded into the foothills of Mount Veeder, on the west side of the Napa Valley. From the highway, you think the looming ridge you’re looking at is the edge of Sonoma. But there’s another ridge beyond and between them this interesting domain. It’s remote, even by Napa standards (contrary to opinion, there are plenty of wild spaces in the county). The ultra-refined French Laundry is a couple of miles away but it might be in Wisconsin for all the relevance it has up here. Bill Harlan had come upon it hiking in the 1980s. ‘I used the Carmelite monastery [we’d passed it on the way up] as a base and just started climbing’. There were no vines but he was intrigued by its seclusion. It might be possible vineland for the Napa project he had in mind. In the end, Harlan Estate was founded less than a mile to the north but for 25 years Harlan kept the idea of that parcel tucked under his hat (he never mentioned it, Will says) before it came on the market in 2007 and he snapped it up. "Vineyards, some a mere half-acre, are etched into towering, wooded hillsides and drop down into cavernous combes dense with oak and fir" The owner – the Harlans don’t reveal who that is – had planted 80-odd acres of Cabernet Sauvignon. It was neglected, the vines overgrown. Trees had been felled and never collected. ‘It was a mess,’ Will says. ‘It looked like a logging operation.’ But it is magnificent. Vineyards, some a mere half-acre, are etched into towering, wooded hillsides and drop down into cavernous combes dense with oak and fir. The whole estate is thickly forested, the vines often shaded on three sides. An old drovers’ road, running through the woods, will suddenly open out on a wide vista of vineyard and scree. Everything is deeply, lushly green in the steadily falling spring rain. The geology of the land is unusual, in that it rests on two distinct fault lines and consists of all three soil types that are found in Napa: volcanic, sedimentary and metamorphic. ‘You get all three in the same soil pit,’ Cilli notes. This, combined with the wild variation in aspect and the microclimate of the valley-within-a-valley, gives credence to Harlan’s claims that this part of Napa is like nowhere else in California. When the celebrated soil scientists Claude and Lydia Bourguignon came, they found the experience ‘novel’. Cilli said he fell in love with Promontory at first sight. It reminded him, in part, of his native Tuscany, but it was the wildness that captivated him, ‘I love that character that you can see in the wines.’ He said it was probably ‘the only project that could keep me in the valley.’ You get the impression none of them can quite believe their luck. ‘It somehow redefined what looks beautiful,’ Will says. It also redefined their ideas of winemaking. He goes on: ‘We were used to control. Harlan in the 1990s was obsessed with organisation and uniformity but Promontory was wild.’ The theme of wildness recurs. Harvest times are key to ‘find a way for it to come through,’ Will says. Empting: ‘Pick too late and you lose the ruggedness.’ Ageing, in the magnificent Howard Backen-designed chai, is all in Stockinger Austrian oak barrels ranging in size from 10,000 to 46,000 litres, for up to 36 months. ‘The fine-yet-tight tannins required longer barrel-ageing but [we] didn’t want the wine to be overpowered by new oak’. It’s a constant process of refinement and improvement – ‘we learn something new each season’. Empting: ‘It has blown every expectation out of the water. We were excited and we were scared. We didn’t know what this beast would be. Our learning curve has been very steep, it remains very steep. At least now we’re starting to get our arms around it but at the beginning, it was like: God, we cannot figure this thing out.” "I found in the 2016 a moment where the various elements come together: the savoury nose, the fine tannins, the weight without heaviness" You have to remember we’re talking about winemaking here, not Wittgenstein. But ‘interpretation of terroir’, if it’s to mean anything at all, should be taken seriously. I’ve seen vineland all over the world – rock-strewn fields in the Andean foothills, rainless Spanish deserts – but I’ve never seen anything like Promontory. Were I to be tasked with bottling the soul of that vineyard, I’d reach for metaphor as well. And so we come to the missing shade of blue. This is the concept propounded by the 18th-century philosopher David Hume, that an idea can be formulated without a previous sensory impression to give rise to it. He asked, Could a shade of blue missing from a spectrum be imagined by an observer? Harlan says (with a smile – he does have a degree in philosophy) that Promontory is the missing shade of red. ‘Until you’ve seen and experienced it, you don’t know that it’s missing. And so for us this was that final piece. The piece that wasn’t there that we had the opportunity to understand and try to translate into the wine.’ The next morning, in gorgeous May sunshine, we gather to taste. It’s almost the same group, though smaller, that did the mighty vertical of Harlan estate from magnum in 2020. Bill Harlan is there (he sweetly thanks the team for allowing him to taste, saying it’s the first full vertical of Promontory he’s ever done), Will, Empting, Cilli and the journalist Elaine Brown. We wonder, at the end, if there is thread that runs through the wines. In my notes the words ‘deceptively light’ recur, as do ‘structure’ and ‘stone’. Reaching for metaphor again, Will Harlan compares the structure of the 2016 to cathedral stone, which has ‘both weight and lightness. It’s intricately carved and light filters through the windows.’ I found in the 2016 a moment where the various elements come together: the savoury nose, the fine tannins, the weight without heaviness. Will Harlan calls this vintage an ‘inflection point’ and notes how the tannins are the ‘main differentiators’. Yes, agrees Cilli, ‘and because of the character of levity and lift, we have to be precise with the tannins.’ The younger vintages have an astonishing latent energy, tannins under tight rein, aromas bursting, the fruit compacted. Brown and I were struck not by the sophistication of these wines but by their honesty. Brown WhatsApped me later. ‘Promontory is the most transparent to place. The wines are impressively well crafted and elegant while still offering an almost wild or primal complex of flavours.’ "The wines are unmistakeably Californian but they are also unlike anything I’ve tasted in Napa" ‘How do we take wine from a wilderness and have sophistication?’ Will asked. It’s a great question – with their resources, the Harlans could do anything they liked with Promontory. After all, they have to make a wine that will please their audience. But this was so unexpected. The tasting revealed a keen focus on the land and the vintage. The difference between the years was often marked – the challenge of 2015 for example showed in the wine – yet we could see that common thread running through, even as the wines increased in elegance. And what of Will’s quest for the missing shade of red? The wines are unmistakeably Californian – that splendid 2017 could come from nowhere else – but they are also unlike anything I’ve tasted in Napa, which is quite a claim, in the world’s most cultivated wine region. Perhaps the last word should go to Bill Harlan, who started the whole thing. He speaks hardly at all during the tasting, his Old Testament face giving little away. At the end of the morning, he talks of his fascination with the ‘ongoing discovery’ of the project. The wines have character, layers and depth, he says, and – by way of praising their authenticity – he notes, ‘You never know what’s coming next.’

Wildness captured: tasting 14 vintages of Promontory

I vini Reynaud sono leggendari. Pronuncia "Rayas" a una certa gente e ne svengono. La storia dell'impero Reynaud 
Nel 1880, Albert Reynaud, notaio di Avignone, perse l'udito a soli 45 anni. Non più in grado di esercitare la professione di avvocato, acquistò una tenuta a Châteauneuf-du-Pape, in una zona chiamata Rayas, dove trascorse i suoi giorni coltivando viti, albicocche e ulivi. Nel 1910, suo figlio Louis Reynaud assunse la gestione della tenuta. Louis aveva studiato agraria ad Angers ed era particolarmente interessato alla viticoltura. Sradicò alberi per piantare nuovi vigneti e imbottigliò il primo vino della proprietà nel 1920, usando il nome "Rayas", il nome della foresta presente sul loro appezzamento di terreno. Fu l'inizio del Rayas come lo conosciamo oggi. 
Louis aggiunse notoriamente la dicitura "Premier Grand Cru" alle etichette del Rayas, una classificazione autoproclamata del vino, sfidando notoriamente le regole della denominazione (introdotte nel 1936). Conquistando la reputazione e le vendite della proprietà, iniziò a espandere l'attività. Tra il 1935 e il 1938 acquistò Ch. des Tours a Vacqueyras, affidando al figlio Bertrand la proprietà più ampia di 58 ettari a nord-est di Châteauneuf-du-Pape, non lontano dalla città di Orange. Più o meno nello stesso periodo, costruì una nuova cantina e una nuova cantina a Rayas, portando gli edifici entro i confini della denominazione. Le vecchie vigne di Rayas, piantate su terreni sabbiosi, esposte a nord/nord-est, circondate da una pineta, producono vini di eccezionale eleganza e finezza aromatica, vini dal profumo ammaliante, dal colore pallido e dalla delicatezza quasi da Pinot, ma con una persistenza e una longevità fenomenali. 
Jacques era noto per la sua eccentricità. Recluso, felice tra le vigne e mai incline ad accogliere visitatori, si diceva che a volte si nascondesse in un fosso per evitare giornalisti o altri addetti ai lavori. La sua avversione per la ribalta non fece che accrescere il fascino dei vini. Morì piuttosto improvvisamente nel 1997, mentre faceva shopping di scarpe a Courthézon. Non avendo figli, suo nipote Emmanuel, figlio di Bertrand, che fino a quel momento aveva gestito Ch. des Tours dal 1989, ereditò sia Rayas che Fonsalette, prendendo le redini di tutte e tre le proprietà. 
La transizione tra Jacques ed Emmanuel non fu graduale, poiché Emmanuel ristrutturò la tenuta e ripiantò parti del sito, ma all'inizio degli anni 2000 la qualità era di nuovo all'altezza del nome Reynaud. Lo stile è cambiato tra le generazioni e, mentre i vini di Jacques erano più strutturati e solidi, Emmanuel predilige espressioni più sensuali e profumate. Negli ultimi due decenni, poco è cambiato nelle proprietà Reynaud: lo status mitico dei vini si è confermato solo con ogni nuova uscita. La nuova generazione, i figli di Emmanuel, Louis Damien e Benoît, è già coinvolta, pronta a continuare l'eredità di famiglia. La filosofia Reynaud 
L'approccio di Reynaud è vecchio stile: qui regna la tradizione. La monocoltura moderna non è il metodo – con varie colture in tutto il tenute e biodiversità alimentata da ampie fasce boschive. Le viti – tutte ad alberello, molte con un'età significativa – sono coltivate esattamente come sono sempre state, biologicamente con input minimi, arate a cavallo. 
L'uva è tutta raccolta a mano, i grappoli interi fermentano con lieviti indigeni in vasche di cemento. Da quando Emmanuel ha preso in mano la situazione, le parcelle sono state vinificate separatamente. Le macerazioni sono delicate, generalmente inferiori alle due settimane con un singolo rimontaggio al giorno. L'invecchiamento avviene in grandi botti di rovere vecchio, senza l'utilizzo di legno nuovo in nessuna delle proprietà – anzi, il demi-muid o foudre più giovane della tenuta potrebbe avere ben 30 anni. Le aggiunte di solforosa sono minime, con solo una piccola quantità durante la fermentazione e un'aggiunta finale all'imbottigliamento, con i vini imbottigliati senza chiarifica e senza filtrazione. Il metodo è la massima semplicità, incentrato sull'espressione di ogni sito – e i risultati parlano da soli. Le cantine sono rustici edifici agricoli, che offrono solo i requisiti di base, senza l'impiego di tecnologie moderne e, visti i vini prodotti, non necessarie. 
Il Grenache è il cuore di tutti i vini Reynaud: l'uva che prospera nel loro terroir ed è la magia del Rayas. Oltre al Rayas, il Cinsault viene utilizzato per conferire eleganza e morbidezza, mentre il Syrah è stato a lungo evitato, utilizzato solo a Ch. de Fonsalette. Louis Reynaud credeva che la varietà fosse originaria del Rodano settentrionale e, a parte la piccola porzione che arrivava nelle Côtes du Rhône, il resto del Syrah veniva venduto in grandi quantità sotto il suo regno (spesso ai ristoranti locali, che lo usavano nelle loro salse). La cuvée Côtes du Rhône Syrah fu introdotta solo sotto la guida di Jacques Reynaud, inizialmente venduta ai ristoranti che ne avevano apprezzato la qualità nelle loro salse. Non c'è Mourvèdre in nessuna delle tenute, con Emmanuel Reynaud che ritiene che i loro terreni siano troppo asciutti per l'uva. I vini e le tenute Reynaud 
La famiglia Reynaud comprende tre tenute distinte: Rayas, Fonsalette e Ch. des Tours, sebbene Fonsalette non abbia una propria cantina. 
Ch. Rayas 
Rayas è la tenuta originale dei Reynaud, acquistata nel 1880, e prende il nome dal clima. Nella parte settentrionale di Châteauneuf-du-Pape si trovano i 12 ettari di vigneti, circondati da 11 ettari di foresta. Dimenticate i tipici galets roulés o pudding stones della regione, noti per la loro capacità di trattenere il calore: Rayas sorge su terreni rossi, ricchi di ferro e sabbiosi, su terreni argillosi più ricchi. I terreni sono poveri e le viti ad alberello sono piantate a bassa densità, con appena 2.500 ceppi per ettaro, con una resa di appena 10-20 hl/ha. Negli anni '80 sono stati effettuati significativi reimpianti, il che significa che le viti hanno ora un'età media di 40 anni, sebbene vi siano ancora alcuni esemplari sopravvissuti dagli anni '40. 
L'esposizione a nord del sito si combina con l'influenza delle aree boschive, offrendo ombra e umidità, prolungando la stagione vegetativa e preservando la freschezza dei vini. I Reynaud sono tra gli ultimi a vendemmiare, spesso solo a ottobre/novembre, fino a due mesi dopo i loro vicini. I vini che ne derivano, tuttavia, non sono caratterizzati da una maturazione intensa, ma da eleganza e finezza. 
Mentre Châteauneuf consente 13 varietà rosse, a Rayas troverete solo Grenache Noir, con due ettari dedicati alle uve bianche: Grenache Blanc e Clairette. I vigneti di Grenache possono essere suddivisi in tre sezioni: Le Levant, Le Coeur e Le Couchant, ciascuna delle quali prende il nome dalla sua esposizione al sole, rispettivamente all'alba, al culmine e al tramonto. Scrivendo per The World of Fine Wine, William Kelley descrive così le tre componenti del vigneto: "Le Levant è il più floreale ed etereo, e contribuisce alla spina dorsale del vino; Le Coeur è il più completo, e contribuisce allo scheletro del Rayas; e Le Couchant, con i suoi toni fruttati più ricchi e simili a una composta, apporta la parte grassa". 
Tutta la raccolta avviene a mano. Il Grenache viene mantenuto sui raspi, i grappoli interi vengono pigiati prima di una delicata macerazione per un massimo di due settimane (un rimontaggio al giorno) e della fermentazione con lieviti indigeni. Il vino viene pressato e invecchiato in vecchie botti di rovere per poco meno di due anni.
La delicatezza e la finezza del vino che ne deriva ricordano la Borgogna più pregiata. Di colore pallido, il Rayas è profondamente aromatico, con incantevoli note floreali e una consistenza eterea e setosa che bilancia l'intensità terrosa e sapida del vino. Ogni anno vengono prodotte tra le 1.200 e le 1.500 casse del fiore all'occhiello Châteauneuf-du-Pape. I vini invecchiano magnificamente e lo stesso Emmanuel consiglia di attendere 20-25 anni prima di aprire una bottiglia di Rayas per apprezzarne appieno l'evoluzione. 
Le uve bianche sono piantate in tre parcelle a Le Levant, che comprendono due ettari. Il Grenache Blanc è stato piantato negli anni '40, '50 e '95, mentre il Clairette è stato piantato nel 1986. Fermentato in vecchi foudre (da 80 a 100 anni), acquistati di seconda mano da Louis Reynaud (nonno di Emmanuel), il Rayas Blanc è un blend 50:50 di Grenache Blanc e Clairette, invecchiato in vecchie botti di rovere per circa 11 mesi. Il vino è prodotto in volumi estremamente limitati, con solo circa 400 casse prodotte per ogni annata. Ricco ma equilibrato, questo raro bianco è immensamente profumato con note di mandorla e fiori bianchi, intensamente minerale e strutturato, e può invecchiare per almeno un decennio. 
Il Pignan è talvolta considerato un "secondo vino" a Rayas, ma in realtà proviene da un sito specifico della tenuta, un unico appezzamento di due ettari circondato da pini sul confine settentrionale della proprietà con terreni meno sabbiosi. Anche il Grenache in purezza, prodotto esattamente allo stesso modo a Rayas, offre un'espressione più immediata e accessibile dello stile Rayas, pur mantenendo profumi, purezza e struttura simili, ed è comunque in grado di invecchiare a lungo. Può, a volte, e soprattutto nelle annate più fresche, rivaleggiare con il suo fratello maggiore, Rayas. Ogni anno vengono prodotte circa 650 casse. 
I vini Rayas vengono tutti commercializzati solo al momento del loro ingresso nella finestra di consumo, mentre i rossi spesso escono dalla tenuta solo oltre un decennio dopo la vendemmia. 
Ch. de Fonsalette 
L'"ultima" aggiunta alla galassia Reynaud, Ch. de Fonsalette fu acquistata da Louis Reynaud nel 1945. La proprietà è ampia, con una superficie totale di 120 ettari, ma con 12 ettari di vigneti tra boschi, terreni agricoli e uliveti, a nord di Orange, a Lagarde-Paréol. Oggi rientra in gran parte nella denominazione Côtes du Rhône Villages Massif d'Uchaux (istituita nel 2005), tuttavia i vini sono tutti etichettati come Côtes du Rhône. Più a nord, il microclima è più fresco rispetto a Rayas e, stilisticamente, i vini sono più sobri di quelli di Ch. des Tours, ad esempio, ma non così eterei come quelli di Rayas. 
I terreni qui sono molto diversi da quelli di Rayas, con ghiaia, sabbia e puddinga rossa. I vigneti sono coltivati ​​a Grenache, Cinsault e Syrah per i rossi, e a Grenache Blanc, Clairette e Marsanne per i bianchi. Le viti sono generalmente vecchie, con la più vecchia piantata nel 1929. 
La filosofia in vigna e in cantina è esattamente la stessa di Rayas e, poiché la proprietà non dispone di una cantina propria, anche i vini vengono prodotti a Rayas. I rossi sono fermentati a grappolo intero, con una macerazione massima di due settimane e un rimontaggio al giorno. I vini vengono affinati in una combinazione di vasche smaltate e grandi botti di rovere vecchio, per poi essere imbottigliati circa un anno dopo. 
La gamma di Ch. de Fonsalette comprende tre vini. Il Côtes du Rhône Rouge è un blend di 50% Grenache, 35% Cinsault e 15% Syrah, la cui elevata percentuale di Cinsault conferisce al vino una particolare intensità e finezza aromatica: un vino che sussurra e cattura. Esiste un secondo rosso, un Côtes du Rhône Syrah, 100% Syrah, un vino strutturato, dai profumi fruttati scuri, che offre una potenza contenuta e una profondità discreta. Sotto la direzione di Louis Reynaud, questo vino veniva venduto sfuso, imbottigliato solo per la prima volta sotto la direzione di Jacques Reynaud (a partire dal 1978) e venduto localmente, principalmente ai ristoranti, prima di essere offerto più ampiamente sotto la direzione di Emmanuel. Il Côtes du Rhône Blanc è un blend di 80% Grenache Blanc, 10% Clairette e 10% Marsanne, che produce un bianco strutturato e complesso, con note di frutta a nocciolo ed erbe aromatiche e un retrogusto salino. 
La Pialade 
Questo vino rappresenta una piccola anomalia nella gamma Reynaud. Prodotto solo in alcune annate, La Pialade Côtes du Rhône è vinificato e invecchiato a Rayas, con parcelle declassate provenienti da Rayas o Ch. de Fonsalette. L'assemblaggio è tipicamente composto da 85% Grenache, 15% Cinsault e 5% Syrah. Prodotto in piccole quantità, e ancora più raro dato che non viene prodotto ogni anno, è spesso descritto come un "Rayas quotidiano" – più aperto nello stile, ma può eguagliare il Rayas per sottigliezza e delicatezza, anche se non ha la stessa profondità. 
Ch. des Tours 
Acquistato da Louis Reynaud alla fine degli anni '30, Ch. Château des Tours è la tenuta di origine di Emmanuel Reynaud, che ne ha preso in carico la gestione dal padre Bertrand nel 1989. Affidata a Bertrand fin dall'inizio e mai gestita da Jacques Reynaud, la tenuta si è sempre distinta da Château Rayas e Château de Fonsalette, sebbene tutti e tre siano sotto la guida di Emmanuel dal 1997. Benoît, figlio di Emmanuel, che ha studiato enologia in Svizzera, ha recentemente assunto la guida di Château des Tours, lavorando a stretto contatto con il padre. 
La proprietà prende il nome dalle torri o tour che incorniciano l'edificio del castello. Situata a Vacqueyras, non lontano da Orange e a nord-est di Châteauneuf, si estende su 40 ettari, coltivati ​​a cereali e ulivi, oltre che a uva. Essendo stata a lungo gestita separatamente, la proprietà dispone di una propria cantina. “Il tempo è necessario“, mi dice Paul-Etienne Defaix. Dovrebbe saperlo: è la sedicesima generazione della sua famiglia a produrre vino a Chablis, e al Domaine Daniel-Etienne Defaix il tempo è tutto. 
Il vino viene prodotto al Domaine du Vieux Château (nome storico della proprietà, che ancora oggi compare sulle etichette) da otto secoli, e sotto la famiglia Defaix dal 1610. Tuttavia, molto è cambiato a Chablis negli ultimi 400 anni, e oggi la tenuta è l'ultimo baluardo dello Chablis di un tempo. 
La domanda di Chablis era in forte espansione negli anni '70 e i produttori hanno ridotto l'élevage (il tempo che il vino trascorre in botte o in vasca), imbottigliando, commercializzando e vendendo i vini prima. Questi vini moderni, spesso imbottigliati entro sei-dodici mesi, erano snelli e freschi, ma per il padre di Paul, Daniel-Etienne, erano deludenti: mancavano della complessità e della longevità dei vini che trascorrevano più tempo sui lieviti (le cellule di lievito morte). Daniel-Etienne decise di fare le cose in modo diverso, di tornare a produrre vino come facevano le generazioni passate, e la famiglia non si è più voltata indietro. 
In genere, il loro approccio è quello di lasciare che il vino sia – aspettare, osservare e aspettare ancora. La fermentazione avviene interamente con lieviti indigeni ed è particolarmente lenta, durando fino a sei mesi, mentre la fermentazione malolattica viene lasciata procedere secondo i suoi tempi, completandosi solo dopo un massimo di due anni. I loro vini Premier Cru trascorrono poi fino a nove anni sui loro lieviti fini, mentre per i Grand Cru possono arrivare fino a 15 anni, conservati a una temperatura fresca di 10-12 °C. Durante il lungo affinamento dei vini, avviene l'autolisi, ovvero la degradazione enzimatica delle cellule di lievito morte, o fecce. È lo stesso processo che avviene nello Champagne e in altri spumanti metodo classico invecchiati sui lieviti, ed è la chiave dello stile Defaix – e un tempo tradizionale – di Chablis, conferendo al vino un palato più rotondo e una complessità di pane e tostatura. È anche, per Paul, "la chiave per rivelare il terroir". Sebbene le piccole quantità di Grand Cru e Pinot Nero di Defaix vengano messe in rovere, la maggior parte dei vini viene invecchiata esclusivamente in acciaio inossidabile, il che significa che solo il luogo e il tempo si degustano in bottiglia. Invecchiando i suoi vini in vasche di acciaio inossidabile non per mesi, ma per anni, Defaix crea vini strutturati e complessi che vengono commercializzati solo al raggiungimento della finestra di consumo. È una ribellione, mi dice Paul, contro "una società del consumo rapido". 
Ora Paul è responsabile dei vigneti e della vinificazione della proprietà, sebbene suo padre sia ancora coinvolto nell'attività. Paul ha studiato a Beaune, maturando esperienza in una manciata di tenute – principalmente incentrate sul Pinot Nero – prima di tornare alla tenuta di famiglia, passando dalle vigne alla cantina. Come gli disse Daniel-Etienne, "Devi conoscere il tuo terreno, le tue viti, poi puoi fare il vino – e poi cercare di venderlo".
E, sebbene sia spesso lo stile di vinificazione a rubare la scena a Defaix, la tenuta vanta vigneti notevoli. La famiglia coltiva 28 ettari in totale. Ha due parcelle Grand Cru (0,15 ettari a Blanchot e 0,3 ettari a Grenouilles), ma sono i Premier Cru della proprietà ad aver costruito la sua reputazione, con quattro ettari ciascuno a Côte de Léchet e Vaillons. Da questi, producono tre vini: la loro Côte de Léchet, Les Lys e Vaillon. È importante notare che quest'ultimo è Vaillon, non Les Vaillons al plurale: la loro parcella si trova nel cuore storico di questo Premier Cru, prima della sua espansione nel 1976. Les Lys è un climat più fresco all'interno dei Vaillons più ampi, ed è spesso il nostro preferito della gamma, mentre la Côte de Léchet è decisamente ripida, con una pendenza del 45%. 
Gli ettari rimanenti sono in gran parte dedicati allo Chablis, il villaggio della tenuta, le loro Vieilles Vignes. Queste viti hanno tutte più di 45 anni, ma alcune sono molto vecchie, con radici proprie, sopravvissute alla fillossera e ora di 145 anni. Quando chiedo a Paul come questo mezzo ettaro sia riuscito a sopravvivere senza innesti, si ferma un attimo, prima di rispondere: "Penso che Dio preghi per queste viti". Raccolgono solo 15 hl/ha, ma producono frutti bellissimi ("Per la mia banca, è pessimo; per il mio vino, è perfetto!" scherza Paul) e ora vengono utilizzati per la selezione massale in tutta la tenuta. L'ultima parte della proprietà è una piccola porzione di Vaillons piantata a Pinot Nero, che viene imbottigliato come Bourgogne Rouge (poiché il terreno è classificato solo per la produzione di Chardonnay). Con una superficie inferiore a un ettaro, anche queste viti sono antiche, piantate nel 1900, e ancora sulle proprie radici. 
Le loro ampie cantine sono rifornite di annate precedenti, in affinamento accurato: una riserva di vino che attenua i capricci di ogni specifica stagione di crescita, proteggendole da drastici cali di resa, una minaccia costante a Chablis. Prendiamo il 2024, un'annata che è stata impegnativa in gran parte del nord Europa con le sue condizioni umide e l'elevata piovosità. La pressione del mare, ma a Chablis ha portato anche grandine che ha devastato vaste aree di vigneti, tra cui Vaillons. 
Il riscaldamento globale potrebbe aver facilitato la maturazione delle uve in questa regione marginale, ma ha anche favorito condizioni più estreme: alti e bassi che tengono i produttori in allerta. Ha anche, probabilmente, reso Chablis un po' meno Chablis. Con frutti più maturi, i vini sono meno rigidi, tesi e snelli. Le date di vendemmia sono inevitabilmente anticipate, osserva Paul, per preservare l'acidità e mantenere la struttura dello Chablis, ma sottolinea anche che il frutto richiede non solo la maturazione zuccherina, ma anche quella fenolica, per ottenere estratto secco e consentire ai vini di invecchiare. Per lui, lavorare con viti vecchie e basse rese è fondamentale, sia per la maturazione fenolica che per preservare lo stile di Chablis. 
L'annata 2014, la prima prodotta da Paul, è finalmente uscita dalla cantina, oltre un decennio dopo la sua produzione. È stata una lunga attesa, ma le soddisfazioni ritardate fanno parte della vita al Domaine Daniel-Etienne Defaix.

“People seem to like it,” says Callie Louw in his thick Afrikaans accent. The winemaker behind Porseleinberg shrugs, casual about his wine’s success. Since its first vintage in 2010, this Swartland Syrah has rapidly become one of South Africa’s best and most sought-after, much to his bemusement, it seems.  The 173-hectare estate is rugged and wild, sitting atop the Porcelain Mountain (Porseleinberg in Afrikaans) in the Swartland. The first vines had been planted here in 1997, with wines previously marketed under the Schonenberg label. Louw first came across the site while at Rustenberg, who sourced fruit from there – the bunches and individual berries were so tiny that Louw thought at first that the owners weren’t giving them the best fruit (although he may not have put it so politely). But those miniscule bunches were all these rocky schist soils, with almost no topsoil, could muster. However small the yields, the quality and concentration was enough to convince Marc Kent (Managing Partner and Technical Director at Boekenhoutskloof) to buy the farm in 2009 – and he approached Louw, who was then working at Tulbagh Mountain Vineyards (now Fable Mountain Vineyards), to develop the property.  The team instantly set about a massive planting program and there are around 90 hectares under vine today. Most of the fruit was destined for Boekenhoutskloof’s flagship wine, The Chocolate Block, but with 4.5 hectares of older plots and a ramshackle shed-cum-winery, Louw – with Kent’s blessing – decided to do something different, and Porseleinberg was born.  “It’s a really special site,” Louw says, explaining how the vines sit on almost pure bedrock with just a skin of topsoil over the blue schist. “We’re effectively farming little bonsais here.” It tells you just how challenging this site is that only half the vines they planted in 2009 survived; but the results are clearly worth the effort. And they weren’t the first to recognise the site’s potential – as well as Rustenberg (where Adi Badenhorst was then winemaker), Eben Sadie had sourced fruit from the property for Columella in 2000 and 2001. While the wine came originally from just 4.5 hectares, today there are 14 dedicated to Porseleinberg, with the first of the younger vines coming on stream from 2013. When Louw arrived in 2009, the vines were dry-farmed – and he managed to get 3.5 tons/hectare of fruit in 2010. But the yield was a tiny two tons the following year; it was clear that dry-farming just wasn’t an option for this site, the soils too poor to hold onto the water – if the skies even gave any. “Schist is actually spelt wrong, it’s supposed to be s**t,” Louw says, laughing. Despite the need to irrigate, he’s well aware of the costs involved – particularly given any water they use needs to be pumped seven kilometres and up the mountain. During the drought between 2016 and 2018, the river they use for irrigation dried up, Louw’s house water ran out in May – and police were patrolling water sources. There’s no avoiding how precious a resource water is here.  The site had been farmed organically and Louw continued this, however in 2016, when they looked to plant another 45 hectares, he wanted to make sure that he gave these new plantings the best chance – and be able to farm organically in the long term. As of 2023, the property is once more certified organic, having been able to return to the process in 2020. And it is firmly in the vineyard that Louw focuses, feeling not just that quality comes from the vine – but from the soil, as he gradually looks to build the level of organic matter. “The only thing that I can do better is farm better,” he says.  The winemaking is relatively simple and hands-off (as Louw says, “I’m quite proudly lazy in the winery.”) – but has evolved over the years. Louw uses 100% whole-bunch, although the fruit is crushed lightly (previously by foot, now by being run through a pump) to avoid carbonic fermentation and its more confected aromas. The fermentations are all native, with alcohols generally sitting between 13.5 and 14%. Maturation is in a combination of foudre and concrete, and varied more over the first four vintages as Louw figured out what worked (with the 2010 and 2011 vintages aged in concrete only). While some of the early vintages spent up to two years in concrete and oak, he has reduced this to 12 months (from 2014), favouring more time in bottle prior to release instead.   Although the wines are decidedly fresh and balanced, the pHs are naturally high – between 3.7 and 4.1, with most vintages sitting at the higher end of that spectrum. Given the risks of bacterial spoilage that this brings, SO2 levels are relatively high (around 100ppm total) – something Louw feels is essential for wines that are absolutely built to age. And that’s something that has long set Porseleinberg apart.   “I’m still wearing the pants I bought in 2004 – I know nothing about style,” Louw jokes. There’s no shortage of brilliant new-wave South African wine, however most are built to be open and approachable in their youth – not necessarily glou-glou, but leaning into the lighter style of reds that has become fashionable. Porseleinberg was, at least at first, decidedly not. The earlier vintages are stern and serious, and need(ed) significant time to resolve and soften – it’s that style (whether Louw would describe it as such or not) that has earned the wine the moniker “Cape Cornas”, a style that is both thanks to the natural intensity of the low-yielding site and Louw’s love of old wine.  But the 2018 vintage brought a significant shift – one that has taken Porseleinberg to new heights. Louw visited a friend who was working at Domaine Jamet, and saw how rather than using punch-downs or pump-overs, they submerged the cap throughout the fermentation and maceration, allowing them to extract more gently. Most winemakers might have trialled the technique on a parcel, but not Louw – who says, frankly, “I put my chips all in.” He returned to the Swartland and set to work, making his own plates to hold the cap in place during fermentation. Fortunately for him, the gamble paid off.  The more recent vintages display more perfume, precision and finesse, without sacrificing the almost fearsome structure that makes them so age-worthy – and, as Louw says, it means he does even less work in the winery (“I fit about one more beer in a day,” he says, smiling). While earlier vintages were more about their tannic framework, the fruit, Louw suggests, is more present now – covering the tannins in the wines’ youth.  When I ask Louw if he wishes he’d used the submerged-cap technique from the start, his answer is no. “It’s amazing to grow up with the wine,” he says. And somehow that makes sense, for this is clearly a very personal project. Although Boekenhoutskloof might own Porseleinberg, it is run and managed totally separately. During our conversation and as we taste through a complete vertical, back to 2010 (the first time Louw has ever had the chance to do so), it is clear that this is not just a wine from this specific place, but also from this specific wine-grower. Over 12 vintages, the style evolves, the variation between years shining through, but the mineral backbone and structural imprint of this site remains. It’s a remarkable wine, and one that is only set to get even better as the vines age and Louw builds on his experience. Ignore it at your peril.  Tasting every vintage of Porseleinberg: 2010 to 2021 2010 Porseleinberg: From the original 4.5 hectares, the first vintage of Porseleinberg offers a savoury, bloody, iron-rich nose, with an edge of herbal, menthol notes and dried red fruit. The immense structure is still present, although the tannins have softened with over a decade in bottle. That structure is complemented by a bite of fresher, dark fruit and juicy acidity. Aged for 16 months in 65% foudre and 35% concrete.  2011 Porseleinberg: This wine still feels young, the nose brooding with dark fruit, leather and liquorice, the palate tightly packed with intense, black-berried fruit and a chalky grip of tannins. With the year’s conditions only two tons per hectare were harvested, the smallest crop ever from the site – and given the small volumes this was never released, with only 800 bottles made. Aged for 24 months in concrete egg.  2012 Porseleinberg: This is more supple and soft than the 2012, with a savoury and saline profile. There’s more elegance than the first two vintages, with dark, intense fruit yet with an appealing purity, complemented by notes of tobacco spice and liquorice allsorts. Only 2,760 bottles were made. Aged for 12 months in concrete egg.  2013 Porseleinberg: The fruit here is distinctly different – sweeter strawberry with a touch of herbal eucalyptus alongside savoury hints that point to the beginnings of tertiary development. It’s incredibly concentrated, structured and compact – a wine that is built for the long-haul. Aged for 24 months in 60% foudre and 40% concrete.  2014 Porseleinberg: The 2014 was one of the more open vintages in the line-up, from a particularly wet year and late harvest. The nose entices with an earthiness, a dusting of cocoa, deep red cherry and chocolate-covered strawberries. There’s a juicy purity to the palate with a chalky grip and savoury, smoky edge to the long finish. Aged for 12 months in 100% foudre.  2015 Porseleinberg: This is still a little reductive, and will benefit from additional time in bottle. As this reduction blows off, it reveals a fynbos-accented nose of dark fruit. From a cool vintage, the palate is a tight ball still – intensely mineral and chalky, with impressive purity, but it’s not yet revealing its potential. One to watch. Aged for 12 months in 90% foudre and 10% concrete egg.  2016 Porseleinberg: The 2016 vintage brought the driest winter in decades and another tiny crop. The wine is full of sweet red fruit, but there’s a firm, stony minerality to the nose, as well as floral and spicy tones that give it lift. There’s a fine-boned framework here and gorgeous freshness. Aged for 12 months in 70% foudre and 30% concrete egg.  2017 Porseleinberg: The 2017 vintage is sweet and concentrated; offering both a swarthy dark profile and a sweet, red-fruited intensity. It’s tight and bold, with an iron backbone, firm tannic structure and a powerful finish defined by its dark fruit and minerality. Aged for 12 months in 70% foudre and 30% concrete egg.  2018 Porseleinberg: The 2018 vintage is the first in which Louw used the submerged-cap technique – and there’s an instant shift in the style of the wine. It’s brighter, more aromatic with more intense herbal and spicy notes, while the palate is layered with juicier, crunchy red fruit that masks the tannins. The finish is long, spicy and mineral. Superb. Aged for 12 months in 90% foudre and 10% concrete egg.  2019 Porseleinberg: This vintage saw a break in the drought for South Africa, with rainfall around average and a relatively cool growing season. The nose here is dominated by herbs and spice – green peppercorn, dried rosemary and sage; leading on to a palate that offers pure red-berried fruit. There’s a mineral, chalky, furry grip of velvet tannins that frames the generous cherry fruit, with a saline mineral finish. Delicious. Aged for 12 months in 90% foudre and 10% concrete egg.  2020 Porseleinberg:  The 2020 vintage was warmer and the wine speaks to that – with richer and darker fruit character that dominates its profile. The warmer conditions have added a polish to the wine, with more open feel, despite the trademark structure that sits behind the fruit. The wine is a little reductive at this stage, and needs more time to unfurl. Aged for 12 months in 90% foudre and 10% concrete egg.  2021 Porseleinberg: The latest release of Porseleinberg is unsurprisingly impressive, but with a finesse that suggests it could be Callie Louw’s best vintage to date. A long, cool growing season with sufficient rainfall resulted in a leisurely harvest in 2021, allowing the team to take their time to pick. Since the shift to submerged cap in 2018, quality here has leapt ahead. The 2021 shows a spicy, mineral intensity – with the fruit more subdued, taking a backseat to the stony structure and texture of the wine. It’s supple, flowing across the palate like silk, yet with a super-fine grip of mineral tannins and the shy fruit that points to its immense age-worthiness. Savoury herbal tones mingle with the red fruit, while there’s a saline freshness and spicy pepper tones that linger on the long finish. Amazingly approachable now, it will only improve with a couple of years in bottle and continue to evolve over the next 15 years or so. 2020 Puligny-Montrachet, Premier Cru, Clos de la Mouchère, Domaine Henri Boillot  Boillot’s four-hectare monopole Clos de la Mouchère is always a favourite, and it’s no different in 2020. This sub-section of Perrières produces a particularly honeyed expression of the site. After Pucelles, it is instantly richer, more expressive and fuller with layers of stone-fruit and honey complementing a backbone of vibrant citrus pith. There’s a lovely line to it, with delicate sweet spice and honeysuckle florals – but what really stands out is the unbelievable concentration of fruit at its core. Powerful yet balanced, this is sleek with a long, scented finish. 2020 Chevalier-Montrachet, Grand Cru, Bouchard Père & Fils  The Grand Cru whites from Bouchard are all brilliant. It is hard to choose a favourite but the Chevalier’s complexity, balance and minerality is impossible to resist. Bouchard owns 2.3 hectares of this seven-hectare Grand Cru and are the only domaine to have vines on the four varying terraces of the vineyard, offering the most complete rendition of this famous site. The nose is deep and mineral, with restrained citrus oil aromas. The palate has a wonderfully taut structure with dried apricot, mandarin and yellow apple fruit notes. The palate has incredible depth, rich and creamy in texture but never losing that mineral grip. The finish is silky, saline, zesty and exceptionally long.   2020 Criots-Bâtard-Montrachet, Grand Cru, Maison Roche de Bellene  It’s fascinating tasting through a full flight of Montrachets with Nicolas Potel, and the Criots was one of our favourites. Criots is the rarest of the Montrachets, at just 1.57 hectares. The soil here is stonier, producing an elegant and refined style of Chardonnay. In 2020, the wine is enticing with aromas of delicate lemon and almost orange citrus, fine sweet spice, toast and richer tones of white nectarine and flat peach. The palate is refined and vibrant with mouth-watering acidity that drives a long, citrus-peel-edged finish.  2020 Chambolle-Musigny, Premier Cru, Les Charmes, Domaine Hudelot-Noëllat  Charles van Canneyt has 0.21 hectares of this desirable Premier Cru. It is singing in 2020 – gorgeously expressive, with all the prettiness of great Chambolle, combined with the luxuriousness of this site. The nose is littered with delicate florals – rose and violet pot pourri – with dainty berry fruit and a hint of white pepper. On the palate it’s incredibly pure, with incredibly fine, lace-textured tannins that only Pinot Noir can offer. Elusive, ethereal, this is beautiful red Burgundy. Charles van Canneyt in the cellar at Domaine Hudelot-Noëllat 2020 Nuits-Saint-Georges, Premier Cru, Les Pruliers, Domaine David Duband  This was one of many stand-out wines in Duband’s impressive set of 2020s. All the Nuits-Saint-Georges Premiers Crus in particular were full of energy and character, but Les Pruliers tipped it with its endorphin-rushing finish. The wine is both juicy in its fruit concentration and vinous-like with its herbal-edged tones. There is a lovely interplay here between these two complementing flavours. The tannins are very fine, almost imperceptible, and the acidity brings so much vibrancy to the palate, awash with fresh black cherry fruit. The fantail finish has a great energy to it and the appellation’s trademark minerality comes through delicately on the long finish. Wow!   2020 Vosne-Romanée, Premier Cru, Les Malconsorts, Domaine du Clos Frantin, Albert Bichot  Albert Bichot is the largest owner of Malconsorts, with 1.76 of the 2.5-hectare Premier Cru neighbouring La Tâche. In 2020, it is exceptional. The nose opens with rich, concentrated plum and cherry fruit, with floral and spice notes. The powerful tannins are well balanced, the wood bringing enough to balance the wine’s incredible fruit profile. There is a great density and tension on the mid-palate, with more spice and cedar notes, the clean acidity driving a fresh, long, crunchy finish which reveals more plum. This is worth all the effort, an absolutely brilliant wine.   2020 Vosne-Romanée, Premier Cru, Les Petits Monts, Domaine Georges Noëllat  Georges Noëllat’s Les Petits Monts is absolutely stunning and one of many highlights from the domaine in 2020. It manages the rare feat of being incredibly dense and concentrated on the palate, while remaining ethereally light at the same time. There is plenty of crunchy blackberry and black cherry fruit flavours, of which the clarity and richness is perfectly pitched. The tannins bring a beguiling textural finesse, so fine and impeccably balanced. The wine is moreish in the best possible sense, with a very long, mouth-watering finish. Outstanding.  2020 Clos des Lambrays, Grand Cru, Domaine des Lambrays   Having the opportunity to taste five different plots separately, and then in the final blend of Clos des Lambrays, is an extraordinary experience and a masterclass in blending. Each distinct characteristic from the varying plots comes through effortlessly in the final blend, laying out the wonderous complexity of this special site. The floral, herbal, earthy, vegetal notes from the lower part of the slope provide a stunning, complex, perfumed nose which balances the richer red cherry fruit of La Plante vines beautifully, while there’s a mineral crunch to the finish from Cerisier (the lower left part of the slope). The delicate push and pull of the tannins, integrated with vibrant acidity, is wonderful. The wine is full of finesse but has no shortage of depth, with an amazing mid-palate roundness. This is hard to fault.  2020 Clos de la Roche, Grand Cru, Domaine Georges Lignier   The aromatic complexity of this wine is captivating, with lovely, lifted, heightened, dried floral aromatics, interspersed with cranberry and crunchy redcurrant notes and a smoky minerality – almost flinty with a touch of burnt earth. On the palate the concentration of fruit is rich, ripe and fleshy, which is a lovely contrast to the mineral, herbal, scented nose. There is no shortage of acidity either bringing a great raciness to the palate and a lovely savoury bitterness too. Despite the fleshy mid-palate, the wine tightens up with wonderful linearity, ending with lovely focus and energy on the long finish.  2020 La Grande Rue, Grand Cru, Domaine Lamarche  Lamarche’s iconic monopole is a narrow 1.65-hectare plot across the road from the Romanées. Nicole Lamarche has a magical touch in the winery, and this was unsurprisingly extraordinary in 2020. It’s a wine one could smell forever, so pretty that it stops you in your tracks. It offers remarkable delicacy with a texture like the finest silk. Remarkable minerality is woven between dainty red-berry fruit and fine florals, with remarkably finessed, barely-there tannins. There is, as Nicole says, “un côté mystique” to the wine. It shifts in the glass endlessly – ethereal and with an eternal finish. Extraordinary.  Explore more Editorial
