Although the family had long grown vines in Sancerre, it was in the 1950s that Henri Bourgeois started championing the wines of Chavignol. The property grew from two to 65 hectares, spread between Sancerre and Pouilly-Fumé, and is one of the standard-bearers for the region.

All’inizio di questo mese sono tornato ad Auxey-Duresses per trascorrere del tempo al Domaine e degustare integralmente l’uscita 2026 della Maison Leroy. È stata una visita significativa. Abbiamo degustato più di 25 vini tra annate, denominazioni e stili, il che ha consentito un livello di profondità e di comprensione comparativa raramente possibile con Maison Leroy. È un modo di degustare che elimina la gerarchia e si concentra interamente su espressione, tempistica e intenzione. Avendo visitato con costanza per oltre 12 anni, e più volte ogni anno, ho visto molte uscite in forme diverse. Posso dire con sicurezza che questa è la selezione Maison Leroy più completa e convincente che abbia mai incontrato. Si tratta di un’uscita eccezionale. La collezione Maison Leroy 2026 si è presentata come una collezione moderna nel senso più pieno del termine. Ciò che le conferisce forma ogni anno sono vini provenienti da annate diverse, ora riuniti in un momento in cui Madame ritiene che abbiano qualcosa di straordinario da esprimere. Tuttavia, questa è sembrata la prima collezione Maison a iniziare a rispecchiare, con autentica convinzione, il carattere superlativo del Domaine Leroy. C’è certamente ampiezza qui, tra denominazioni, livelli e annate. Ognuno sembra essere stato rilasciato esattamente nel punto in cui l’evoluzione ha rafforzato, piuttosto che attenuato, la sua definizione. Il risultato è una collezione Maison di statura insolita: capace di reggersi pienamente da sola, ma anche più vicina di qualsiasi uscita precedente a riflettere l’autorità e la brillantezza associate al periodo dominante del Domaine. Processo ed Élevage Per comprendere Maison Leroy, bisogna prima comprendere il processo. Ogni vino viene degustato alla cieca da Madame Lalou Bize-Leroy prima che venga presa qualsiasi decisione. Centinaia di vini vengono valutati ogni anno, mettendo da parte produttore, denominazione e reputazione. Raramente nuovi vini superano la selezione. Solo quando un vino soddisfa i suoi standard porta il nome Leroy. Questa responsabilità rimane direttamente nelle sue mani. Ed è solo l’inizio. Una volta selezionati, i vini vengono trasferiti nelle cantine, dove entrano in un lungo e attentamente controllato élevage. Per i rossi, con la sola eccezione del Bourgogne Rouge, ogni vino completa il proprio élevage in botti usate del Domaine Leroy, indipendentemente dalla denominazione. Village o premier cru, la classificazione lascia spazio alla qualità. Ogni vino è trattato secondo il suo potenziale, consentendo un livello di raffinatezza e integrazione che supera la gerarchia. Sono passati quattro secoli da quando la famiglia Giraud-Hémart iniziò a coltivare la vite ad Aÿ, scrivendo i primi capitoli di un’eredità straordinaria. 
 Anche se all’inizio erano mezzadri, la Chiesa concesse loro un’ampia porzione di terra nel XVII secolo – con François Hémart come primo membro della famiglia registrato nei registri parrocchiali. La storia moderna della famiglia, tuttavia, inizia nel XX secolo, quando un soldato di nome Léon Giraud fu di stanza ad Aÿ e si innamorò di Madeleine Hémart. La coppia si sposò presto e ebbe un figlio, Henri Giraud, trasferendosi nella proprietà in cui la famiglia vive tuttora.

Nel 1990 iniziarono ad acquistare uva aggiuntiva per soddisfare la crescente domanda e realizzarono la prima annata di Fût de Chêne – il vino che dal millesimo 2002 sarebbe diventato Argonne. Sebbene negli anni ’90 la famiglia già affinasse il vino in rovere, è solo nel XXI secolo che ha iniziato a lavorare esclusivamente con legno proveniente dalla foresta dell’Argonne – oggi parte integrante dell’identità della Maison. 
 La foresta dell’Argonne era storicamente la fonte di gran parte del legno utilizzato in Champagne, sede di oltre 150 bottai, ma fu gradualmente abbandonata e subì gravi danni durante la Seconda Guerra Mondiale. Henri Giraud ha fatto della sua restaurazione e protezione una missione, collaborando con l’Ufficio Nazionale delle Foreste francese (ONF) in un programma di riforestazione (ad oggi sono stati piantati oltre 60.000 alberi). La Maison considera la quercia dell’Argonne una componente essenziale del proprio terroir – tanto che il suo vino di punta ne porta il nome. I suoli poveri e aridi della foresta fanno sì che le querce crescano molto lentamente, sviluppando una grana particolarmente fine che dà al legno un aroma delicato, perfetto per accompagnare i vini eleganti di Aÿ. Oggi, l’azienda rimane un’impresa familiare strettamente unita – con la tredicesima generazione alla guida. Emmanuelle Giraud è al timone della Maison, avendo preso il posto del padre Claude, che – pur non essendo più ufficialmente parte dell’azienda – rimane presente e coinvolto nelle decisioni più importanti. La sorella di Emmanuelle, Anne le Golvet-Giraud, si è avvicinata alle pratiche terapeutiche, lanciando il marchio registrato della proprietà, la Craÿothérapie – un programma di benessere a base di gesso offerto nel loro hotel interno (furono tra i primi produttori della regione ad accogliere visitatori per degustazioni e, oggi, anche per soggiorni). È il marito di Anne, Sébastien le Golvet, a occuparsi della vinificazione.  “È molto importante essere sempre curiosi, cercare qualcosa di meglio dal vino, dall’uva,” ci racconta Giraud. Nessuno incarna questa filosofia alla Maison più di Le Golvet, una forza trainante che, dal suo arrivo nel 2002, ha spinto a sperimentare e innovare sia nei vigneti sia in cantina. Negli ultimi due decenni ha introdotto analisi dei residui nel suolo per certificare il loro approccio triple-zero (zero pesticidi, zero insetticidi e zero trattamenti fungicidi – qualcosa che ritengono più significativo della certificazione biologica e che hanno a lungo pionierizzato), ha bandito l’acciaio inox dalla cantina (utilizzando solo terracotta e legno) e tosta personalmente ogni botte che la Maison utilizza. Sempre alla ricerca di nuovi modi per elevare ulteriormente i vini, ha recentemente creato e iniziato a utilizzare botti personalizzate con fondi in arenaria. Come spiega Emmanuelle, la sua filosofia è ferma: “Il miglior vino sarà il prossimo.” Henri Giraud riesce a bilanciare un approccio all’avanguardia con la pazienza che il metodo classico richiede. Come spiega Emmanuelle, devono assicurarsi che tutto sia perfetto dal momento della raccolta delle uve – perché ogni errore si scoprirà solo dopo dieci anni. Sebbene si occupi della strategia e della pianificazione generale dell’azienda, durante la vendemmia la si trova sempre sul pavimento della cantina, a gestire la ricezione delle uve ogni anno, vedendo il culmine di un anno di lavoro. Essere indipendenti e a conduzione familiare permette loro il lusso di una visione realmente a lungo termine. Ogni annata conducono esperimenti i cui risultati emergeranno solo dopo dieci anni, ma l’investimento va ben oltre: piantano 12.000 alberi nella foresta dell’Argonne ogni anno, assicurandosi che Henri Giraud possa continuare a utilizzare questa quercia speciale anche tra due secoli. I vini straordinari della Maison riflettono questa visione, testimoni della loro instancabile ricerca della qualità e di un’attenzione al dettaglio senza pari. Bordeaux 2024  Unsurprisingly, our coverage of the latest Bordeaux vintage once again dominated our most-read editorial in 2025. From our first impressions through to a full vintage overview, a detailed commune-by-commune breakdown and a comprehensive critics’ round-up, Bordeaux 2024 proved a vintage that demanded careful reading rather than sweeping conclusions. Our early coverage set the tone: a year shaped by climatic challenge rather than excess, producing wines of restraint, classical structure and freshness rather than sheer power. As the campaign unfolded, it became clear that success hinged on vineyard management, harvest decisions and precision in the cellar. The picture that emerged was a nuanced one, with standout performances varying markedly between Left and Right Bank, and site selection proving decisive. Critics were broadly aligned: Bordeaux 2024 is not a vintage of easy headlines, but one that rewards attention, discrimination and long-term perspective. Inside Burgundy – Jasper Morris MW  Côte de Beaune  Jasper Morris MW’s first assessment of Burgundy 2024 reveals a vintage of extreme adversity yet unexpected classical poise, particularly for whites. An “exceptionally wet year,” marked by poor flowering, mildew pressure, and limited sunshine, made 2024 one of the most challenging recent seasons. Conditions worsened moving north, with the Hill of Corton and northern Beaune hardest hit, while mid-slope vineyards benefited from better drainage and earlier flowering. Harvest was tightly compressed between 12–16 September.  Despite the difficulties, Morris calls 2024 “much more applicable” as a return to classic Burgundy than 2021, especially for whites, where quality is “relatively homogenous” and characterful. He found wines defined by citrus, fresh apple, and, at their best, “rapier-like acidity” and tension. These whites will be “accessible early,” though he warns buyers to avoid those lacking backbone and energy.  Reds are more mixed and occasionally fragile, yet the finest examples show charm and harmony. Morris highlights “aromatic pinots that could make you smile at first sniff,” with unusually refined tannins, aided by a return to a classical 100-day ripening cycle. Village wines and well-managed premiers crus represent the sweet spot of the vintage.  Chablis  Chablis faced the harshest conditions in 2024: floods, frost, hail, and relentless rain, with total rainfall reaching 634 mm and many organic producers harvesting below 10 hl/ha. Some, like Guillaume Vrignaud, “made hardly any wine and sold it off.” Morris expected “green… ugly and flawed” wines but found most were sound and “less fragile than their 2021 counterparts.” While few are truly great, many show classic Chablis character—crisp, defined, with “crushed oyster shell” notes. Best for short- to medium-term drinking, 2024 in Chablis demonstrates resilience and surprising drinkability after a punishing season.  Côte de Nuits  In the Côte de Nuits, Morris sees 2024 as a vintage of delicacy rather than power. Harvest ran 12–16 September, with Nuits-St-Georges hit hard by rain and further north affected by uneven conditions and hail. Losses came mostly from coulure rather than mildew, especially around Gevrey-Chambertin. Whole-bunch fermentation and reduced stem use were key, and while some wines need time to integrate, many show light, perfumed character. “If you like dark coloured powerful wines… there is nothing here for you,” notes Morris. Only 2% of wines achieve top accolades, making careful selection essential.  Explore Jasper Morris MW’s reports, notes and scores on his site (subscribers only)  Vinous – Neal Martin  Neal Martin portrays 2024 as a season of extremes, where relentless rain, frost, and mildew tested every winemaker. Flowering was uneven, yields sharply reduced (Pinot Noir suffered most) and frost damaged parcels from Marsannay to Clos de Vougeot. As one winemaker reflected, “Each day in the vineyard felt like a battle,” capturing the relentlessness of the season. Tiny harvests demanded meticulous vineyard work and careful vinification, with whole-bunch decisions critical: “2024 was not a vintage to play recklessly with stems.”  A sunny, warm August offered salvation, allowing grapes to reach phenolic ripeness. Martin notes it “enabled some to capture the brightness and freshness of vibrant red fruit where Pinot Noir reaches its apex” and lent Chardonnays “razor-sharp tension and delineation.” Whites show energy and mineral clarity, while reds are delicate, transparent, and expressive rather than powerful.  Despite the challenges, skill and perseverance triumphed. Careful vineyard management and thoughtful vinification produced wines of elegance, freshness, and charm. As Martin concludes, “The bottom line is that 2024 is an endlessly fascinating vintage that will enamour the small number who imbibe the fruits of much labour.”  Explore Neal Martin’s reports, notes and scores on the Vinous site (subscribers only)  Burghound – Allen Meadows  Allen Meadows’ Burghound report describes 2024 in the Côte de Nuits as a vintage of extreme difficulty and delicate character. Following “rain, rain, and yet more rain,” growers faced poor flowering, rampant mildew, and historically tiny yields, with clusters sometimes reduced to 15–20 berries. Meadows notes that “the variability in 2024 is that of 2023 squared,” making disease control, rigorous sorting, and careful vinification essential to preserving quality.  Despite the challenges, the best wines are “ultra-fresh, wonderfully energetic, impeccably well-balanced and the most transparent reds we’ve seen since 2010.” Alcohol levels are modest, around 12.5–13%, enhancing clarity and finesse rather than weight or power. Harvest ran from 16–21 September, slightly later than the traditional 100-day rule, allowing vines to achieve ripeness amid persistent rainfall.  Vinification emphasized restraint: light extraction, reduced stem use, and careful temperature control preserved purity and avoided harsh tannins. Minor faults, mostly reduction from copper or sulfur sprays or slight volatile acidity, rarely detract. Meadows notes some wines are “too skinny or too lean,” but the best display crystalline transparency that “puts the intrinsic terroir on parade.”  Most wines suit mid-term cellaring: villages and premiers crus are approachable in 4–8 years, while top grands crus can age 10–15. Stylistically, 2024 reds are elegant and energetic, rewarding careful selection in a year of extreme variability.  Explore Allen Meadows’ reports, notes and scores on the Burghound site (subscribers only) Jancis Robinson – Jancis Robinson Jancis Robinson MW sums up 2024 as “nightmare… misery… exhausting… unremittingly grim,” with “gruesome” final yields. Heavy rain and unusually low temperatures during flowering severely damaged Pinot Noir, particularly in the Côte d’Or, while Chardonnay fared slightly better. Many vignerons abandoned organic viticulture for systemic sprays to save their crops. Pierre-Yves Colin-Morey achieved “respectable, but most unusual for 2024” yields of 35–40 hl/ha only by switching early.  Losses were severe: reds down up to 80%, whites about 30%. Robinson notes that “the cool summer meant acidities were high, and successful reds could be described as pretty, but never concentrated,” with pale color and barely perceptible tannins. Late August brought some warmth, raising sugar levels, though many producers still had to chaptalise. She warns this is “a vintage to drink relatively early,” emphasizing elegance over opulence, fragility over power.  Cellar work was complicated by tiny harvests. Half-full tanks increased the risk of oxidation or stuck fermentations. Oak use was moderated, though some grands crus required up to 50% new barrels to fill them. Extraction and whole-bunch fermentation were carefully managed, with co-fermentation across parcels common.  Despite the challenges, Robinson highlights successful producers including Bertrand Bachelet, Yvon Clerget, Comte Armand, Philippe Colin, Sérafin, and Joseph Drouhin. Regions south of the Côte d’Or fared better, producing more generous, sophisticated wines. She frames 2024 as “a triumph of resilience over nature,” rewarding careful selection and precision in the cellar.  Explore Jancis Robinson's reports, notes and scores on her site (subscribers only) Jancis Robinson – Matthew Hayes  Matthew Hayes describes 2024 as a vintage “all over the shop,” marked by extreme scarcity, mildew pressure, and uneven quality across the Côte d’Or. Some estates, like the newly launched Domaine Henri Rebourseau, produced nothing, while others managed only tiny parcels. Yet Hayes notes, “producers actually had some wine; the second relief was that these had turned out better than feared.” Quality varies by village, vineyard, and even row, making careful selection essential.  The season was relentlessly difficult. Pinot Noir struggled with coulure, millerandage, and mildew, while Chardonnay fared slightly better thanks to earlier flowering. Organic producers faced doubled labor and costs, with some switching to synthetic sprays to save their harvests. Final yields were punishingly low, with red grape losses up to 85%. Harvest began in mid-September, balancing ripeness with botrytis and powdery mildew risks.  Winemaking focused on tiny lots, cautious extraction, and moderate oak. Reds are elegant, medium-bodied, and dominated by red fruit, while whites show precise acidity and finesse. Hayes notes, “This is not the Pinot Noir we have recently come to expect.”  Scarcity keeps prices high, yet the best wines are balanced and surprisingly drinkable. As Hayes concludes, “The bottom line is that 2024 is an endlessly fascinating vintage that will enamour the small number who imbibe the fruits of much labour.”  Explore Matthew Haye’s reports, notes and scores on the Jancis Robinson site (subscribers only) Decanter – Charles Curtis MW Pommard & Volnay 2024: Early-drinking Pinot Noir   Charles Curtis MW highlights Pommard and Volnay as the standouts in 2024, a vintage where Pinot Noir struggled across Burgundy. The northern Côte de Beaune largely avoided the worst rain and mildew, producing wines with the lush, supple fruit the region is known for. Pommard ranges from firm and tannic to approachable, while Volnay shows silky, expressive character.  Yields were exceptionally low: Paul Zinetti of Comte Armand recorded just 15 hl/ha, and Paul Négrerie of Château de Pommard 14 hl/ha. Careful extraction was key to avoid green tannins, producing wines of elegance over ripeness. Frédéric Lafarge notes that Volnay’s 2024 shows purity and terroir expression, comparing it favorably to 2021: “2024 showed more finesse and complexity due to the longer vegetative cycle.” Overall, the vintage is lighter than usual, suited to earlier drinking, though the best wines from top producers can age five to ten years.  Best Value Burgundy 2024 Wines   Finding value in 2024 requires a selective approach, as low prices rarely coincide with scarce wines. Curtis recommends starting with regional appellations, particularly the Hautes-Côtes of Nuits and Beaune, where top performers include Bourgogne Hautes-Côtes de Nuits Les Dames Huguette (Dufouleur) and Bourgogne Hautes-Côtes de Beaune blanc (Guiton).  Further south, the Côte Chalonnaise offers excellent options, with Maison Chanzy (Bouzeron), Domaine Belleville (Rully), Château de Chamirey (Mercurey), and Domaine du Cellier aux Moines and Domaine Stéphane Aladame (Givry/Montagny) standing out. Curtis also praises the Mâconnais for Chardonnay, noting “bright acidity, fresh fruit, and solid structure,” with Pouilly-Fuissé in particular shining.  In short, 2024 may be small in volume, but careful exploration of Pommard, Volnay, the Hautes-Côtes, southern Burgundy, and the Mâconnais reveals wines that combine quality, typicity, and attractive drinking windows.  Kristaps Karklins portrays 2024 in Chablis as a season of extreme attrition, marked by frost, hail and what he calls “historic mildew pressure—among the highest ever recorded.” Yields dropped by “60% to 70% on average,” with some estates losing entire crus, including Dauvissat’s Séchet, Montée de Tonnerre and Les Clos. By late August, rainfall had reached “around 600 millimeters, compared with the average 380,” making healthy fruit scarce and rigorous sorting decisive. Growers who waited to harvest were rewarded with “greater texture and mid-palate amplitude,” while early picking risked under-ripeness and dilution.  Despite the hardships, barrel tastings reveal notable successes. The finest 2024s are “classical Chablis,” defined by tension, clarity and site transparency, and approachable earlier than most vintages. While they cannot rival the concentration of 2023 or 2022, Karklins suggests they may delight purists more than a random selection of riper years. “No one would call 2024 a historic vintage,” he concludes, yet among the best producers the wines are “unmistakably, even nostalgically Chablisien,” rewarding careful selection with freshness, character and authenticity. Volumes are reduced, but quality is “solid,” and some wines “transcend the vintage,” reaching levels of maturity that are unusual for such a challenging year. Jean-Marie Guffens likens the domaine’s 2024s to 1998, a vintage that performed better in the Mâconnais than in the Côte de Beaune.  The true stars for Domaine Guffens-Heynen, however, are the bottled 2023s. Kelley ranks 2023 alongside 2020 as one of the finest vintages for domaine in the last 10 to 15 years and among the best of Guffens’s career. If the 2020s are “almost neoclassical” in style, the 2023s are more flamboyant, setting up a compelling contrast between two outstanding expressions of the domaine that will invite comparison for decades to come. Burgundy 2024: the critics’ verdict

Bordeaux has several different classification systems. While the Right Bank has only Saint-Emilion’s system (one that is a source of controversy), the Left Bank has a more complex web of rankings.   
The 1855 classification is the gold standard. The most famous and influential of them all, it lists the Left Bank’s very top estates. But beyond this crème de la crème, there are several other systems ranking properties – namely the Graves classification, the Crus Bourgeois and Crus Artisans.  
The Graves classification  
Almost 100 years after the famous 1855 classification, producers in the Graves decided to create their own equivalent. Other than Ch. Haut-Brion, the region’s properties had not been included in the 1855 classification. A draft of the classification was drawn up in 1953, then the official list ratified in 1958, with some changes in 1959.  
The Graves classification is much simpler than the 1855 classification. There is only one tier, with estates declared “Grand Cru Classé de Graves” for white wine, red wine, or both. Sixteen estates in total were defined as the region’s best. Couhins, Couhins-Lurton and Laville Haut-Brion were classified for only their white wines, while Fieuzal, Haut-Bailly, Haut-Brion, La Mission Haut-Brion, Pape-Clément, Smith Haut Lafitte and La Tour Haut-Brion were classified only for their reds.  
Interestingly,. Ch. Haut-Brion is only classified for red, however this is not because its white was not deemed worthy, but because it did not apply for classification, given production of the illustrious wine is so small. It remains one of the region’s highest-rated and most expensive whites. 
Although there have been no changes since 1959, some of the wines are no longer made under the same name. Both part of the Clarence Dillon family, Ch. Laville Haut-Brion is now bottled as Ch. la Mission Haut-Brion Blanc, while fruit from La Tour Haut-Brion is now used for the second wine of La Mission, La Chapelle de la Mission Haut-Brion (read more about the genealogy of the Haut-Brion estates here).  
The Pessac-Léognan appellation was only introduced in 1987, so some of the wines are bottled under this today.  1959 Graves classification  Ch. Bouscaut (red and white)  Ch. Smith Haut Lafitte (red only)  Ch. la Tour-Haut-Brion (red only)  The Crus Bourgeois  The term “Cru Bourgeois” has long been used casually, but it was introduced as a formal classification in 1932. There have been many changes to the classification over the years. There were 444 properties in the original group, many of whom used the term on their labels even though the classification was never officially ratified. In 2003, after three years of debate, the classification was updated and split into three tiers (with Cru Bourgeois Supérieur and Exceptionnel added), only to be annulled in 2007, with the term then banned from labels. In 2010, the Cru Bourgeois classification was re-introduced and assigned to wines rather than estates, with their status re-assessed each year, but this too was soon replaced.  
In 2020, a new version of the classification was unveiled, going back to the three tiers of Cru Bourgeois, Cru Bourgeois Supérieur and Cru Bourgeois Exceptionnel. The top rank of “Exceptionnel” includes just 14 estates, with 56 Crus Bourgeois Supérieurs and 179 Crus Bourgeois (adding up to a total 249 properties). The classification is only being assessed every five years, with the next iteration set to be announced in 2025.   
The classification is decided based on the quality and consistency of the wine (assessed via rigorous blind tasting), traceability and authentication, with sustainability encouraged and rewarded. While these wines are not as highly regarded or sought after as those in the 1855 classification, the wines generally offer good value, and all come from the Médoc, Haut-Médoc, Listrac, Moulis, Margaux, Saint-Julien, Pauillac and Saint-Estèphe. The Crus Artisans  
The Left Bank also has the Cru Artisan classification, designed to highlight smaller operations where the manager/owner is involved in every stage of production. The term has been used for over 150 years, however its official meaning was introduced in 1989. The classification was launched in its current guise in 2006, open to estates in the Médoc, Haut-Médoc, Listrac, Moulis, Margaux, Saint-Julien, Pauillac and Saint-Estèphe. Generally family-owned, properties must grow their own grapes, then make and sell the wines.  
There were 44 Cru Artisan estates in 2006, but the latest classification (unveiled in 2018) included only 36 – with many addresses sold/absorbed by other producers, some retiring, as well as a handful of new names added. The classification is based on a visit to the estate and blind tasting of its wines. On average, Crus Artisans have just 10 hectares of vines. We learn a lot from winemakers around the world but often it extends well beyond their vocation. No more so than with Champagne Henri Giraud winemaker Sébastien Le Golvet, whose philosophy as a vigneron extends far beyond the vineyard. Under the mentorship of his father-in-law Claude Giraud, Sébastien believes a total immersion in one’s surroundings is essential to better understand it. Working with something that is alive, Sébastien believes, requires the nurturing of a symbiotic relationship between himself, his vines and more broadly with the natural world.  Henri Giraud, one of Champagne’s most celebrated producers, takes this immersion philosophy to the extreme, from tasting their own soils to identifying varying terroirs of oak within the Argonne forest that produce the barrels for their barrel-fermented Champagnes. Sébastien guides us through the extraordinary lengths they go to, his determination to reconnect with nature, and learning to trust one’s senses.  Inquisitive wine drinkers are eager to extrapolate why doing something in the vineyard or the winery leads to the flavours in the glass. When speaking to a vigneron it is rare to receive straightforward answers, but as Sébastien explains, it is a succession of small details. In Henri Giraud’s case, a minimum of 10 years of activity and adjustments go into a single glass of Henri Giraud Champagne, as well as a lifetime of experience to help guide decisions throughout the process.  Sébastien compares his winemaking philosophy to climbing a mountain: there are many ways up and some options are more difficult than others, some can even lead to a fall, but each time he tackles that mountain, he claims he emerges with a better understanding. He remembers the pitfalls of previous vintages, or fermentations that go wrong, he takes inferences that might have led one way and chooses a different direction. Slowly finds the right path while remaining humble to the many routes available.  The multitude of factors at play in growing grapes and making wine, explains Sébastien, means a vigneron has to learn to trust one’s own sensibilities. His inferences are broad and multifaceted and not necessarily linked to winemaking. He talks about how important childhood memories of picking fresh cherries as a young boy, or the smells of his mother’s cooking, are, all providing him with a memory bank of senses that he refers to today.  100% barrel fermentation The domaine has had a fascination with oak from the Argonne forest, east of the Champagne region, since Claude Giraud took over from his father in the 1980s. Its top cuvee is even named after the forest (home to their barrels) of which 100% new oak is used in fermentation of their Argonne cuvee. Oak plays a central role across the range, with the sole exception the amphora-fermented Dame Jane Rose.  Since 2016 they have stopped using any stainless-steel tanks at all in the winery, even with their “Esprit” entry-level cuvee. Historically there were more than 150 coopers working in the Argonne forest producing barrels for Champagne production, but with the introduction of stainless-steel fermentation tanks, this tradition almost completely died out in the region. The cheaper more efficient effects of stainless steel led to most Champagne houses giving up on barrel fermentation. The obsession with oak at the domaine was not a whim. Initially, Claude Giraud invested in stainless steel to test and compare the effects of different fermentation vessels on the wine. They also tested extensively with different types of amphora including cement and terracotta before eventually opting for sandstone jars, offering the right amount of porosity to imprint texture and flavours, they are looking for. The problem with stainless steel, in Sébastien’s view, is that it doesn’t retain the tension in the wine in the same way as oak barrels; they don’t believe it translates their beloved Aÿ terroir. The reasons might not be clear cut, but their evidence in extensive tasting was enough to convince.  Sébastien states that the exchange during fermentation is much quicker in stainless steel, just two months, whereas in barrel it is between six to 12 months. This long exchange of solids, yeast and lees, according to Sébastien, creates much better equilibrium in the wine, more texture and more complexity. The small volume vessel (the barrels are just 228 litres) also creates more power and intensity in the wine.  Dealing with smaller vessels, according to Sébastien, also means more control of the product and less concerns with oxidation lowering the need for additions of sulphites (anti-oxygen agents) as well as giving Sébastien so many more options when it comes to blending. Each vintage he is managing over 1,000 barrels. While it sounds like a lot, in Champagne terms this would typically amount to four or five large tanks (maximum 10 smaller tanks) which when considering the Henri Giraud domaine has over 200 different separate vineyard plots, fermenting these all together in stainless-steel tanks would lose the specific terroir inferences that remain a vital element to the Henri Girard philosophy.  The terroirs of the Argonne Forest While Krug, Bollinger and Selosse are strong advocates of oak barrel fermentation in Champagne, perhaps the most unique element about Domaine Henri Giraud is the lengths they go to in determining what oak they use. Henri Giraud believes the terroir of the forest plays an essential role in the final effects in their wines. The wood is sourced from the Argonne forest but within the forest based on the varying soils, different parts of the forest offer different expressions. The domaine has identified at least 10 distinct terroirs within the Argonne forest. The three main regions they predominantly source from are Les Châtrices, La Contrôlerie and Les Haut-Bâtit. What is important about these specific terroirs, according to Le Golvet, is the geological positioning of the tree and the specific soil: a very poor, dry soil, causing the trees to grow very slowly producing wood with the tightest grain in the forest.  The tighter the grain, the more delicate the effect and flavour of the wood has on the wine. For Sébastien, the wines of Aÿ are very delicate and while they want to incorporate the terroir of the forest into the wine, they don’t want to overpower it. These trees take up to 250 years to reach maturity and thus Henri Giraud has partnered with the French National Forestry Office to invest in replanting programmes. For Sébastien, each of the terroirs brings distinct characteristics to the wine. The oak from Les Châtrices can emphasize the effect of acidity in the final wine as well as mineral freshness. The oak from La Contrôlerie brings red fruit and apricot notes. The oak of Les Haut-Bâtit brings power and depth and is often used in cuvees that lack the balance from maturity. How this all works they do not know, but again on tasting you can identify clear differences in the effect of using different oak from different terroirs of the forest. Sébastien is keen to share this with anyone who is interested. At Henri Giraud, they make a point of making their Vin Clair wine (still Champagne wine prior to the second fermentation in bottle) available to taste for visitors at the domaine throughout the year. They have the same cuvee fermented in the different types of oak for visitors to get a direct experience of how different they taste.
 Bespoke barrel toasting at the domaine One particular skill of Sébastien, seemingly fairly unique in the wine world, is that he toasts his own barrels. Trusting only his sense of smell and how specific toasts will affect different cuvees, Sébastien sources the barrels untoasted and toasts each one. Typically wine barrels are toasted for 30 to 40 minutes but he prefers a much lower heat but for around 90 minutes – sometimes longer –  depending on each barrel and using only his nose to guide him.  When the toasting process starts, he describes the wood smelling of flour, and as it cooks further the aromas develop to white bread, then darker, wholemeal bread, the bitterness of the green tannins drops out from the barrel and croissant buttered notes develop.  He identifies the character he is looking for, depending on the different vineyard sites, to produce a delicate balancing act between fruit and wood. Even before harvest, he has already decided how he will separate his 200 separate plots of vineyards, identifying which grapes will be fermented in specific barrels. The terroir of the Grand Cru village of Aÿ Transparency is a key part of the Giraud philosophy. They were among the first Champagne houses to farm organically, their vines have been pesticide-free since 1996. But whilst they are not officially certified, they believe recording the actual amount of chemical residuals found in the soil is a more transparent approach than an organic certification. They now identify on every bottle the molecular analysis of the wine via a QR code, identifying exactly what trace elements have reached the wine.    Receiving over 5,000 visitors every year, they are keen to share their philosophy of complete terroir immersion and transparency. Not only can you taste the different terroir effects on the oak, but they are keen to extol the virtues of the Grand Cru village of Aÿ. Sébastien explains how Aÿ has a distinct terroir, identifying key factors that resonate in the glass. The vineyards of Aÿ have a thin layer of very rich topsoil with high levels of iron oxide of which below is deep chalk mixed with clay.  The south exposition brings sun intensity that “roasts” the grapes, but a small river creates a fresh breeze that blows across the vineyards, preserving freshness. There is a distinct aniseed taste from the wines of Aÿ that brings freshness; the density of chalk, its structure and flavour can be tasted in the mouth as well as providing a distinct salinity. A part of their terroir immersion at the domaine involves tasting these elements with visitors, mixing the chalk, the clay and the iron oxide with water and tasting the effects in the mouth.  It is clear, explains Sébastien, that tasting these elements helps you to understand where you feel minerality in wine – where each element sits in the palate. Sébastien’s conviction in terroir immersion and the power of one’s senses is best extolled in the raising of his children. He has three sons aged between seven and 16 and from a very early age he and his wife were keen to immerse them in nature, to encourage them to explore their senses, and to connect them to nature. They spend much of their time in the vineyards, in the forests and the kitchen.  Sébastien recounts his memories of his mother’s cooking, the picking of fresh cherries from the tree – these are smells you never forget. He wants his children to savour these childhood memories, to help them build an extensive memory bank of sights, sounds and flavours. This immersion in their senses he believes is key to becoming a good vigneron of which he hopes his children (the 14th generation of the Henri Giraud domaine) will put into practice as Henri Giraud’s vignerons of the future.
